Salad Ingredients: 1 cup quinoa 4 scallions, sliced 4 basil leaves (chiffonade) 1/2 cup frozen corn, thawed 1/2 cucumber, diced 1 red pepper, diced 1/2 pint grape tomatoes, halved 2 handfuls arugula Cracked pepper and salt Instructions Rinse quinoa and strain. Bring quinoa and 2 cups of water to a boil. Reduce heat, place lid on top, and cook for about 15-20 minutes, or until liquid has been absorbed. Set aside until cool. Once cool, toss all ingredients together with desired amount of dressing. Top with fresh cracked pepper and salt to taste. Cilantro Lime Dressing Ingredients: 2 tablespoons white vinegar 1 clove garlic 3 teaspoons Chipotle sauce 2 teaspoons honey 1 cup cilantro leaves Juice of 1 lime 1/2 teaspoon salt 1/2 cup grapeseed oil 1/4 cup Just Mayo 1/4 teaspoon cumin

Instructions Place all ingredients except oil in a high-speed blender and blend until smooth. Slowly drizzle oil into the blender to emulsify.
