La Sal de la Malvarrosa es una concreción de la intuición visionaria de Ximo Roca sobre unos bocetos dispersos de Boke Bazán a la luz de la porcelana. La sal del mar, como ingrediente que la gastronomía requiere para fusionarse con el resto de impactos sensoriales, epitomiza un carácter muy mediterráneo, a veces calmo y a veces concurrido, donde solo hay un orden aparente que las olas se encargan de alterar. ¿Qué ocurre con el negro ávido de expresión sobre el blanco perfecto? Las diferentes temperaturas se dan cita a la espera de que la maestra mano de quien cocina y presenta haga inclinar la balanza con su texto. A veces muy poquito sabe a mucho, y la preciosa Malvarrosa acaba de invitarnos a pasear por sus formas, en esta ocasión decoradas por el azar, o quizás no. The Salt of the Malvarrosa is a realization of the visionary intuition of Ximo Roca on some sketches scattered of Boke Bazán upon the light of the porcelain. The salt of the sea, as an element that the gastronomy needs to consolidate with the other sensory impacts, epitomizes a Mediterranean character, sometimes calm sometimes crowded, where there is only a seeming straight that the waves are responsible to disturb. What happens with the black hungry of expression in the perfect white? Different temperatures come together awaiting the master hand of who cooks and shows tips the balance with his text. Sometimes a bit tastes a lot, and the precious Malvarossa invites to walk in its ways, in this case decorated by chance, or maybe not.

Con Babel se invierte el proceso creativo ya que por sí misma es fuente de inspiración sobre qué cocinar para aprovechar al máximo sus posibilidades. Monta, desmonta, combina, construye, sorprende... éxtasis imaginario que te proporciona con solo echar un vistazo a sus recursos modulares, esos que te permiten crear rascacielos de sorpresas, saborear sus serpenteantes caminos, sus puentes de texturas y olores, es en definitiva la torre de Babel de los sabores. La serie nace de la colaboración entre el diseñador Ximo Roca y el restaurador Bernd H. Knöller, del restaurante Riff ubicado en l’Eixample de la ciudad de Valencia, que ha dejado su impronta y personalidad sobre la colección en un intento de reflejar la diversión y el carácter jovial con el que él mismo dota a sus creaciones. With this collection the creative process is reversed already that by itself it is a source of inspiration on what to cook in order to take profit its multiple possibilities. Assemble, disassemble, combine, construct, surprise... it provides you an imaginary ecstasy with only taking a glance over its modular resources, those that allow you to create skyscrapers of surprises, flavour its winding roads, its bridges of textures and smells, it is in definitive the flavours’tower of Babel. The collection is born from the collaboration between the designer Ximo Roca and the restaurateur Bernd H. Knöller, of the restaurant Riff located in l’Eixample of Valencia city, who leaves its stamp and personality in the collection, in an attempt to reflect the amusing and cheerful character with which he provides his creations.

Toda suerte de evocaciones de zarcillos, helechos, caracoles, ancestrales nautilus y desaparecidos ammonites están presentes en nuestra memoria contemplando estas piezas.
Petrify a helix, enclose it within a circle... it is converted into a geometric space whose centre is, and will be, unattainable. The spiral twists around the eternal vacuum, gripping it with infinite delecacy. The culinary preparation is then placed within this strange and surprising circle. Evocations of tendrils, ferns, snails, ancient nautilus and extinct ammonites are present in our minds when we contemplate these pieces.

Manchas de líquido se deslizan sobre la superficie siguiendo la ondulación de la forma del plato. Es una imagen fluida y tridimensional con cierto sentido del humor que propone un aspecto diferente a los diseños lineales. El diseño da énfasis en el volumen y forma del plato y la simetría de la composición permite colocar cada plato de forma distinta. Liquid blots slip on the surface following the ondulation of the plate. It is a fluent and three-dimensional image with a fine sense of humour that propose a different aspect to the lineal designs. The design emphasizes the volume and form of the plate and the asymmetry of the composition allows to set each plate in a different way.
Las letras me gustan hasta en la sopa, así que no lo pude evitar. Elegí este fragmento de Alicia en el País de las Maravillas con la intención de provocar una sonrisa al lector. I love letters, even in the soup, so I couldn’t help it. I picked these lines from Alice in Wonderland trying to bring a smile on the reader.

La intervención de Nab y Tom es una ilustración clásica, proviene de una serie de dibujos de hortalizas que fueron realizados separando los frutos uno a uno y también llevando a cabo bodegones. El trabajo fue desarrollado con lápiz muy graso sobre papel reciclado, ligeramente rugoso, lo que imprimía a las líneas una elegante textura. Una vez realizada la serie de dibujos se seleccionó el motivo que fue ligeramente ampliado para que, al colocarse sobre la superficie cerámica, quedase incompleto, construyéndose así una trama voluntariamente críptica. Nab and Tom are two classical illustration which come from a set of vegetables drawings achieved dividing the fruits one by one and also by doing still lives. The work was developed with a greasy pencil on slightly rough recycled paper, confering the lines an elegant texture. Once achieved the set of drawings one topic was selected and slightly enlarged so that, when printed on ceramic, it would seem unfinished, building that way a voluntarily cryptic texture.
Línea neobarroca en la que el trazo caligráfico es el protagonista. La decoración del plato funciona, por contraste, como marco a las composiciones minimalistas de la cocina contemporánea. El mensaje textual de Bon Apetit, en el lenguaje de la cocina más tradicionalmente internacional, a parte de un cierto aire cosmopolita, establece un diálogo entre el comensal y el cocinero. Neobaroque line in which the calligraphic outline is the protagonist. The decoration of the plate works, in contrast, as frame to the minimalists compositions of the contemporary cuisine. The textual message of Bon Apetit, in the most traditional cuisine language, establish a dialogue between the fellow dinner and the cook.
Línea neopop, de reminiscencias de los años sesenta, muy pensada para restaurantes de cocina contemporánea y de tendencia, dirigida fundamentalmente a un público joven. La composición de la superficie estampada, ocupando únicamente medio plato, permite la colocación de los platos en la mesa con orientaciones distintas, lo que confiere al conjunto un gran dinamismo y variedad. Neopop line, with reminiscence of the sixties, tought up to restaurants of contemporary cuisine, aimed at young customers. The composition of the stamped area, filling only half plate, allows to set the plates on the table with different orientations giving dynamism and variety to the whole.

Supone extrapolar una imagen asociada a una vaso a otro contenedor, en este caso un plato. Un mero ejercicio estético que juega a trastocar asociaciones preestablecidas. El resultado es una imagen sugerente, de líneas depuradas... y con espíritu lúdico: ¿ porqué no una ola en nuestra mesa ? Takes an image associated to a glass and throws it on a different container, a plate in this case. An aesthetic exercise playing with the pre-established associations. The result is a suggestive image, pure lines... with a joyful spirit: Why not a wave on our table ?
Parte de un homenaje a la fotografía, experimentación en estado puro con los elementos que la definen: luz y sombra. La idea se conecta con elementos básicos de nuestra mesa, las formas simples y reconocibles del tenedor y el cuchillo. Una invitación al equívoco, una representación sin el referente... bruma fotográfica de lo cotidiano. An homage to photography, pure experiment with it’s basic the elements: light and shade. This idea connects with no referent... photographic mist of the daily life.
Debe su nombre a una pinada de la costa levantina ya que decorado mediante un dibujo de línea y valorando el gesto y el ritmo de las formas sugerentes recuerda la pinocha que se desprende de los pinos. El motivo de la representación de la pinocha caída del árbol sobre el plato sugiere un lugar al aire libre, fresco, bajo la sombra de un pino disfrutando de una comida. Named under a famous pine tree area in the mediterranean seaside, close to Valencia. With a simple drawing, enhances the rhythm of the suggestive pine needles falling from the pine. This optical reference brings us to a pleasant meal, al fresco, under the shade of the tree enjoying a meal.
Crochet rinde homenaje a la dualidad. El efecto de la textura del ganchillo y su cálida sensación contrasta con la suavidad y el frío tacto de la porcelana. La afloración de sensaciones contrapuestas conectan nuestros sentidos con la fantasía: nada más complejo que tejer un plato con crochet. La tecnología nos permite divertirnos con este juego táctil, visual y emocional. Crochet brings homage to duality. The effect of the texture of the hook and its hot sensation, contrasts with the smoothness and the cold tact of the porcelain. Opposite sensations arise and connect our senses with the fantasy: nothing more difficult than weave a plate with crochet. The technology allows us to amuse with this tactile, visual and emotional game.

El plato establece un diálogo con el comensal. Los signos están ahí y de pronto desaparecen. Lo han predispuesto a esperar algo de la comida; cuando vuelven a aparecer, ¿ era lo esperado ? Admiración, perplejidad, satisfacción. The dish establishes a dialog with the retainer. The signs are there and suddenly disappear. They have predisposed him to expect something from the food; when they reappear, it was what he expected? Admiration, perplexity, satisfaction.
La idea surgió como una serie-homenaje a la amenazada y menguante huerta metropolitana de valencia, aunque de momento sólo he desarrollado esta primera imagen dedicada a Alboraia. Basándome en imágenes de satélite de Google quiero retratar una topografía viva y acosada, con sus frentes/fronteras y sus cicatrices, como un patchwork de líneas y manchas a medio hacer. The idea arose as a series - honouring to the threatened and diminishing metropolitan Valencian garden, though at the moment I have only developed this first image dedicated to Alboraia. Basing on images of Google’s satellite I want to portray an alive and persecuted topography, with his frontiers and his scars, as a patchwork of lines and spots to way to do.
La evolución de la gastronomía tan centrada en la cultura del readymade, tiene a mi modo de ver su contrapunto en la honestidad. Kokoro reivindica la cocina “a mano” y en el “aquí y el ahora” como auténtica vía de conexión entre cocineros y comensales, una visión sin distancias y con un gesto recíproco exento de premuras. Gastronomy evolves to the readymade culture, with honesty as sole masterpiece. Kokoro claims for “hand made” kitchen, “now and here” as the authentic way of linking cooking and eating, a vision out of distance in a mutual gesture totally exempt of any haste.
Los brazos de Shiva fueron interpretados alrededor del sol, simetría que baila al sabor de un delicioso plato. The multiple arms of Shiva carving around the sun, symmetric dance of spices embracing a delightful dish.
