Welcome to the April issue of St. Louis Home & Happenings! This issue is full of information to help you to get you and your home ready for the warmer days ahead in our area, Easter recipes and entertaining tips, fun things to do in our area and so much more.

We are all ready for spring, but is your home prepared? This issue has some great maintenance checklists for your house and lawn for the warmer days that are on the way. We have also included some home cleaning tips and even a spring checklist for your pets.

Easter is right around the corner, and this issue offers some great tips for entertaining for the holiday. There are also some delicious recipe ideas designed around Easter and some egg dyeing tips.

If you're looking for something fun to do around town this time of year, be sure to check out our Happenings sections for some great ideas. We also included a St Louis Baseball schedule so you can plan a visit to the ballpark.

(BPT) - Maintenance is an important part of home ownership, but many people delay tasks, thinking a few weeks or even months won't do any harm. However, putting off home maintenance is risky because small issues that are simple to fix now can quickly lead to complex problems that are expensive to fix later.

Spring is the ideal time to give your home a once-over both inside and out to flag any issues and create a maintenance to-do list. According to the experts at State Farm, here are some top spring maintenance tasks to help protect your home:

ROOF AND GUTTERS

Your roof provides fundamental protection of your home from the elements in all seasons. Inspect your roof at least once annually for damage, discoloration, loss of granules and missing, worn or curling shingles. Get in the habit of checking your smoke alarms on a regular basis, such as at the start of every season. Do this by hitting the test button on each device. If you don't already have them, make sure a smoke detector is located in every bedroom and living space. This small investment and maintenance step can help save lives.

Additionally, don't wait until the alarms chirp at you to tell you batteries are low. Once a year, replace all the batteries in all the alarms to give you peace of mind that these critical devices are set up to work well in an emergency.

medicine and pediatrics at Northwestern University’s Feinberg School of Medicine. “Adults should aim for an average of 7-9 hours and babies and kids need more depending on their age. Unfortunately, we know as many as 1 in 3 people do not get their recommended amount of sleep each night.”

According to Lloyd-Jones, the amount of sleep and quality of sleep are important, and both can have significant impacts on cardiovascular health, as well as overall health. In addition to increasing risk for

cardiovascular conditions like heart attack and stroke, lack of sleep may also put people at risk of things like depression, cognitive decline and obesity.

Research in the “Journal of the American Heart Association” shows maintaining a consistent sleep pattern may play an important role in preventing cardiovascular disease. Researchers found falling asleep at different times or sleeping an inconsistent number of hours each

night, even variations of more than two hours a night within the same week, were tied to developing hardened arteries, known as atherosclerosis.

“We know people who get adequate sleep manage other health factors better as well, such as weight, blood sugar and blood pressure,” Lloyd-Jones said. “The American Heart Association recently added sleep to the list of factors that support optimal cardiovascular health. We call these Life’s Essential 8 and they include eating a healthy diet, not smoking or vaping, being physically active and getting adequate sleep, along with controlling your blood pressure and maintaining healthy levels of cholesterol and lipids, healthy blood sugar levels and a healthy weight.”

Consider these small changes in daily habits that can make a big difference in sleep quality:

• MAKE HEALTHY LIVING A HABIT: Eat a balanced diet, get regular physical activity and manage stress to support a healthier night’s sleep.

Growing your own produce is an all-around smart practice, from the money you'll save at the grocery store to the contributions you can make toward a cleaner planet.

Maintaining a garden takes some effort, but it's a project even a beginner can tackle with ease. Consider these tips to start growing your at-home garden:

1. SELECT A PERFECT SPOT. You'll want to place your garden in an area where you see it often so you're reminded to weed and care for it

Now is the Time to Prep Your Lawn and Garden for Warm Weather

It may feel like warm weather is still a way’s off, but you should already be getting your lawn and garden springready, according to experts.

“One thing I don’t think people realize is that to get your grass, shrubs and other plants looking good in the spring…all that preparation starts right now,” says Major League Fishing bass pro, Brian Latimer, or “Blat” as he is known by fans.

To help homeowners prep for spring, Latimer has partnered with lawn care equipment manufacturer, Exmark, to offer his four, go-to tips:

1.

PULL THOSE WEEDS.

According to Latimer, the most important step in prepping your lawn and garden for spring is weeding. “I have a zero-tolerance policy when it comes to weeds,” he says. “Watch those sneaky weeds growing in your shrubs and ground covers, because those are going to be the first ones that show their heads in the spring.”

While weeding isn’t the most fun you can have in your yard, it’s worth the effort. Latimer also recommends putting a pre-emergent out now while cool-season weeds germinate. This is especially important if you have warmseason grass. While you can use pre-emergent on your planting beds as well, he recommends hand-pulling them if you can.

2.

TIDY UP WITH SELECTIVE PRUNING.

Pruning will make your shrubs look nice and tidy, however Latimer recommends being careful in your efforts, avoiding

plants that are budding. Pruning buds will keep your flowers from being as prolific in the springtime. You can check for buds by combing your hands through the foliage.

3. GET RID OF PESTS.

Certain spring pests should be treated for in the colder months. Latimer is especially wary of fire ants, as they’re one of the most active lawn pests in spring. Treating them early will minimize their activity and mitigate potential problems they cause when the weather warms up. “I can promise you they are going to be everywhere in warm weather, so treat them now,” he says.

4. GET THOSE LEAVES UP.

Latimer knows that leaf blowing or raking is time-consuming, but he says that getting fallen leaves off the ground is essential. Not only are leaves on your lawn an eyesore, but they can also keep a lot of excess moisture from winter rain, snow and ice stuck in your soil. This creates the potential for root rot, active pests and germinating weeds.

CHICK CHEESE BALLS

1 package cream cheese

1/4 tablespoon garlic powder

1 tablespoon Worcestershire sauce

1/2 lemon, juice only salt, to taste pepper, to taste

1 cup finely shredded cheddar cheese, crackers, carrots, whole black peppercorns

Using mixer, combine cream cheese, garlic powder, Worcestershire sauce and lemon juice. Add salt and pepper, to taste. Refrigerate mixture 1 hour.

Using fingers, form about 1 tablespoon of cream cheese mixture at a time into balls. Refrigerate 30 minutes on small baking sheet.

Before serving, roll each ball into shredded cheddar cheese to cover. Place each ball on round cracker.

Cut small triangles from carrots for beaks and feet. Press carrots onto cheese balls. Add peppercorns for eyes.

EASTER BUNNY ROLLS WITH SPINACH DIP

serves: 24

16 ounces frozen spinach, thawed

8 ounces cream cheese

2 cloves garlic, minced

1/2 cup mayonnaise

1/2 teaspoon salt

1/2 teaspoon onion powder

1/4 teaspoon chili powder

1/4 teaspoon pepper

1 teaspoon Italian seasoning

1 cup shredded Parmesan cheese

1 1/2 cups shredded mozzarella cheese, divided 2 crescent roll tubes (8 ounces each)

Heat oven to 375 F.

In skillet, over medium heat, cook spinach, cream cheese and garlic 3-4 minutes until cream cheese is melted. Stir in mayonnaise, salt, onion powder, chili powder, pepper and Italian seasoning. Stir in Parmesan cheese and 1/2 cup mozzarella cheese. Cook until cheese is melted. Keep skillet on burner over low heat.

Remove dough from tubes. Leaving dough intact, roll and stretch into 18-inch ropes. Cut each rope into 12 pieces for 24 total.

On baking sheet with parchment paper, form bunny head by placing one piece of dough in middle then surrounding it with six more pieces. Use 13 pieces to form round body. Use remaining pieces to form ears on top of head.

Scoop hot spinach dip into center. Spoon small portions on each ear. Sprinkle ears and belly with remaining mozzarella cheese.

Bake 18 minutes, or until crescent dough is golden brown and thoroughly cooked.

1 teaspoon canola oil

1/2 cup diced yellow onion

1/2 cup diced poblano pepper, seeds and ribs discarded

1 small fresh jalapeno pepper, seeds and ribs discarded, minced

1 1/2 teaspoons minced garlic

1 can (14 1/2 ounces) no-salt-added crushed tomatoes

2 tablespoons water

1/4 teaspoon salt

HUEVOS RANCHEROS:

1 teaspoon canola oil

4 large eggs

4 corn tortillas (6 inches), warm

1 can (15 1/2 ounces) no-salt-added black beans, rinsed and drained

1/4 cup shredded low-fat Mexican cheese blend

1 small avocado, quartered and sliced

2 tablespoons chopped fresh cilantro (optional)

1 medium lime, cut into four wedges (optional)

To make salsa: In medium saucepan over medium heat, heat oil, swirling to coat bottom. Cook onion 2 minutes, or until almost soft, stirring frequently. Cook poblano and jalapeno peppers 2 minutes, stirring frequently. Stir in garlic. Cook 1 minute. Stir in tomatoes, water and salt. Bring to boil. Reduce heat to low. Simmer 5 minutes. Remove from heat. Cover to keep warm.

To make huevos rancheros: In medium nonstick skillet over medium heat, heat oil, swirling to coat bottom. Cook eggs 3-4 minutes, or until whites are set and edges are fully cooked.

Place one tortilla on each plate. Top each tortilla with beans and one egg, being careful not to break yolk. Gently top each egg with warm salsa, cheese and avocado slices.

Sprinkle each serving with cilantro and serve with lime wedge, if desired.

1/4 cup uncooked quinoa, rinsed and drained

2 medium tomatoes, chopped (about 2 cups)

1 cup no-salt-added frozen corn, thawed

1/2 medium avocado, pitted and diced

1/4 cup chopped green onions

1/2 cup chopped fresh cilantro (optional) nonstick cooking spray

4 large eggs

1/8 teaspoon salt

1/4 teaspoon pepper red hot-pepper sauce, to taste (optional)

Cook quinoa according to package directions. Remove from heat.

Spoon quinoa into four bowls. Top each with tomatoes, corn, avocado, green onions and cilantro, if desired.

Lightly spray large skillet over medium-high heat with nonstick cooking spray. Crack eggs into skillet. Sprinkle eggs with salt and pepper. Cook, uncovered, 3-4 minutes, or until egg whites are set but yolks are still runny. Using spatula, carefully transfer one egg sunny side up into each bowl. Sprinkle with hot sauce, if desired.

Nonstick cooking spray

1 1/3 cups liquid egg whites

1 can (15 1/2 ounces) no-salt-added black beans, rinsed and drained

4 whole-wheat tortillas (6 inches, lowest sodium available)

2 medium avocados, sliced

1/4 cup hot sauce or salsa (lowest sodium available, optional)

Lightly spray large skillet with nonstick cooking spray. Heat over medium heat.

In skillet, stir egg whites constantly with rubber spatula to scramble. Cook until eggs are almost set. Add beans, stirring until combined and heated through.

Microwave tortillas on high 45 seconds. Transfer to work surface.

Spread egg mixture in center of each tortilla. Top with the avocado and hot sauce, if desired.

PRUNE PUREE:

16 ounces pitted California prunes

1/2 cup hot water

BROWNIES: nonstick cooking spray

6 ounces unsweetened chocolate

1/2 cup California extra-virgin olive oil

2 cups light brown sugar

10 ounces California prune puree

1 1/2 cups all-purpose flour

1 tablespoon baking powder

1/4 cup cocoa powder

2 teaspoons vanilla extract flaky sea salt, for garnish

To make prune puree: In blender, combine prunes and water. Pulse to combine then blend until smooth, pourable consistency forms, scraping sides, if necessary.

Store puree in airtight container in fridge up to 4 weeks.

To make brownies: Preheat oven to 350 F. Line 9-by9-inch baking pan with parchment paper then lightly grease with nonstick cooking spray.

Using double boiler, melt chocolate and olive oil. Whisk in sugar and prune puree; mix until dissolved.

Into large bowl, sift flour, baking powder and cocoa powder. Gently fold in chocolate and prune mixture then add vanilla.

Spread batter in prepared pan, sprinkle with flaky sea salt and bake 20-25 minutes, or until top starts to look dry and brownies are just beginning to pull away from sides of pan.

Cool in pan. Remove then cut brownies into 3-inch squares.

CAKE: Coconut oil spray

14 tablespoons butter, chopped

2 teaspoons vanilla extract

3/4 cup cocoa powder

10 soft, pitted prunes, chopped small

1/3 cup maple syrup

6 eggs

1/2 cup coconut sugar

1 cup almond meal

GANACHE:

1 cup full-fat coconut milk

1 1/3 cups dark chocolate morsels

To make cake: Preheat oven to 300 F. Lightly spray bottom and sides of 8-inch springform pan with coconut oil spray. Place round piece of parchment paper in bottom of pan and lightly spray with coconut oil spray.

In small saucepan over low heat, place butter and vanilla. Use sieve to sift cocoa into saucepan. Stir with spatula until completely smooth. Remove from heat and set aside.

CHOCOLATE COVERED PRUNE FUDGE CAKE

prep time: 15 minutes

cook time: 55 minutes

yield: 1 cake (8 inches)

In bowl of food processor fitted with “S” blade, place prunes and syrup. Top with cooled butter mixture then process until smooth. Transfer to large mixing bowl, scraping all chocolate mixture from food processor with spatula.

In bowl of stand mixer fitted with whisk attachment, whip eggs and coconut sugar on high speed 7 minutes, or until tripled in volume.

Add one-third of egg mixture to bowl with chocolate mixture. Using spatula, gently fold together until completely combined. Add almond meal and remaining egg mixture to bowl and gently fold to combine.

Pour batter into prepared pan and bake 55 minutes, or until set. Once cooked through, transfer cake to cooling rack and cool completely in pan.

To make ganache: In top of double boiler, melt coconut milk and dark chocolate until completely smooth. Pour prepared ganache over cake. Serve immediately for molten fudge effect or allow to completely set.

To make prune puree: In blender, combine prunes and water. Pulse to combine then blend until smooth, pourable consistency forms, scraping sides, if necessary.

Store puree in airtight container in fridge up to 4 weeks.

To make energy balls: In mixing bowl, stir oats, coconut, nut butter, pecan meal, prune puree, cocoa powder and vanilla until completely combined.

Cover and chill in refrigerator 30 minutes. Once chilled, use small cookie scoop or measuring spoon to measure equal-sized amounts of mixture then form into balls by applying gentle pressure to dough using palms. Do not roll as balls will break apart.

Store covered in airtight container in refrigerator up to 1 week.

These Portobello Mozzarella Sandwiches are a plantforward version loaded with grilled mush-rooms, fresh mozzarella, pesto mayo, arugula and a balsamic glaze on ciabatta rolls. For an added touch of freshness, a homemade tomato bruschetta topping combines tomatoes, red onions, basil and more to capitalize on a peak produce season.

PORTOBELLO MOZZARELLA SANDWICHES

servings: 4

TOMATO BRUSCHETTA TOPPING:

1/4 pound fresh plum tomatoes, cored and diced

2 tablespoons red onion, peeled and minced

2 tablespoons fresh basil leaves, thinly sliced

1 teaspoon olive oil

1 pinch ground black pepper

1 pinch fresh garlic, peeled and finely minced

SANDWICHES:

1 pound fresh portobello mushrooms, cleaned, stems removed, sliced thin

3 tablespoons olive oil

1/4 teaspoon garlic powder

1/4 teaspoon kosher salt

1/8 teaspoon ground black pepper

1/4 cup mayonnaise

2 1/2 tablespoons prepared basil pesto

4 ciabatta rolls (4-by-4 inches), split in half

4 ounces fresh mozzarella cheese, sliced small

4 ounces tomato bruschetta topping

2 ounces fresh baby arugula

1/4 cup balsamic glaze

To make tomato bruschetta topping: In bowl, combine tomatoes, onion, basil, olive oil, salt, pepper and garlic.

Set aside.

To make sandwiches: Preheat grill pan or grill to medium heat.

Toss sliced mushrooms with olive oil, garlic powder, salt and pepper.

Grill mushrooms until fork-tender, 3-4 minutes on each side. Let cool.

Mix mayonnaise with pesto until combined. Spread 2 tablespoons pesto mayonnaise on cut sides of each roll. For each sandwich, layer 1/4 of grilled mushrooms, mozzarella slices, tomato bruschetta topping, arugula and balsamic glaze.

Top with other roll halves. Cut diagonally in half to serve.

APRICOT BRUSSELS SPROUTS COLESLAW

servings: 4

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon granulated sugar

1 teaspoon salt

1 teaspoon ground black pepper

2 cups trimmed and shredded

Brussels sprouts

1 cup dried apricot, diced

1 cup red onion, trimmed and diced

Combine mustard, honey, sugar, salt and pepper. Mix well.

Add Brussels sprouts, apricot and onion; toss to coat.
