LETTER FROM THE MANAGEMENT Dear Friends, We would like to invite you to explore our 2nd edition of the Forum Focus magazine! We designed this magazine to give our customers a personalized introduction to each of our merchants and to explore all of the wonderful shops, restaurants and services located here at the Forum at Olympia Parkway. I very often hear “I didn’t know that store was here”… or “I’m looking for something unique, which stores would carry such an item?” I have the very special privilege of knowing The Forum merchants and their interesting and inspiring business stories and want to share them with you. The magazine is divided into categories to make it easy to search for the tenant and products you are looking for. There is also a list of tenants alphabetized with telephone numbers for quick reference. A map of the shopping center is provided in the center fold. Our magazine will continue to be printed annually to update you on what’s new. Look also for our special events calendar. The EMS Extravaganza in May features our community emergency medical services, fire, police, rescue, emergency helicopters, SWAT, area hospitals, medical services and much, much more. The car show is held in October and features over 100 car entries of all makes and models and this show is a sanctioned, judged event bringing car enthusiasts from all over. Italian Potato Soup

2 pounds Italian sausage links 3 cans crème of potato soup 1 quart milk 3 pounds red potatoes

1 bunch Kale, washed and torn into 2” pieces ½ tsp. red pepper flakes Salt and black pepper

Wash and slice potatoes in ¼ inch slices. Cook potatoes in gently boiling water until tender. Remove from water and drain on paper towels. Cut sausage links into ½ inch slices and brown in a skillet over medium high heat. Drain on paper towels when done. Add crème of potato soup into large stock pot and mix with 2 cups of milk. Add sausage, potatoes and kale. Stir together and add enough milk to cover. Season with salt & pepper and red pepper flakes to taste. Makes 12 servings.

Garden Alfredo Chicken

1 pound skinless, boneless chicken breasts or tenders 1 tsp kosher salt ½ tsp black pepper Cooking spray 6 oz. uncooked pappardelle pasta or wide linguini pasta 2 med. Zucchini 2 med. yellow squash 2 tsp olive oil 5 oz. thin fresh asparagus, trimmed 1 red, yellow and orange bell pepper, cut into thin strips 1 medium onion, cut in the thin strips 6 cloves garlic, finely chopped 1 ½ cups lower sodium chicken stock ½ cup half & half 2 tsp flour 3 oz grated parmesan cheese 2 tablespoons fresh flat leaf parsley leaves 2 tablespoon fresh oregano, chopped 2 tablespoon fresh basil, chopped 2 tablespoon fresh rosemary, chopped 2 tablespoon fresh thyme, chopped

Heat a large skillet over medium-high heat. Coat pan with cooking spray . Sprinkle chicken with salt and pepper.. Add chicken and cook 4 minutes on each side or until done. Remove from pan, let stand 5 minutes. Cut chicken across the grain into thin slices. Pour ½ cup chicken stock over chicken slices cover with foil to keep warm. Reserve drippings in pan. While chicken cooks, prepare pasta according to package directions. Drain, rinse in warm water to keep from sticking. Cut each zucchini and squash in half crosswise, core seeds and discard. Cut ½ inch slices from outer walls of zucchini and squash. Slice pieces lengthwise into thin strips. Heat a nonstick skillet over medium high heats. Add oil, swirl. Add zucchini and squash, onions, asparagus, bell peppers and fresh herbs, sauté 3 minutes. Sprinkle with salt. Add garlic; sauté 2 minutes. Remove pan from heat. Combine broth, half & half and flour stir in a bowl and stir with a whisk. Add broth mixture to reserved drippings in skillet, stirring constantly bring to a boil and cook 2 minutes or until sauce has thickened. Remove from heat. Add 2 oz. of cheese, stir until cheese melts. Add pasta, vegetables and chicken, toss. Sprinkle top with remaining cheese, black pepper and parsley. Vandeberg has given to his vision of a quality bakery café concept. His culinary background is varied, giving him the opportunity to have sampled a variety of cooking techniques and specialties. After having completed a course of study at the Cordon Bleu Culinary School in Portland, Oregon in 1996-1997, Chef Vandeberg interned with various chefs in hotels across the country for several years. His work experience with these chefs began to be directed towards a specialization in pastries. At the same time, he realized that working in hotels would require more traveling than he wanted for himself and his young family. He wanted to become established in a defined location which offered him the opportunity to realize his culinary ideals and also family stability. In 2006, Chef Vandeberg saw his vision of a Bakery Café come to fruition. At that time the concept was fairly new in the San Antonio area – a Bakery Café serving gourmet sandwiches. The Hearthstone Bakery Café at The Forum at Olympia Parkway was his first endeavor in this direction as he saw a positive relationship between his concept and the location of The Forum and its surrounding communities. His continued success, and even expansion, is due to his emphasis on maintaining the quality of all that is offered on his menu, whether it be soups, salads or gourmet sandwiches and, of course, freshly baked pastries.

Dressing: 3 tablespoons lemon juice (about 1 lemon) 1 tablespoon red wine vinegar ¼ tsp. dried oregano 1 clove garlic, finely chopped Kosher salt and ground black pepper ¼ cup extra virgin olive oil

½ cup Quinoa Kosher salt & ground black pepper 2 green onions, green part only, chopped 1 cup cherry tomatoes, quartered ½ English cucumber, cut into small dice ½ cup fresh, flat leaf parsley, chopped ½ cup fresh mint leaves, shopped 1 to 2 roasted red bell peppers chopped ½ cup kalamata olives, quartered ½ cup Feta cheese Mix dressing ingredients together through salt & pepper. Drizzle olive oil in mixture while whisking. Set aside, allow to sit at room temperature to let flavors meld. Rinse Quinoa under cold running water until it runs clear. In a small saucepan, bring 1 cup of water To a boil. Add Quinoa, reduce heat to simmer and cover. Cook 10 to 15 minutes until water is absorbed. Turn out onto platter or pan to cool. Prepare vegetables and herbs, add cooled Quinoa. Pour in dressing and mix together. Top with Feta Cheese and refrigerate up to 1 hour. Before serving. The longer it sits the better the flavor!

Crust: 1 ¼ cups all purpose flour 2 tablespoons ground almonds 1 tsp. Kosher salt ¼ tsp. baking powder ¼ tsp. ground black pepper ¼ cup extra virgin olive oil 3 tablespoons ice water Cooking spray

Filling: 1 cup part skim ricotta cheese 1 large egg, slightly beaten 3 cloves garlic, minced 1 tsp. Kosher salt ½ cup fresh chopped basil, divided ¼ tsp. fresh thyme, chopped ¼ tsp. fresh rosemary, chopped ¼ tsp. fresh oregano, chopped 1 cup Gruyere cheese, shredded 1 pound heirloom or fresh vine ripened tomatoes 4 to 6 slices cooked bacon, crumbled 1 to 2 slices of sweet onion, sautéed until caramelized. Preheat oven to 450 degrees. To make crust: Sift flour through black pepper in a mixing bowl. Combine olive oil and 3 tablespoons ice water. With mixer on low drizzle in oil mixture into flour mixture until dough is crumbly. Coat ceramic or glass pie or tart plate with cooking spray. Sprinkle in dough mixture. Press on to bottom and sides of plate. Bake for 10 minutes until crust is lightly golden. Cool. In mixing bowl add ricotta cheese and egg, garlic and salt. Blend just until combined. Fold in ½ chopped herbs and ½ Gruyere cheese. Spread mixture evenly into cooled crust. slice tomatoes and layer in a circular pattern slightly overlapping, sprinkle with salt and pepper and remaining basil, bacon, onions and remaining Gruyere cheese. Bake at 450 for 25 minutes until filling is set. Let stand 10 minutes before slicing.
