Soak in the SPF Wearing sunscreen is a no-brainer when it’s hot and the skies are clear, but it’s still important to protect your skin on cloudy days. Use a morning SPF product like Protective Day Cream to help ensure your skin is protected all day, every day. Your Pollution Solution Air quality can put a real damper on your glow. Gingerbread Cookies

Ingredients

Ingredients

• 120 mL French Vanilla Nutrimeal • 840 mL oat flour • 7.5 g baking powder • 3.75 g baking soda • 2.5 g kosher salt • 15 g ground ginger • 10 g ground cinnamon • 1.25 g ground cloves • 90 g unsalted butter • 180 g coconut sugar, packed • 1 large egg • 120 mL molasses • 10 g vanilla • Optional: decorating ingredients

Batter • 120 mL Dutch Chocolate Nutrimeal • 240 mL Medjool dates, pitted (roughly 12 dates) • 240 mL water • 80 mL cocoa powder • 15 g baking powder • 5 g vanilla extract • Pinch of Kosher salt • 240 mL oat flour • 120 mL non-dairy milk • 5 g peppermint extract

Instructions 1. In a small bowl, whisk together Nutrimeal, flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until wellcombined. 2. Mix butter, coconut sugar, egg, molasses, and vanilla in a blender on medium speed until combined. 3. With blender on a low speed, gradually stir in dry ingredients until smooth. 4. Divide dough in half and wrap each in plastic. Chill in refrigerator for 2–5 hours. 5. Remove dough from refrigerator, preheat oven to 190 °C, and line a baking sheet with parchment paper. 6. Place one portion of dough on a lightly floured surface. Sprinkle flour over dough and a rolling pin. 7. Roll dough to a 0.65 cm thickness and cut out 15 cookies. 8. Space cookies roughly 3.8 cm apart on backing sheet and bake for 7–10 minutes. 9. Remove from oven and allow cookies to cool completely. 10. Decorate—and enjoy each delicious bite!

Icing • 240 mL Medjool dates, pitted (roughly 12 dates) • 120 mL non-dairy milk (plus more to adjust thickness) • 120 mL creamy almond butter • 60 mL cocoa powder • Pinch of Kosher salt • Optional: crushed peppermint candy for topping

Instructions 1. Preheat oven to 175 °C. 2. Combine dates and water in a blender and blend on high speed until smooth. 3. Add the rest of the batter ingredients and blend briefly on low until just combined. 4. Spoon batter into cupcake baking tins and bake for 25 minutes. 5. For the frosting, blend all ingredients together on high speed until smooth and creamy, adding more non-dairy milk as necessary. 6. Transfer frosting to a piping bag and chill at least 1 hour prior to frosting. 7. Let cupcakes cool completely before frosting. 8. Frost each cupcake, top with crushed peppermint candy, and share a decadent bite with a close friend.

Ingredients • 120 mL French Vanilla Nutrimeal • 80 mL melted coconut oil • 180 mL honey or sugar-free maple syrup • 2 eggs • 120 mL non-dairy milk • 5 g baking soda • 5 g ground cinnamon • 10 g vanilla extract • 2.5 g fine-grain sea salt • 1.25 g ground nutmeg • 360 mL grated zucchini • 120 mL dried whole cranberries, lightly sweetened • 15 g orange zest • 420 mL cups oat flour

Instructions 1. Preheat oven to 165 °C. 2. Grease a 23 x 13 cm loaf pan to prevent sticking. 3. In a large mixing bowl, whisk coconut oil and honey (or syrup) until combined. 4. Add eggs and beat well. 5. Add milk, baking soda, cinnamon, vanilla, salt, and nutmeg and whisk until well-blended. 6. Squeeze out excess moisture from zucchini (you can use a potato ricer or nut milk bag). 7. With a big spoon, stir in zucchini, cranberries, and orange zest. 8. Add flour and Nutrimeal and stir until combined. (Some lumps in the batter are fine.) 9. Pour batter into greased loaf pan and sprinkle lightly with cinnamon. 10. Bake for 55–60 minutes. 11. Remove loaf from oven and let cool completely before serving. 12. Carve out a hearty slice for yourself—you’ve earned it.
