THAI CURRY CHICKEN SATAY
INGREDIENTS
1 ½ pounds boneless, skinless chicken thighs
2 tablespoons green curry paste
1 tablespoon lime juice
1 tablespoon cilantro, finely chopped
2 cloves garlic, minced
¾ cup coconut milk
2 tablespoons coconut palm sugar
1 tablespoon basil, chopped
½ tablespoon fresh ginger, minced
10 bamboo skewers
INSTRUCTIONS
1. Cut chicken thighs into strips. Set aside.
2. Place all remaining ingredients in a medium bowl and whisk together until well combined.
3. Add chicken to the bowl and marinade in fridge for at least one hour.
4. Remove chicken from marinate and place on skewers.
5. Grill for 5-7 minutes on each side or until chicken is cooked.
6. Remove from grill. Sprinkle with additional chopped basil and cilantro, if desired. Pairs well with peanut sauce.
