When you listen to Hunter Gifford, age 16, play the piano and the music he composes, you would never imagine that he has only been playing for five years and mostly self taught. He was eleven when he discovered this gift and wrote his first song. After receiving a handful of lessons, his mother gave him a Jon Schmidt CD, thinking he’d like Schmidt’s music. A day or two later, he asked his mom to come to his room to show her something. He sat down at his keyboard and started playing Jon Schmidt’s “Waterfall”. In shock, she asked him how he learned it. He simply replied, “I listened to it over and over again and just figured it out.” He hasn’t stopped playing since. Hunter’s music has helped touch many lives. While visiting his grandpa before he passed away last

The Springville/ Mapleton Company of the Daughters of the Utah Pioneers (DUP) helped celebrate Art City days in Springville on June 9th. There were pioneer games, activities, displays and tours of the Pioneer Museum. All ages enjoyed the parade sitting in the shade outside the museum on a cooler day and the “best of pioneer living” hospitality. The Pioneer Museum Board is grateful to the Tom Birch Family for their participation in pulling the museum handcart during the parade representing the early pioneers coming to Utah. year at Utah University Hospital in SLC, Hunter would visit often and play the piano for him and then volunteer to play in the lobby. When his sweet two year old cousin passed away from a rare disease, he was honored to write a song for her and play it at her funeral. He named it simply, “For Emily”. He later wrote one for his grandpa as well, called, “Path Less Travelled; Papa’s Tribute”. Hunter’s style of music is somewhat eclectic. He’s composes and plays songs anywhere from New Age to Movie Soundtracks, from Rock to Irish. Two of Hunter’s compositions won several awards, both including 2nd place in State in Utah’s Inspirations Art Contest two years in a row. He was also the winner of Jon Schmidt’s “Road Trip” YouTube contest where Schmidt himself commented on his performance of Road Trip as “Wow...SO Impressive.” While listening to Hunter play in his studio, singer/song-writer, John Houston, said of Hunter, “You can tell he plays from the inside out.” After playing an impromptu concert last summer at the Piano Guys’ store in St. George and then Hurricane’s 4th of July celebration, several people offered to help Hunter monetarily to record his music. The road to getting his CD out has been a longer one than expected. Shortly leading up to and after recording his songs, Hunter became extremely ill. After months of doctors and tests he was diagnosed with the auto immune disease, Chronic Fatigue Immune Dysfunction Syndrome (CFIDS). Although it has
altered his life drastically, it has not altered his dream and love of playing and sharing his music for all to hear. Because of the journey getting to it, having his CD finally here has been that much more meaningful. Hunter’s first CD is called “Doorways”. It includes the songs he wrote for his grandpa and cousin, one of his award-winning compositions, “Team 56,” and several others. Hunter most recently was a feature performer at Springville’s Annual Art Ball, a fundraiser for the Springville Museum of Art and also for this year’s Art City Days. He’s also been asked to play at both the Utah State Fair and County Fair later this summer. Hunter has participated as a song-writer/performer in several Art City Music Festivals. His heartfelt performances at the last three Art City Talent Festivals thrilled the audiences. His 2011 performance of his own song, “Freedoms’ Run,” was dedicated to his grandfather who passed away the previous week. Audience response demanded an encore, which he gladly performed. When he’s not playing the piano, he enjoys creating 3D animation, drawing, writing, Chinese, listening to music, and watching movies. Sunny Summer Mustard Pickeles
Recipe Roundup by Lou Ann Stowell With canning season getting into full swing, I thought it would be nice to start off my first article with a really versatile recipe… Mustard Pickles!
-14 cups, peeled, seeded and sliced pickling cucumbers -6 cups whole, small white onions, dry layers removed -1 red bell pepper, seeded and chopped -¼ cup pickling salt -3 cups cane sugar -4 Tablespoons cornstarch -¼ cup dry powdered mustard -1 Tablespoon ground ginger -1 teaspoon ground turmeric -½ cup water -2 cups white vinegar
-1 cup Sunny Summer Mustard Pickles, with juice -1 Tablespoon prepared yellow mustard -3 Tablespoons honey -¼ cup flour -4 boneless, skinless chicken breasts
In a large glass or crockery bowl, combine the cucumbers and peeled small onions. Cover these with 1/3 cup of pickling salt and let the contents rest for about 1 hour. Drain thoroughly.
Coat your pan with olive oil and place your chicken breasts in the pan. Cover the breasts with the glaze and bake for 50 minutes. Serves 4
In a stainless steel kettle, mix: sugar, spices and cornstarch. Stir and mix well. Gently blend in the water along with the bell pepper. Add the white vinegar. Bring your mixture to a boil over medium to high heat, stirring frequently until it thickens,

J.P. Barrett-Baxter Book Review When a college friend said she’d written a book, I was very excited. We had the same taste in literature, and I was interested to see what she had written, and I’m always looking for a good book. The Blood of Ancient Kings trilogy had an intriguing story line with interesting characters. You are invested in them from the beginning. It’s a fun book. It’s an easy read with enough twists and turns to keep one engaged. I couldn’t wait to find out what was going to happen next to these people I had come to care about. Not only is it engaging, but it has an underlying moral to it, which is carried throughout the series. I like reading about people with integrity. Another plus for me was the complete lack of gratuitous sex or foul language. I was completely comfortable letting my 12 year old son read the first book, and he literally jumped with excitement when he learned there would be a second and third book. It is well worth the read.
Tom Nicholes Book Review I’m reviewing another book. This one still in the fantasy genre, is titled “Blood of Ancient Kings,” by V. J. O. Gardner
A medieval story of love, honor, and courage. A young prince grows up and advances through the military ranks, his true identity unknown to his friends. He meets a young girl and they become friends, years pass and their friendship blooms into true love, knowing that she already has an arranged marriage and with him being royalty most certainly has one as well, they still continue with their relationship. As their friendship progresses he must be courageous as he goes through many trials, testing his love for her, his loyalty to the kingdom, and in doing what’s right as an officer and a gentleman. The story spans multiple generations, their families deal with many problems, going from the joy of birth, to the pain of death as they feel the blood of the ancients run through their veins. With numerous characters, occasionally it was hard to keep track of who was who. When there was more than one set of parents, it became hard to remember who’s mother or father was who’s. Since they were both using the same name. But still the story flowed and was enjoyable, it shows positive outcomes for the characters, when they’re doing what is right.© 2012 Serve Daily
