Surprising the Senses It is a landmark of the Arlberg: the Arlberg Hospiz Hotel, located in St. Christoph at over 1800 metres above sea level. Its name already reveals something of its history. It was built over 630 years ago as a sanctuary for travellers crossing the Arlberg pass. Centuries later, it witnessed the birth of Alpine skiing and was soon part of the flourishing winter sport in one of the world’s most beautiful skiing regions. People of distinction flocked here, to one of the region’s first 5-star hotels. “Things have changed somewhat since then,” explains the 48th proprietor of the Arlberg Hospiz Hotel, Florian Werner, “as standing still won’t move us forward.”

Culinary Delights and a world renowned wine cellar at 1.800 m A Dine Around Arrangement offers a choice of five different restaurants at the arlberg1800 RESORT, a new one every day. Haute cuisine al-fresco dining with incredible views of the glittering mountain slopes and peaks on the sun terrace.

Treasures from the most renowned châteaux in Bordeaux are now stored in the two cellars - 5000 of them in larger format bottles. “Whenever there’s something to celebrate, an Imperial or a 15-litre Nebuchadnezzar rounds off the evening perfectly,” explains Florian Werner knowledgable. “Even more so when it’s an exceptional vintage from Château Cheval Blanc or Haut Marbuzet”.

NATURAL BEAUTY The owner’s grandmother taught him about the benefits of medicinal plants and herbs from an early age. This knowledge was passed down from generation to generation by their Breton and West Indian ancestors who dating back to 1648 were instrumental in the creation of the island’s history. Reinforced by this family heritage, LIGNE ST BARTH has been creating a harmonious union between traditional secrets and scientific progress for the past thirty years.

Eco-Luxury at its very best The Soneva story continues with Soneva Jani. Located on the island of Medhufaru in a 5.6 kilometer lagoon in the Noonu Atoll, Soneva Jani has uninterrupted ocean views in all directions. The lagoon is 35 minutes by seaplane from Malé International Airport and one hour by speedboat from Soneva Fushi. Meaning ‘wisdom’ in Sanskrit, Soneva Jani currently comprises 24 overwater villas and 1 island villa. Additional island villas will be built in phase two, expected to be completed in 2017 – 18. The resort is built in a lagoon of crystal clear waters, with five islands surrounded by pure white beaches, covered in rich tropical vegetation. Four of the five islands will remain untouched so it will be, by far, the lowest density development in the Maldives. The overwater villas are spaced across the expansive lagoon, offering privacy and extensive views over the Maldives turquoise waters. The island villas will be tucked into the lush greenery, providing the ultimate privacy, and all within steps of the beach. Soneva Jani’s main guest facilities are located at The Gathering, the heart of the overwater villas. This dramatic three story structure is home to the main dining outlets, in addition to the spa, library, retail area and wine cellar. It is located next to the Observatory. Facilities on the island include Cinema Paradiso, the Eco Centro waste to wealth centre, Organic gardens, Tennis courts, Water sports champa and Beach Club on a desert island in the lagoon. Soneva Jani celebrated its soft opening in October 2016 and is open to the public however some elements of it are still in the final stages of development, which are scheduled to be finished by February 2017.

A new initiative calling for accountability and sustainability in travel “Doing nothing is no longer acceptable. We want to ignite global consciousness about the urgency and the need for responsibility, creative solutions and action. Onno & Alexa Poortier

5

As a hotelier with extensive international experience, I remember when climate change seemed a distant possibility. Hoteliers started to discuss the “green issue” in the late 80’s after the UN published “Our Common Future” (Bruntland Report), which explained the concept of sustainability to create awareness of the disturbing relations between human society and the natural environment. Here we are thirty years later. Climate change has become the defining predicament of our time but the hotel industry is still hesitant to talk about the issues. Our sector prospered as millions travelled. Travel is the world’s largest and fastest growing industry, so you could argue we have contributed in both a positive and negative way to people and planet. However, as annual temperatures rise and the impact on our planet becomes more evident, we can no longer afford not to make the environment and social responsibility a business priority. Travellers today expect safer, more responsible, sustainable destinations and accommodations. However, our industry is not really clear about what that truly means. Today, many hotels are doing excellent work in sustainability and obtain certifications to reflect their growing compliance and legitimacy, but most still hesitate to be visibly transparent with their guests for a host of reasons. Many hotels believe that sustainability is not yet an important issue to today’s traveller. In many cases, they are right, but that is changing and changing fast. Consumers know that too many companies have prospered at the expense of society and nature. In particular, the next generation of travellers and hotel staff are critically aware that there is a direct link between sustainable business, the environment and people’s lives; and there is no hiding in today’s interconnected and interdependent world. I believe that a more caring and responsible form of hospitality will gain wide support from travellers and can be commercially successful. There will be increased demand from our guests for sustainable choices and greater expectations for hotels, resorts, cruise ships, train hotels and B&B lodgings to be credibly certified and independently audited. Sustainability saves money and its good for people, planet and profit. I urge owners and operators in the hospitality industry to move beyond seeing environmental and social challenges as costs, to seeing the potential savings and opportunities to make good things happen.

Onno Poortier

Founder, Chairman & CEO NOW Transforming Hospitality GmbH itmustbeNOW.com

NOW, a new initiative calling for accountability around sustainability in travel was launched on Earth Day (22 April 2017). Working as a ‘Force for Good’, NOW is forming a global community of consumers who are passionate about travel and want to help tackle the environmental and social challenges facing our planet. The empowered traveler with the wallet and the soon-to-be-launched “NOW Good Hotel Evaluator” in their mobile device will be our future guests and global influencer. Being a ‘‘FORCE FOR GOOD’’ matters to your guests, your staff, your community, our planet and your profits. We will be inviting qualified properties to join the NOW Force for Good Alliance to access the NOW Community and get direct bookings without being charged commissions. NOW is a legacy project in alliance with inspiring figures and companies from the hospitality industry. Join us … together let us support the industry we know and love, and drive the fundamental changes we need to help it thrive. It must be NOW!

NICARAGUA’S NATURE & SPORTING RETREAT

2

A VERY PERSONALISED NICARAGUA ADVENTURE The owner, Don Alfredo Pellas, Nicaragua’s renowned philanthropist and part of a long line of sugar barons - Flor de Cañas! and bankers, has just recently become HoteliersGuild’s latest member. His new eco-luxury Nekupe Sporting Resort & Retreat is a stunning eight-room countryside compound in the shadow of the Mombacho volcano, an hour and a half south of Managua.

It boggles the mind to think that this nature retreat is the first mountain resort to open in Nicaragua, a country blanketed by cloud forests and dormant volcanoes. NEKUPE means “heaven” in the local language of Chorotega and has a big social mission. It became part of the owners sustainable farming narrative when the Pellases decided to reforest their 1,300 acres by planting more than 14,000 endemic

teak, mahogany, and fruit trees. Now it’s designated as a nature reserve, with hopes that habitat restoration will bring back local populations of wild boar, iguanas, monkeys, and native birds.

Guests residing in one of the four 1,100-square-foot standalone villas will be treated to a pampered perspective of the dormant Mombacho Volcano through floor-to-ceiling windows and open terraces.

Nicaragua’s leading eco-luxury nature retreat

exclusivity is guaranteed in the eight comfortable villas that provide all

the finest hotel services & breathtaking views to the volcano

EcoLuxury Retreat & Private Villas The villas feature individual and selfcontained spaces for single and couple occupancy, with breath taking views of the Mambacho Volcano.

Don alfredo The owners, Don Alfredo and his wife, Doùa Theresa created three artificial lakes and planted more than 14.000 trees to attract birds and butterflies. And the Nekupe dining experience is a modern Nicaraguan cuisine with most of the ingredients sourced directly from Nekupe’s diverse on-site farm.

ELEGANCE AND NATURAL BEAUTY It’s your choice between ‘La Residencia’ - four serene suites offering absolute privacy, and the Villas, designed to a fully immersive experience in nature.

A MASTERPIECE An architectural milestone that was classified as a listed building shortly after completion. Having won national and international awards, the thermal baths attract those in search of relaxation as well as architecture enthusiasts from all over the world

3

FEASTING ALL SENSES Guests at the 7132 Hotel escape the mediocre mainstream and are treated to the last true luxuries of the hectic modern era: leisure, tranquillity and relaxation. is is a place to unwind, indulge oneself and savour the moment in an inspiring and stylish setting. e 7132 is committed to anything that appeals to the senses: exceptional architecture and design, exquisite cuisine and a world-class thermal spa.

The first written references to the curative effects of

thermal springs

Vals’

date back to the 17th

century.

Doctors in the 19th century recommended therapeutic baths in Vals to treat dermatological conditions.

Recreational tourism became the focus in 1964 when German industrialist Kurt Vorlop transformed the original

sanatorium into a

modern health resort.

In 1983, the municipality of Vals purchased the hotel along with the thermal baths and commissioned Grisons architect

Peter

Zumthor to design a new spa. When the baths re-opened in 1996 the news spread around the world, and critics praised Zumthor’s work as

“lesson in courage and aesthetics”

a . It was only natural for the baths to be declared a national monument in 1998, just two years after they re-opened.

The municipality sold the hotel and baths in 2012.

New owner

Remo Stoffel, a native of Vals, has since invested in the future of the resort.

It was the unique quality of Vals that provided the inspiration for a new

name. 7132 is the postcode of the municipality and has become the trademark of a new tourism concept: the stated aim is to move away from mass tourism and instead preserve the authentic,

exclusive nature of what Vals has to offer.

The entire complex has been renovated and expanded in order to meet the expectations of a discerning contemporary clientele. Plans featuring further avant-garde projects are also in hand with the aim of enhancing the image of Vals as a

7132 THERMAL BATHS The legendary thermal springs are what makes Vals unique. The highly mineralized water that emerges at 30° Celsius from St. Peter’s spring has attracted visitors to the spa for more than 100 years. In 1996 architect Peter Zumthor rose to international fame with his design for a new spa complex. Consisting of raw concrete and 60,000 slabs of local quartzite stone, the monolithic building is an architectural tribute to the archaic beauty of the Vals valley. It has been acclaimed by leading architecture critics worldwide. Peter Zumthor was awarded the Pritzker Prize in 2009.

A culinary introduction to Mario Gamba, owner and Maitre Cuisinier of Munich’s most famous Italian restaurant,

ACQUARELLO. Mario is holding his Micheline star since many years and has received countless international accolades, amongst them ‘Best Italian Chef outside Italy’. In his new book, CAPRI MARE he shows healthy dishes, the secret of which is purity and quality.

5

“A highly educated palate meeting a perfectly prepared meal doesn’t automatically lead to a feeling of pure indulgence if not the innermost of the eater is touched.… …it is my culinary intention to exactly meet this demand at my restaurant Acquarello: It’s my endeavor to compose meals that live up to the highest expectations. In an atmosphere that touches the souls of my guests.”

“We all still remember our favorite childhood dish. When the smell of this so very special meal spread through the house and our expectations and impatience grew stronger and stronger: Maybe we were sitting at the kitchen table watching our mothers preparing the meal, ready to pounce on the result of their cooking. How did we enjoy this meal! Each bite a revelation, the plate licked completely clean; hardly eaten, we were already looking forward to the next special occasion that would bless us with this special dish once again. And doesn’t still today this pleasant feeling set in, when we think back to the treats of our childhood?”
