REGISTRATION INFORMATION - WAYS TO REGISTER ONLINE - Visit www.shastacollege.edu/communityeducation. In the Community Education catalog, click the links to view courses in each category. To register for a class, click the “login in” link. You can then select the course(s) you wish to take. Please note: if this is your first time using our online registration system, you will need to create a new account. In the future, you will not need to re-enter your information. You will be prompted through the registration process. TELEPHONE - Enrolling in classes is just a phone call away with your credit or debit card. Call us at (530) 242-7677. Please have the name of your class and credit card ready for prompt service. WALK-IN – Drop by our office and register for your class. We are located at the Shasta College Main Campus, 11555 Old Oregon Trail, Redding - Building 2100, Room 2152. Our office hours are Monday through Friday, 8:00 am – 5:00 pm PAYMENT FOR CLASSES – Payments for classes are due at the time of registration. We accept cash, check (personal, business, or online) as well as Visa, and MasterCard credit cards. Preregistration is important. If we do not reach the minimum number of participants necessary to prevent a revenue loss, we reserve the right to cancel any class prior to the start date. Please note: class schedules are subject to change. CLASS CANCELLATION POLICY - We do not like to cancel classes however, sometimes it is necessary to cancel before the first meeting when enrollments do not reach a minimum. If we do not have enough students registered for a class prior to its start date, it will be cancelled. Every effort is made to notify registered students of the cancellation, by phone and/or by email. For this reason, we must have a current daytime phone number and email address on file. COMPUTER CLASSES MICROSOFT WORD In this 3-week class you will learn the essentials of Microsoft Word (MS Office 2016) to increase your productivity at work, school, or home. Topics include: creating flyers, manipulating pictures in documents, formatting characters and paragraphs, writing research papers, using tabs, rulers, building blocks, page and line breaks, writing business letters with letterhead and a table, generating mailings and labels. MICROSOFT EXCEL In this 4-week class you will learn the essentials of Microsoft Excel (MS Office 2016) to increase your productivity at work, school, or home. Topics include: constructing worksheets, split panes, and freeze cells, using sum and fill, creating charts, using formulas, functions, calculations, and setting what-if analyses. Topics include: power on/off, components (monitor, CPU, storage), hardware and software, keyboard and mouse, operating systems, desktop icons, taskbar, Start button, running programs, manipulating windows, customizing your computer, file and photo management and storage, selecting text, cut/copy/paste functions, selecting multiple files, connecting to the Internet and Wifi, and using Internet browsers. COOKING - CUISINE AUTHENTIC ITALIAN COOKING MADE EASY In this series of workshops you will learn the basics of authentic Italian cooking with easy recipes – recipes that you will be able to take with you and use at home. Every session will have a cultural account along with practical teaching. You may even learn to speak a little Italian. At the end of each session participants will get to eat the dish that was made. COOKING - CUISINE HOW TO MAKE HOMEMADE PASTA If you’re wondering why anyone would want to make pasta from scratch when it’s just a boiling pot of water and a cardboard box away, then it’s time to get acquainted with the fresh stuff. It’s crucial here to understand that fresh pasta and dry pasta are two distinctly different things. Fresh pasta is worth the effort. HOW TO MAKE HOMEMADE PIZZA DOUGH Fall in love with making homemade pizza. It’s not just a meal, it’s an event. By making pizza at home everyone participates and adds their own flair. In this class you will learn how to make the real ‘Margherita pizza’ using just good tomato sauce, mozzarella, olive oil and basil. You will be able to eat the pizza at the end of the session. HOW TO MAKE HOMEMADE LASAGNA There is nothing like a good pan of lasagna. It just might be the perfect comfort food. But mess it up, and we’re talking mushy noodles, soupy sauce, and congealed cheese. You deserve better than that and so does this casserole. Learn to make a perfect pan of lasagna - every time. In this class you will learn how to make the RAGU Sauce and Béchamel. You will be able to eat the lasagna at the end of the session. COOKING - CUISINE HOW TO MAKE HOMEMADE RAVIOLI In this class you will learn how to make ravioli and how to prep ravioli dough and filling. We will prep delicious ravioli and eat at the end of the session. Homemade raviolis are delicate pasta pillows stuffed with goodness. HOW TO MAKE HOMEMADE ITALIAN BREADS In this class you will learn how to make homemade bread and bruschetta - how to prep bread dough and to get the perfect bruschetta with garlic, tomatoes, olive oil, and basil or oregano. HOW TO MAKE HOMEMADE ITALIAN DESSERTS In this class you will learn how to make homemade crostata pie and lemon and ricotta cake - how to make crostata dough, prep, and bake a delicious sweet staple of Italy. With the same dough we will also bake a lemon and ricotta cake. We will prep and bake, and will eat the pie and cake at the end of the session. Diana Hamar spent many years doing business as an illustrator and calligrapher in the Sacramento area before coming to Redding. Because the demand from a variety of communities was high for calligraphy, she was challenged to develop many techniques and uses for this skill.

Care and handling, design styles and techniques, and identification of some of the more commonly used cut flowers in floristry. Six weeks of fun, fall flowers, and floral designs in every class! A native to Redding, Darlene has worked in the world of flowers professionally for over 35 years, including having worked in nurseries, flower shops and teaching floral design. She is a floral judge, and a Certified California Florist. She enjoys sharing her love of flowers, and hopes you learn a new trick or two in floral design.
PUMPKIN BOUQUET CENTERPIECE Just in time for fall! In this fun floral workshop, you will create a stunning and long lasting floral creation that will dry beautifully and last until Thanksgiving. With the unusual princess pumpkin with its flat top for a base, participants will adorn succulents, everlasting flowers, mosses and ribbons for an effect all your friends will envy. Bring your own princess pumpkin and a good friend to share this activity with! We’ll provide everything else however, bringing your own pruning shears and scissors is recommended. Along with the proper care and handling of fresh flowers and their identification, learn to create the different styles of wedding bouquets, corsages, and centerpieces that are popular today. HOLIDAY DECOR FOR THE HOME WITH FRESH FLOWERS Set a festive holiday mood with fresh flower arrangements and holiday greenery that you create yourself. You will create a lovely autumn cornucopia for your Thanksgiving table. For the Christmas season, you will create a fresh balsam wreath, a garland or swag, and a Christmas centerpiece with candles and fresh flowers. All the materials are provided but you may want to personalize yours with your own trim and ornaments. DAY TRIP TO NEVADA CITY VICTORIAN CHRISTMAS Welcome the holiday season in style in historic Nevada City (California). The town’s picturesque downtown transforms into a genuine Christmas card come to life. It’s a magical setting of hilly streets outlined with twinkling white lights and authentic gas lamps, wandering minstrels and carolers dressed in Victorian attire, and a myriad of visitors sharing holiday cheer and good tidings. Nevada City’s famous Walking Christmas Tree and a living nativity scene can be found, along with hot roasted chestnuts and horse drawn carriage rides. Attendees will be on their own for the day to enjoy shopping, dining, and the holiday festivities. CREATIVE INTERESTS EXPLORING THE BEATLES’ “SGT. PEPPER’S LONELY HEARTS CLUB BAND” ALBUM Dr. Grandy of the Shasta College Department of Music will present a light, casual listening and brief music analysis exploration of the important rock album “Sgt. Pepper” by The Beatles. Included will be listening to and a discussion of how each song was musically constructed and how they worked together musically to form a rock “concept album.” No formal music background by the audience is required and the lecture is appropriate for all ages. This exploration will be an enjoyable and simple overview of this very important musical creation. Dr. Grandy is a full-time music instructor at Shasta College and has taught at Shasta College since 1978. Dr. Grandy received his Doctorate in Instrumental Music (DMA) from Arizona State University, has been awarded a prestigious Senior Fulbright Professor award by the U.S. Government.
BEGINNING GENEALOGY October is family history month, so let’s explore how to begin searching for your ancestors! We will begin with the basic charts and forms using the genealogical standards for documentation and an overview of organization tips. I will introduce you to various genealogical software (a place to store this genealogy information) and a five-step process to begin searching for your roots. Finally, using the computer lab, we will explore some of the beginning websites to use in your research. Basic computer skills are necessary for the last half of the class. HEALTH AND FITNESS INTRODUCTION TO TAI CHI This is an opportunity to learn China’s most revered exercise for health and longevity! In this introductory class you will learn the basic principles of Tai Chi’s slow moving and gentle exercises which are known for promoting relaxation, improving body awareness, balance, and flexibility, and reducing stress. The movements are taught one at a time and explained in detail. Age or physical condition is not a factor in learning Tai Chi and no special clothing, shoes, or equipment are needed. This class meets twice a week. Students are welcome to take this class as many times as they want.
Michel Czehatowski Facilitator
Michel began studying Yang Family (or Yang Style) Tai Chi in 1975. He is proficient in the Single and Double movement forms (two person partner forms) of Tai Chi. His teachings promote and emphasize softness (relaxation) and listening (awareness). He enjoys sharing his knowledge of Tai Chi, health, and Chinese culture with others.

HEALTHCARE OCCUPATIONS PHYSICAL THERAPY AIDE Prepare for a rewarding career as a valued member of the physical therapy team while learning about the human body, health related and orthopedic specific disorders, and the way physical therapists treat these disorders. The Physical Therapy Aide is generally responsible for carrying out the non-technical duties of physical therapy such as preparing treatment areas, ordering devices and supplies, and transporting patients. This 3-week class will help you identify your yard’s potential and bring it to reality. Students will have the opportunity to complete a landscape plan for their own property that addresses both hardscapes and softscapes.
