Our hand-crafted cheddar and pure maple syrup are touchstones to this landscape for learning. They reflect the pastures, Brown Swiss cows, maple trees, and woodlands of our farm on the shores of Lake Champlain.

When you’re working with animals, you’re on their time.

You can’t be anything but focused on them. If we’ve got a heifer calving, or a young cow coming through the parlor for the first time, you have to be there. Because we’re responsible for them and people love seeing them. This working farm means something to people. Without the dairy, Shelburne Farms would still be a beautiful place, but it wouldn’t be Shelburne Farms. This working landscape is essential to what we are.

SIX-MONTH Our youngest, most versatile cheddar has a supple texture and delicate flavor — like fresh cream and buttered toast. Perfect for breakfast with jam, or melted in your favorite dish.

ONE-YEAR After aging a year, our cheddar develops a subtle sharpness. Tastes of lush pasture and freshly cut hay give way to a delightful finish. Pair with apples and honey or cured meats.

TWO-YEAR This extra sharp cheddar will melt in your mouth. Its flavor is classically Vermont — savory with a rich, creamy texture. Great with cider, beer, or with chocolate for dessert.

THREE-YEAR RESERVE Only a small percentage of our cheddar can meet the taste and texture criteria demanded for three-year. The result is a crumbly cheddar bursting with bright and fruity flavors. Enjoy with roasted nuts or a full-bodied red wine.

SMOKED Our award-winning young cheddar is hickory wood-smoked for six hours to give it a subtly sweet, bacon-like flavor. Delicious with cured meats and dried fruit.

CLOTHBOUND This time-honored process of binding curds in cheesecloth, sealing the wheel with lard, and cave aging gives you a cheese with a flaky texture and an earthy flavor. Pairs perfectly with English ale, pickles, and strong mustard.

In my heart, I’m a cheesemaker. I love the physicality of it,

the routine, the sense of accomplishment. At the end of the day, you’ve made 500 pounds of cheese that is going to bring a lot of people joy. To me, cheese is a distillation of everything that we do here. It’s a product that nourishes people, and it helps preserve the agricultural future we want.

Sometimes when I’m out tapping the trees, I’m making a little bit

of noise or I’m close enough to the trail so people can see or hear me and ask questions. Then I can introduce them to the complexity of what’s going on. Because I think all the magic that’s going on in the woods is often overlooked. In the sugarbush, it’s a mix of technology

and wildness. And that’s kind of cool.
