Much prayers and consideration went into this decision. The results have been amazing. My mobility came as soon as the procedure was finished. I am walking without pain. Central Florida Winds conductor puts meaning into music BY JUDY BERMAN Richard Sabino was 6 when he began his musical training, first with the piano and trumpet. Later, in junior high school, his interest shifted to conducting. At 16, while taking part in a summer music festival with the London Symphony Orchestra in Daytona Beach, he received his first important conducting advice from the late Andre Previn, a German-American pianist, composer, arranger and

Sabino explained that, otherwise, “the conductor is reacting to the group, rather than leading them … and the music is not as fluid.” For the past 20 years, the Satellite Beach resident has conducted the Central Florida Winds (CFW) and Central Florida Chamber Winds (CFCW). It totally grabs your attention,” Sabino said, adding that, later, you start thinking about what you saw and heard. That’s what he wants his audiences to leave with. While their concerts draw about 300 people, Sabino said he’d love to see more young people attending. “I’ve conducted concerts in the Ukraine and Romania. Lots of young people were in the audience,” Sabino said. “Here, our tastes are driven by a diet of pop commercial sound. The younger ones love playing music. They understand it.” Sabino said the only way to get more young people to appreciate music is by reintroducing them through music programs, starting in grade school. They have a core group from Brevard County and Orlando, but about 60 percent of the musicians are from outside the area. “I have to be very thoughtful about the use of the musicians’ time because so many come from so far away,” he said. Sabino said there’s a difference between playing the notes on the page and communicating the nuances of a story to the audience. “Musicians try to get

Viera’s Pinzone fueled by desire to get to state wrestling tournament BY CARL KOTALA Fueled by a desire to go one step further than he did last year, Viera High School wrestler Andrew Pinzone put in a lot of work during the offseason to prepare himself for the best season of his career. “As a freshman, I had a tough bracket and I didn’t get to regionals,” the junior said. “(As a sophomore at) regionals, I had a tough bracket and I didn’t get to go to states. “Now, I want to be able to beat anybody I go against, no matter the bracket.” Pinzone, who was off to a 17-3 start, is one of the awks’ best bets to get to the state tournament this season. The district tournament is Feb. 21 at Melbourne, with the regionals scheduled for Bayside High School one week later. New track would bolster Viera High, community as well BY GEORGE WHITE A new rubberized track surface at Hawks Stadium at Viera High School could be the start of making Viera the center of athletic achievement, both for VHS students and community runners, said Brevard County School Board member Matt Susin.

“One of the big goals of the Back The Track initiative is to have the new track open to the community.” — Matt Susin

The Back the Track goal is to raise $300,000 — for which nearly half already has been raised — to install a state-of- the-art surface that could become a draw for district wide and regional and off-season meets, he said. Soft-surface tracks are designed for durability and low maintenance, including being resistant to weather. “We want to turn Viera into a leader in the athletics and the track world. Ultimately, Viera needs to lead the state

and in order to do that we have to give our kids the best athletic facilities around and that includes rubberizing the track. We want to be able to brag about this facility,’’ he said. For the community, when

not in use by VHS, the track could benefit the health of all ages by providing a place whether they are running, walking or exercising. Susin has a vision of the completed project, with the track lit for early fitness enthusiasts and

at night for runners to use after work. “One of the big goals of the Back The Track initiative is to have the new track open to the community,’’ he said. Spearheading a variety of fundraising activities

its teams face having to play its home games at Viera Regional Park. Originally VHS teams played at Space Coast Stadium, which originally was the spring training facility for

the Florida Marlins (1994 to 2002), Montreal Expos (2003 and 2004), and Washington Nationals (2005 to 2016). Viera High School opened its doors Aug. 9, 2006. V S got on the fields

during its time as home of the Brevard County Manatees (1994 to 2016). Therefore, it didn’t need its own complex as is found at every other high school with baseball programs in the county. VHS has been back on the fields since they were taken over by the United States Specialty Sports Association (USSSA). Founded in 1968 as the United States Slowpitch Softball Association, the USSSA has grown from a couple of thousand slowpitch softball players to more than 3.5 million participants playing 13 primary sports. Even though technically not a home field for V S teams, the arrangement with the USSSA has worked well, especially with fundraising opportunities, Susin said. “Our schools sold $5,000 for the baseball and softball programs worth of sponsorships to hang banners inside that park. SSS is a premier place,’’ he said. The SSS fields require the use of special rubberized cleats rather than metal cleats. This was after the SSS converted the fields from natural grass to artificial turf. When teams recently announced they did not want to play on the SSS fields

is Viera Pizza owner Mike Acosta and Brittany Struefert, through their Power of Pizza Charities. The nonprofit organization has so far raised $50,000 to be matched by the school board, with total donations at press time totaling about $125,000, Susin said. The goal is to have the track pro ect finished for next track season, he said. “Once we go all in, we’re going to make this thing happen. We’ve gotten an overwhelming response so far,’’ he said. Back The Track will host a fundraiser with special appearances by local mascots from 6:30 p.m. to 8:30 p.m. March 11 at Viera High School. About a dozen mascots have signed up, including Viera i a’s mascot Joey Pepperoni, ucker ickle Juice’s mascot ucker, Space Coast Runners’ mascot Drago the Dragon and Viera Voice's mascot ViVo the Sand Hill crane. For a $5 donation, attendees can take photographs and get autographs. For more information, go to VHSbackthetrack.com. VV

because some of their players use metal cleats, the school was informed that all games would be played instead at the regional park. “Three softball teams decided not to play at the SSS ,’’ Susin said. “Those are Melbourne, Bayside and one other school. All baseball teams have continued to play at the stadium.’’ When playing in a public park, Viera High is not allowed to hang banners to raise money or continue the other traditions of home fields at other high schools. “How much of a home game is that? A true home is you turn the dirt with your players to get the field ready. You have the trophies that you’ve won. What they did by never building a new facility is take that away from Viera kids and that’s ust wrong,’’ Susin said. As a compromise, the rest of the VHS games will be allowed to play at the SSS fields — unless an opponent objects — and Viera High School programs will receive $500 per game to compensate for the inability to advertise, Susin said. The next step is getting cost estimates to build baseball and softball complexes on the VHS campus, he said. VV

Fencing draws participants of all ages BY WENDY SCHE RING

Fencing is a sport that allows you to participate at any age and any fitness level. “It’s a very physical sport that will get you in shape,” said instructor Greg Arthur, , of Suntree. “It’s also known as physical chess because you have to think about multiple moves ahead of time.” “All fencers need to wear a mask. I provide the mask, the jacket and the weapon. I tell the students to bring their own glove. They can wear jeans and gym shoes.” Arthur has been teaching fencing at the Viera Regional Community Center since 2008, where he takes novice fencers and gets them to a competitive level. “One of my competitive fencers is 40 years old or so,” he said. “I’ve had an 1 year old in my class before. In general, however, they are mostly teenagers.” There are three types of fencing: foil, epee and sabre. “The foil and epee are point weapons,” said Arthur, who competes in epee. “The

only way to score is with a stabbing motion. Sabre is a cavalry weapon. The target area is from the waist up. In epee, the whole body is targeted. Foil is the court weapon, just the torso, hands, arms and shoulders.” One of his students, Sarah Drack, 14, of Indialantic, qualified for the Nationals in Columbus, Ohio in her first foil competition. “Fencing provides new challenges no matter whom you’re going against,” she said. “It’s a mentally complex sport. You have to predict what they’re doing before they do it. You need to have quickness

of thought.” She added, “There are going to be people who are better than you. You need a lot of practice and training and an I can do’ attitude.” Instruction is held at the Viera Regional Community Center at 2300 Judge Fran Jamieson Way from 5:30 to 6:30 p.m. each Monday and from 6 to 7 p.m. each Wednesday. At each lesson, students are given oneon-one instruction, then they fence with other class members. For information, call 321-433-4891 or go to brevardfl.gov. VV

SCHOOL

Innovative, interactive elementary school coming to Viera

BY WENDY SCHE RING Construction crews continue working seven days a week on Viera’s new elementary school in order to get the 120,000-square-foot building completed by the end of June. The school, yet to be named, is located on a segment of Stadium Parkway currently inaccessible to the public. The school will be flanked by a church and a 55-andolder community on its south side, and yet-to-be-built subdivisions on its north side. “It’s being designed and constructed with students of today and tomorrow’s world in

mind. Very modern. Very 21st century,” said Adrienne Schwab, the school’s new principal, and the former principal of Meadowlane Intermediate. The school building boasts 54 classrooms (40 feet by 40 feet) that will line its periphery, six resource rooms, a media center, a multi-purpose room with a stage, and separate art and music rooms. Students will have access to computers every day. In the classroom, teachers will use a Promethean board, an “interactive whiteboard that allows you to project an image from a laptop or a computer, as well as interact with the board

through touch or specialized pens,” according to study.com. “We are going to have some flexible high impact seating options,” Schwab added. Those include rocker options for students who need room to wiggle. “For some of the older grades, we’re hoping to have some options where students can stand to do their work instead of just sitting.” The interior will feature modern colors and furniture. The school currently has open boundaries. Applications will be accepted beginning Feb. 3, with seats offered March 13. All students in the district can apply. Manatee and Quest

students will have preference. Students accepted through the lottery process will be guaranteed a seat in subsequent years, but will need to fill out a renewal application every year, according to Schwab. Enrollment will be capped off at 600 students this year, although the school’s capacity is 970. Four classes each for grades kindergarten through fourth and two classes each for grades 5 and 6 are anticipated.

“It’s exciting to build the school culture from the ground up,” Schwab said. “My vision is to have a very collaborative, innovative learning environment for students.” For more information, go to @newbpselementary2020 on Facebook, the website Brevardschools.org/ newVieraES2020, or contact BPS via email at Vieraareaelementary@ brevardschools.org or by calling 321-735-9735. If last year was a bit of a learning experience for Viera igh School’s awks Robotics program working in its first year as an independent group, this is the year the students get to show off how much they’ve improved. “I think we can be a lot better,” senior Ryan Buchanan said. “Last year, it was the first season. We spent a lot of wasted time and resources just trying to work out the kinks. I think now, we’re coming back with more experience. We’ve got more team members, more resources. “I think we can do significantly better.” This year’s game is called Infinite Recharge, which should provide quite a challenge for the Viera team known as Wingspan. “There are yellow balls, called power cells, and you have to put them in a power port, which is on the opposite side of where the drivers are,” sophomore Molly Walsh said. “They have to either cross through the middle, where there are 1-inch metal bars that will create an obstacle and slow down the robot. “On the sides, there’s a trench where you can go under. It’s faster, but your robot has to be low. If you get a certain number of power cells (into the power port), you can go to a wheel by the trench and you can spin it a certain amount of times or spin it to a certain color. “Then in the last 15 seconds of the game, you can hang from a bar. If you can balance the bar, then you get extra points.” The first competition is set to take place Feb. 26 to March 1 in Myrtle Beach, South Carolina. That will be followed by the Orlando Regional (March 11 to 14) at UCF. Should the team qualify in one or both events, it would then head to the FIRST Championship in Houston from April 14 to 19. In the meantime, Wingspan is in its building season, which Viera teacher David Formanek, who serves as the director and head coach of the Hawks Robotics

team, said is one of the best times of the year. “The best way to describe the six-week build season is organized chaos … but good chaos,” Formanek wrote in an email. “As an outsider looking in, it may appear as though we’re all running around aimlessly, but everyone knows what to do, they are collaborating, among different groups, and we’re all focused on the end result. This year’s team is made up of Walsh (head of strategy); Buchanan (chief engineer); Parker Helms (head of software); Taylor resley head of finance ; ai Rodriguez (head of PR); Zack Knutson (head of safety); Sid Antoine; Jozee Banks; Alyssa Blood; Michael Brown; Alex Budko; Josh Carrizales; Caleb Cogan; Melania Currie; Erek Dibbern; Ethan Franklin; Evette Goldberg; Ale Gonzalez Nieves; Tristan Hera; Jake Howard and Rayyan Jamil. Other team members include: Bri Loughran; Ryan Lynch; Abi Magiday; Richard Magiday; Kyra McGowan; Michael Miniclier; Ethan Moran; Eddie Pawlak; Elijah Shepard; Alex Sprunger; Angel Stahl; Isaiah Tadrous and Danny Zheng. Helms, who believes he has become a better leader since the past year, said his biggest challenge will be “making sure everyone has something to do, that we don’t have people sitting idle and not doing anything so we can get stuff done as soon as possible.” Helping the students out will be a team of mentors that includes Formanek; Louis Antoine; Courtney Carlson; Jorge Gonzalez; Joe Helms; Madison Hickman; Mindy Howard; Shannon Lynch; Todd McDonald; John McGowan; Christian Morin Daniel Penny III; Donna Shearn; Bryan Walsh: Kelly Walsh and Erin Mitchell. And of course, none of this would be possible without the support of sponsors such as Lockheed Martin; Collins Aerospace; L3 Harris; Florida Power & Light; rgosy Foundation; Datafirst; Kennedy Space Center International Academy;

Spira, Viera High peers display brilliance at regional academic event in Deltona BY CARL KOTALA Jordan Spira has always been interested in learning about different countries, cultures and languages. So, when the Viera High School senior found out there was a Cultural Diversities and Disparities category in this year’s OS competition, she jumped at the chance to take part. Score one for Spira. She was one of nine Viera igh students to finish in first place, and one of 2 individuals to place among the top five in various categories at the Space Coast Region Regional Conference held this year on Jan. 11 at Deltona High School. The state competition for Future Health Professionals, formerly known as Health Occupations Students of America, (HOSA), is set to take place April 2 to 5 at the Marriott Orlando World Center. “I was pretty surprised when I found out I had placed first — the adrenaline definitely surged,” Spira wrote in an email. “I think whenever you compete in anything, whether it be an academic competition, sports match or even just a simple graded exam, there is always a possibility that someone studied or trained just that much harder than you, so you never really know where you'll end up on the scoreboard. But I also think that's also the beauty of competition. “In this case, however, my background in learning almost obsessively about other cultures for the past couple of years and my efforts in working toward fluency in Spanish have paid off, especially because the only reason I knew a couple of the answers is because they were in Spanish.” The test was taken in the school’s computer lab prior to the regional conference. Spira said she answered roughly 100 multiple-choice questions and another that had a short answer. The Cultural Diversities

and Disparities category tested student’s knowledge about healthcare in different cultures and regions. A goalkeeper on Viera igh’s girls soccer team, as well as Space Coast United Soccer, Spira was at a game on the day of the awards ceremony. A friend sent her a video of her name being called. Other winners included: Brooke Drier (Behavioral Health); Mrunal Barai (Dental Terminology); Gabrielle Fleisher (Human Growth & Development); Julia Walker (Medical Law & Ethics); Bailey Bernard (Nutrition); Ryan Luciani (Pathophysiology); Anna Metz (Pharmacology) and the team of Mackenzie Downie and Estefania Esparza (Forensic Science). Also placing were Kennedy Hewitt and Gina Denton (both placed third in Behavioral Health); Gabriella Flora fifth in Cultural Diversities & Disparities); Mia Bieringer (second in Cultural Diversities & Disparities); Macy Billingsley (third in Dental Terminology); Sara Barsoum (second in Dental Terminology); Katie Stegner fifth in uman Growth Development) and Hailey Johns (third in Human Growth & Development). Others who placed were: Amy Dukeshire (second in Medical Law & Ethics); Adrienne Denton (third in Nutrition); Jeremie Feldman

(third in Pathophysiology); Cara Celestini (fourth in Epidemiology); Alyssa Lovi and Reilly Roberts (second in Community Awareness); Mackenzie Bronson, Talorie Crafton, Emma Jimenez and Lanie Mullowney (second in Public Service Announcement). Last year, Barai became the first Viera igh student to win at the state level and advance to the international competition. Spira is excited about going to the state meet, particularly one of her best friends — Bernard — whom she met during an AP class her freshman year. While her career plans are to go into law, Spira recommends the HOSA club to anyone interested in getting into the medical field. Although she only competed for one year, it certainly had a big impact. “I’m not sure which field of law I want to go into yet, but I will ensure that it definitely has an international component to it,” Spira wrote. “Competing in HOSA this year, while my category was not directly related to law, definitely reassured me of the fact that I'm going in the right direction by studying something international. “I’m really excited because placing first in my category really reinforced the idea that I can do something professional with my passions.” VV

Suntree Elementary School's Wishtree incorporates ideals from the popular book Wishtree by Katherine Applegate.

Suntree Elementary celebrates Literacy Week SPECIAL TO VIERA VOICE Suntree Elementary School conducted Celebrate Literacy Week Florida! from Jan. 27 to 31. Tracy Seibert is the literacy coach for Suntree Elementary. Students and staff read the book “Wishtree” by Katherine Applegate. Each day during Literacy Week, students were asked trivia questions related to the book. Each grade level chose activities that went with the book and to meet their English Language Arts standards. Some examples were vocabulary acting out, Reader’s Theater, science integration with trees, social studies integration with segregation, and writing tasks. Activities and tasks went with the themes of kindness, teamwork, inclusion and tolerance. In the book, a family is asked to leave the neighborhood due to differences in skin color and

culture. However, a long-standing tree has become the neighborhood Wishtree and people have tied wishes on the tree every year. Suntree Elementary School has tried to incorporate “Wishtree” with the kindness culture program instituted at the school. Literacy Night was held Jan. 16, with 240 parents and children participating. Each student, teacher and staff member wrote a wish attached to a string and then placed on a large tree designated as the Wishtree outside the school cafeteria. There were two breakout sessions for all parents of students in grades kindergarten through sixth grade to share grade-level expectations for reading and writing, FSA Writing expectations for fourth through sixth grade, and strategies to help students succeed in English Language Arts. Is it true that Varicose Veins are a sign of a medical issue? Yes. Please do not ignore signs of leg varicose veins. If you notice bulging veins, you have a significant medical condition. Bulging indicates a chronic medical condition. Constant dilation causes blood to stop blood flow back through the legs, leading to further damage. This includes swelling with tissue damage, legs swelling, aching legs, permanent skin pigmentation changes, along with ulcers.

Suntree Country Club brings in trapper to nab pack of coyotes

BY WENDY SCH ERING Several coyotes have been seen roaming for weeks on and near the Suntree Country Club. On Jan. 7, it killed a nearly 40-pound rescue dog. Area residents are concerned about the safety of their pets and children. “I saw a coyote cross my backyard and I jumped

and went outside, and it went straight across the golf course,” said Suntree resident Laura Baumeister, who lives in Whispering Pines. “They (the coyotes) are on the second hole of the classic course, in between Inverness and South Pinehurst. “The one I saw was over a hundred pounds. My dog

is 95 pounds and it is bigger than my dog. There are two black ones, a brown one and a gray one.” “It was broad daylight — 8:30 in the morning. We had left the house and came back two hours later,” Baumeister continued. “I found a beautiful dog with a leash and harness in my backyard and took pictures. It had been gutted by the coyote between my yard and the golf course. I immediately called Suntree Country Club maintenance. “Suntree Maintenance came out and they took the carcass of the dog and contacted the owner. Two of my children weigh less than the dog that was killed. It’s very alarming. They have gotten more aggressive. Not scared of people or anything.” “I will say this has made many of us very nervous and concerned for our pets. I won’t even let my 13 year old daughter walk our dog on the golf course right now,” wrote Robin Rye in an email. In response, the Suntree Country Club has hired a trapper to capture the coyotes. “The club is always concerned for member

safety as well as the residents of the community,” Suntree Country Club General Manager Steve Lamontagne said in an email. “Traps are going to be fed throughout the golf course,” said James Dean, a nuisance wildlife trapper for the State of Florida. “They like watermelon. I also put roadkill if I get a phone call to pick up a raccoon or other animal that has passed away from a vehicle. The coyotes will be taken to a conservation area and removed to the wild as long as they are healthy. “They want to make sure that the members and children are safe. Club and two have been trapped. “All the rabbits are being depleted on the golf course,” Dean said. “They kill our deer population. They are one of the hardest animals to capture. We’re trying to put everyone at ease. Everyone is comfortable that they have a real trapper out here.” Many are wondering why the coyotes are wandering around in Suntree. “Once they deplete a food source in one area, they move to another area,” Dean said. “You can hear them chattering at night,” Baumeister said. “They have this weird chatter. And they call to each other and chatter.” V V

Join the Fun recruits mature travelers

BY MARIA SONNENBERG Carolyn Dumas wanted to explore after moving to Viera from Illinois four years ago. Dumas chanced upon a newspaper article on Join the Fun, a mature travelers’ group that took care of all travel hassles, and she opted to give it a try with a trip to Seminole Creek Casino. “I was blown away,” she said. Since that first trip two years ago, Dumas has been a Join the Fun frequent traveler. In fact, she has become the group’s unofficial ambassador. “It’s an experience you won’t forget,” Dumas said. Stefan Shields, owner of Join the Fun, loves to pamper the mature travelers, whether the trip is to a casino or to Hawaii and beyond. “We take extremely good care of them,” said Shields, who also is director of group

sales and group cruises for Odyssey Travel, where Join the Fun’s Brevard office is located. A travel industry pro who has orchestrated escorted worry-free travel for thousands, Shields leads groups with extreme attention to details. “Everything we do, we do right,” Shields said. In addition to escorted day trips, Join the Fun offers three-to-sevenday motorcoach tours to destinations such as Asheville, Key West and New Orleans, group cruises with bus transportation to the port, plus global travel experiences with companies such as Tauck, Globus, Regent and AMA Waterways Group. Day destinations run the gamut from Lion Country Safari in West Palm Beach to the Silver Spurs Rodeo and the Florida Strawberry Festival. Guests board Join

for Fun’s 56-passenger coaches in Viera and settle back to, well, join the fun. “We have 56-passenger, state-of-the-art coaches with air conditioning, rest rooms, Wi-Fi, reclining seats and movies,” Shields said. Shields’ travelogue commentary to the destination adds to the experience, as do the munchies he offers. The buses stop every two hours so guests can stretch their legs. Free monthly travelthemed presentations at the Holiday Inn Conference Center outline the myriad travel opportunities. For example, at 10 a.m. Feb. 11, guest speaker Nicole Castillo will focus on Regent Cruises. Dumas has nothing but praise for Shields and his travel group. “He is so knowledgeable and organized and he makes sure that we are all having fun,” Dumas said.

Nicholas Chios is the owner of Nikos Mediterranean Specialties in the Suntree Square Plaza.

Restaurant brings Greek traditions to Suntree BY ERNEST ARICO “Serving you, is life well spent.” That’s the motto you first see when you enter Nikos Mediterranean Specialties restaurant at 7777 N. Wickham Road, Suite 20, in the Suntree Square Plaza. Restaurant owner Nicholas (Nikos) Chios said the motto is important because he believes it, has lived it and has earned the right to say it because he’s

been a cook for more than 50 years. “It makes me very happy to be able to do many different and beautiful things in this location,” said the 78-year-old Chios. “At my age, I feel this is very meaningful to me. This is my legacy. Being able to think, to create and execute for my customers. This is the jewel of my crown.” Prior to opening Mediterranean Specialties, Chios was owner of the

Times Square Diner, located next to his restaurant. He sold the diner six years ago but, instead of retiring, decided to open another restaurant. “Retirement is not in my vocabulary,” Chios said. “I feel very good health-wise. I think I have a good 10 years of productivity left in me. I see no chance of slowing down. I’ve always thought I had more life in me to do more things, so I decided to create a restaurant that would be my legacy.” Chios was born near Sparta in Greece. He lived and worked in the food industry in Massachusetts for 30 years, before moving to New York to continue the same line of work for another 11 years. In 2004, he moved to Florida, and has lived in the Baytree subdivision since 2005. “I love this area,” Chios said. “It is very beautiful. Florida takes me back to Greece.” Besides the motto on the windows overlooking the cooking area, the restaurant’s interior is decorated in historic motifs and symbols from Ancient Greece. “The name of the restaurant goes back to my roots,” Chios said. “I was born near Sparta, Greece, and I wanted to bring my

roots to this restaurant. I created this — it was my vision, my dream. I knew how I wanted this to look. “At my age, I feel this is very meaningful to me,” he continued. “Servicing and pleasing our customers is more important to me than making money. It is very easy and very satisfying for me to connect with people.” Opened since November 2019, the restaurant operates seven days a week (except holidays) from 10:30 a.m. to 9:30 p.m. The restaurant also employs 14 to 16 full- and part-time employees. “As a team, we try to please everyone who comes in here,” Chios said. “All the girls are very personable and they believe in my legacy. All the staff is very helpful.” Chios said all the flavors

he offers are fresh and healthy. Everything is cooked and prepared daily and to order. One of the restaurant’s specialties is its “Spartan” salad. The salad is in memory of Chios’ mother, Eugenia. It is made with vine ripened tomatoes, village bread croutons, cucumber, radishes, roasted petite peppers, over micro-greens topped with frilled feta, laced with virgin Spartan oil and served with melas zomos (red wine vinegar, oil and spices). “She (my mother) would be extremely happy with the restaurant and with what I have accomplished,” he said. “She would be very proud of seeing my creations and how I’ve brought Greece here.” For more information, call 321-610-7385 or go to gyrosandpizza.com. Indian River Lagoon marks three years of improvements January 2020 marks the third anniversary of the massive voter-initiated effort to restore the Indian River Lagoon. The Save Our Indian River Lagoon Project Plan is in place and steady progress is being made. In November 2016, citizens of Brevard County took a bold step, unlike other communities, to vote for a half-cent sales tax to restore the lagoon. This established the Save Our Indian River Lagoon Trust Fund that has

Lagoon Straight Talk From the Brevard Indian River Lagoon Coalition

collected more than $125 million. Nearly a fourth was contributed by tourists. During the 10-year life of the tax, it is expected to raise more than $400 million. Eighteen lagoon projects have been completed so far, with more than 64 actively

moving forward. More than 160 septic systems near the water have been converted to sewer service, eliminating the constant flow of nitrogen and phosphorous waste into the lagoon. Initial monitoring shows a dramatic drop off in the pollution plume. Two major muck dredging projects are complete, and two more are underway. Millions of cubic yards of muck are being removed. Dredging clears this black goo from the seabed of the

lagoon, allowing for regrowth of sea grasses and restoration of fish habitat. Through the Brevard Zoo’s conservation program, natural mangrove shorelines are being replanted, and oyster reefs are being added to help filter nutrients. 3.7-million pounds of oyster shells have been used in constructing the reefs. Oysters are beginning to come back for the first time in a half century. Trust Fund projects are reviewed carefully by county

staff and an independent Citizens Oversight Committee prior to final approval by the County Commission. Each project requires matching funds to leverage the community’s investment and ensure oversight. A free Lagoon Straight Talk event was held Jan. 22 at Satellite Beach High School. For information, go to HelpTheLagoon.org. Restoration is not a quick process, but every project is progress. V V

Sultry Sybil Gage highlights popular Boomer Guide Senior Expo BY ERNEST ARICO

If you love the music of Ella Fitzgerald, Billie Holiday, Pearl Bailey and Janis Joplin, then you’re going to love the music and singing of Sybil Gage. Gage is scheduled to perform three live miniconcerts at Senior Life’s free Boomer Guide Senior Expo. The expo, which has a “Magic of Broadway” theme, will run from 10 a.m. to 2 p.m. Tuesday, Feb. 18 at the King Center for the Performing Arts in Melbourne. Born in New Orleans, Gage is known locally as the Artistin-Residence at Heidi’s Jazz Club in Cocoa Beach. She has regularly performed at the New Smyrna Beach Jazz Festival and the Thin Man Watts Jazz Festival in DeLand. Some of her favorite shows include the Cinematique Theatre in Daytona Beach, the Modernism Museum in Mount Dora and the Blue Bamboo Performing Arts Center in Orlando. It was Gage’s performance at the recent Space Coast Arts Festival that caught the attention of Jill Blue, the CEO of the Bluewater Creative Group, the company that publishes Senior Life, Viera Voice and the Boomer Guide. “She’s always in the news

had a tremendous influence on her. “I love the vocalists,” she said. “I like to hear the words. The words make the song.” Gage said she is going to perform songs from the 1920s, ’30s and ’60s at the expo. “Rag Time, Dixieland, the music of Louie Armstrong, Jelly Roll, Fats Domino, Ella Fitzgerald, Billie Holiday. I love them all,” she said. According to her website — sybilgage.com — Gage is spreading New Orleans music to the rest of the world. Nicknamed the “Little Dynamo,” Gage is slinky in sequins, funky in fishnets and has become the darling of the East Coast from New Orleans (Old U.S. Mint Theater) to New York City (Triad Theater at West 72nd Street and Broadway). Big Shave aims to raise thousands for childhood cancer research BY JENNIFER TORRES Every two minutes, a child is diagnosed with cancer. According to the National Pediatric Foundation, cancer is the No. 1 cause of death among children. Yet, research and treatment for the children is greatly underfunded — receiving just 4 percent of the billions raised each year. As a national volunteer charity, The St. Baldrick’s Foundation is dedicated to raising the money necessary to fund promising research and find cures for childhood cancers. One of its biggest fundraisers will leave locals with a lot less hair. St. Baldrick’s Brevard 10th annual Space Coast Conquers Big Shave will take place from noon to 5 p.m. Saturday, March 14 at The Avenue Viera at 2261 Town Center Avenue. As individuals or as part of a team, participants commit to having their heads shaved to go bald for

a good cause. Before the big shave, they raise money by collecting donations. Through 2018, more than 538,000 heads have been shaved across the country, raising more than $35.7 million. In Brevard County alone, about 3,000 heads already have been shaved in local events since 2011, raising nearly $2 million. The first took place in 2011 at Meg O’Malley’s in Melbourne with $75,000 raised. Last year, the event at Melbourne Square Mall raised a little more than $108,000. But, this year’s goal is the most ambitious yet at $250,000. This year’s event organizer is Tom Neidert, a district chief for Brevard County Fire Rescue. “We are absolutely happy to have it back in Viera,” Neidert said. “People who haven’t come back for years are coming back for the 10th anniversary.” Currently, just more than $13,000 already has been

Recently, I have been hearing people questioning whether they should recycle or not. With constant changes on what is accepted in our curbside program and what gets to indeed be recycled, some believe recycling is not worth the effort. Despite the current trend, recycling still is a valuable practice. It might not be the first R that should be practiced — reduce and reuse will always come first — but it does have positive effects. It reduces the amount of material buried in landfills and, consequently, the need for more land to be used for landfills; reduces the amount of raw material extracted to make new products; reduces water and energy consumption in the manufacturing of products; prevents pollution by cutting down the production process; and helps create green jobs, among other things, according to the EPA. Recycling has some great benefits, so finding a balance between wishcycling (putting in the recycle bin everything one wishes would be recycled) and not

BEYOND the CURB Marcia Booth

recycling at all will be in everyone’s interest. How to decide what to recycle? The Brevard County Solid Waste Management Deptartment has the power to hire services that will dictate what can be recycled in our area, but they also walk the thin line between doing what they would like to do and doing what they can do. A lot of that is due to costs. For unincorporated Brevard, a new recycling contract is being negotiated. According to Euripides Rodriguez, the director of that department, “There has been no discussion of altering the current level of services” and glass will continue to be collected. No other services, like composting or recycling in public places, are planned to be added at this time.

In terms of cost, Rodriguez said, “This is a stand-alone fund, which does not receive contributions from other sources. So, the cost will be borne by the residents of unincorporated Brevard County.” It would be good if items such as glass could be part of the collection service — not reused or discarded. After all, that is the meaning of recycling, whose symbol’s three arrows represent: 1. Collect recyclables. 2. Process them into a new product. 3. Buy products with recycled content (Project Learning Tree). Perhaps requiring that at least a certain percentage of the collected material be indeed recycled would be something a new contract could stipulate, but that might be tricky in practice. The market (demand and price paid) for recyclables greatly influences what ends up being recycled. The more we buy products made of recycled materials, the higher the demand for recyclables is. This, in turn, helps grow the market. The recycling business also is extremely affected

by mixed-in trash and wishcycling — high contamination rates translate into higher costs and lower profits. That ends up affecting what is recycled, especially in unfavorable periods of low demand and prices. So, to help the curbside recycling program, stick to the basics and place in the bin only items you are sure are accepted in your area. Otherwise, follow the rule — when in doubt, throw it out. If you choose to recycle nothing else but your empty milk/juice jugs and aluminum beverage cans, that is all right. If you want to go a bit further and recycle your detergent/ shampoo bottles, water/ soda bottles, cardboard boxes and steel cans, that will be super. But don’t quit. Lean recycling is better than no recycling at all. In order to expand the current program, we need to show that we can do the basics first. The more of the right items we put in the bin, the more we will be able to recycle now and in the future. V V Email Marcia Booth at Marcia@RecycleBrevard.org

Feathers told unique stories as hats once ruled the day Historically, wild animals accessories were utilized to decorate headdresses. This practice was feasible when animals were plentiful. Spectacular were feather war bonnets awarded to leaders in the Great Plains Indian tribes such as the Sioux. Golden eagle feathers and often ermine skin and beadwork were displayed on these bonnets, which were worn occasionally in battle, but mostly for formal affairs. Striking was the trailer warbonnet with feathers flowing to the ground. Each feather told its story. Other headdresses were unique. These included the porcupine roach (from which the Mohawk hairstyle is modeled), the buffalo horn helmet and the otter fur turban. A brave might assemble his own headdress from feathers awarded him for courage in battle. It was rare to receive three feathers in a lifetime. Most headpieces were worn by men. However, in a few Woodland tribes, the headband was worn by male or female, mostly for beauty. It was constructed with a feather or two from

our country. An entire bird (or more) might decorate just one chic hat. Plus, an egret headdress called the aigrette (French) consumed the feathers of four egrets. Finally, social outcry introduced alternatives, such as the silk and ribbon hat. Awareness brings change. Accordingly, laws

now protect wildlife. For example, only authorized Native Americans can legally obtain eagle feathers; violators might face high fines and imprisonment. As a substitute, processed feathers from the poultry industry can well embellish a fashionable headdress. VV

Judge resets hearing on suit to stop bond purchase for golf course BY ERNEST ARICO A judge has reset a hearing on arguments to dismiss a lawsuit by four homeowners and commercial property owners seeking to stop the Board of Supervisors of the Viera East Community Development District from purchasing an $11.2 million bond for golf course and park improvements. The four Viera East homeowners — Robert Dale, Paul F. Daley, Steve Colasinski and Trisha Smith — now will appear before 18th Judicial Circuit Court Judge George T. Paulk in the Titusville Historic Courthouse at 4 p.m. Feb. 7. The hearing originally was set for 10 a.m. Jan. 7 but was rescheduled because the four homeowners requested a continuance after lawyers for the VECDD filed nearly 1,300 pages of documents Dec. 6, 2019. The homeowners, in its motion for a continuance,

stated they “discovered numerous mistakes and misrepresentations of facts within the documents” and “needed more time to adequately prepare a response.” On Aug. 30, 2019, Judge Paulk denied the homeowners’ motion for a temporary or emergency injunction against the VECDD. The rescheduled Feb. 5 hearing is on the permanent injunction lawsuit. Despite the many residents that voiced their opposition during a public hearing July 25, 2019 in the multi-purpose room of the Faith Lutheran Church at 5550 Faith Drive in Viera, the Board of Supervisors unanimously approved the 20-year bond that will see more than $11 million put toward improvements at the Viera East Golf Club and golf course. These enhancements include: • Clubhouse renovations,

including a banquet facility at a cost of $2.9 million. • A new irrigation system for $2 million. • Bunker renovations for $1.1 million. In addition to the $9 million in expenses, homeowners also will pay nearly $5 million more in interest. In order to pay off the $11 million bond, Viera East homeowners will have to foot the bill. The assessment will take effect after the VECDD’s water management assessment bond is paid off in 2023. Homeowners in Six Mile Creek, Crane Creek, Cross Creek and some homeowners in the south section of the Indian River Colony Club are not affected by the bond. There are more than 4,200 households in the VECDD. Of that total, 791 houses are on the golf course. Viera East Golf Club

The three candidates — Robert Dale, Steve Colasinski and Peter Carnesale — pledge to do the following if elected: • To involve all the HOAs (homeowners associations), and to get their input at all CDD meetings. • To give residents the first voice at CDD meetings. • To ensure the VECDD is about more than just the golf course. • To broaden and improve our lifestyle amenities. • To better focus on Viera East’s waterways, trails and preserves. To improve the fiscal health of the VECDD. Two of the candidates — Dale and Colasinski — filed a lawsuit against the VECDD in an attempt to stop the board from purchasing an $11.2 million bond
