Crossing paths has been a good move for the reopening of Fajita Junction Owner Randy Maldonado met Max Rodriguez through a mutual friend and found they have been on the same path of success as restaurant owners. Now they are putting their recipes together and running the popular, local fajita restaurant on the south side of Corpus Christi. Maldonado, owner of Pete’s Chicken N More for 18 years, created and initially opened Fajita Junction in August of 2009. The restaurant was a hit because of its freshly grilled meats, salsa bar, and side dishes. A year after opening, the restaurant was named the Caller-Times’ Best of the Best New Restaurant in 2009 and in 2010 was awarded for Best Fajitas. The restaurant closed shortly last year to rehire a new manager. Rodriguez came along and is now the new manager and co-owner of Fajita Junction. Rodriguez, 39, is a Corpus Christi native and a 1991 graduate of Miller High School. He has been in the restaurant business for 22 years working as a general manager at several corporate chain restaurants and operating his own pizzerias. “We’re excited to have someone like Max with his caliber and experience,” Maldonado said. “It’s a great asset to have somebody like him on board.” Fajita Junction serves certified Angus beef and chicken fajitas and also sausage, shrimp, and mollejas. In addition to fajitas, they also serve delicious tacos, enchiladas, chicken flautas, pollo asado, quesadillas, the Junction Mountain nachos, salads, burritos and soups. The salsa bar is not to be missed on any trip to Fajita Junction. It has fresh, homemade salsas including pico de gallo, a traditional red mild sauce, green tomatillo, tropical, and roasted jalapeno pep-

per salsa. The topping bar is also packed with condiments for the tacos like chopped cilantro, onions, tomatoes, jalapenos, black olives, lettuce, lemons and limes, sour cream plus butter for the tortillas. “There is no other salsa bar in town where you can create your own combinations of flavor,” Maldonado said. “The salsa bar has been a really big hit. “People enjoy the capability of building their own creation.” Rodriguez hopes to carry out Maldonado’s dream of expanding Fajita Junction throughout Corpus Christi and perhaps throughout Texas. “Maldonado, too, has always envisioned developing Fajita Junction into a larger concept. “We’re looking forward to building the business together,” Maldonado said. “The timing on both sides is great. We couldn’t ask for a better crossing at the junction.”

Protect Your Eyes From Harmful Solar Radiation Did you know that UV and other radiation from the sun can harm your eyes? Extended exposure to the sun’s UV rays has been linked to eye damage including cataracts, macular degeneration, pingueculae, and pterygia. New re-search suggests that the sun’s high-energy visible (HEV) radiation – also called “blue light” – may increase your long-term risk of macular degeneration. To protect your eyes from harmful solar radiation, sunglasses should block 100 percent of UV rays and also absorb most HEV rays. Frames with a close fitting wraparound style provide the best protection because they limit how much stray sunlight reaches your eyes from above and beyond the periphery of your sunglass lenses. There are three categories of UV rays from the sun: *UVC rays. These rays are potentially the most harmful to your eyes but fortunately the atmosphere’s ozone layer blocks virtually all UVC rays. *UVB rays. These rays are filtered partially by the ozone layer but some still reach the earth’s surface. UVB rays are thought to cause pingueculae and pterygia. These growths on the eye’s surface can become unsightly and cause cor-neal problems as well as distorted vision. *UVA rays. These rays can pass through the cornea and reach the lens and retina inside the eye. Overexposure to UVA radiation can cause certain types of cataracts and play a role in the development of macular degeneration. Anyone who spends time outdoors is at risk for eye problems from UV radia-

tion. Kids need UV protection even more than adults. The risk of damage to our eyes from solar UV radiation is cumulative, meaning the danger con-tinues to grow as we spend time in the sun throughout our lifetime. With this in mind, it is especially important for kids to protect their eyes from the sun with good quality sunglasses. Look for sunglasses that block 100 percent of UVA and UVB rays. Surprisingly, cloud cover does not affect UV levels significantly. Your risk of UV exposure can be quite high even on hazy or overcast days. This is because UV can penetrate clouds. To protect your eyes as much as possible, try at least one pair of sunglasses with large lenses or a close-fitting wraparound style. Your optometrist can help you choose the best sunglass lenses for your needs. You need not fear the outdoors or sunny days as long as you’re equipped with the right eye protection.

I was talking to my 9 year old niece Savannah the other day. She was excited because she said her parents told her when she got a little older she could decorate her own room. Only trouble is she couldn’t decide whether to go with a sea theme or a rustic cabin theme and she currently has lavender walls. “Wow” I told her, “that sure is a big difference in themes”. “Yes”, she said but it’s what I like. When I was first married, a million years ago, that’s what my decorating style was like. It was a mish-mash of everything I liked. Whether it was a moose from a cabin theme that I thought was cute at the time to that pretty blue dolphin that I bought as a souvenir when I was visiting a coastal city. I had a cluttered mess moose and dolphin dust collectors all in the same house. As years passed, I became more aware of homes that had their own sense of style. Those homes that I would walk into and think to myself, “wow this house is so pretty”. I begin to think about what it was that made me think this house was “pretty”. Was it the color of the walls, the furniture, the accessories, the lighting, the pictures, or the whiskey I’d been drinking? I took notes, mental and/or written, took pictures with small camera I always carried in my purse or now with my cell phone. Then I sat analyzed what I had so I could start a plan to giving my home that warm fuzzy feeling and that’s what I’m going to share with you. I’m going to call them the 12 Suggestions for Finding Your Home Style. The Suggestions will be brought to you over the next few months because I don’t want you to think you can do this in 1 week! Let’s get started and remember there is nothing to fear, whatever you do

I realize this can be a daunting task, but a very important task in helping you lay the foundation for your room. When redecorating a home, most of us can’t afford to buy all new furniture to fit our new style. So, let’s keep some of those must stay pieces and turn them into a new statement piece by using a little elbow grease and creativity. Refurbishing furniture is great - and green - way of repurposing furniture. At first you may think, there is no way your red velvet sofa with nail heads will work in your new casual beach theme. SuggeSTIOn #2 – Make a notebook. I buy single subject spiral notebooks. Then I take all the pictures I’ve ripped out of magazines, or pictures I’ve taken with my camera and tape them into the book. I write notes in the margins to remind me of what it was I liked in the photo. Was it the wall color, how they have the pictures hung or how the room worked with the ugly couch that is exactly like the one I have. Don’t be afraid to steal, copy, or imitate the ideas that give you the warm fuzzy when you see it. This notebook will be your creative bible as you begin to design your new looks.

Meet Victor and Nelda Ricondo. Victor and Nelda married in 1998 and started a family. Both continued to pursue their careers, Victor a Private Investigator and Nelda, a Registered Nurse, along with raising a family of five. It wasn’t long before Victor realized that he needed to supplement his income in order to make ends meet. He decided to take the leap of FAITH and opened a small business… Faith Power Washing was established in 2003 in San Antonio, TX. Their first client was RentA-Center, a total of 55 vehicles, truly a blessing. After a year of hard work, the business grew and Victor’s full-time job as a private investigator became part-time and Nelda continued to work as a Registered Nurse. It wasn’t long before Victor had to quit his job to dedicate more time to build the business. Since then FPW has experienced growth, and now serves over fifty new clients. Victor incorporated the business in 2011 to M6:33 Facility Services Inc., a reminder to put God first and to reflect the variety of services they offer. They are located in San Antonio, Austin, Corpus Christi, Rio Grande Valley, and also service Laredo, Houston, and the surrounding areas. In 2009, Victor and his family moved to Corpus Christi. Due to his son’s illness, Doctors highly recommended Victor and his family to live in a coastal environment. Victor said, “The Lord guided me to a place where my children would live comfortably, and blessing me in many ways.” He mentions a scripture that states as follows:

And Joshua 1:2-9 It was then he was inspired to provide a full service business for busy working families. A place where you can get your car detailed while you get your hair styled, for both men, women and children, do some last minute gift shopping and maybe even being shuttled to dinner and a movie while your auto gets serviced. Now that’s convenience! “Being a family man, juggling work, family time is everything,” Victor says. Coupon Queen Asking For Cookies

My best friend in college had a saying that her mom always told her… “If you want a cookie, you have to ask for it!” Basically she meant that you have to be assertive in life to get what you want. That philosophy has been one of the lessons from college that most stuck with me and it wasn’t even from a class! The “ask for it” life style as been advantageous over the years, and lately I’ve had a couple “ask for it” moments that I wanted to share with you all. Recently we unexpectedly went shopping for some outdoor furniture. It was a whim and of course, I was unprepared. I hadn’t done my research and hadn’t printed out any retail coupons. We wandered into World Market and found an outdoor rug for our patio that I really liked. It was on sale, but I was hesitant. Until I asked… World market often has printable coupons for percentage or dollars off. I really didn’t want to buy the rug, even on sale, without the additional coupon discount. So I just asked the cashier if they had any current coupons. I would have been willing to go back on Monday with my coupon to get my best deal. However, because I asked, the cashier had a coupon at the register that she said I could use on my purchase. Ta da… Sales price plus a coupon discount, without having to make a return trip. Just because I asked I saved!

How to get the best savings for you and your family.

My next Asking for a Cookie moment came when I received this month’s electric bill. I’m a very organized person when it comes to our budget. We’re on Dave Ramsey’s Financial Freedom plan and are on our way to becoming debt free. So I watch pennies, and track our bill’s religiously.

Basically, she ended up knocking nearly $100 off the bill I was holding in my hand! Just because I asked!

When I got this month’s bill, I just about fell out of my chair. It was SIGNIFICANTLY higher than I’d expected. Totally shooting my budget out of the water! After closer inspection, I noticed our rate per kilowatt had jumped from 10.5 to 14.2! That’s a huge problem… We were under contract, or so I thought… I thought it was a 2 year, turns out it was a one year. Now rather than panicking and scraping up money, I made a phone call. I really like our current provider. Their customer service is great and this time proved to be a great example of that. I explained that the bill was much higher and that I didn’t realize our contract had expired. They immediately offered me a new contract at an even better 9.4 cents a kilowatt rate! And then I “Asked for a Cookie” I told her that since there weren’t any notices of our rate increasing if they could retro act the contract. She said she couldn’t give us our new rate, BUT she could apply our old contract rate to the bill…

Moral of the story is that asking has the potential to get you all kinds of money saving options! Worst-case scenario… They say NO. So what, big deal… If you don’t ask, you’ll never know!
