Holidaying Under the Influence in Bali Bali Governor Working to Make Balinese Arak Mainstream Beverage Tuak can be fermitted from Rice or Palm Juice.

Jakarta Post reports that Bali Governor Wayan Koster is working to legalize the production and sale of Balinese Arak – a local Balinese alcoholic beverage made by distilling tuak – with the resulting beverage having a strong liquorice taste resembling Ouzo or Pernod.

The alcohol by volume of Arak can average between 40-63%. Quoted by the Jakarta Post, Koster asked before the Balinese House of Representatives: “How is it that we are allowed to imported liquor, but arak is prohibited? What is the logic behind such legislation? I think those who drafted it made a mistake. Therefore, we will legalize arak.” To start the process leading to legalization, the Bali provincial administration as sent a letter a letter to the Industry Minister seeking the revision of a Presidential Decree in

order to legalize Tuak production and consumption. Koster, showing an independent streak, has said failing the issuance of a new Presidential Decree he would issue a Provincial decree legalizing the beverage. Before Tuak can be legalized the Provincial administration plans to regulate production to ensure hygienic production methods are put in place and alcohol levels are standardized. Sold widely as illegal moonshine Tuak has a popular following in Bali that Koster sees will foster a profitable industry and a new aspect of the Island’s culinary culture that could be promoted to the world. Ok so Sista is really more modern Shangai fare, with a hint of French influence in all the right places - yes, we’re talking about their cheese platter served with five types of cheeses and honeycomb (yyummm) as well as the passionfruit meringue pie… Oui monsieur, we’ll have them both with a glass of French sauv blanc, merci! However, the real pièce de résistance is the full menu of delicious dumplings and healthy steamed dishes. If you’re anything like us and have literal wet dreams about dim sum, you’ll wanna get on the first GOJEK to Jl. Raya Semat. But we’re warning you in advance: be prepared to roll out with a belly fuller than their BBQ pork belly bao and a borderline unhealthy obsession with Sista’s dumplings. Chinese French Fusion... Wait a second, why does that sound familiar? Cause it damn well should! Bro Resto, the older brother to Sista Canggu, has long been a favourite of ours on the Batu Bolong food strip and we could not be more excited to welcome this younger offspring that the French-Chinese power couple have managed to procreate to the Berawa food scene. You’ll have trouble choosing between the Pork & Turnip Mandu and the Beef & Celery Potstickers (both different varieties of dumpling, despite the foreign-sounding names), though the Silky Chicken Wonton in Chilli Oil is actually the way to go. Or wait, no... Ordering all of them to share is the actual way to go. Add a serving of the Steamed Barramundi - served on a bed of broccoli, honey ubi and vermicelli - this had us scraping the steamer for every last bit of tender fish. The Steamed Prawn and Pork Patty was another Gu Girl fave, though a few us were jealously eyeing Baby A’s stuffed chicken bao buns... How come kids get all the cutest food?! No fair! Speaking of kids… Sista is one of our favourite family-friendly new venues with a kid-friend yard out the back and a slide to keep them entertained as you enjoy the steamed squid and a glass (or three) of the imported Rosé. And while the little ones are playing and their parents are taking some much-deserved adult time, the rest of us are guaranteed to be taking advantage of the ‘Grammable backdrops that Sista has to offer - We’re talking about all the Insta-friendly murals, the colourful illustrations by Nancy Chalmers (we LOVE!) and the rest of the easy-breezy island style interior that we are now officially obsessed with. If you aren’t feeling a little rounder than when you first set foot in Sista, you must have forgotten to order the Purple Power smoothie - served in a fishbowl much like the jungle juices we’ve all enjoyed in our Kuta days (No? Just me?), the size of this fresh smoothie makes it more of an entire breakfast meal rather than something to wash your lunch down with. Note to self: remember that for next time. Speaking of next time.. Sista has just launched their dumpling deli and while we can only cram so many dumplings into our bellies in one sitting, we absolutely LOVE the fact that we can grab frozen dim sum to go and have our own little feast at home. Open for breakfast, lunch and dinner - we can’t wait to try out the rest of the menu! With an expansive rice field view in the back and a breezy seated area with sofas, you’ll be sure to see us lounging around in between seconds and thirds of steamed dim sum goodness. Bali religious groups push for a 24-hour total internet shutdown during Nyepi data. Although ISPs were allowed to keep operating, they did block social sites like Facebook, YouTube, and Instagram.

Indonesian Hindu groups are once again urging authorities to cut off Bali’s internet supply during the holy day of Nyepi, which falls on Thursday, March 7, this year. Nyepi, which marks the beginning of the Saka New Year in Bali, is traditionally a time for silence and self reflection, during which work, travel, entertainment, and lighting fires are strictly prohibited. Last year, authorities complied with the requests by blocking mobile internet

“The purpose of the termination of the internet is the same as last year; so that Hindus can solemnly carry out Nyepi day,” said the chairman of Parisada Hindu Dharma Indonesia, Bali, Prof. Dr. I Gusti Ngurah Sudiana, as quoted in detiknews. Sudiana expressed his belief that, in previous years, the distracting influence of social media had detracted from the true essence of the Balinese ‘Day of Silence’. “With no internet last year, there were almost no ‘defects’ during Nyepi. Hopefully, with the proposal of the

internet shutdown, the special requirements of Nyepi will be better executed, and the people in Bali will be more calm and peaceful, especially leading up to the 2019 election,” he continued. But according to a report by Bali Post, the final decision as to whether the island’s internet will be fully suspended has yet to be made. While television and radio broadcasters signed a memorandum of understanding (MOU) to assure their cooperation in suspending transmissions for the 24 hours over Nyepi, there still remains a question over what internet services will remain available during the holiday, if any. Even if the internet is turned off this year, however, it will likely once again be limited to cellular data. And of course, emergency services, hospitals, airports, and disaster agencies will be exempt from the shutdown. (coconuts.co)
