Quinoa Is the Key to This Hearty, Healthy Salad

This satisfying bowl of healthy goodness has so many flavors and textures — you get a little something different with each bite! With its tasty combination of soft avocado, nutty quinoa, chicken, fresh cilantro, and bright citrus flavor, it’s the perfect light dinner or easy lunch.
Chicken Quinoa Salad
Ingredients:
1 cup quinoa, rinsed 2 cups water or low sodium chicken broth 1 tsp. chili powder 3 tsp. minced garlic, divided ½ tsp. lime zest 2 tsp. + 2 Tbsp. olive oil ¼ tsp. salt (optional) ½ tsp. black pepper 1 lb. boneless chicken tenders Vegetable cooking spray ¼ cup lime juice ¼ cup sliced green onions 1 raw carrot, shredded 1 cup chopped zucchini ½ cup chopped red bell pepper 1 cup chopped fresh cilantro (or to taste) 4 seedless Mandarin oranges, peeled 1 ripe avocado, peeled & cubed (or to taste)
Directions:
1 Cook quinoa according to package directions and fluff with a fork. Transfer to a large bowl and let cool.
2 Preheat broiler with a rack set 4 to 6 inches from the heat. In a medium bowl, combine the chili powder, 2 tsp. garlic, lime zest, 2 tsp. oil, salt (if using) and black pepper. Add chicken and toss to coat. Put chicken on a baking sheet sprayed with vegetable cooking spray and broil, turning once, until browned and cooked through, about 12 minutes total.
Let cool slightly, then slice.
3 Add chicken and remaining ingredients to quinoa; toss to coat. Serve immediately or refrigerate.
