M

y, how time flies. A little over two years ago, we set out to produce a magazine that was uniquely Seguin. We came up with Sizzle and the tagline ‘life well done.’ We thought that was pretty cool. We had no idea the response would be so overwhelmingly positive, or how quickly and completely Sizzle would take on a life and following of its own. Over the last two years, we’ve had some hits and misses. We’ve had changes in staff and in our creative approach. Sizzle has grown; morphed and evolved to the point that while it was still recognizable, it was very different from that first issue. Six months ago, or thereabouts, we decided it was time to reimagine Seguin’s lifestyle magazine. We started changing up our content, looking for consistency, focusing on better art, eliminating some features and departments and adding others, looking to put together the best product we could for our readers. We even toyed with the idea of changing the name, but decided that Sizzle was our identity and ‘life well done’ truly embodied our spirit and the attitude of the people that live and work here. Nothing else seemed to fit, and frankly, everyone already recognizes Sizzle as Seguin’s. We still wanted to dress it up a bit, and the result is what you are holding right now. You’ll notice some subtle and not so subtle changes. We hope you like it. It has definitely been a group effort, and we’re pretty darn proud of it. We’ll continue to work to bring you a lifestyle magazine worthy of Seguin, now every two months instead of just quarterly. In the meantime, come on in and see why in Seguin, it’s life well done!

Fruit Cobbler

2 cups chopped fruit 1 cup brown sugar 1/2 cup butter, melted 1/2 cup brown sugar 1 cup flour 1 cup milk 2 teaspoons baking powder 1 teaspoon cinnamon powder

1) Pre-heat oven to 350 degrees 2) Mix fruit with 1 cup of brown sugar, set aside 3) In separate bowl, combine 1/2 cup brown sugar, flour, baking powder, cinnamon, and milk 4) Pour melted butter into 9” x 12” baking pan 5) Pour flour mixture over butter 6) Pour fruit mixture over flour 7) Bake until center is no longer wobbly and crust is golden brown

s Tavern on the Creek partner and chef Paul Schroeder sets out to plan the restaurant’s upcoming menu, calling to see what local farms have in season is paramount. “Before I make a menu, I call the local farmers and find out what they are going to have regularly for at least a month or two, and based on that, I go around and make the dishes up,” he said. “Luckily, Seguin is just full of great food. There are farms and ranches everywhere out here.” Working in the restaurant business since he was 16, Paul said the most essential aspects of food preparation are flavor balance and fresh ingredients. “Every dish that I put out has a certain flavor profile, and in that profile, it has to be balanced,” he said. “German, Italian, French, Vietnamese and Thai ... all these different styles go into what I make, but my main focus, that is flavor balance. That and also using fresh and seasonal ingredients.” On the restaurant’s seventh iteration of its menu, every dinner item included at least one ingredient from Texas. “When you use fresh ingredients, you will find food becomes easier to do, but more complex in flavor,” Paul explained. “The best way to ensure that you are using entirely

seasonal food is to get it locally because seasonal food changes depending on where you are. Plus, it also supports local farms which I think is really important.” Thinking of a recipe that highlights the use of seasonal produce, the Texas Culinary Academy graduate shared a fruit cobbler concoction he has mastered over the years. “I have been using that fruit cobbler recipe for a very longtime,” he said. “The reason why I like that recipe so much is that it is universal, you can basically use any fresh fruit — it has to be fresh. When everything is fresh and everything is in season, it has so much more depth than it does otherwise.” Paul said while the recipe has evolved throughout his years of mastering his cooking techniques, it still is fairly simple. “With that cobbler recipe, it is a combination of just many different recipes and trying it out with trial and error,” he said. “It is so refreshingly good. You get this warm but fresh fruit dish, and then, you put that cold ice cream on top. Cooling Effects: Water disperses heat more efficiently, so there is less chance of overheating. The water continuously cools the body. Exercise in the water is cooler and more conformable than it is on land.

Resistance: There is a continual resistance to every move you make: The water offers 12-14 times more resistance than when you exercise on land. Resistance does not allow for sudden body movements.

WATER ALLOWS FOR A UNIQUE AND FUN WORKOUT EXPERIENCE

W

ith temperatures rising, like they do every summer in South Central Texas, the idea of working up even more of a sweat doesn’t sound like a lot of fun. Still, physical fitness is one of those necessary components for living a healthy lifestyle, so why not do in the water, Guadalupe Regional Wellness Center Instructor Jill Heard said. “In the water, you will get probably at least 12 times the resistance of air,” the certified respiratory therapist explained. At the center, Jill is just one of the instructors who offer the gym’s different aquatics classes such as arthritis water, aqua Zumba and cardio waves. “I think people just think it is for rehab, and it can be for rehab — it’s great for rehab — but it’s also is so much more,” she said. “You can take any land-based class and put it in the water.” The 1996 Texas State University graduate explained how working out in the water is very beneficial for one’s body. “Some of the benefits, in the more cardiobased classes, are you will get increase circulation and blood flow, decreased stress on the joints, increased range of motion, increased muscular strength, improves 10 SIZZLE ~ SEGUIN LIVING

core strength and endurance and improves cardiovascular endurance,” Jill said. All of which, the United States Water Fitness Association (USWFA) says is because of adding the water element to the workout. “This water property allows people to do exercises that are difficult on land,” USWFA said. “Ninety percent of your body is buoyant when in the water up to your neck, so you are not hitting the floor as hard as you would on land. In the water, it is a very light touch!” Jill, who is a certified group fitness instructor and personal trainer with the Aerobics and Fitness Association of America, said water exercising is for everyone, no matter age or sex. “No matter if you are young and want to start just being in shape ... you are going to burn 400 to 500 calories in a cardio class, and that is pretty impressive,” she said. “I think people who don’t do it, they are really doing themselves a disservice on their whole fitness program. When you talk about fitness, you want people to get cardiovascular endurance, strength and flexibility. Those are your three components of fitness, and where else, in one class, can you really get that?” Other important factors, Jill said is how working out in the water is fun and it allows people to feel more comfortable.


“It is so much fun,” she said. “If you like Zumba, but you don’t like the mirrors, because you don’t like watching yourself, there are no mirrors. It gives people kind of a safe zone when they are down underneath the water, and you can’t really see what the other person is doing. You can see me on deck, but that is it, so you are safe.” All in all, Jill said people should look for a workout that they enjoy and not to knock water exercising until you have at least tried it.

“I always say if you haven’t tried, come and try it the first time for free because I know I don’t join a place unless I know I like it ­— especially the classes,” she said. “If you find something you like to do and see results, you are going to stick to it. W

ith his sense of ease and vibrancy, Jeffery Koehler’s interior design skills bleed into his closet, he said. His outlook of what he wears shows his work capabilities of being a designer, as he talked about his perception of style. “I think for most of the time, I have to show a certain amount of flair ... to show an artistic, creative side,” he said. “Even if I’m wearing one of my plain polos, my black slacks, I got my socks rocking.” “It’s important that the way I dress, the colors I choose, are a reflection of my design work and my ability,” Jeff said. “I think that fashion and home design run parallel to each other.” In fact, he said his job all starts by how he presents himself to his clients. Upon meeting them to establish their wants, needs and wishes, Jeff said his additional responsibilities are to stretch their imagination to allow them to experience something different at their residence. “Hopefully, there’s a subtle underriding current, that when they see how I’m dressed, they think: ‘If it works in fashion, why won’t it work in my home.’” One of the things that inspires Jeff, aside from media, is nature. From choosing patterns to color combinations, it’s all in the matter of being outside, he said. “Nature exposes us to a merit of colors, textures and patterns, all colliding together at one time,” Jeff said.

“And really, in a very simple and beautiful way. We see it in sunrises and sunsets, and they look very different from each other.” Those lively colors are also seen in his closet, along with the words, “Knowledge, Wisdom and Truth” painted on the wall above a collection of donkeys. This is a philosophy embroidered on Robert Graham shirts, Jeff ’s favorite designer, which doesn’t only reflect his view of menswear, but also his lifestyle. “Knowledge, wisdom, tr uth represents a philosophy, based on the Robert Graham shirts that I collect, I love, that speaks to my personality,” he said. “It’s also his philosophy that if we have knowledge, wisdom and truth, then, we begin to reach a perfection that is real. And one that we can grow, learn and respect other people. It reminds me of who I want to be, who I try to be.” Jeff said Graham’s unique attention to detail transforms men’s clothes into fun and wearable pieces. “The fact that he allows men to wear candy skulls on their cuffs and a phoenix embroidered on their shoulder ... it’s done subtly. Yet, it transforms to be fun and kind of gives clothes a personality and reflects my personality of being a little bit of an oddball,” he said. Jeff even regularly selects clothes for his wife and two daughters. His oldest daughter, Ivy Meehan, said she can always count on her dad to send interesting, timeless pieces right to her doorstep.

“It’s kind of always relied upon,” she said. “Even though I have my own life, he’ll send me a jacket he found somewhere in his travels. He does it for my husband too.” And during special occasions, her father was the one to help choose the important things, like her wedding dress. “He found my wedding dress,” she said. “He found my prom dresses too. Now, I have a collection of these prom dresses that still get used 10 years removed.” Growing up, Ivy talked about how her father’s sense of design, fashion and lifestyle are all related to each other. “He was a little bit different,” she said. “He’s introverted, but he’s got this eccentric personality and style. And he goes back and forth between the two.” “I feel like that creativity that he uses with his job, reflects on what he wears,” Ivy Said “I’m kind of weird,” Jeff added. “I’m a guy, but I see things from a different perspective. I try to make it a good thing rather than something I don’t acknowledge.”

According to the International Waterski and Wakeboard Federation (IWWF), World Wakeboard Council, the sport took off in the ’80s. “Today, it is the fastest-growing sport worldwide,” it said. “Akin to snowboarding, the sport’s popularity is spreading like wildfire around the globe. Evolving from a combination of surfing, snowboarding, skating and waterskiing, wakeboarding is not only the world’s fastest-growing water board sport but also the most accessible.” Of course, this is nothing new for the 34-year-old, real estate agent, who grew up on Lake McQueeney with waterskis and wakeboards strapped to his feet. “I started waterskiing when I was 6,” Hunter said. “I started skiing with the Ski Bees when I was 6 until about three or four years ago. Wakeboarding didn’t come out until I was about 10 or 12 years old, but I kind of did it and didn’t really do much with it, until I was about 13 or 14.” With the help of a friend, Hunter began honing his skills on a wakeboard. “He would learn something and teach me, and I’d learn something and teach him. We would teach each other and push each other,” he said. “We just started pushing each other, and going to competitions, (the passion) just grew. That competition between us two, pushed us to the level that I actually got to.” Wakeboarding is similar to snowboarding because riders can show off their individual style, the IWWF said. “Riders are able to perform awesome ‘big air’ tricks, whilst being towed behind a boat, with the use of larger wakes,” it said. “The rider stands sideways on a shorter, wider board similar in concept to a snowboard. By traveling at a lower speed than in waterskiing and by carrying extra weight (and a compliment of cheering friends), the boat kicks up a big wake. The rider uses this wake as a launch ramp where a variety of tricks are performed. These can range from skate/snowboard inspired grabs and spins to massive flips and soaring jumps.” After graduating from Seguin High School in 2000, Hunter went to Texas A&M University, where he joined the wakeboarding team. In 2003, he was named the National Collegiate Wakeboarding Champion, which he attributes to the help of his friends 32 SIZZLE ~ SEGUIN LIVING

pushing him along the way. “I learned a whole lot in college,” Hunter said. “Plus, working at the different theme parks, you are working with some of the best of the best, and they are out there pushing us to do better. I didn’t do the competition to win, I did it because I loved it. It was just fun, it still is.” When Hunter wasn’t studying or wakeboarding for A&M, he took summer jobs that enabled him to not only keep practicing, but broaden his skills.

“I skied professionally for four summers during college,” he said. “I worked for Sea World San Antonio for two years, in the ski show at Six Flags Great Adventure in New Jersey for one summer and Six Flags Marine World in Vallejo, California, for one summer. It was fun.” Over the years, Hunter has shared his passion with others by giving lessons. Now, with help from his wife Ashley, Hunter is sharing his passion with his sons ­— 5-year-old Rylan and 3-year-old Zane.


“I got my family into it,” he said. “Both of my boys started skiing when they were around 2 years old. My youngest started skiing when he was around 17 months. Rylan just learned how to wakeboard. They are getting an earlier start than me.” In trying to keep inline with how he grew up, Hunter tries to make wakeboarding and skiing a fun, family adventure. “The thing I loved about it when my parents were raising me in the sport, it was fun with the family,” he said. “That’s what I want it to be with my family, not a chore, not a requirement, there are no expectations or bars that I am setting that they have to be able to jump the wake or do a flip by this age. As long as they are having fun, then, that’s what makes me happy and ultimately them happy.” Hunter also is sharing his passion for the water and wakeboarding with his clients. “I got into waterfront real estate because I am living this lifestyle, I’m selling

this lifestyle,” he said. “We hop on the boat, and I show them the houses. Sometimes, I even get them in the water. Wakeboarding is fun. It is friendly, and it’s social.” Ultimately, Hunter said when he hits the waves, it’s to wash everything away. “It is the best stress reliever out there,” he said.

T

here’s something about Guadalupe County, especially when it comes to wine. It’s as if the sun sings sweet summer melodies, encouraging grapes to reach their full potential, while the soil provides an earthy counterpoint, gently intertwining to create a symphony of flavors grounded by its Lone Star roots. In a way, the environment at Blue Lotus Winery and Texas Mead Works mimics the relationship owners Mike and Melissa Poole have. Mike, a meticulous wine and mead maker, is constantly looking to refine his spirits while Melissa keeps the operation grounded, laying the foundation for which to cultivate their niche in the Texas wine and mead markets. A U.S. Navy veteran, Mike said his journey with wine and mead started during his time in the military. “I’ve been making beer, wine and mead for about 24 years now,” he said. “It started when I was in the service. When we would overhaul a ship, there wasn’t a whole lot to do when the shipyard comes in, so we’d go to a friend’s place off base, and brew beer and toss horseshoes.” While his downtime allowed for his interest in spirits to ferment, Mike’s path to winemaking started with his volunteer work. “I volunteered, helping teach wood shop at a junior high school, and the regular shop teacher also brewed beer,” Mike said. Because of their mutual interest in brewing, the two hit off. “I went over to his house one day, and he was making wine and mead,” Mike said. “He was the guy who introduced me to it in the early ’90s, and it just took off.” From there, Mike continued to hone his craft, learning balance and flavor profiling through hands-on experience. However, it wasn’t until Mike met his coworker turned future wife Melissa that the seeds were planted for Blue Lotus Winery. The two hit it off, and began dating. Eventually, Mike and Melissa took a vacation to New England together. Melissa said they toured many wineries during their trip, but a last second stop changed everything. Mike laughed, saying it was all because of a miscalculation on his part. “We got back to Boston to catch our plane, but we got back early. Here in Texas, you may have to drive 4 or 5 hours to get to the airport, but in New England, you can drive 30 minutes and go through two different states — it doesn’t take a whole lot,” Mike said, laughing. “I had mismanaged our time, so we had a few hours to kill, and Melissa didn’t want to wait in the airport. So, she got on her cellphone, and said ‘Here’s another winery.’ I looked at it and said, ‘That’s not another winery, that’s a meadery,’” Mike recalled. “She didn’t know what it was, so I explained it to her, and she said ‘Let’s go try it.’ So we did, and she tried it and asked me ‘Can you make this?’ I said ‘I’ve been making this for years.’ So she said ‘Why aren’t we doing this? Since we don’t have to get the grapes, all we have to do is get the honey and save a lot of time.’” “Melissa actually talked me into doing the mead, and it has been hugely successful

here in Texas,” Mike said. “We were the second meadery to open in the state — now, there are six or seven open in Texas.”

BLUE LOTUS WINERY & TEXAS MEAD WORKS “We began making wines and meads for commercial consumption in 2010,” Melissa said. “We didn’t actually start selling any until 2012 — we had to age everything properly.” Blue Lotus Winery moved into their new building, at 5151 Farm-to-Market Road 20 near Seguin, in February 2015. Since then, Mike said sales have been up more than 400 percent. This success is likely due to the duo’s focus on quality and artistry. In fact, Mike said the secret to their success is listening to the ingredients so that the final product is a symphony for consumers’ palettes. “I love the artistry of every year’s vintage,” he said. “When it comes to those grapes

coming in off the vine, what are they going to do this year? I let them talk to me. I’ll do a standard processing — cleaning them, crushing them, destemming them — and I’ll have an idea of what I want to do. But after they’ve fermented and shown me their acidity levels, their alcohol levels, their tannin levels and their color, I make a judgment call as to what I want to do with it.” That extra time and effort is part of Blue Lotus Winery’s overarching focus on quality, Melissa said. “It’s all about providing balanced, quality wines and meads in a family-friendly atmosphere,” she said.


A CAREFULLY CHOSEN LOCATION “I specifically selected this site because the hill slopes to the west,” Mike said. “It has a definitive slope; there’s a 22-foot change in elevation from the front of the property to the back. It’s just enough to let the water soak in but steep enough to let the runoff take place, so there’s no standing water which is bad for grapes. Grapes like to drink, but they don’t want to be swimming in it.” This environment has allowed Blue Lotus Winery to experiment with the varieties of grapes they produce. “The variety of grapes we grow here are best suited for this part of Texas. I’m growing varieties that are either hybridized or native to Texas,” Mike said. “I’ve been experimenting with what varieties to grow here. I know what the books say, but I have to put it to practical use.” This experimental attitude has led Mike to some surprises with certain grapes, specifically the Cynthiana variety. “We grow one variety called Norton, or Cynthiana,” he said. “I’ve talked with a lot of vineyard owners in Texas who planted it and ripped it out, because it had low yield. It makes some of the world’s best wine; however, because of its low yield, growers worry about profitability. Come to find out, it grows really well here. They are thriving here and our yields are up because of the way we prune them.”

t’s been said many times, you are what you eat, but, Randy Rye says no, in fact, “you are what you eat, eats.” That’s why it was important for him and his wife, Ellen Laubhan to create their own food destination, Idyllwild Acres Grass-Fed Beef, to raise their cattle, chickens, while growing seasonal vegetables in their garden. “We take our food very seriously,” Ellen said, laughing. “We have an abundance, and that’s where the business came in,” Randy said about how it all started. Starting from the ground up, He said their farm specializes in rotational grazing, allowing the cattle to eat what they need constantly. “We’re always moving them to fresh pastures, so they get new grass and move away from the old grass,” Randy said. However, in order to sustain the amount of grass needed to feed the cattle on their 20acre property, Ellen said, “pasture irrigation is one of the keys.” “Our pasture is many different kinds of grass mixed together. We’ve got native grass, improved grass, in winter we have the ryegrass or the clovers. When you rotational graze, it allows you to do that,” Randy said. “With cattle, their instinct is go to the one best thing, and they’ll keep eating that until it’s gone. So, if you don’t rotate it, the very best grass gets all that pressure, by moving them, it gets a rest.” But to get green grass, Randy said you need an irrigation system in order to keep the cows grass-fed, bulking them up.

“You need the green grass to make them fat,” he said. “To finish them on grass, in Texas, is hard because you need green grass all year-round, and that’s what we’re trying to do.” Randy said there are a couple of tricks someone can do to keep grass green yearround, allowing for young, fat cattle. “So, we plant grass for the winter, so the winter grass can grow in the late winter, early spring. That’s usually the hardest time for people, but that’s actually the best grass we have,” he said. “In order to get them big and have fat on them before they get old, it’s kind of a contest that within two years, they need to be ready. But, to grow up and be that size, they need lots and lots of food.” Randy and Ellen said at Idyllwild, they have a foolproof plan for achieving their goal. “Our strategy is that we want to promote the things we do want, and get rid of the stuff we don’t,” he said. “We don’t use any herbicides or pesticides in our pasture. We’re using the goats for weed control instead; they prefer the weeds.” But grass isn’t the only thing that’s important, Randy said. It’s the food chain as a whole. “You think about the health of the cattle, you think about the health of the grass, but the health of the grass is really determined

by the health of the soil. So, we’re trying to change the nutrients of the soil, which changes the nutrients of the grass which changes the nutrients of the beef,” he said. “If you kill anything in the food chain, it impacts everything.” As Ellen said, summing it up, “There’s three important things about it: the beef is healthy to eat, it’s healthy to the environment, and it’s healthy for the cattle.” Athletes, people with health problems or people who are concerned about their food in general, are Idyllwild’s typical customers. “The people who buy grass-fed beef, they care a lot about what they eat, their health, their nutrition for their bodies,” Ellen said. “It’s becoming much more popular, and people are learning a lot more about their food.” In addition to selling grass-fed beef, Idyllwild also dry ages the meat to make it more flavorful. Park West Splash Pad Looking for a low-cost way to cool off with the family, nothing compares to the free entrance at the Park West splash pad. Positioned on the edge of the 47acre community park on the corner of San Antonio and North Vaughan Avenues, the splash pad has more than 30 spray features including the large bucket that dumps every cycle, of about 3 minutes. From athletic fields to a skatepark, playscape and nature trails, Park West offers attendees a variety of activities for all ages. Plan on making a day of it? The large pavilion and four small picnic pavilions are available for rent through the city of Seguin, call 830-401-2480. If not rented with paid reservations, all pavilions and individual picnic tables are available on a first-come, first-served basis.

Luckily, right here in Guadalupe County, there are several ways to cool down when the sun starts bearing down. And just a short drive outside of the immediate area, there are a variety of more choices to cool down at while hanging out with friends, vacationing or just spending the day with the family. son’s island Just a short drive outside of Seguin, Son’s Island at Lake Placid, is a relaxing and beautiful, three and half acre island paradise where guests can swim, fish, ride the waterslide, rope swing, play volleyball or enjoy a game of horseshoes. The private hideaway, which includes Hawaiian style cabana huts, is accessible by driving across a 100 foot long wooden bridge. Surrounded by large cypress and pecan tress, the 26 lakeside cabanas available for rent will hold up to eight guests and features a picnic table, hammock, lounge chairs, barbecue pit, comfortable seating, bar top and stools, water and electricity. Want to bring your own boat, many of the cabanas have a personal dock. Planning an outdoor wedding, large family reunion, office party or retreat, the entire island may be rented for private parties, gatherings or celebrations. ZDT’s Amusement park Along with being Seguin’s only family entertainment center with five indoor attractions and the newly-opened Switchback wooden shuttle coaster, ZDT’s Amusement Park, 301 W Kingsbury St, also includes three water slides. The Mad Raft HydroCoaster uses water jets to propel rafters uphill, experiencing the ups and downs, twists and turns, splishes and splashes of the attraction. Then, choose between riding in a raft or on a mat, while letting loose and getting launched on the soaking excitement of the Viper. Lastly, visitors can speed headfirst down the down the thrilling drops to the end of the Viper’s Tail. Power Plant Water Sports Joining other area businesses located along or near the Guadalupe River last year, the Power Plant Texas Grill, added its own water sports and tubing adventures. Next to the restaurant, which serves signature dishes and drinks, as well as some traditional menu items, the Power Plant Water Sports’ tube rental and shuttle service provides both tube and kayak rentals in addition to shuttle passes. Contingent on the flow of the river, the float varies from 1 to 2 hours and may be done as many times as one wants for one price. TLU’s Mabee Pool Open year-long to students, the Texas Lutheran University Mabee Pool, which includes new LED lights and a diving board, extends its membership to the community typically starting in the end of May through the beginning of September. Memberships start at $80 for one person, a second family member is $55, and a third member is $45. A family of four is $215 for the entire summer. Also during the summer, group and private swimming lessons including parent and child aquatics, preschool aquatics and learn-to-swim are offered to the community. Additionally, the pool is available for private party rental May through August and by special request in the spring and fall. Seguin Aquatic center Located in the city’s oldest park, Max Starcke, the Seguin Aquatic Center provides visitors a chance to swim in its 15,000 square foot wave pool with a zero-depth beach type entry, as well as a splash pool with raindrop mushroom fountain for the smaller kiddos. Opening its season on June 4, the facility is also available to rent for private parties by calling 830-379-POOL(7665). Daily entrance fees are free for children 3 and under, $4 for ages 4 to 11, $5 for ages 12 to 59 and $4 for age 60 and older. Season passes may also be purchased at $75 for and individual pass and $125 for a family pass (max 6 people). Hours of operation are from 1 to 7 p.m. Tuesday through Sunday.
