I can’t believe a radio commercial at WDBM in Statesville in 1972 started this whole career for me. Six years old and doing commercials, by the time I was 14 years old, I had my own weekend shift at WSIC-AM. I went to work in television, WBTV/WCNC in Charlotte, as a freelance news photographer/reporter. Even did a few years with WYFF, but the whole music thing was a hobby that never left my blood. We are not a barn, but the Clubhouse has an upscale rustic feel. All of the food and beverages, except for the cake and any food favors, are taken care of by us. We can do light hors d’oeuvres, cocktail buffets, plated meals, or buffets.” The elegant Cateechee Clubhouse includes a restaurant/bar called the Waterfall Grille that features a private dining room that seats 12 comfortably, another room that accommodates up to 32 people and the ballroom which seats 200 guests for a sit down meal. In addition to engagement parties, bridal showers, rehearsal dinners and weddings, Cateechee also plays host to baby showers, high school reunions, proms, and holiday parties as well as member events like wine tastings. “The biggest event we’ve ever hosted was for 515 people, which included tenting a lot of the outside area,” Mimsy says. When a bride is interested in Cateechee as a wedding venue, Mimsy will send her information and book an appointment to tour the facilities. “When they come in to talk with me, the first thing I do is give them a tour. I like to tour a bride like it is the day of their wedding. We start out in the Women’s Lounge where she will be getting ready. Then we tour the Men’s Lounge. Next, I usually take them outside to the ceremony site and then we go into the ballroom and talk about the different ways to lay things out. I like to find out what they are interested in. A bride usually knows what color she wants so we start there, but the main thing is what kind of event they are looking for. Do they want more of a party

Breakfast Surprises Prep: 30 min. + chilling Bake: 50 min. + standing Yield: 12 Servings INGREDIENTS 1 pound bulk Johnsonville® Ground Sausage 1 small onion, chopped 8 cups cubed day-old sourdough bread 1/2 cup chopped roasted sweet red peppers 1/2 pound Brie cheese, rind removed, cubed 2/3 cup grated Parmesan cheese 2 tablespoons minced fresh basil or 2 teaspoons dried basil 8 eggs 2 cups heavy whipping cream 1 tablespoon Dijon mustard 1 teaspoon pepper 1/2 teaspoon salt 3/4 cup shredded part-skim mozzarella cheese 3 green onions, sliced Directions In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place bread cubes in a greased 13-in. x 9-in. baking dish. Layer with sausage mixture, red peppers, Brie and Parmesan cheeses and basil. In a large bowl, whisk the eggs, cream, mustard, pepper and salt; pour over top. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Sprinkle with mozzarella cheese. Bake 4-6 minutes longer or until cheese is melted. Let stand for 10 minutes before cutting. Sprinkle with green onions. Yield: 12 servings
DIRECTIONS In a large bowl, combine the buttermilk, eggs and butter. Combine the flour, sugar and cocoa; add to buttermilk mixture and mix well. Cover and refrigerate for 1 hour. Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 2 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between.
Bacon Potato Pancakes
Meet the Cook: Potatoes are something I can eat any time of day and almost any way. This recipe is one I came up with to go along with pigs in blankets several years ago. Our three children are grown, and John and I have five grandchildren. ~Linda Hall, Hazel Green, Wisconsin

FILLING: 1 can (21 ounces) cherry pie filling 1 can (8-1/2 ounces) sliced peaches, drained and chopped 1/2 teaspoon ground cinnamon 1/8 teaspoon almond extract 1/3 cup hot fudge ice cream topping, warmed whipped cream, optional
In a microwave-safe bowl, combine the pie filling, peaches and cinnamon. Microwave, uncovered, on high for 3-4 minutes or until heated through, stirring once. Stir in extract. Spoon 2 tablespoons filling down the center of each crepe. Fold sides of crepe over filling. Drizzle with ice cream topping and garnish with whipped cream if desired. Yield: 10 servings.
Prep/Total Time: 30 min. Yield: 8 Servings INGREDIENTS 5 to 6 medium uncooked red potatoes, peeled and shredded (about 3 cups) 5 bacon strips, cooked and crumbled 1/2 cup chopped onion 2 eggs, beaten 2 tablespoons all-purpose flour Salt and pepper to taste Dash ground nutmeg Oil for deep-fat frying DIRECTIONS Rinse and thoroughly drain potatoes. In a bowl, combine the potatoes, bacon, onion, eggs, flour, salt, pepper and nutmeg. In an electric skillet, heat 1/8 in. of oil to 375°. Drop batter by 2 heaping tablespoonfuls into hot oil. Flatten to form patties. Fry until golden brown; turn and cook the other side. Drain on paper towels. Yield: 2 dozen.
