Delicious rigatoni in tomato sauce
Sometimes it just has to be the classic - pasta with tomato sauce is one of those classic dishes that just always go. In our favorite tomato classic sauce, sun-ripened tomatoes and delicious Italian herbs, together with “al dente� cooked Sicilian Rigatoni, form the perfect Italian dish for every occasion. So that you can also enjoy the dish vegan, we have considered a recipe for vegan parmesan. If you don't want that, just take the commercially available version.
Ingredients
Ingredients for the pasta: 200 grams of rigatoni water salt Ingredients for the vegan “Parmesan”: 55 grams of cashew nuts 5 grams of yeast flakes 1 tsp garlic powder A pinch of salt, pepper

Put enough water in a saucepan and bring to the boil. Then salt well (approx. 1 tbsp). Add the rigatoni and stir again and again.

Put Little Lunch favorite sauce classic tomato in a saucepan and heat over medium heat. A little tip: As soon as the pasta has been cooking for a few minutes, add a few 2-3 tablespoons of the pasta water to the sauce. The starch that came loose from the pasta and I transferred the water ensures that the sauce becomes nice and creamy and adheres perfectly to the pasta.
Preparation
For the vegan “Parmesan”, cashew nuts, garlic powder, yeast flakes, salt and pepper, mix in a blender until a parmesan-like mass is obtained.
Drain the rigatoni, add your favorite sauce, mix well and serve with parmesan, saffron and fresh basil.
