cross the country at different times of the year, local builders’ associations orchestrate a major and influential event for public consumption—the Parade of Homes. In our region, the Acadian Home Builders Association holds its event in April followed by the Capital Region Builders Association in May. As part of the Parade, local home builders and their support teams work for many weeks and even months to prepare a vast combined selection of brand new homes to feature on the open-door tour. Their efforts culminate in a community-wide event that generally spans two weeks or consecutive weekends and is attended by a public eager to witness trends in home design and material selections, as well as professional resources. Fittingly, the homes on tour span a wide range of price, size and style. I imagine one major reason the Parade of Homes is so successful in attracting many hundreds if not thousands of people each year is that it represents a rare opportunity to see a variety of attractive and available new homes in a single afternoon or weekend. And while we know that home tours have vast appeal, the motivation to visit Parade homes varies widely among the individuals who tour them. For some tour-goers, there is the pure and simple motive to shop, identify and purchase a new home. For others, the Parade represents an opportunity to scope out workmanship by professional builders and craftsmen in the interest of a future building or remodeling project. Yet another group of people tours the often-decorated homes in an effort to gleam the latest styles prevalent in home plans, furnishings and related décor. Others tour the Parade of Homes for nothing more than its pure entertainment value. After all, many of us simply love to look at homes for no particularly practical reason whatsoever. In this issue of House & Home, we bring you inside of eight homes we found to be particularly well appointed and furnished during the recent Parade events in Lafayette and Baton Rouge. Whatever your level of interest in the projects featured, you’re sure to find some enviable features that translate into motivation for your own home search or future building, remodeling, decorating or entertaining project.Alternatively, you might find yourself simply entertained. ■

Q:

What are the pros/cons of working with a design/build contractor for my construction project?

A:

Traditionally, anyone interested in building a home would need to find a designer/architect to create construction drawings. Once the plans are completed, the project is put out for bid to various contractors before a selection is made. Hiring a design/build contractor means the client deals with one entity to both design and build their project. As long as the design/ build contractor gives the client an

option to “back out” of construction after the design phase is completed, I don’t see any disadvantages to this arrangement. In fact, there are many practical considerations in favor of working with a design/build contractor. These range from more accurate cost estimating, overall cost savings and design fluency from conceptualization to completion. The design/build scenario can save time in the overall project by eliminating the often time-

consuming process of gathering a variety of competitive bids. Most clients are not construction experts, making it difficult to identify potential builders who are best suited for their individual design project. In the design/bid/build scenario, clients often choose a contractor based on cost alone, which can lead to problems with quality. A design/build contractor is better positioned to monitor goals of budget, schedule and

quality, ensuring they are carried out from the design phase through the project’s completion. Also, the design/build contractor is responsible for the whole project, simplifying communications with the client and eliminating the need to work with a variety of different contractors in order to get the project completed. Finally, there is no chance of finger pointing between the designer and contractor, since they are one in the same. ■

Two consecutive May weekends recently marked the Capital Region Builders Association’s annual Parade of Homes. More than 50 newly constructed homes in 43 Lafayette-area subdivisions showcased the latest and greatest ideas in home building by 29 state-licensed CRBA members. Among the standout properties that were open for public tour are a trio worthy of a second look.

Israeli Couscous Salad

Greens + Grains = Satisfying Summer Salads

A

s a cook, the approach to and onset of summer always excites me. Breaking the wintry monotony of stews, braises, roasts and other heavy dishes with a charge of clean, crisp and refreshing flavors is like spring’s revolution in the kitchen. However, after an entire season of devouring heavy, sauceladen dishes, eating light can leave you hungry for more. I love salads and always have, for some reason. I find them interestingly refreshing, but unfortunately less than filling which often leads to a topping some sort of grilled meat or seafood and a creamy dressing. This season, I’ve been experimenting with some unconventional salads. As I began a routine of early morning running, I needed to eat something light, but filling, in the evenings. Eventually, this process of trial and error led me to several basic, satisfying ingredients for some really fantastic salads: Israeli couscous, bulgur wheat, brown rice, farro and quinoa. 30 HOUSE and homE

Israeli Couscous Salad 2-1/2 cups water 2 cups Israeli (pearl) couscous 8-10 grape tomatoes, halved Arugula 2 portabella mushroom caps, grilled and sliced 3 tablespoons Italian parsley, chopped 3 tablespoons extra virgin olive oil Juice of 1 lemon 2 teaspoons balsamic vinegar (optional) Salt and pepper to taste

Farro Grain Salad 2 cups water 1 cup farro 8 ounces mushrooms, quartered 1 pound green beans, trimmed and cut into bite-sized pieces 1 tablespoon oil 1/2 teaspoon thyme, chopped Salt and pepper to taste 1/4 cup feta cheese, crumbled 1/4 cup walnuts, coarsely chopped and toasted 1/4 cup balsamic vinegar 1/2 teaspoon thyme, chopped

Tabouli Salad 3 bunches finely chopped flat-leaf parsley 1 cup chopped fresh mint 2-3 tablespoons fine bulgur wheat 1 chopped firm tomato 1/2 onion or 2 scallions, chopped 1/2 cup extra virgin olive oil 1/4 cup fresh lemon juice Salt and pepper to taste

Tabouli Salad

Shrimp & Feta Quinoa Salad

Bring water to a boil, add couscous and stir. Resume boil then lower to a simmer. Cover and cook for 8 – 10 minutes, stirring frequently until cooked al dente. Drain and chill the couscous. Meanwhile, mix remaining ingredients in a large bowl and toss. Fold in the couscous and rfrigerate for at least 30 minutes before serving to allow the flavors to meld. Yield: 4 servings Preheat oven to 400 degrees. Bring the water and farro to a boil, reduce heat and simmer, covered, until the farro is al dente, about 20 minutes. In a bowl, toss together the mushrooms and green beans with oil, thyme, salt and pepper before transferring to a baking sheet in a single layer and place in the oven for about 20 minutes, flipping vegetables halfway through. Combine cooked vegetables with faro and serve. Yield: 4 servings

In a large bowl, mix bulgur wheat, tomatoes, onions, scallions, lemon juice, salt and pepper. Add the parsley, mint and olive oil and mix, adjusting seasoning by adding more oil and lemon if desired. Yield: 4 servings

Shrimp & Feta Quinoa Salad 2 cups water 1 cup quinoa Pinch salt 1 pound fresh shrimp, peeled and deveined 1 tablespoon blackening spices 1 cucumber, seeded and diced 1-1/2 tablespoons extra virgin olive oil Juice of one lemon 1/4 cup feta cheese, crumbled 2 scallions, sliced Kosher salt and pepper to taste Combine quinoa and water in a sauce pot and bring to a boil. Adjust to low heat and simmer for about 25 minutes, until water is completely absorbed. Chill the quinoa completely. Meanwhile, season the shrimp and grill on a barbecue pit or in a cast iron skillet until cooked through. Set aside and keep warm. Combine quinoa with remaining ingredients and toss well. Adjust seasonings and serve. Top with grilled shrimp. Chef’s Note: When quinoa is cooked through, a light ring will be visible on the perimeter of each grain. Yield: 4 servings

Brown Rice Salad 2 cups water 1 cup brown rice 1 medium zucchini (1/2 pound) 2 celery ribs 1 carrot 1 yellow bell pepper 1/2 bunch arugula (4 ounces) 4 scallions 2 tablespoons fresh lemon juice 1/4 cup chicken broth 1 tablespoon coarse-grained mustard 1 tablespoon olive oil 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper In a sauce pan, bring water to a boil and add brown rice. Return to a boil, cover and set heat to low setting for 40 minutes. Turn off the heat and allow the pot to sit for five minutes without removing the lid. Fluff rice and allow it to cool. Meanwhile, cut zucchini, celery, carrot and bell pepper into a 1/4-inch dice. Remove tough stems from arugula and chop leaves. Chop scallions. Prepare a bowl of ice and cold water and set aside. In a saucepan, bring salted water to a boil and blanch the zucchini, celery, carrot and bell pepper for 1 minute. Drain vegetables in a sieve before transferring to the ice water to stop cooking. Drain vegetables well. In a large bowl, whisk together lemon juice, broth, mustard, oil, salt and pepper. Add rice, blanched vegetables, arugula and scallions, tossing to combine well, and season with salt and pepper. Serve salad at room temperature. Yield: 4 servings
