ave you heard of Maddy Powell? If not, I’m happy we can introduce you to her this month. Powell, who is featured on our cover, recently won the state’s 2014 Distinguished Young Woman Program, formerly known as Junior Miss. The DYW program is composed of four categories: interview, fitness, selfexpression and talent. Powell, who is a Spain Park High School senior, will compete in nationals June 26-28 in Mobile. First, she will finish out her final year at SPHS, where she has a 4.2 GPA and participates in several school groups. Powell won $18,100 in scholarships from the county and state programs, which she plans to use to attend the University of Alabama to study biology in the fall. Powell is third Shelby County resident to win the state DYW program in the last four years. “I think it’s because we have a strong
community here,” Shelby County DYW director Susan DuBose said. “Shelby County and Hoover schools are excellent. We’re in a great community, and the students grow up with lots of opportunities.” Once you’re done reading about Maddy, check out some of the other great articles in this month’s magazine. Mixing the message

Could your “second chance” be the one that sets you apart from your peers and competition? What does that second encounter look like? Think of my “PowerPhrase”—Mix the Message and Method! 4 ways to communicate. Digital, mail, phone, in person. Make sure you use all four “methods” to connect. When you use just one or two ways, you lose the power of your voice, the feeling of a firm handshake, the ability for them to document and keep something you shared, etc. Mix it up! Plan your message. Send a “so nice to meet you” email, an industry tip where you are not asking for their business or money, text an inspirational quote to brighten their day, call them with a referral, etc. Be direct in the email subject line. This increases the chances of it being opened and read. Lumpy mail. Something as simple as folding your note to cause “bulk” can increase curiosity. A handaddressed envelope also catches attention. Leave complete phone messages. “Hi, this is Lisa, call me” may not be enough to receive a call back. Assume you will be leaving a message, so make sure it contains everything you want them to know. Have a positive spirit. People may judge you on how you “look,” yet your image is more than what they see on the outside. It is also your language, attitude, smile, energy and charisma. First impressions are critical, yet they can be repaired (if needed) through varied communication. By “Mixing the Message and Method,” you will give your clients, both prospective and active, a few more reasons to like, respect and look forward to doing business with you. It’s that simple. l

OMES teachers run Mercedes Marathon
On Feb. 15 and 16, students and teachers from Oak Mountain Elementary school ran in the Mercedes Marathon held in downtown Birmingham. The event raises money and awareness for Birmingham’s Bell Center, which provides early intervention services for children with special needs from all across Alabama. Since its first race 13 years ago, the Mercedes Marathon has raised more than $4 million dollars. One hundred students ran in the Kids Marathon on Saturday and four teacher relay teams raced in the Marathon on Sunday. Students and teachers start preparing in the fall and look forward to the event all year.
Whetstone completes Eagle Scout project Morgan Whetstone recently made and delivered five large benches and one small one to the Bailey Cemetery in Vincent for his Eagle Scout project. Whetstone, son of Melissa and Greg Whetstone of Riverchase, is a junior at Spain Park High School. He is a member of Troop 367, Scoutmaster Davis Teague, which meets Whetstone at Riverchase United Methodist Church. Whetstone’s grandmother Anne Gibbons was instrumental in restoring Bailey Cemetery, which has been placed on the Alabama Register of Landmarks and Heritage. The cemetery is the resting place of pioneer settlers, slaves and Indians of early 19th century Shelby County. It is named for William Bailey, one of the first landowners in the area. April 2014 | 9

Clark receives inspiration award Calera’s Ronnie Clark was awarded the USA Today Inspiration Award Feb. 18 for his success on the field and overcoming challenges off it. USA Today and the National Guard presented the award. As a freshman, Clark was faced with becoming the head of his household when his father moved back to Louisiana to take a job to provide for the family. In his absence, Clark took care of his mother who has muscular dystrophy, in addition to caring for his grandmother, who moved in as well. Clark said he was honored and humbled by the award. “I’m speechless,” he told those in attendance. “Thank y’all for supporting me.”
Beland wins Shelby County Spelling Bee Olivia Beland, a Helena resident and fifth grader at Our Lady of the Valley School, won the Shelby County Spelling Bee on Jan. 24. At the Shelby County Spelling Bee, Olivia was the only fifth grade contestant in a field of sixth-eighth grade participants from area public and private schools. Olivia’s winning word was “wiseacre.” She Beland advanced to the State Spelling Bee at Oak Mountain High School on March 8. This year marks the second year in a row that an OLV student has won the Shelby County Spelling Bee. In six of the past eight years, an OLV student has advanced to the State Bee. Devon Taylor, a sixth grader at Briarwood Christian Junior High School, was the runner up. 10 | ShelbyLiving.com

Copes named best environmental educator for 2014 The Environmental Education Association of Alabama recently named Calera High School teacher Brian Copes as the Best Environmental Educator for 2014. Recently, Copes and his engineering students were the subjects of a documentary entitled “Children Changing the World,” which highlighted their efforts to provide prosthetic legs and Basic Utility Vehicles to people living in the Cloud Forest region of Honduras. His students are currently converting a pontoon into a paddle boat that will generate hydroelectric power for the same region in Honduras. They have also been researching ways to convert French fry grease into biodiesel fuel.

elena is looking a lot like Hollywood these days. That is thanks in large part to local boys Jon and Andy Erwin, filmmaking gurus who grew up in Shelby County and still make their homes in the area. The talented duo has gained national acclaim for their work in documentaries and Christian music videos and most recently premiered their first major motion picture, “October Baby.” Their second feature film, Mom’s Night Out, is set to open in theaters in May, appropriately enough on Mother’s Day weekend. The latest Erwin project, currently under production, is a made-for-TV movie called Coffee
House. All three projects have one thing in common. They are all set in Alabama, with many scenes filmed, specifically, in Shelby County. According to Andy, that’s a trend the brothers hope to continue. “It is very important to us to keep shooting in Alabama,” he said. “Our families are here. We love being close to home, and working in a place where we feel very comfortable. I think there’s a lot of beauty in our state. That’s a hidden secret to people who don’t live here. I like to show it off.” For Coffee House, the Erwins are wearing their producer hats, converting the Ice and Coal Art Gallery in Old Town Helena “into an establishment where I’d actually go sit down and have a cup of coffee,” laughed Andy. “The transformation was pure magic.” To direct the script, which Andy calls “an old

fashioned romantic comedy,” the producers called on their longtime friend and mentor, Hollywood veteran David Alan Johnson. “David is a rare guy,” Andy said. “He’s from Iowa and he’s maintained his Middle America, small town, wholesome roots. He has a beautiful and charming way of telling stories. We sent him the script. He loved it. So we said, ‘If you want to shoot somewhere that fits your brand, you ought to come here and film in Alabama.’” Johnson said it didn’t take a lot of convincing once he got a look at Old Towne and the gallery/coffee shop. “We had been searching high and low for a coffee shop, but we just couldn’t find the right thing. The minute I looked in the gallery window, I said, ‘Wow, this is it. This is perfect.’” However, one thing the movie maker could not anticipate was a crippling winter storm in January, which blanketed the Alabama landscape in snow and ice, sent temperatures plummeting into the single digits, and stranded his production manager on the road for seven hours, forcing her to take refuge at a car dealership where she spent the night. “We pretty soon realized we weren’t going anywhere either,” Johnson said, “so we just kept working and finally grabbed a place to sleep anywhere we could find on the set from hammocks to sofas. ” However, Johnson said his crew didn’t want for anything. “There is no way I can say enough good things about the people in this community,” he said. “They made sure we had food, blankets, pillows, even toothbrushes and toothpaste.” Although this was Johnson’s first time to film in Alabama, he said it will not be his last. “We most definitely will be back,” he said. That’s the kind of response Helena Mayor Mark Hall likes to hear. “We hope they’ll come back. Productions like this have a positive impact on the community,” he said. “We’re always in communication with people connected to that industry. We want them to know that we are open to welcoming them within our city limits. We want to keep Helena at the forefront for any productions that would fit the needs of the companies.” The Coffee House crew will finish shooting in Fairhope, where Johnson said most of the exteriors will be filmed. No date or venue has yet been set for the airing of the movie, but it is expected to be sometime within the next year. l

“I
’ve always wanted to be a behindthe-scenes person, never in front of the camera,” said Art Director Ed Gurney during the recent filming in Helena of a made-for-television movie, tentatively titled “Coffee House.” His company, Playhouse, Inc., supplies props, costumes and staff for stage, television and film work across the Southeast. His wife, Mary, teaches costume design at Samford and their home base warehouse in Irondale has an inventory of 2,500 period and themed costumes. Will Drummond, a UAB grad with a degree in film now based in Nashville, was production director and finds his job satisfying because he loves never doing the same thing twice. “Also it’s great to work with Ed because I learn something new each time,” he said. The crew also included Bill Waxler, Don Orcutt and Dan Fine. “All of us are rather experienced, so we overlap in many ways, which makes us a good team,” Waxler said. Catching them on a “scramble day” prior to leaving for Fairhope to complete the final film scenes, Gurney explained that the art department is always first in and last out. “Technically, by contract, all is restored to the original state by last day. In part, we are glorified furniture movers, but the floors will be cleaner, repairs made, damages corrected — we leave things in better shape.” In the coffeehouse scene, filmed in the Ice and Coal Gallery in Old Town, artwork by Barry Graham, Brian Bohanon and Bev Mabry was among that selected for accessorizing the set. “I am always looking for the most efficient labor-saving and artful way to accomplish our task,” Bill Waxler said. An awkwardly placed light switch, for example, was ultimately covered with a clever sign. The crew discusses possibilities for the props and in this case, accessed the available in-house art collection and used the tables left behind from the last incarnation of the coffee shop next 14 | ShelbyLiving.com
door. “You also have to think about blocking,” Dan Fine added, “how the characters move in the scene, where the action will flow.” “While we had the coffee shop scene set up, we had several people attempt to come in and buy coffee!” Sometimes more is required, Gurney says, as rather than obtaining permission to use real publications, he generated magazines on topics related to the story and designed a flyer about the main character’s charity supporting Ethiopian kids. People do love to point out what is “wrong,” he admitted, “and someone will probably complain about some nuance of the coffee bar we constructed and equipped.” Each scene/set is minutely photo documented, as if a scene must be later reshot, the crew must be able to reconstruct it.

Each man in this crew arrived to this life work from various beginnings. Gurney was previously a licensed barber/cosmetologist, following in the steps of his barber father. Wexler once worked as a George Bush impersonator, then after 9/11, fell into assisting in a periodontist office where his attention to craftsmanship was well-appreciated. “So if I were to start over again, I might choose to be a dentist,” he noted. Drummond worked his way through television and music to steady work in the film industry and has credits on True Blood; Grace Unplugged; Mom’s Night Out; horror movies The Collector and Savage County; Convergence, Walk the Line; Black Snake Moan with Samuel L. Jackson; and several episodes of Nashville. Dan Fine has a degree in film from Savannah College of Art and Design. First assuming he would write and produce, he says eventually he now wants to direct. “Give him a few years and I’ll be working for him,” Drummond said with a smile. l April 2014 | 15

A
night filled with music is on its way to the Shelby County Arts Council Performance Space. Local band “Marc Phillips and Groove Daddy” will perform music of different styles and genres. This band consists of six “master musicians.” Marc Phillips is vocalist/pianist for the group. He is most well known for his work in the band, “Hotel,” and is a throat cancer survivor. Barry Page is the bassist and Joe Terry is the guitarist. The drums are played by Steve Sample while a sweet jazz sound is added by Kenny Williams on the saxophone. Michael Panepento pulls the

whole symphony together with percussions. He also produces the band and organizing most of their events. After 15 years of evolution, the band all agreed they have a blast playing together and they felt it showed onstage for every performance. “I think this band is so diverse stylistically that we play a lot of different styles of music. The way this band works is if you come to hear us tonight we may play a song a little different than we will play it next week. This band really lives and breathes on its own every night,” Phillips said. This band is known for its mix and improvisation of R&B, jazz, Latin, classic rock, gospel, etc. Panepento said they do some variations of well-known songs,
but they are not a “cover band.” They collaborate in their own original songs. Come see this group perform at the Shelby County Arts Council Performance Space on April 19. eed a 6-foot-tall recycled metal chicken? You won’t have to look far. Cedar Creek Nursery in Montevallo has just that and a whole lot more. “Not that we get much call for 6-foot-tall wire chickens,” laughed John Stephens, assistant manager of the three-generation family owned business, but it does cause a lot of conversation. Located in Montevallo on Highway 119 on five acres of property owned by the Stephens family the nursery opened for business in 2006. That’s when John’s dad, Johnny Stephens, decided to retire from his job as a landscaper and go into business for himself. PAGE 18: Succulents grow at Cedar Creek Nursery. “We started out slow,” said the younger Stephens. “When I was still in high school we grew container shrubs that we sold at the farmers market. That was the beginning. Then we decided to use the family land and open up the business in Montevallo.” His mom, Anita, already had an antique shop, which she had run for almost 20 years on the property, so it only made sense to expand on an already successful family venture. “We started with flowers and then tried different things just to see what worked,” John said. Apparently, they found “what worked,” because today the nursery is full service offering everything from bedding plants, trees, shrubs, vegetables, herbs, fertilizers, peat moss, mulch, yard art, garden gift items, outdoor furniture, free deliveries on yard covers like pine straw and bark, and this year for the first time, Christmas trees. Stephens said word-of-mouth advertising and repeat business is bringing people in from all over the state. Another huge draw is the one product that is offered at no charge — expert landscaping and gardening advice, personalized to each customer’s needs. “My dad provides excellent customer service,” John said “He’s been in the business so long that he’s seen a little bit of everything. He’s very good at answering the customers’ questions. We have a — John Stephens lot of people come in with pictures of their yards. We’ll take a few minutes with a piece of notebook paper and sketch out what they need, just a simple drawing on a piece of paper. That’s all for free and that’s all they need.” Stephens said his father’s philosophy when he opened the business eight years ago was to concentrate on “customer service, high-quality products, low prices and return customers. “He said he would rather have the return

business rather than charge high prices.” That philosophy must be working because, according to Stephens, “the business has doubled every three to four years” since it opened. Perhaps another factor in the company’s success is that the Stephens aren’t afraid to try new things. The latest addition to family business is a gift shop run by Stephens’ grandmother Marvolin Stephens. The matriarch of the Stephens clan, who still lives in the family home located on the property, retired from the University of Montevallo more than 20 years ago where she taught home economics. She said she came up with the idea for a gift shop because she “saw a need.” Her idea came to life last fall when a 150-year-old building that had sat empty on the property for years was renovated to house the company’s newest addition, a gift shop which claims to have the most unique inventory found anywhere in Shelby County. Items range from baby items to burlap, bags to jewelry and a Christmas shop that stays open all year long. Marvolin’s favorite area is the pet

section. “I heard customers asking for gift type items, personal and unique. Plus, I got bored just sitting at home,” she said. “I wanted to be back out here with the public.” The Cedar Creek Nursery and Gift Shop are open Mondays through Saturdays from 8 a.m. until 5 p.m. The Antique Shop is open Friday and Saturday from 11 a.m. until 5 p.m. l

hocked, scared, sad and ashamed. How could a smart girl, an honor student, end up in this situation? How could I be so dumb? Why didn’t I see this coming? What will my Daddy think? Will my brothers believe me or just joke about it? How was he so much stronger than me? He was smaller and not even an athlete like me? Thank goodness he stopped when I threatened to scream (hoping my friend’s grandmother would hear). I just want to call my Mom but I can’t. This would make her cry... These thoughts ran through RC’s mind when it happened 37 years ago and this is the first time she actually told anyone (other than her husband) about it. She did not have the courage to tell — not knowing the reactions of others, feeling at fault herself. One in four girls will be sexually abused before her 18th birthday. And one in six boys will be sexually abused before turning 18. But today, thousands of children will enter a Child Advocacy Center (CAC) with the courage to tell the unimaginable. There are 28 CACs in Alabama. Each provides a child-friendly environment where children and families can begin the healing process. Children 26 | ShelbyLiving.com

receive a forensic (fact-finding) interview, mental health services, family support and advocacy. Shelby County CAC, also known as Owens House, provided these services for more than 300 child victims of crime during 2013 and provided in-school prevention programs to more than 6000 elementary-aged children. In addition, Owens House provided training for educators, community members and others interested in learning how to make a difference for child victims of abuse. Owens House is a 501 c 3 non-profit organization that receives grants from ADECA, State of Alabama, Shelby County Commission, Shelby County and Alabaster Schools, City of Hoover, National Children’s Alliance and The United Way of Central Alabama. Thanks to these grants and the many contributions and volunteer hours provided by individuals, business, church and civic groups in this community, no child victims of crime are
charged for services provided through Owen House CAC. RC decided to tell after she met GS, a 7-year-old who beautifully described her courage. GS bounded down the hallway of Owens House with her drawing in hand. When asked for an explanation of her drawing, she pointed and proudly said, “It’s me. See, before I told, I was in a cocoon. Now, I told, and I am free, I am a butterfly!” Throwing her little hands and arms into the air and twirling around, her courage and the freedom to heal was overflowing. l

ehind the glamorous spotlights and excitement of performing well-rehearsed talents on stage lie the lasting benefits of competing in the Distinguished Young Women (DYW) program — something Madeline Powell has seen first hand. Powell, a Spain Park High School senior, won both the Shelby County and 2014 Alabama DYW contests, taking home medallions and scholarships. She plans to use her combined winnings of $18,100 to attend the University of Alabama to study biology in the fall. But Powell isn’t the only one of her friends and family to gain this honor. Her sister-in-law, Norma Boyd Powell from Coffee County, won the 2008 state title, and her best friend won the Shelby County DYW a year earlier. So, Powell got a firsthand look at what a Distinguished Young Woman looked like and what she needed to do to prepare. “I have a great support system,” she says. Formerly known as America’s Junior Miss, the DYW program is composed of four categories: interview, fitness, self-expression and talent — not beauty. The young women compete to win scholarships and gain confidence, says Susan DuBose, Shelby County DYW chairman. “It offers young women an opportunity to develop leadership skills,” says DuBose, whose daughter won the state title in 2011. “They leave high school a step ahead of other girls because they’ve competed at a high level.”

Powell is the third DYW state winner in four years who hails from Shelby County. “I think it’s because we have a strong community here,” Dubose says. “Shelby County and Hoover schools are excellent. We’re in a great community, and the students grow up with lots of opportunities.” After winning at the county level in 2013, Powell went to the state competition in Montgomery this past January. While in the state’s capital, Powell and another contestant stayed with a host family — the same one that housed her sister-in-law. When the 48 girls weren’t rehearsing for the program, they visited several local groups and sites. One stop included meeting with the Alabama Cattlemen’s Association, where they learned about the different types of beef and even enjoyed a savory steak. The contestants also ate lunch with the Kiwanis Club, who are big supporters of the DYW scholarships, and visited the Montgomery Zoo. Having won at the state level, Powell will now head to the National Finals where she will compete with other winners from across the country. The finals, founded 56 years ago in

Mobile, will return to the city June 26-28. “I’m really excited to get to go and meet new girls and see what talents they have to bring to the table,” Powell says. “During the rehearsals, you see how truly talented they are.” She plans to add to and perfect her jazz dance number to “So Much Better” for the National Finals, continuing to working with dance teachers. The state board has also set up mock interviews to help Powell hone her interview skills. “It’s a great asset to have,” Powell says. “I’ll be able to practice talking and get more comfortable with it.” While the scholarships, life skills and experiences have been invaluable to Powell, she says the best part about the program is the friends she’s made. “A lot of girls say that, but it’s because it’s true,” she says. “There are so many girls like you. They’re just as driven as you, and every one clicks with the others. I still talk to the girls I’ve met on a daily basis.” Besides lasting friendships, Powell says she has found new passions — like fitness. “I didn’t love to work out before, but this made me enjoy hardcore workouts,” she says. “People are amazed we have to do situps, planks and push-ups on stage, while still smiling in — Madeline Powell front of the judges. It takes a different kind of confidence to come on stage to do a fitness routine.” Powell says she also enjoyed the self-expression portion because it allowed her to voice her thoughts. “I liked that because I get to come up with that on my own,” Powell says, receiving the questions about a month before the state competition. “The judges get to know me. Self-expression is one chance to share my opinion with the whole audience.” Her advice for high school girls who are considering

being a part of DYW: “Do it no matter what,” Powell says. “It’s going to make you a better young woman. It forces you to get out of your comfort zone and gives you different skills. Even if you don’t win, you can still get a lot of scholarship money.” Each contestant is judged on “being your best self,” which is the program’s motto. “It’s not about judging you versus the other girls. This program is about building girls up and putting

them in the best position they can be in,” Powell explains. “As Norma has said to me, ‘Even if I had never won a single dollar, never heard my name called, I’d still have done this experience over again,” Powell says, sharing the same sentiments. “You just want to be a part of it. on and Leigh Ten Berge know better than to believe stereotypes about the South or any other region in the country. After all, the couple had called five states –California, New Jersey, Illinois, Iowa and Oregon – home before moving to Alabama in July 2013. “I think there are very nice people everywhere, and I’ve definitely found that to be true here,” Leigh said. “People have been very kind. The Mt Laurel community, especially, is wonderful.” That doesn’t mean the move was completely stress-free. The Ten Berges were living in Oregon when Ron accepted a job as president of Pradco Outdoor Brands, which is part of EBSCO Industries, Inc., in the fall of 2012. was preparing to deploy as a medic with the U.S. Army. Their daughter, Megan, was finishing her senior year of high school, and they wanted her to graduate before they moved. The Ten Berges knew they wanted to live in one of the communities along U.S. 280 close to Ron’s office. “The environment here really sold us,” Leigh said of Mt Laurel. “We really like this total neighborhood development where it’s so walkable. It sounds silly but one of the biggest things that sold us was the 4-foot sidewalks. Coming from Portland, they’re all about their urban planning. This little slice of Birmingham, right here in Mt Laurel, is the closest — Leigh Ten Berge thing I found to that

Portland lifestyle here.” The Ten Berges also wanted a home with enough space for family and friends, but one that wouldn’t be unmanageable if they retired here. “We’re kind of empty nesting, but not really. We still needed room for the kids to come back, but I didn’t want this gargantuan house,” Leigh said. “We couldn’t seem to find that without building a custom home.” The end result is a charming abode with the master bedroom and a guest suite on the main floor, while three additional bedrooms are located on the second floor. Leigh took the lead on working with architect Clem Burch and Town Builders, even though she was still in Oregon, a process she said was surprisingly stress-free. “I only came out here once on a house hunting trip and once when (the house) was framed,” she said. The Ten Berges wanted an open floor plan, and Ron, particularly, wanted rustic elements incorporated into the home. The kitchen, living room, dining room and a sitting area are all located on the main floor, a setup that makes entertaining friends, family and co-workers easy. living room. The hand-hewn white oak beams are about 200 years old. The main floor is decorated in neutrals, including warm browns and creams with pops of green. “We’re all about comfort. This is not a take-your-shoesoff house,” Leigh said. “I like everything to be very livable.” The Ten Berges have quickly adapted to their new home and state. Leigh said they enjoyed Mt Laurel’s Fall Festival and visiting the park with Pilot Joe, the family’s dog. The family became University of Alabama fans after Megan decided to attend school there. They also befriended their neighbors, who are also dog lovers. “We babysit each other’s dogs all the time,” Leigh said. After nine months in their new home, they are also convinced they made the right decision. They love Mt Laurel’s location and its surroundings, including the forest
and lakes. “We really like the quiet and rural feel of it, and yet we are so close to everything,” Leigh said. Now that they are settled,
Leigh thinks the sixth move is the charm. “I don’t have another move in me. I’m done,” she said. “I’m here to stay in Alabama." l

Simple and classic roast chicken Recipe by BIRMINGHAM BAKE AND COOK Photograph by JON GOERING
O
n a chilly day, serve this dish with a delicious sauce made from the pan juices. As the weather gets warmer, these same pan juices will make a great vinaigrette for platter of carved chicken on refreshing seasonal greens. Either way, it’s a winner!
Chicken: 1 Chicken, about 4 pounds. 4 Ounces Butter, room temperature As Needed Sea salt and freshly ground black pepper 1 Each Lemon 3 Rosemary sprigs or fresh thyme 2 Garlic cloves, peeled, crushed 1/2 Cup White wine or chicken stock (optional) 46 | ShelbyLiving.com
Yield: 1 chicken
Directions: 1. Preheat your oven to 450 degrees. 2. Wash and dry the chicken. Remove any excess fat. Let the chicken rest at room temperature for an hour or so. 3. Smear (use your hands!) the butter all over the chicken. Season with salt and pepper, including the cavity. 4. Squeeze the juice of the lemon onto the chicken. 5. Place the herb sprigs in the cavity of the chicken along with the garlic and the squeezed-out lemon rind halves. Tie the legs together with twine. Tuck the wing tips underneath the chicken. 6. Place in a roasting pan large enough to hold the chicken comfortably for basting. No rack
needed. Pour in the white wine or stock, if using. 7. Roast the chicken for 15 minutes then baste with pan juices. 8. Reduce the oven temperature to 375 degrees and cook for another 45 minutes – 1 hour until the chicken is done. Baste every 15 minutes or so. The bird should be golden brown and crisp. 9. Turn off the oven and with the oven door open; let the chicken rest in the oven for 15 minutes before carving.
Deglazing Sauce: 1 Tbsp. Shallot, minced 1/3 Cup White wine or dry vermouth 2/3 Cup Chicken stock As needed Salt and freshly ground black pepper 1 – 2 Tbsp. Butter, softened (optional) 2 Tbsp. Italian flat – leaf parsley, minced
Directions: 1. Remove the chicken from the roasting pan to a platter. Skim off as much fat as possible from the top of the pan juices. Place the pan on a stovetop burner. 2. Stir in the minced shallot and stir until sizzling. Add the wine or vermouth and chicken stock. Scrape the glazed bits from the bottom of the pan. Add any juices that have accumulated on the chicken resting platter and bring it to a simmer rapidly. 3. Boil it down to thicken it slightly. Adjust flavors with salt and pepper. Take off the heat and whisk in the butter for a rich finish. 4. Use half of the sauce to pour over the carved chicken and the other half to pass at table. Strain if you don’t like the glazed bits.
Vinaigrette: 1 Tbsp. Shallot, minced 1/2 Tbsp. Dijon mustard 1/2 Cup Chicken stock 1/4 Cup or to taste Sherry or red wine vinegar 2 - 3 Tbsp. Italian flat-leaf parsley, minced As needed Salt and Freshly ground black pepper

Whisk in the chicken stock, scraping the glazed bits from the bottom of the pan. Add any juices that have accumulated on the chicken resting platter. 4. Whisk in the vinegar. Add the parsley and adjust flavors with salt and pepper. 5. Line a platter with your favorite lettuces. Place the carved chicken pieces on the greens. Supporting a Healthy Lifestyle Cancer is a word no one wants to hear when it involves his or her health or a loved one. Cancer seems to be affecting more and more individuals every year. The American Cancer Society stated that there were 1,660,290 reported cases of cancer nationwide in 2013 and 27,080 cases in Alabama alone, excluding basal and squamous cell skin cancers and situ carcinomas excluding bladder cancer. What is cancer? The National Institute of Health defines cancer as,“a term used for diseases in which

abnormal cells divide without control and are able to invade other tissues. Cancer cells can spread to other parts of the body through the blood and lymph systems.” It is so important to keep one’s body in good health to promote the best health possible for each individual. Unfortunately, some cancers are genetic. Genetic cancers imply that no matter how hard an individual tries to prevent a certain cancer from occurring, their body is at a higher risk of developing these imperfect cells due to their genetic make up. General ways to prevent cancer include staying away from things known to cause cancer, maintaining a healthy diet and weight, and being watchful for precancerous
conditions that may arise. Carcinogens are always present in our environment, but it’s our responsibility to limit our exposure to these harmful factors. Carcinogens are known to cause cancer by making our cells divide quicker, which can lead to possible changes in our DNA. These harmful factors may be excessive exposure to pollution, ultra violet light, radiation, chemicals found in our work place or home environment, things we eat and drink, or bad habits we have like using tobacco. Our health and bodies are always a work in progress. Supporting a healthy life style is a great place to start when aiming for a cancer free life. Start by keeping a healthy weight, eating a diet full of fruits and vegetables
and limiting processed food items, maintaining a healthy mental state, and get annual screenings for common cancers like breast, prostate, skin, and colon cancers. Basic medical physicals are also needed yearly to ensure the body’s functioning at it’s maximum potential. All of these are essential lifestyle modifications are in most individuals direct control and can not only prevent cancer but improve one’s quality of life. Beginning in June on the second Tuesday of each month, Michael Smith with the The Great, The Good and The Gone will be available for one-on-one confidential meetings with any entrepreneur or small business owner to discuss opportunities, challenges they may be facing. Greater Shelby Chamber Announces Green Business Designee The Greater Shelby Chamber recently launched the Green Business Program and is excited to congratulate David Schlueter of Buck Creek Stained Glass on being approved as a Designated Green Business. The Chamber’s Existing Business & Industry Work Group reviewed the applicant and collectively approved this company at the January meeting. The Green Business application is based on a point system in the categories
of Waste Prevention, Recycling, Purchasing, Energy, Conservation, Transportation, Water Conservation, and Pollution. Each applicant has to receive a minimum of 20 points total to be designated. The purpose of this
program is to recognize Shelby County businesses that are committed and engaged in environmentally responsible operations and practices, also known as ‘green’ business practices. If your company is engaged in green practices and

America’s First is a full-service financial institution that is committed to supporting the community and serving local schools and organizations. The credit union conducts financial education workshops and provides products and services to help improve their members’ financial lives. Jimese was born and raised in Birmingham. Small Business Week Salute — Save The Date! The Chamber’s 2014 Small Business Week Salute sponsored by Regions Bank will be held during the week of June 23-26. Last year’s event saluted the impact which small business has on Shelby County’s economy and recognized 21 nominees for our inaugural Small Business Person of the Year in three categories. The
Chamber’s Small Business Work Group has been working on making this year’s event even more worthwhile and beneficial. Nomination packets for “Small Business of the
Year” in several categories — based upon size of the company — will be available soon. We encourage any Small Business to consider participating in this worthwhile opportunity. All Small Business of the Year nominees will be recognized at a reception in their honor on June 23, as well as at the Chamber’s Small Business

Author Julie Hedgepeth Williams: Julie Hedgepeth Williams, author of “A Rare Titanic Family,” brings the book to life as she tells the dramatic story in full costume. Hedgepeth’s great aunt and uncle were on the Titanic and survived.
