GENERAL INFORMATION REGISTRATION INFORMATION – WAYS TO REGISTER ONLINE – Visit www.shastacollege.edu/communityeducation. In the Community Education online catalog, click the links to view courses in each category. To register for a class, click the “login in” link. You can then select the course(s) you wish to take. Please note: if this is your first time using our online registration system, you will need to create a new account. In the future, you will not need to re-enter your information. You will be prompted through the registration process. TELEPHONE – Enrolling in classes is just a phone call away with your credit or debit card. Call us at (530) 242-7677. PAYMENT FOR CLASSES – Payments for classes are due at the time of registration. We accept cash, check (personal, business, or online) as well as Visa, and MasterCard credit cards. Pre-registration is important. If we do not reach the minimum number of participants necessary to prevent a revenue loss, we reserve the right to cancel any class prior to the start date. Please note: class schedules are subject to change. CLASS CANCELLATION POLICY – We do not like to cancel classes; however, sometimes it is necessary to cancel before the first meeting when enrollments do not reach a minimum. If we do not have enough students registered for a class prior to its start date, it will be cancelled. Every effort is made to notify registered students of the cancellation, by phone and/or by email. For this reason, we must have a current daytime phone number and email address on file. In this class you will learn the basic essentials of using a computer (MS Office 2016). COURSE SERIES THESE CLASSES MEET AT: Tantardini’s European Bakery-Deli, 2931 Churn Creek Road, Redding Thursday, 6:30-8:30pm I Facilitators: Diego and Deborah Tantardini I $69 per session
In this series of workshops you will learn the basics of authentic Italian cooking with easy recipes that you will be able to use at home. Every session will have a cultural account along with practical teaching. You may even learn to speak a little Italian. At the end of each session participants will get to eat the dish that was made.
HOW TO MAKE HOMEMADE PASTA
Fresh pasta and dry pasta are two distinctly different things. Fresh pasta is worth the effort. In this class you will learn how to make fresh eggs noodles and properly cook it “al dente.” DATE: AUGUST 16, 2018
HOW TO MAKE HOMEMADE PIZZA DOUGH
Fall in love with making homemade pizza. It’s not just a meal, it’s an event. In this class you will learn how to make the real ‘Margherita pizza’ using just good tomato sauce, mozzarella, olive oil and basil. You will be able to eat the pizza at the end of the session. DATE: AUGUST 30, 2018

Diego and Deborah Tantardini are native Italians. They moved to Redding from Italy in 2012. They are the owners of Tantardini’s European Bakery and Deli, an Italian landmark in the Redding area.
HOW TO MAKE CARBONARA AND PUTTANESCA SAUCES
In this class you will learn how to make homemade sauces; how to prep this delicious condiment for your pasta dishes. We will prep a couple of Italian condiments for pasta, the queen of the Italian kitchen. DATE: SEPTEMBER 13, 2018
HOW TO MAKE HOMEMADE LASAGNA
There is nothing like a good pan of lasagna. It just might be the perfect comfort food. But mess it up, and we’re talking mushy noodles, soupy sauce, and congealed cheese. You deserve better than that and so does this casserole. Learn to make a perfect pan of lasagna - every time. In this class you will learn how to make the Ragu Sauce and Béchamel. HOW TO MAKE HOMEMADE RAVIOLI
In this class you will learn how to make ravioli and how to prep ravioli dough and filling. We will prep delicious ravioli and eat at the end of the session. Homemade raviolis are delicate pasta pillows stuffed with goodness. They are a great way to treat your family or guests to something special. DATE: OCTOBER 11, 2018
HOW TO MAKE BREAD AND BRUSCHETTA
In this class you will learn how to make homemade bread and bruschetta - how to prep bread dough and to get the perfect bruschetta with garlic, tomatoes, olive oil, and basil or oregano. In this class you will learn how to make homemade gnocchi from scratch. We will be hands on, mixing, shaping, and prep a delicious plate of this staple of Italy. We will cook and eat gnocchi at the end of the session. DATE: NOVEMBER 8, 2018
HOW TO MAKE ITALIAN DESSERTS
In this class you will learn how to make homemade crostata pie and lemon and ricotta cake - how to make crostata dough, prep, and bake a delicious sweet staple of Italy. With the same dough we will also bake a lemon and ricotta cake. We will prep and bake, and will eat the pie and cake at the end of the session. DATE: NOVEMBER 29, 2018
HOW TO MAKE RISOTTO AND ARANCINI
Using the rule of the eight steps, we will prepare an exquisite risotto, from broth to the final dish! Also, we are going to make Arancini! Arancini are stuffed rice balls which are coated with bread crumbs and then deep fried. They are usually filled with ragĂš, mozzarella. Ready for that!? Coffee is more than something to keep you awake, it’s a specialty food that has been around for centuries with more potential flavors than the best wine. These classes combine the best of modern science and ancient art while building knowledge and confidence in coffee history, modern practices and practical preparation. BREW METHODS
Does brewing coffee at home feel unexciting or intimidating? If you want to step up your home coffee brewing and go beyond the coffee pot this class is for you! Learn how to make a great French press, pour over, or Chemex. Principles of coffee science including brew ratios, grind setting and water temperature combine with the art and love for coffee. Learn from an experienced barista how to brew the perfect cup at home and get in some practice with time in the coffee lab. DATE: SEPTEMBER 22, 2018

BASICS OF ROASTING
Did you know that coffee is a crop that’s grown around the equator? Coffee is actually a seed that is harvested and dried before it’s ready to be roasted. This class will include information on coffee plant varietals, green coffee processing, and finally roasting. Learn from our roasters how to turn green coffee beans into a the best roasted coffee by understanding the science and art of what is happening as the coffee goes through the roasting process. The class will include a roasting lab and you’ll take some freshly roasted coffee home! DATE: OCTOBER 6, 2018
ESPRESSO EXTRACTION
For the coffee professional or home barista. Learn how to recognize and create great espresso shots by understanding the elements that play into your extraction. Topics covered include grind, dose, tamp and espresso machine basics. Great espresso is the foundation to a variety of coffee beverages. Let us teach you how to pull a perfect shot! This class is primarily in the coffee lab. DATE: OCTOBER 20, 2018
LATTE ART
Have you seen those YouTube videos and Instagram photos and want to pour latte art of you own? Milk texture and temperature are the key elements you will learn so you can begin to practice latte art. Where great shots and perfect milk intersect to create a creamy and beautiful expression of “love in a cup.” A basic knowledge of espresso extraction or completion of the espresso extraction class are recommended as principles in this class build on espresso knowledge. Most of this class will be spent in the coffee lab.
Stuart Sutherland Facilitator
Stuart’s passion for coffee started when he was 13 years old. In 2008, Stuart got his start in roasting coffee for Yaks. In 2012, Stuart attended the American Barista & Coffee School in Portland, Oregon where he completed barista, business and roasting courses. Stuart ran the cafe at his church while remodeling the building that is now Heritage Roasting Company, where he works as the primary trainer and roaster. He has trained local cafes such as the Stirring Coffee house, international cafes and roasters in Mongolia and Nicaragua and has visited coffee growing farms in South America.

BEGINNING CALLIGRAPHY
Fall is a great time to learn how to use calligraphy to make your own holiday invitations, place cards and greeting cards. Come learn the basics of simple calligraphic italic style alphabet. This is a beginning class to learn basic calligraphic techniques. Only felt tip calligraphic pens of any color (size 3.5) may be used in class. Please bring your own calligraphic paper for practice. Left handers are welcome, but will need patience in developing a different approach to writing. DATES: AUGUST 28 & 30, 2018
ADVANCED CALLIGRAPHY
This advanced calligraphy class assumes that you have learned the basics of calligraphy in terms of how to correctly hold the pen, form the basic italic alphabet and learned to use the guidelines for correct letter angle and proportion. Other alphabets and calligraphic styles will be demonstrated, along with various ways to embellish lettering. Only felt tip calligraphic pens of any color and size may be used in this class. Please bring your own calligraphic paper for practice. Left handers are welcome, but will need patience in developing a different approach to writing.

Diana Hamar spent many years as a professional illustrator and calligrapher in the Sacramento area before coming to Redding. Because the demand from a variety of communities was high for calligraphy, she was challenged to develop many techniques and uses for this skill.

THE ART OF FLORAL DESIGN: IMPRESSIONIST DESIGN
Bring the famous Impressionist paintings to life in fresh flowers! Students will recreate the art of Renoir, Monet and Cezanne in fresh flowers with the guidance of floral instructor, Darlene Montgomery. Topics covered include floral design basics, care of fresh flowers, use of color in floral design, and floral techniques. Students will create a floral design each class meeting that they can take home to enjoy. Basic tools required (scissors, wire cutters, floral knife if they have one). Fresh flowers and containers are provided. DATES: SEPTEMBER 19 – OCTOBER 17, 2018 $158 (4 Lessons)

STATE CAPITOL AND STANFORD MANSION MUSEUM
Join us for a fun filled day of adventures! First we will have a guided tour of the State Capitol Park. There are gardens in the surrounding Capitol Park, including trees from around the world. Capitol Park features memorials to significant events involving California: A Civil War Memorial Grove planted in 1897 with saplings from famous Civil War battlefields; a life-sized statue of Father JunĂpero Serra, a Roman Catholic missionary sent by Spain to help colonize California; The California Vietnam Veterans Memorial; and The California Veterans Memorial. Then we will have a guided tour of the Home of the California Legislature since 1869. We will tour the Capitol and restored historic offices of the Secretary of State, Treasurer, and Governor of California and more. Hiroko trained in Jujitsu for 3 years, and in Kendo since 2003. Hiroko has been traveling across the US and Canada, teaching women’s self-defense classes since 1991.

This class will be broken down into three sections. It begins with a calorie burning cardio program set to fun, energizing music. Next, the students will tone and shape the body with simple strength and core exercises. The final part of the class will be a combination of yoga and stretching poses designed to de-stress the body and get rid of those little aches and pains. Overall, the class is a complete body workout that will help students shed unwanted pounds and become stronger while learning to relax and unwind. Students will leave the class refreshed and happy, with energy to spare! The instructor provides a positive environment while encouraging students to work at their own pace and ultimately GET FIT! RESIDENTIAL LANDSCAPE DESIGN
Plan and create your own outdoor spaces that are beautiful, functional, and maintainable. This 3-week class will help you identify your yard’s potential and bring it to reality. Students will have the opportunity to complete a landscape plan for their own property that addresses both hardscapes and softscapes. The first class will cover site survey and base map; the design process; and hardscapes and structures. The second class highlights plantings, irrigation, and maintenance. The third class will be spent reviewing and refining individual plans. Student questions will be encouraged throughout the class. ETP The OSHA 10-hour course is designed to provide an introduction to Occupational Health and Safety Administration standards. We will cover the importance of OSHA and the rights and responsibilities of the employers and employees.

You finished your novel, spent numerous hours editing, and it’s finally ready to be sent out into the world. What do you need to take that next step? Before contacting a literary agent or an editor, there are three basic marketing must-haves a writer should complete: the pitch, the query, and the synopsis. We'll cover all three marketing must-haves and attendees will also practice their pitch and complete rough drafts of their query letter and synopsis during the workshop. Have you ever had an idea for a short story or even have a collection of short stories with no place to go? Heather Cuthbertson received her MFA in Creative Writing from Antioch University, Los Angeles. For the last eight years, she has served as the Editor-in-Chief of Gold Man Review, a literary journal based out of Salem, Oregon. She was also the co-representative for the Willamette Writers Salem Chapter for six years where she worked with several writers and facilitated meetings with agents and editors. She has also taught numerous workshops on writing, editing, and marketing for writers.
