t’s that time of year again, when parents are getting ready for back to school by shopping for everything from clothes to school supplies. With school starting in just a few weeks, life is about to get a bit crazier around the house, but don’t let healthy eating go by the wayside. The easiest way to get healthy meals both in the lunch box and on the table is to make sure you have the right items on hand. This will not only make your life easier but a lot less stressful. Stocking your pantry with healthy snacks and staple ingredients makes easy preparation a breeze. In the produce department, think about fresh fruit that is easy to pack like grapes and mandarin oranges. Choose veggies such as carrots, celery, and even jicama to pair with a yummy dip. In the grocery aisles, look for foods like nut butters, hummus and chips, cheese sticks, applesauce cups, Greek yogurt, and popcorn. Don’t forget the bulk department for great varieties of trail mix as well as nuts and seeds. Many of these items make great after-school snacks in addition to great lunch box add-ons, and will provide healthy energy to fuel your child for the school year.

Breakfast Sandwiches
INGREDIENTS:
INSTRUCTIONS:
6 large eggs
Preheat oven to 375 degrees. Lightly oil six 10-ounce ramekins or coat with nonstick spray and place onto a baking sheet.
Kosher salt and freshly ground black pepper, to taste 6 English muffins, split 12 slices deli-sliced ham 6 slices cheddar cheese
Add one egg to each ramekin, beating slightly. Season with salt and pepper, to taste. Place into oven and bake until egg whites are cooked through, about 12-14 minutes. Place one egg over the muffin bottom. Top with two slices of ham and one slice of cheese, and then cover with another muffin top to create a sandwich. Repeat with remaining English muffins to make six sandwiches. Wrap tightly in plastic wrap and place in the freezer. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely. Serve immediately. Recipe adapted from damndelicious.net
