s spring approaches, find a warm-weather outfit and head out to dinner without needing to scrape the windshield first. Kane County offers so many delicious options! In downtown Geneva, right at the entrance to historic Third Street is Niche, featuring original, high-end contemporary cuisine. The chef sources ingredients regionally and varies the menu seasonally in order to tantalize our taste buds. To start, I had the blistered green beans, served with bagna cauda, made from garlic and anchovies and served almost like a fondue; toasted macadamia nuts; and a touch of rich lemon. What a presentation with robust flavor that still keeps my waistline intact!

Next, I tried the pan-seared fjord trout. The sear on this beautiful fish, regionally sourced, gives it a wonderful crisp outside yet fluffy, light inside. It is adorned with celery root hash, sherried shiitake mushrooms and roquette greens. It is topped with a tarragon vinaigrette and a hollandaise that just takes this dish over the top. It is accompanied by crispy potatoes, which I sampled a tiny bit just to save the carb count but yet get that rich flavor. All this in a very elegant environment leaves you wanting to come back over and over!
