Andre Marc Lalumiere

Andre Marc Lalumiere, 62, of Ephrata, passed away on Tuesday, March 19, 2024, at WellSpan Ephrata Community Hospital.

He was born in Putnam, CT, to Janice (Sadowski) Lalumiere and the late Pierre Lalumiere.

Andre grew up in Griswold, CT, where he left Griswold High School to join the military. He was an accomplished U.S. Army Soldier, Airman, industrial mechanic, and culinary artist who accumulated a wealth of knowledge and heuristic versatility from his trades, which he took home to his family and friends and shared endlessly, as he did his unending kindness.

He was one of a kind that could be depended upon to lend his hand for anything, anywhere, and often long before anyone ever had to ask him.

Andre worked as a maintenance mechanic for Dart Container, he later went on to own and operate Pork U BBQ.

Desiree “Dez” Tomlinson, 39, Lititz, passed away on Wednesday, March 6.

In addition to his mother, he is survived by his fiancée, Ginny Snavely, to whom he was to be wed on March 23, 2024; three children, Michelle Haase (Charles), Mark Griswold & Mindy Bond (Alex); two grandchildren, Avah & Halsey; two sisters, Michele Zeller (Dan) & Laura Paparella (Nick); two nieces, Katie Girouard (Thomas) & Erica Zeller-Buitrago (Tomas) and a nephew, Benjamin Horne.

Services will be private at the convenience of the family.

She is survived by a son, Trey; a daughter, Lila; her adopted mother, Susan and Gene Vittorelli; two sisters: Christina and Camille Vittorelli, Gloucester, New Jersey; and several siblings.

Rev. Gerald “Jerry” H. Ihle, 91, husband of Janet, Lititz, passed away on Thursday, March 7.

Besides his wife, he is survived by two sons: G. Scott Ihle, husband of Nancy, and Mark D. Ihle, partner of Lisa; a daughter, Jennifer D. Beidler, wife of Brett; four grandchildren; and seven great­grandchildren.

Eli N. Huber, 90, husband of Emma N. (Leinbach) Huber, Narvon, passed away on Friday, March 15.

Andre spent the last 38 years in the Lancaster area of Pennsylvania. He was loved by all who met him everywhere he went.

In the past four years, a tremendous part of his life was his participation in the Veteran’s Court Program, which transformed his life in ways that were positively unimaginable. He constantly praised Judge Wright for his ability to lead him to recovery and a better life.

I went ariding on another man’s horse. With my hat deep in my face and tobacco in my mouth.

Billy Paul was his name, long were all his legs. Hairy was his black head, yet with ears so small. Again I cried; he heard me not at all.

Wet we both became; then came a terrible rain.

Whoa and whoa! And again whoa! My voice was getting weaker.

I glance to the right into a field - a dozen young mares! Here comes my end; he goes right to them ­ over the fence and after the mares.

I wish I’d learned to pray ­ oh, where is my minister?

Billy Paul, oh Billy Paul, think upon your end!

Running after mares is a poor way to spend your time.

And those of you who still want to ride, hold your tongue! Study long and hard ­ the mentality of a horse. ***

It has been almost two years since our “Alder Kumraad,” Ernie Bechtel has written a dialect poem, so this week we have occasion to rejoice. On November 2, 1986 “Der Billy Paul” ­ in Ernie’s words ­ “is darich kumme.” Ernie recalled a horse he once borrowed. Ernie writes, “He almost got away with me hanging on his side like a ‘pony soldier.’”

Ernie also wrote, “Es hot yuscht vier Farschde gewwe, awwer es verzehlt die Schtorie in ganz paar Wadde.” And that indeed is the beauty of this excellent poem, its brevity and the vivid images it conjures up.

Now that the log­jam, has been broken, we hope we’ll be sharing many more poems from Ernie’s pen with you.

We hope both of us will be able to continue to write Dutch columns for our Ephrata (and vicinity) readers for many years to come. We have been on WLBR in Lebanon ever since May of 1971. Lititz Senior Center Lists Activities

The Lancaster County Office of Aging, Lititz Senior Center, located at Lititz United Methodist Church, 201 East Market Street, Lititz, is open Monday, Wednesday and Thursday, from 8:30 a.m. until 1:00 p.m., with lunch served at noon. There is no cost to attend.

The Center serves independent Lancaster County seniors ages 60 and up from Ephrata, Rothsville, Akron, Neffsville and Lititz areas. Ephrata is also served by van service. Reservations for lunch and transportation must be made by 10:00 a.m., one day in advance, by calling the Center at 717626-2800.

As we leave the winter months behind us, daydreams of warmer weather may have you longing for the fruity flavors of the tropics. While the coconut may make you think of palm trees and summer breezes, it is very versatile in cooking throughout the year – from decadent cakes and cookies, to seafood dishes and curries. We asked readers to share their favorite recipes with us. We received many responses, including those below. Chewy

Coconut Bars

Marilyn Bashore, Lititz

½ cup butter

2 cups light brown sugar

2 eggs, lightly beaten

2 teaspoons vanilla

½ teaspoon salt

1 teaspoon baking powder

1 cup all-purpose flour

1½ cups sweetened flaked coconut

Preheat oven to 350°F.

Line a 9”x9” baking dish with parchment paper and grease or coat with nonstick spray.

In a medium saucepan, melt butter over mediumlow heat. Continue cooking until it boils, swirling pan to prevent burning. Allow butter to brown to an amber color. Remove from heat and stir in brown sugar until completely combined.

Stir in eggs, vanilla, salt and baking powder. Next stir in

flour, then coconut. Pour batter into prepared pan and bake for 20 minutes until edges are golden brown. The center will be almost set.

Remove from oven and allow bars to cool in pan completely.

Remove from pan and cut into squares.

Coconut Cracker Pudding

Pat Roth, Ephrata

1 cup saltine cracker crumbs

¾ to 1 cup granulated sugar

2 eggs

1 cup shredded coconut

3 cups milk

1 teaspoon vanilla

Beat the eggs and sugar together. Add the cracker crumps and coconut in the milk and vanilla. Cook all together until thickened.

Coconut Shortbread

Cookies

2 cups butter (room temperature)

1 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon coconut extract

½ cup cornstarch

3 cup flour

2 cup dried coconut (lightly toasted)

Toast coconut on a sheet tray in the oven at 350°F for 10 to 15 minutes until lightly toasted.

Cream butter and sugar, then add extracts. Sift flour and cornstarch, then slowly add into the creamed mixture. Fold in coconut last.

Roll the mix into two logs (1½” to 2” thickness). Wrap each roll in plastic wrap and chill for 2 hours.

Cut cookies into 1/4” slices.

Bake on parchment­lined cookie sheets at 350°F for 15 to 20 minutes, until edges are browned. Cool on cookie sheets.

¾ cup butter, softened

½ cup sugar

1 large egg

1 teaspoon vanilla extract

2 cups flour

½ cup flaked coconut

1½ teaspoons baking powder

¼ teaspoon salt

Filling:

¼ cup butter, softened

¾ cup confectioners sugar

2 teaspoons 2% milk

½ teaspoon vanilla extract

½ cup raspberry preserves

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.

Combine the flour, coconut, baking powder and salt. Gradually add to the creamed mixture and mix well.

Shape into 1” balls. Place 1 1/2” apart on ungreased baking sheets. Flatten with a glass dipped in flour. Bake at 350°F for 12 to 14 minutes. Cool on racks.

In a small bowl, beat the butter, confectioners sugar, milk and vanilla until smooth. Place 1/2 teaspoon of preserves and a scant teaspoon of the filling mixture on the bottom of half of the cookies. Top with remaining cookies.

Makes about 2½ dozen cookie sandwiches.

Toasted

Coconut Pie

Pat Roth, Ephrata

3 beaten eggs

1½ cups sugar

½ cup butter or margarine, melted

4 teaspoons lemon juice

1 teaspoon vanilla

11/3 cups flaked coconut pastry for 9” pie pan

Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in the coconut. Pour the filling into the pie crust.

Bake at 350°F about 40 to 45 minutes, until a knife inserted halfway between the center and edge of pie comes out clean.

Garnish with whipped cream and toasted coconut.

Seven-Layer Bars

Mary Ann Dell, East Earl

¼ cup unsalted butter, melted

¾ cup graham cracker crumbs

1 cup whole almonds, coarsely chopped

½ cup dried apricots, coarsely chopped (optional)

½ cup semisweet chocolate chips

1½ cups sweetened flaked coconut

7 oz. can sweetened condensed milk

Preheat oven to 325°F.

Combine melted butter and graham cracker crumbs in a medium­sized bowl, and stir until all of the crumbs are moistened. Pour the mixture into the bottom of an 8” square baking pan and spread and press firmly with your fingertips to create and even layer.

Sprinkle the almonds and apricots evenly over the crumbs. Sprinkle the chocolate chips over the almonds and apricots. Sprinkle the coconut over the chocolate chips. Drizzle the sweetened condensed milk over the coconut. Bake until the coconut begins to turn light golden brown, 25 to 27 minutes. Let the pan cool completely on a wire rack. Place in the freezer 10 minutes before cutting into 16 squares. Bars will keep at room temperature in an airtight container for up to 1 week. Makes 16 bars.

Passover Macaroons

Mary Ann Dell, East Earl

¾ cups sugar

2½ cups unsweetened dried coconut

2 large egg whites

1 teaspoon pure vanilla extract

1/8 teaspoon salt

Preheat the oven to 375°F.

Line baking sheets with parchment paper.

Combine the sugar, coconut, egg whites, vanilla and salt in a medium­size mixing bowl. Mix with a rubber spatula.

Drop the batter by heaping tablespoonfuls onto the lined baking sheets, leaving 1½” between each cookie.

Bake until golden, 10 to 12 minutes.

Slide the entire sheet of paper with the cookies onto a wire rack and let cool completely. Carefully peel them off the paper.

Cookies will keep at room temperature in an airtight container up to 1 week.

Yield: 24 cookies.

Coconut Pecan Cake

Tera McFarland, Reinholds

2 cups flour

2 cups sugar

1½ cups softened butter

1 cup buttermilk

4 eggs

1 teaspoon baking soda

½ teaspoon salt

1 tablespoon vanilla

2 cups flaked coconut

1 cup chopped pecans

Optional:

1 teaspoon coconut extract extra coconut for the frosting

Heat oven to 350°F. In large mixing bowl,

combine all ingredients except coconut and pecans. Beat at low speed, scraping bowl often, until all ingredients are moistened. Beat at high speed, scraping bowl often until smooth (3 to 4 minutes). Stir in coconut and pecans.

Pour batter into a greased and floured 9”x13” baking pan.

Bake for 45 to 50 minutes or until center of cake is firm to touch and edges begin to pull away from sides of pan.

Cool completely.

Frost with browned butter or cream cheese frosting. I like to add coconut extract and coconut flakes to the frosting.

Coconut Cream Pie

Elaine Ziolkowski, Ephrata

2 packages instant vanilla pudding

2 cups milk

2 cups Dream Whip,

prepared according to package directions, or Cool Whip small package (¾ cup) coconut baked 8” pie shell Mix pudding with milk. Fold in Dream Whip and coconut. Top with

hair dye to fade more quickly.

• Consider highlights over all-over hair lightening/ coloring. With highlights, there will be fewer colored portions of your hair and less opportunity for lightened hair to turn brassy. Stylists can add enough highlights to make the total effect appear much brighter.

• Use a toner or correctional “purple” shampoo. Toning products rely on color wheel technology. Opposite colors on the wheel cancel each other out. Orange and yellow (brassy) hues are opposite blue and purple. Therefore, using special shampoos that contain blue and purple pigments will offset brassy hues. Don’t worry, your hair won’t turn violet with recommended use.

March marks a turning point for many people each year. Perhaps because winter winds down and officially ends in midMarch, the month is easy to characterize as a turning point toward spring and all that entails, including warmer weather and additional hours of daylight. The vernal equinox is one of many interesting facts about the third month of the year.

1. March might mark the official return of spring, but the inspiration for its name is far less serene. According to Almanac.com, March is named for Mars, the Roman god of war. That might not jibe with modern impressions of March, but it makes sense from

a historical perspective.

That’s because military campaigns were once routinely suspended during the cold winter months. Upon the return of spring and the more favorable conditions it produced, military campaigns would start up again, thus making March an aptly named month.

2. Though presidential inaugurations in the United

States are now held in January, that wasn’t always the case. In fact, March 4 was the official Inauguration Day until 1933, when the Twentieth Amendment was ratified and inaugurations were officially moved to January. Looking unto Jesus, not the Easter bunny

Scripture: Hebrews 12:2“Looking unto Jesus the author and finisher of our faith; who for the joy that was set before him endured the cross, despising the shame, and is set down at the right hand of the throne of God.”

With Easter approaching, I thought it would be good to focus on what Christ did for us on the cross. We will finish our lesson on regarding God as holy and glorifying Him before all people, next week.

Our verse starts with a directive that we look unto Jesus. The more a believer looks at the Savior, the more we should desire to be like him. For the unbeliever, they should look at his

claims, his work and his invitation; come unto me that you may have life. To the believer, we should look at him and see his sacrificial life, dedication to the Father’s will, others first ministry and absolute Lordship over our lives. We need to look to him continually. Does he still command our attention or do we look to the world and to other things? We can look to him for guidance, help in times of trouble, truth, empowerment to do God’s will and purpose for life itself. When Peter took his eyes off of Jesus, he began to sink and so will we.

He is the author and finisher of our faith. One old saying about the plan of salvation goes like this: the Father thought it, the Son bought it and the Spirit wrought it. As the author, he (God) writes the plan. Don’t try one of the many false plans concocted by the religions of the world.

How did Christ endure the horrible death of the cross? He focused on the eternal rather than the temporal. He knew what lay ahead after the cross. The

suffering of the cross was a path to the joy that was set before him. The joy of providing a works ­ free salvation for anyone who would come. How about you today; will you come? Studies prove that when people focus on only the here and now, they usually fail to achieve any success. The people who are able to look out and live with the future in view do far better at life in general. As believers, we need to look to the future for the strength, direction and endurance for each day.

The crucifixion was a horrible form of punishment. It was saved for the worst of criminals. It was intended to be a painful, slow, and agonizing death, which often came by suffocation because of the position of the body as it hung on the cross. To say nothing of the flogging he received even before being crucified. Isaiah said his appearance was so marred, his body was beyond human likeness. The Bible says, “Greater love has no one than this, that he lay down his life for his friends.”

(John 15:13). Christ endured the death on a cross to provide a salvation for all who will come to him in faith.

He despised the shame of the cross. People mocked him, spat on him, struck him, put a robe of purple on him and placed a crown of thorns on his head. The trial, the flogging and the cross, were the ultimate humiliation and shame. The perfect spotless Lamb of God dying on a cross. Even Pilate said, “I find no fault in him.”

The Easter message is that now he is sitting at the right hand of the throne of God. He has risen from the dead. He paid the penalty of sin for all who will trust him. His work on the cross made it possible to receive forgiveness for all sin once and for all. You must see your own sinfulness and separation from God, which will enable you to place your faith in Christ and his work on your behalf. He said in Revelation, “Behold, I stand at the door, and knock; if anyone will open the door, I will come into him.”

8 Tips For Dyeing Easter Eggs

Coloring eggs is a beloved Easter tradition. Eggs long have been symbols of fertility and rebirth, making them fitting icons for spring.

One story links eggs to Easter as well. According to some religious scholars, Mary Magdalene, the woman who was the first person to see Jesus Christ after His resurrection, was holding a plain egg in her hand while waiting for the emperor to share the good news. The emperor then told her that Jesus’ resurrection was as improbable as that egg suddenly blushing. The egg then turned red.

Dyeing eggs is an entertaining activity, but one that also may have some religious significance. Many families will color eggs this Easter, and these guidelines can make the process go smoothly.

• Wait until just before coloring to hard­boil eggs. Good Housekeeping recommends boiling eggs for 11 minutes for a hard boil. Do not chill the eggs afterward; warm eggs absorb color more effectively for more vivid results.

• Egg dye can stain furniture, clothing or tablecloths. Therefore, dress in clothing that you’re not worried

about staining. Also, cover work surfaces with an old tablecloth and newspapers to soak up any spills.

• Make a drying rack to ensure that eggs will dry evenly. This can be a rimmed cookie sheet lined with layers of paper towels to absorb any excess dye that runs off the eggs. Or push pins into thick foam board and place the eggs on top to allow air to circulate.

• Consider using glass bowls or ceramic mugs to house the colored dye solutions. These vessels are more sturdy than plastic cups, and less likely to be overturned by eager young hands.

• Scissor-style tongs are ideal tools for retrieving eggs from the dye. Eggs tend to slide off of the spoons or wire rings provided in kits, leading to splashing and kids dunking their fingers in to grab eggs.

• Stir dyeing cups often to guarantee consistent color.

• Use electrical tape to make patterns on Easter eggs. Dip the eggs and let dry. Afterwards, remove the tape to reveal the designs.

• If food coloring-based dyes seem too messy, use watercolor paint sets and allow everyone to get creative.

While some people may

want to use Easter eggs for recipes later on, it may be safer to boil up a fresh batch of eggs for that purpose, even if it seems wasteful. According to Emily Rubin, RD, LDN of the Thomas Jefferson University Division of Gastroenterology and Hepatology, “hard­boiled eggs should be refrigerated within two hours of cooking and discarded if left out for more than two hours at room temperature.” Chances are it may take two hours or more for children to find hard­boiled eggs hidden by the Easter bunny.

RibbonCutting At Colonial Park

On Saturday, April 27, the Borough of Akron will celebrate the generosity of Rosenberger, the Akronbased company that donated $23,000 to fund a new Colonial Park Pavilion, to benefit the community and

to a ribbon-cutting ceremony planned for 10:00 a.m. at the new pavilion. The new 12x16-foot roofed structure is ADA accessible and will provide shelter for people who use the park, for picnickers, and for anyone who wants to take a rest while walking the rail trail. Two picnic tables were purchased, one of which is handicapped accessible according to building code.

CEO of Rosenberger North America, Ryan Spencer said “We are excited to have the opportunity to give back to the community that has been supporting Rosenberger for so many years.

Part of our culture at Rosenberger is to help take care of our employees and the community around us. Many of our employees are from this area, so we want them to feel proud in working for a company that cares. We look forward to seeing the many families from the area and on the rail trial to stop by and make use of the new pavilion.”

Previously, the company donated funds for a gazebo and soccer goals in the park. Now Spencer con-

tinues to follow that lead of caring and support for the community. The company supports Wellspan, the Ephrata Public Library, the Lancaster Chamber and other community needs.

John McBeth, Akron Borough Mayor, said, “Rosenberger has been an awesome neighbor in providing funds to continue the plans for the development of Colonial Park. The money that they have donated has increased the recreational activities for the nearly 25% of Akron‘s population that lives within two blocks of this park. Now, this new financial gift will also be a helpful

for people who knit and like to share the craft. This is not a class or instruction, just a friendly gathering to knit and work on projects. Must bring all your own supplies. Crocheters also welcome. No registration required.
