Popular trends in the restaurant industry Metro Creative ServiCeS

Dining out is no longer reserved for celebrating milestones or other special occasions. Many people dine out regularly for meals. A 2016 Gallup poll found that 61 percent of Americans eat dinner out at least once a week, and 16 percent are frequent diners, eating out three or more times per week. People who regularly dine out may have noticed some of the growing trends that have emerged in recent years that are helping to shape dining experiences. · Picked-on-property offerings: Many restaurants now serve foods grown, picked and processed on the premises. Rooftop or small courtyard gardens enable restaurateurs to pass the freshness on to customers. Chefs grind their own spice blends, harvest their own eggs, cure their own bacon, and embrace other hyper-local fare.

Restaurant trends continue to evolve as a greater number of diners are going out to eat.

· Gut-friendly foods: Some restaurants are experimenting with preparing and offering foods that are friendly to the digestive tract. These establishments emphasize prebiotic and probiotic ingredients and focus some of their efforts on producing menus with foods that boast antiinflammatory properties. · Streamlined menus: Food waste is a problem across the globe. Operating a sustainable restaurant requires careful decisions about the foods that make it onto the menu. Instead of offering five different chicken dishes, a restaurant may focus on two or three popular standards to cut back on waste. · Fast casual: Fast casual restaurants do not offer

Menu Guide 103018.indd 4

full table service, but offer a higher quality of food than traditional fast-food restaurants. These establishments also may be headed by trained and experienced chefs who add unique twists to popular menu items. · Extended delivery options: Dining out doesn’t have to mean eating away from home. A growing number of restaurants are emphasizing their curbside takeaway, drive-throughs and delivery services. Travel-friendly fare and heat-and-eat meals are competing with convenient options available at grocery stores. · Back to basics: More and more customers are looking for classic dishes they equate with home cooking. As a result, many restaurants are stripping away the pretense and extra ingredients and turning to traditional recipes.

The Times - MENU GUIDE

How to stay healthy when dining out Dining out is wildly popular. The convenience of letting someone else do the cooking and the opportunity to try new types of cuisine is too great to resist for many people. According to Zagat’s 2016 National Dining Trends Survey, people go out to eat (not counting breakfast) an average of 4.5 times per week. While it can be easy to count calories and adhere to other dietary restrictions when eating at home, that’s not always the case when dining out. Fortunately, there are ways for people who love to go out to eat to have their gourmet cuisine and eat it, too. · Request that items be cooked a certain way. While Health-conscious diners can still enjoy nights out on the town diners might not be able to order off-menu dishes, without sacrificing their waistlines or putting their long-term health in jeopardy. they can try their luck at asking for dishes on the menu to be prepared a certain way. For example, half of their entrées be boxed before the meal even if a menu is loaded with fried foods, try asking makes it to the table. In addition, avoid appetizers and for dishes to be grilled instead of fried. Researchers choose coffee or tea as dessert instead of high-calorie affiliated with the Harvard School of Public Health and sugar-laden baked or frozen desserts. found that people who ate fried food at least once per week had a greater risk of both type 2 diabetes and · Make sure salads are healthy. Some diners mistakenly heart disease than those who avoid fried foods, and believe that all salads are the same. However, salads that their risk increased with each additional fried meal loaded with bacon and cheese and smothered in creamy they consumed. In addition, researchers also found that dressings can be just as detrimental to diners’ waistlines eating fried foods away from home posed the greatest as large entrées cooked in an unhealthy way. When risk, as the frying oil used may not be fresh. Reused ordering salads, make sure the salad is loaded with oil is more easily absorbed by foods than fresh oil that healthy fare like raw vegetables and choose a lowhas yet to degrade, and that increased absorption can calorie, low-fat dressing. contribute to high cholesterol, high blood pressure and weight gain. Many restaurants are amenable to diners · Peruse menus before leaving home. Perusing menus who want to avoid fried foods, but diners must ask. online before leaving home allows diners to find restaurants that offer the kind of healthy fare they’re · Eat only half the meal. Restaurant portions tend to be looking for. Arriving at a restaurant without knowing bigger than portions diners would make for themselves its menu increases the chances that diners will simply at home. The various benefits of farm-to-table

The Times - MENU GUIDE

Metro Creative ServiCeS

Few things are more satisfying than biting into a fresh tomato right from the garden or seasoning a meal with herbs picked from a windowsill greenhouse. Restaurants recognize the value of such experiences, and more and more are relying on locally sourced products in their kitchens. The farm-to-table movement is not new, but it has gained momentum as consumers become increasingly enamored with the flavor and environmental impact of locally sourced foods. The National Restaurant Association found that farm-to-table food was one of its top 10 trends for 2015. Furthermore, the group says that one in five consumers are willing to pay more for local food, and 41 percent admit that locally sourced ingredients influence their decisions when choosing where to dine. Newcomers to the farm-to-table dining experience may not understand all the fuss surrounding this popular trend. The following are some of the key benefits of farm-to-table. · Peak freshness and ripeness: Local produce ripens on the plant and can be harvested at the last possible minute before it turns up on a plate. This helps ensure that it contains the highest amount of nutrients and flavor, according to the Harvard T.H. Chan School of Public Health. Food that has to travel further is often picked well before it is ready, ripening on the way to stores or other vendors. · Better for the environment: Food that needn’t travel far before reaching diners’ plates saves roughly 500 gallons of diesel fuel to haul produce a distance of 1,500 miles. This conserves fossil fuels and prevents harmful emissions from entering the atmosphere. · Supports neighboring farms: Supporting farm-totable restaurants and other eateries keeps business local in two different ways. It not only benefits local restaurants, but it also directly supports neighboring farms, fisheries and other suppliers.

Menu Guide 103018.indd 16

Farm-to-table is a popular movement that people are embracing for various reasons.

· Accessibility to seasonal choices: Farm-to-table eating provides a wide variety of in-season foods. This can translate into tastier foods because they are grown and harvested during their optimal growing season. · Reduces factory farming: According to O.info, the informational resource powered by Overstock.com, farm-to-table and local farming can reduce reliance on large, profit-driven corporations that may focus on maximum production over animal health and welfare. Local farms may be more inclined to treat their animals well and institute sustainable practices. · Learn about the community: A person might live in an area and never know that a local vineyard is in the vicinity or that a producer of straight-from-the-hive honey is nearby. Exploring farm-to-table resources can open people’s eyes to local businesses doing great work in and around their communities.

9 ways to be more courteous to food servers while dining out Metro Creative ServiCeS

Most people enjoy dining out for various reasons, including the opportunity to try new flavors, interact socially and avoid cooking and cleaning up at home. According to the U.S. Bureau of Labor Statistics, for the first time in history, between 2015 and 2016 Americans spent more money at bars and restaurants ($54.857 billion) than they did on groceries ($52.503 billion). Canadians, too, are dining out more often. A Dalhousie University survey found that nearly 42 percent of Canadians either buy ready-to-eat meals or dine at a restaurant once or twice a week, while another 3 percent admitted to doing so on a daily basis. Dining out puts customers in direct contact with the people who make restaurants run like clockwork - most notably, food servers. While big tips are a great way for diners to express their gratitude to their servers, there are other ways to show thanks. 1. Make a reservation and arrive on time. When a reservation has been made, make sure all members of the dining party arrive on time. A punctual arrival helps the restaurant run more smoothly, especially if it is a large party. If you will be running late, call the restaurant and notify them. 2. Let needs be known early on. If you’re rushing to make it to a movie, let the server know that time is of the essence so service can be expedited. If you prefer to lounge, ask to be seated in an out-of-the way spot. 3. Only signal the server when you’re ready to order. Do not call the server over if you need to continue perusing the menu. 4. Be courteous to the server and fellow customers. It is important for all customers to wait their turn and avoid interrupting waiters when they are taking other customers’ orders. In addition, allow servers to mention the specials before ordering.

Restaurants require a lot of moving parts working together to make service efficient. Customers can do their part by being courteous and respectful toward the staff. coming in. This enables everyone to be prepared and reduces the risk of someone getting sick. 6. If something is not right with the meal, mention it early so it can be remedied. Do not eat an entire meal before filing a complaint with the server. 7. Recognize that servers have nothing to do with the wait time for a table. Do not take your frustration out on the server if it takes awhile before you’re seated. 8. Clean up after yourself and children. If your party makes a big mess or a child gets sick or spills something, make an effort to clean up the table. 9. Consider the bigger picture when deciding what to leave as a tip. Servers have no control over the quality of the food, wait times or even the atmosphere. Take up issues with the management and make sure the tip reflects the job done by the server.

Dining out with children

Metro Creative ServiCeS Dining out at restaurants can be an enjoyable activity and a break from kitchen duties at home. Many people in both the United States and Canada dine out at least once a week. Even busy families want to indulge. However, parents of young children may avoid restaurants because of apprehension about the experience. Getting ready for the restaurant excursion can help families avoid some of the common pitfalls. Patience and planning can help dining out with the family go smoothly.

Infants New parents often need a respite from the near-constant demands of infants. Dining out can be one of those breaks. When a babysitter is unavailable or if you’re not yet comfortable leaving a little one with someone else, bringing baby along may be possible. First, find a family-friendly restaurant or try an establishment that has outdoor seating where you can quickly distance yourself from other diners if need be. Time dining out around the baby’s feeding and sleeping schedule. Babies sated by a recent feeding and a relaxing car ride may be more inclined to sleep through your restaurant meal. Just in case, pack an extra bottle or prepare to breastfeed to keep your baby happy. Toddlers and school age Active children can learn table manners and restaurant behavior early on through practice. These lessons can open children up to new food experiences and help them grow accustomed to social settings. A restaurant that has interesting decor, such as an aquarium, can keep toddlers occupied. But bring along some games, toys and other trinkets to keep their attention. Try playing games, such as counting the packets of sugar or finding people wearing red shirts. Avoid dining out with a tired child, and be prompt in selecting meals and eating. This is not a time to linger, as youngsters’ attention spans and willingness to sit still tend to be minimal. Be prepared to leave with a to-go box if a child proves unruly. Older children Part of the challenge of dining out with older children is holding their attention, but meals can facilitate family conversation and be good for the parent-child dynamic. Set a device-free rule at the table and use the opportunity to converse. Try exotic cuisine or new dining experiences so it is an adventure for all involved.
