FESTIVE AFRICAN ENCOUNTER THIS CHRISTMAS AT THE HANNAH DINING SUITE AT QUEX PARK Quex Park in Birchington will live up to its African connections this Christmas, with its rebranded Hannah Dining Suite hosting African-style Christmas celebrations. The venue is to be transformed with a touch of vibrant African spirit, as the chefs offer handcrafted African delicacies between traditional British Christmas fare. Colourful displays of African culture, music and dance will transport diners to the ‘Dark Continent’ to relive the adventures of Major Powell-Cotton (whose family once owned the estate which now houses a museum in his honour) and eat amongst the lions at Quex this Christmas. Each night a part of the proceeds will be donated to Jambo Africa, a charity working with British and African youth. Evenings will feature a three-course menu with live African entertainment (7.30pm - 10pm) and a drinks licence until 1.00am. DEMELZA’S SEVENTH ANNUAL CAROL CONCERT AT CANTERBURY CATHEDRAL TAKES PLACE ON FRIDAY 3RD DECEMBER

The concert starts at 7.30pm and features the Choir of St Edmund’s School, Canterbury directed by Mr William Bersey, traditional family carols, celebrity readings and poems. FRESH FISH TO YOUR DOOR FROM GRIGGS OF HYTHE A monthly fish box from Griggs of Hythe is now available through the Kent Veg Box Company, with the contents largely depending upon what the boats have caught that week, including cod, haddock, plaice, mackerel, skate, mullet, bass and more. Also, adding another feather to their cap, Griggs of Hythe is now licensed to sell game sourced from the shoot at Eastwell. Coming into November, Griggs will be stocking traditional game fare such as rabbit and pheasant. Award-winning Griggs of Hythe have been fishing and fish mongering for generations, providing a

fantastic variety of locally caught fish and shellfish. The beachfront outlet has its own fishing boats on the beach at Hythe, delivering fresh fish straight from the catch. Visit the Historic Dockyard Chatham, open every day until mid-December, and catch the splendid Stanley Spencer exhibition in the new No. 1 Smithery. The exhibition features Spencer’s WW2 ‘Shipbuilding on the Clyde’ paintings, the first time all eight panels have been on public display following extensive restoration.

There is a marvellous sense of pick ‘n’ mix with something for everyone along Thanet’s ribbon of resorts. Discover the subterranean Shell Grotto at Margate, discovered in 1835 and still a rare puzzle to this day or even more exotic, the Powell-Cotton Museum at Birchington a collection of diverse natural history specimens and cultural objects from Asia and Africa. The Secret Gardens of Sandwich have 3.5 acres of ornamental and formal gardens by Sir Edwin Lutyens to enjoy and entry is free in December and January and half-price in November and February.

A short distance away is Dickens World, great family fun with costumed characters and maybe Scrooge’s seasonal ghosts. Alternatively head straight for the Royal Engineers Museum and discover the explosive history of Britain, its empire and the rest of the world since the 1700s.

Secrets of Garden, Orchard and Brewery Even in the winter, the Garden of England yields tasty treats. Head to Brogdale Farm, Faversham, famous as the home of the National Fruit Collection and enjoy the marketplace of local rural crafts, delicious Kentish produce and plants. There is an onsite restaurant to tempt you to stay longer. Or take a guided tour behind the scenes of Britain’s oldest brewer, Shepherd Neame and relax over a tutored tasting of Kentish Ales and speciality lagers. In December, Yuletide Brewery Tours feature winterwarming mulled beer and mince pies.

Childhood Christmas Magic All aboard the Kent and East Sussex Railway at Tenterden, which runs Santa Specials in December or head for Santa’s Magical Kingdom at The Hop Farm Family Park, Paddock Wood where you explore the elves’ forest of lights, reindeer land and other enchanting scenes until you meet Santa himself. Depending on your schedule and Santa Special trip timetables, Kent Life at Sandling, is also a great place to take the kids and let them burn off their energy with exciting indoor and outdoor play areas. Alternatively try Hever Castle and Gardens, the childhood home of Anne Boleyn, where this Christmas Narnia comes to life with twinkling trees, decorations and spectacular illuminated gardens, plus Father Christmas, music and carols.

And don’t forget Dover Castle and the transformed Great Tower, where you can immerse yourself in the authentically evoked medieval world and royal court of Henry II or explore the maze of Secret Wartime Tunnels from which Operation Dynamo was directed to evacuate the beaches on Dunkirk in 1940.

Festive Canterbury There is no better time to meander the captivating streets of Canterbury than in the lead-up to Christmas, when festive lights are on, city shops have late-night opening and the cathedral prepares to celebrate. Youngsters will love the fun, laughter and horror of The Canterbury Tales, a stunning recreation of 14th century England and a visit to the Cathedral is a must at this time of year, with its life-size nativity scene and skin-tingling atmosphere. Stay for a service to hear the voices of the choir fill the glorious edifice.

PROPERTY DEVELOPMENT IN THE CURRENT ECONOMIC CLIMATE

TODAY’S MARKET CREATES CHALLENGES AND OPPORTUNITIES FOR ALL BUSINESSES. THERE ARE A NUMBER OF ISSUES WHICH PROPERTY DEVELOPERS NEED TO CONSIDER WITH A VIEW TO MINIMISING TAX LIABILITIES. THESE INCLUDE: Business structure

• Consider owning property personally at first rather than through a company. The rules for taxing profits can mean that minimal amounts of profit fall to be taxed in the early years of a business or losses may arise which can then be set against the income of previous years when tax may have been paid at higher rates. • If the business is profitable then it is likely to be advantageous to incorporate. At this point values should be obtained for both development properties and other assets. If property is transferred into a corporate entity before it has increased significantly in value then personal profits can be kept to a minimum and advantage taken of the 21% corporation tax rate. Although there will have been a disposal of assets there are specific reliefs available to prevent any capital gain being taxed on incorporation of an existing business. • A corporate entity is likely to be the best structure going forward, having the advantage of limited liability protection and lower tax rates on the profits made. • Losses made by companies for periods ending between 24 November 2008 and 23 November 2010 can now be carried back against profits of the preceding 3 years subject to maximum claims of £50,000 each for year 2 and 3. Consider how to maximise these claims by reviewing work in progress values, bad debts and repair provisions.

• Letting properties can create VAT issues for property developers (see note below). Transferring let property to a property investment company could be crucial for VAT but there may be other reasons for establishing separate property development and property investment companies. For example, for capital gains tax purposes neither Entrepreneur’s Relief (for individual shareholders) nor substantial shareholding relief (for companies) are available for property investment companies and holding the let properties in a separate company will avoid undermining the trading status of the development company.

Finance costs

It is essential to maximise tax relief for this expenditure. Points to consider are: • Finance expenditure for property developers will be generally allowable. • If finance is specific to a development then relief for the costs involved will be carried forward until such time as the property is sold. • However finance not specific to any particular development can be expensed when incurred thus accelerating tax reliefs. • Tax relief can be delayed if finance is obtained from a related individual, partnership or foreign entity and the interest charged has not actually been paid within 12 months of the year end.

• Remember that it is possible to make a provisional loss claim once it is known that losses will be made even though the accounts may not have been finalised.

• Finally, if there are deemed to be excess borrowings from related entities within large groups then tax relief for the finance costs can be lost if the company is considered to be thinly capitalised.

• Within a group of companies it is often advantageous to use a specific company to carry out one or several property developments. This gives the flexibility to sell a profitable company and provided a trading group satisfies certain criteria the group may be able to do this without paying any capital gains tax.

What happens when you cannot sell your property? • Where properties are let out rather than sold on consider if they should be reclassified as investment properties. If costs have been high and are now close to or exceed the market value of the property, losses could arise in the business which can be set off elsewhere.

And when did you last see your father? What do you think of when you imagine a typical family lawyer? Someone with a cold heart, a pinstripe suit and an aggressive attitude? Someone who will promise the world to a client, but secretly relish a battle between two bewildered people and make lots of money in the process? It’s an easy stereotype, and family solicitors often get pretty bad press. However, whilst the prevailing image may have been true perhaps at one point in history, it doesn’t reflect reality now. A quiet revolution has taken place in the last ten years in Kent and experienced family lawyers today invariably try to steer their clients away from acrimonious family disputes towards more friendly alternatives. Although financial separation can be deeply upsetting, most parents find explaining changes to their children the most difficult, and they often have no guidance in how to do this. As a result, children can suffer immensely and sometimes permanently. For example, did you know that 80% of children who ran away from home last year in the UK said that they did so because they were experiencing family problems at home? Were you also aware that 20% of these children were under the age of eleven? Family lawyers see these problems and consequences on a daily basis, but they also recognise a universal truth: although parents commonly feel angry about the circumstances surrounding their divorce or separation, they both want the best for their children and can unite to achieve this if they are given the right tools. To help provide the right advice, more and more solicitors are joining a national solicitor organisation called Resolution, which lobbies the government for changes to the law so that parents and couples are offered a more conciliatory approach to resolving issues which doesn’t have to cost the earth, financially and emotionally. Allied with this, solicitors in Kent and elsewhere are training in great numbers as collaborative lawyers, a practice borrowed in part from America. Within this process, the couple try to resolve their differences around a table with two specially trained solicitors, who are there to advise their respective clients, but also to encourage a constructive atmosphere and emphasise the need for each person to focus upon the birth of a new type of relationship, rather than the death of the old one. This is intended to ensure couples are empowered to control the negotiations themselves rather than deferring to third parties and to place the needs of any children at the heart of discussions.

Even if collaborative law is not an option for certain couples, Resolution lawyers in Kent are spearheading seminars run by mediation teams designed to explain to parents how to ensure that their children’s needs are considered first when they divorce or separate permanently. Kent is one of six pilot regions for ‘Parenting after Parting’, courses which take place over a morning and are designed to provide parents with the tools to approach children and explain what the family are planning to minimise the suffering and sense of loss often experienced when children feel they are outside the decision-making process. The new coalition government have promised to look closely at expanding the use of family mediation, recognising that at present, there are more and more people without legal representation and faced with a potential fight through the courts for contact with their children or for a fair financial settlement. Whilst solicitors in Kent have always seen the value of mediation as a cost-effective tool to resolve some disputes, especially involving children, there are more and more solicitors improving their skills to offer a mediation service as part of a package of options to assist clients with resolving problems. The role of family lawyers is changing rapidly, and the practitioner of the future is going to need a completely new set of skills to offer a service which their clients expect. However, most Kent solicitors welcome this new focus and relish the chance to talk to clients about their aspirations beyond the simply financial so that parents can stay good friends when they separate and children remain secure and happy in a new environment.

LYMPNE ‘LIVE AT THE CASTLE’ // 10th SEPT 2010

On 10th September, Lympne Castle was host to the fantastic ‘Live At The Castle’ evening in aid of Macmillan Cancer Support. The event was held as part of the Macmillan ‘Big Coffee Morning’, which runs every September. These events have become bigger every year, now requiring a committee of six people to organise, and this is the first year that an evening event has been put on. Thanks to the generosity from locals as well as people from all over Kent, the event sold out completely beforehand, and was attended by 230 guests dressed in their finest eveningwear. As well as food and drinks, guests were treated to an authentic casino run by Wildcard Casinos, housed in one of the many rooms of the castle. On this occasion, it was a good thing that so many people did so badly at gambling, as the money lost went to Macmillan. The evening also featured something of a ‘mini-festival’ with no less than 5 different musical acts performing in two of the halls – one for the loud stuff, and one for the more reflective. Kicking off in the main hall, local band Gherkin warmed the crowd up and got everyone dancing early in the evening, whilst elsewhere in the castle, guitar virtuoso and chart-topper Craig Ogden played a beautiful collection of classical tunes to a captive audience. Other acts included South East funk-legends, Ticklin’ The Pickle, folk singers The Buckthorn Band, and the main act of the evening, the ‘King Of Swing’ Peter Dinsley. A fantastic evening’s entertainment managed to raise £3,400 - due in no small part to the superb running of the evening and the generous local businesses and musicians, all of whom gave their time and services for free.

ALDINGTON SOAP BOX DERBY // 30th AUGUST 2010 There is something distinctly British about grown men and women doing dangerous things on steep hills for charity on Bank Holidays. It is the sort of craziness that makes our nation great, and its inhabitants proud. Sadly many such events are falling foul to the perils of ‘health and safety’ as bureaucrats attempt to keep us all safe from ourselves, and ruin any chance of fun in the process. So it is a wonderful thing that in the country village of Aldington, the locals are still managing to find creative ways to injure and maim themselves once a year in the name of charity. This year’s Soap Box Derby was bigger and better than ever, with 37 homemade vehicles being hurled down Forge Hill, a hill which, if

covered in snow, would be considered a ‘black run’ in skiing circles, with tight bends, chicanes, hay bales and the odd pedestrian. Fortunately the Walnut Tree Pub is situated at the top of the hill, providing an excellent base of operations and a good supply of ‘Dutch courage’. Thousands of people from all over the county lined the pavements to watch the brave few hurtling past in their flimsy vessels. The variety and creativity of karts on show that day was truly impressive - with such ingenious works of art such as ‘Bachelor Pad’, comprising of a 2-seater sofa and TV on wheels, and even a kart shaped like a large training shoe entered by Ashford Group Fitness. Live entertainment was provided by local band Gherkin, as well as future legends FlatLung,

who managed to wow and hold onto a very sizable crowd. It was wonderful to see the local community come together to enjoy themselves, put on a great event and raise a staggering £13,000 which will be divided between Pilgrims Hospice, Ashford and Aldington Primary School PTFA. Thanks was expressed to the many volunteers, event sponsors Ringway, to all the local businesses who contributed their time and monies, and most of all, to the brave individuals who were prepared to risk life and limb – not to mention the wrath of the Health And Safety Brigade – in the name of Bank Holiday entertainment and for charity.

COMMUNITYBASED CLUB GIVING YOUTH A CHANCE Much interest has been shown in Ashford-based football club Bromley Green since the article in the last issue of insideKENT that featured its 80th anniversary celebrations and community-focused plans for the future. Indeed the club is going from strength to strength with five adult sides all prospering throughout the Kent County League and the local Saturday and Sunday competitions. Now, after a gap of several years, the club has decided the time has arrived to reintroduce a youth structure with competitive football for Under 10s planned from next season. Already in place is a manager and head coach and the initial emphasis will be on having fun, primarily offering the children 7-a-side games in a safe and disciplined environment. Historically, the club has represented the borough of Ashford at many local, national and European events and in the 1980s were the proud winners of the International Youth Tournament in what was then West Germany. Other notable more recent achievements include winning the Reebok Fives tournament for Under 14s held in Bolton. Encouraged by the new initiative to promote mini soccer and junior teams, former Green youth team captain, Lee McRobert, who went on to a professional career at Millwall FC, has returned to the club and is keen to gain his FA badges and help coach the youngsters from a young age. McRobert, 38, still plays in the club’s otherwise teenage third team on

Saturdays and says he is passionate about children enjoying the game without feeling under undue pressure. “I have come home to my roots and my future lies here at Bromley Green in helping to build a thriving youth section. Football for youngsters should be fun at the same time as developing their skills. I want to put something back into the game.” With a newly-built youth centre plus a floodlit multi-purpose games area now adjacent to its own humble facilities, Bromley Green FC is ideally situated to play a fuller role in the community and will be seeking closer working relationships with local schools and other voluntary groups. The club’s trainers are FA qualified and all adult officers and helpers are CRB checked while negotiations are ongoing with the local council for more changing accommodation for both young boys and girls to support our widening participation ethos. Bromley Green FC needs interested and committed people to come forward and join them in providing healthy recreation for young persons in the area. They are seeking helpers on training and match days, sponsors of kits etc and will welcome anyone of any age, gender or background who simply loves the game of football. BUT APPLIANCES SUCH AS OVENS, FRIDGES AND EVEN FREEZERS ALL FORM AN IMPORTANT PART OF THE ENGINE THAT MAKES A GOOD KITCHEN RUN SMOOTHLY. Fridges and freezers are the hardest working appliances as they operate 24/7. And with market research showing that, on average, we spend around 10-15% of our disposable income on food, investing in the right refrigeration appliance could help your food last longer, resulting in less waste and savings on your grocery bill. Sometimes people shy away from integrated fridges and dishwashers, believing that they are too difficult to maintain if anything goes wrong, but this is not the case if the kitchen is designed and fitted properly. A perfect soufflé or kedgeree can be easily achieved with a few choice keystrokes, enabling even amateur cooks to rustle up awardwinning dishes with relative ease. Even cleaning up afterwards is no longer the chore it used to be, with pyroclean ovens taking a lot of the hard work away by heating up to such a high temperature that all residue is burnt away. High tech functionality is not only limited to ovens, however. Induction hobs are fast becoming a must-have appliance as they not only use a lot less energy, they are also a lot safer as heat is only generated when a pan is placed on the activated cooking zone, and the glass covering

does not get nearly as hot as its traditional ceramic counterpart – perfect for people with families and inquisitive little fingers! And wine fridges are no longer the preserve of white wine drinkers, as several manufacturers now produce appliances with different temperature zones in order to ensure that your red, rosé and white are all kept at their optimal drinking temperatures. So, although appliances may not be the first items on your list when you are looking to create your perfect kitchen, it is important to remember that they do form an integral part of the design, and have a huge impact on how you use this key space.

When we ask a man what he wants, he is unable to give a useful answer, preferring to utter an ever frustrating “I don’t know” or “what I would really like is a Mercedes 280CE in Concourse condition.” So what do we do? We desperately look for inspiration, from the obvious: men’s clothes, scent, books and tools, to the more outlandish: cookery courses, driving days, balloon flights... oh, I don’t know, anything! But then a strange thing happens. We either buy men a present that, in reality, they neither like nor want or we end up buying them nothing at all. So many times clients have said to me how disappointing this is.

WHAT’S HAPPENING IN THE HAIR DEPARTMENT? Well guys, you have Robert Pattison to thank for the shaggy, messed up “I just got out of bed” look, which is easily achievable if you have thick hair and a good hairline. If however, your hair is thinning and slightly fluffy, you should probably give this style a miss. FEELING YOUR BEST FOR CHRISTMAS

WITH MORE AND MORE PEOPLE SEEKING HERBAL MEDICINE TREATMENT IN THE UK AS AN ALTERNATIVE TO CONVENTIONAL DRUG TREATMENT, I DECIDED TO VISIT MY LOCAL HERBALISTS– FOREMAN & JONES - IN HYTHE, KENT AND SEE WHAT ALL THE FUSS WAS ABOUT. THE FOLLOWING ARTICLE DESCRIBES MY EXPERIENCE THERE. As I walked up the stairs I was greeted by the wonderful aroma of essential oils complimenting a clean, crisp and relaxed reception area – certainly not your typical doctor’s surgery. A warm personal greeting from a pretty young receptionist later, I was sitting in the waiting area enjoying a warm cup of the ‘Herbal Tea of the Week’. I was booked in to see degree-educated Herbalist and Hypnotherapist Hayley Jones for an hour-long consultation. I was led to a spacious and beautifully decorated practice room and invited to take a seat. Hayley ensured I was comfortable before we began. Having established the reasons for my attendance we discussed my health, lifestyle and diet in depth. My blood pressure was also taken as a matter of course. As the consultation progressed, I began to realise that rather than deal with the symptoms per se, Hayley was helping me to understand and appreciate the underlying causes of my complaint. Hayley advised me on some simple diet changes to start with, before recommending a tailored mixture of herbs to aid my recovery. Hayley helpfully explained the purpose of each herbal ingredient, including its corresponding effect on the system. Back in the dispensing/waiting area, I was able to watch my prescription being mixed by hand, created from what seemed like hundreds of tinctures lining the walls. The mixture included many different herbs including Marigold, Vervain and Mugwort. Any current medications from your doctor are taken into consideration, as Herbalists are also trained in Pharmacology alongside their traditional medical training. All in all it was great to have a whole hour to discuss my health and not feel rushed. I didn’t consider myself to be really ill – I had just been feeling a little ‘flat’ for some time. Conventional medicine had proved of little use on this case - my doctor had simply suggested anti-depressants as a pick me up. Keen to avoid medication for such a simple complaint, a close friend had recommended Foreman & Jones and their natural approach to feeling well. Herbal medicine is not just for minor complaints however; Hayley also mentioned that they treat a large number of patients with chronic illnesses such as Eczema, Hormonal complaints and Irritable Bowel Syndrome.

Your immune system is stronger, you feel calmer and generally more at ease. We believe in a proactive rather than reactive approach to medicine.” I left the clinic feeling very much as if I had experienced private healthcare at its best, and I very much look forward to feeling the benefits of my wonderful herbal elixir. I am booked in to see Hayley again in three weeks time. An excerpt from a recent patient testimonial reads: “It is such a relief to have time to relay symptoms, reactions and emotional changes to a practitioner without worrying about taking up too much time. I also thoroughly agree with the way the whole body, emotions etc are taken into account. I feel we address the rest of the problem rather than masking symptoms. FABULOUS 50s The most timeless of looks, this classic style has been given a contemporary overhaul to bring it bang up to date and well into the coming new year. I cannot stress to you the importance of your skin. If your foundation base is applied correctly then the overall look is going to be easier to make perfect. A matt finish foundation is ideal for the 50s glam effect, MAC Studio Fix powder (£19) is a must have for any makeup bag. Studio Fix is a powder and foundation in one that combines good coverage with ease of application.

For those of you with a little more to spend, even an idea for your Christmas list, MAC Pigment (£15) is a highly concentrated loose colour powder that contains ingredients to help it adhere to the skin. Use to create a subtle wash of colour or an intense effect. Pigment does not streak or cake, is easy to blend and long-lasting. Now for the icing on the cake, of course no 50s look would be complete without liquid liner. It’s important to opt for a smudge-proof product to ensure your look has true staying power. A brilliant product is Eye Defining Liquid Liner (£11). It’s a quick-drying, gel eyeliner which delivers a full coverage, dramatic line in one stroke; an ultracomfortable, luxurious easy-to-apply lightweight eyeliner that won't smudge or budge. The liner should be applied along the top lash line and flicked out at the ends, or for a real urban twist try two flicks at the end, almost like a fish tail. For topping off any glamorous look, you cannot go wrong with false lashes! I’m not suggesting we all walk around looking like Katie Price (although I possibly would); even the most subtle of lashes can make the biggest impression.

Designed to be used dry, the powder and pigments create a matt, velvety texture, and it’s available in a shade to suit every skintone. Opt for a soft muted eyeshadow. For mature skin I would definitely go for a matt texture; it is more forgiving and helps to hide any unwanted creases. For those of you who are not afraid of a bit of shimmer, get festive and go metallic with Barry M Dazzle dust, only £4.50, which won’t break the bank.

FUNK IT UP This look sees the introduction of the smoky eye with a truly modern edge. When you have completed my step-by-step guide, complete the look with a sleek updo…Christmas perfect.

Compliment this look using a pink tone blusher and a neutral lip. BIG ON COLOUR For those of you ladies determined to leave a lasting impression and stand out in a crowd, it’s time to embrace those vibrant shades – yes, even in winter. I’m not suggesting you look like a rainbow, but an injection of colour is just what the doctor ordered. My first choice of colour, and great to compliment any eyecolour is purple. I hear you thinking, ‘I’ll look as though I’ve been punched.’ Well, not anymore. If you follow my guide makeup faux pas will be a distant memory. The trick is to apply little and often, never overload your brush and always tap off any excess before applying the shadow. The reason for me suggesting purple is that it’s a great shade for all ages, and makes the whites of the eyes appear whiter and brighter. The illusion of more awake eyes is apparent, and ideal after a few Christmassy nights out.

FROM THE SUPERB GOLF COURSE, LUXURY SPA AND NEW HEALTH CLUB, TO ACTIVITY BREAKS – THE LONDON BEACH COUNTRY HOTEL HAS SOMETHING FOR EVERYONE. I visited the London Beach for a one night spa break and quickly realised that this hotel also had a lot more to offer. The first realisation came as I entered my room and was immediately struck by an epic panoramic view of the golf course through glass doors spanning the width of the

spacious bedroom opening out onto the balcony. After sitting out on the balcony and taking in the view for a while, I was tempted to take advantage of the professional golf lessons available but the lure of the luxurious spa and pampering treatments was too overwhelming. Although the hotel has a thriving golf club and clearly many of the guests were here to take advantage of the beautiful course, the spa is

more than just a secondary activity to make use of between rounds and is absolutely worth a visit in its own right. After enjoying a delicious light lunch and smoothie in the Juice Bar I started with a swim in the infinity swimming pool and then pounded away some tension with the powerful massage jets before relaxing on the loungers below the waterline in the hydrotherapy pool. The health club has been open for almost a year and everything still feels brand new and thoroughly modern and has clearly been designed with luxury in mind; from the state of the art facilities in the spa and gym to the changing rooms complete with GHD straighteners. After another hour or so unwinding to the relaxing music in the beautiful ladies-only area making use of the sauna, steam room and Jacuzzi, it was time to drag myself away for my treatment; a back, neck and shoulder massage followed by Dry Floatation. The professional spa has an extensive choice of treatments on offer provided by expert therapists. Treatments are available to be booked by all and not just hotel and spa guests and after a lovely massage I will definitely be back to try and experience as many of the tempting treatments as possible. The Dry Floatation is a bath with a gentle floating sensation (but without having to get wet) and was a new experience for me. As I lay in the

warm candle lit room relaxed from my massage I did wonder what added benefit I would gain from laying on the floatation bed, but almost as soon as I had this thought I was awoken by the sensation of the bed rising from the water. I realised I had fallen quickly into a relatively deep sleep considering I had been there for only half an hour! I felt it had definitely enhanced the relaxation after the massage and was a nice addition after my treatment. After a thoroughly enjoyable spa day I was treated to an equally enjoyable meal of seasonal Marrow soup, Sea Bass and Sorbet washed down with excellent local wine from the Tenterden Chapel Down Vineyard. Cooking is no longer just about impressing people with extravagant dishes, it is about how each individual person eats and relates to food. His tireless campaigns for a healthier mode of eating evoke the seasonal wish for goodwill to all mankind; Jamie Oliver, whether training troubled youngsters to be chefs or campaigning for decent school dinners, shows compassion the whole year round, not just for Christmas. Brought up in Clavering, Essex in his parent’s pub, The Cricketers, Oliver developed a passion for cookery from an early age. As a young boy, he could already chop with the best of the regular workers in the restaurant. Although dismissed as a ‘girlie thing’ by the other boys at school, he already knew that cooking was his future. After travelling to France and studying different food cultures, he joined the acclaimed Rive Café, a move that would ultimately propel him to national fame. After appearing in a documentary about the restaurant, Oliver was offered his own television show and The Naked Chef was born. The title refers to the simplicity of his ingredients, stripping food down to its bare essentials. Unlike other chefs, he understood that a family dinner did not have to resemble haute cuisine; his hands-on style meant it could be about handfuls and glugs. His enthusiasm for healthy, easy to prepare food was a breath of fresh air, inspiring people to actually enjoy cooking. Oliver’s philanthropic nature was first seen with the launch of Jamie's Kitchen, his second television series. In the documentary, he mentored and trained unemployed youths to be professional chefs to help staff his first restaurant. The outcome of the project was the award-winning Fifteen, Oliver’s celebrated restaurant, named after his first fifteen students. Fifteen has become a global social enterprise with young people firmly at its heart. With restaurants worldwide – all of which operate a pioneering apprenticeship scheme for young people between the ages of 18 and 24 – Oliver’s first humanitarian project is still a great success. To provide the funding for the enterprise, he created The Jamie Oliver Foundation with a mission to educate and empower as many people as possible to love and enjoy good food. He doesn’t want to stop at teaching people how to cook, he wants people to understand where food comes from and recognise the power it holds within a lifestyle. With Fifteen, Oliver inspired disadvantaged young people and made them believe that they too could create great careers for themselves within the restaurant industry. Moreover, shortly after Fifteen’s launch, he was awarded an MBE for his contribution to the hospitality industry. The idea of making a difference in young people’s lives one at a time inspired him to dream big – why should he stop at just fifteen people? This idea launched his next charitable project, Jamie's School Dinners. Motivated by the poor state of school dinners in UK schools, this fourpart series documented Oliver as he took responsibility of running the kitchen at Kidbrooke School, Greenwich. It introduced Oliver’s ‘Feed Me Better’ campaign, designed to change the poor eating habits of children and improve school meal systems. The campaign was directly responsible for the British government's pledge of 280 million pounds (over 3 years) to improve

school dinners for the children. For most people this accomplishment would have been enough, but for Jamie Oliver, it was only the beginning. Subsequently, he turned his altruistic attentions to chicken farming conditions. Jamie’s Fowl Dinners was an in-depth exploration of the British poultry industry, advising consumers to trade up to a higher welfare chicken or egg. Oliver received praise from farmers for his efforts, which resulted in an increase in sales of freerange and organic chicken of up to 50%. He went on to examine pig welfare in Jamie Saves Our Bacon, highlighting the need to champion British pig farmers and informing the nation of where our food really comes from. Oliver then went on to launch 2008’s Ministry of Food, which showed how people who couldn’t cook could be inspired to cook with just a little encouragement and information. It was a winning formula for him because, as he remarked at the time, “With some basic skills under your belt and a handful of recipes, you’ll be able to prepare nutritious meals on any budget, and there’s nothing like sitting around a table to bring people together.” Since 2008, a Ministry of Food Centre set up in Rotherham town centre has been providing

information, cooking lessons and advice to the townsfolk who want to move away from takeaways. The centre is now so successful that its classes are booked many weeks in advance. A second Ministry Centre opened in Bradford in November 2009 and a third in Leeds in April 2010. The operation is part of a national effort to halt Britain's growing obesity problem. It has recently emerged, however, that central government funding for the project is potentially under threat. Rotherham council is fully behind the centre and is looking at ways to raise revenue including corporate sponsorship. Jamie Oliver recently spoke out in support of the centre, saying, "It’s abundantly clear that this is one of the few strategies that is actually working that helps people overcome their problems with food." He is hoping that the government sees how successful the Ministry of Food Centre has been; the venture has classes for January and February already booked. In 2009, Oliver started his first major network series for American television. Jamie Oliver’s Food Revolution sought to tackle the problem of obesity in America. Obesity now affects nearly one in five children and increases the risk of heart disease and diabetes. Moreover, this is the first www.insidekentmagazine.co.uk

The problem stems from the eating habits that parents are teaching their young children. When asked to explain or define the Food Revolution, Oliver stated, “My Food Revolution is about bringing people together who care about the future of their children, about their right to good health and a proper diet. I know there are millions of people across America who care about these things and I’ve seen how, with a little confidence and basic knowledge, people quickly change the way they eat.” Jamie Oliver’s passion for healthy eating is clear; to look into his eyes as he talks about processed and fatty foods is almost like seeing actual physical pain. Switching from processed foods to fresh foods can make you feel better in your body and add years to your life. For him, if we rely too heavily on processed foods, “we’re poisoning our future and we don’t even take the time to stop and realise it.” In Jamie’s School Dinners, for example, he encountered a woman giving cola to her baby in a bottle. As a mother, she would have been responsible for that child’s nutritional intake. Examples such as this one consolidate how important Oliver’s schemes really are. For Jamie Oliver, there is yet another new job in his horizon called Jamie’s Home Cooking Skills, where he will continue teaching the next generation about health and what they are eating. He is adamant about his hopes for this generation of young people; providing young people with cooking skills will help them make more informed decisions about what to eat, which, in turn, will help to combat the burgeoning problem of obesity. Favourably, as of this school year, the government has made cooking lessons mandatory for all students in British secondary schools. Home Cooking Skills aims to give every young person the basic skills to be able to feed themselves in a healthy, cost-effective way for the rest of their lives, and the confidence to share these skills with friends and family. In conjunction with Pearson Education and Edexcel, Jamie Oliver has developed a BTEC course for Secondary schools in the UK. This autumn will also see the launch of 30 Minute Meals, a book and TV series that aims to help people become more efficient cooks. Quite simply, he will prove that you can cook an amazing meal incredibly quickly. The programme is perfect for beginners; Oliver eases people into cooking from scratch instead of plunging them in at the deep end with elaborate cooking terms and difficult ingredients. His Ministry of Food website is another great resource for cookery novices, offering simple step-by-step recipes, video demonstrations and advice on store cupboard ingredients and key pieces of equipment. If that isn’t enough, Oliver also has a regular column in the Saturday Times Magazine, is a monthly editor of Marie Claire (UK), and is the food editor for Britain's GQ Magazine. His chain of high street restaurants, aptly named Jamie’s Italian, have also proven to be firm favourites. Launched in 2008, he drew upon his experiences in Jamie’s Great Italian Escape, a

series based on his travels around Italy and his love of Italian food. The accompanying book, Jamie’s Italy, went straight in at number one and sold more copies in the week before Christmas than any other non-fiction book has ever done. Indeed, Oliver’s cookbooks are bestsellers not only in the UK but across the world. His latest cookbook, Ministry of Food, shows just how popular he is; it reached sales of £11.5m last year, making him officially Britain’s bestselling author. In addition to his television programmes and books, for the past 10 years he has worked with Sainsbury’s, advising them on how to further improve product quality. Oliver has faced charges of hypocrisy in the past for his union with a supermarket chain that stocks the very processed meals that he tells the public not to eat. He answers his critics by pointing out that Sainsbury’s stocks the nation, so he reaches people from a larger platform. Furthermore, he has a healthy attitude to food that encompasses the occasional processed meal as part of a varied and healthy diet, “We just need to rediscover our common sense: if you want to curl up and eat macaroni and cheese every once in a while – that's alright!” For Jamie Oliver, cooking is all about family. He and his wife Jools were childhood sweethearts, and family life with their four children provides the narrative backdrop to many of his programmes and books. Cooking is integral to a happy family unit, as Oliver states, “A small change in your kitchen in could save the life of someone you love.” He trusts every word he says and he has sacrificed time and energy that could have been spent with his family to push the projects he believes in. When asked about his hectic schedule he admits, “It's a complete whirlwind - and the only thing I wish I had more time for is my family - I really look forward to Friday nights when we can pack up and spend the weekends together. That's what it's all about!” For Oliver, cooking is not a profession. It is not a nine to five job that just pays his bills or helps him write new books. Cooking is a gift, a tool that he uses to give families a new way of life. Anyone that watches him cook or listens to his hopes for a better future can feel his passion. The saying ‘you are what you eat’ is true in every way and he knows this firsthand. Roasted HYTHE COD with Creamed Leeks, Mussels and Saffron Sauce

• Refresh in ice-cold water and reserve for later use. • In a pan reduce cream until thick. • To reheat add the leeks, garlic puree and a spoon or so of cream (enough but not too runny) in a pan.

• Clean the mussels well and remove the barb. • Melt the butter in a large stainless steel saucepan; add the onions and sweat well for 5 minutes, no colour. • Add the peppercorns, parsley stalks, tarragon stalks, thyme and bay leaf. Sweat for a further 5 minutes and then add the white wine. • Bring to the boil and add the mussels. • Place a lid over them and stir from time to time. Once they are cooked, pass off through a colander with a bowl underneath to reserve the juices. • Allow to cool and then separate the mussels from their shells. Remove the dirt pocket and put them back in the cooled cooking juices. • Put the mussels in a little bit of saffron sauce to reheat.

Leek Fondue

Leeks Garlic Puree Double Cream Seasoning Salt & Pepper

• Cut the white part of the leek into small squares and wash under water. • Boil a pan of water adding 20g of salt per 1 litre of water. • When water is boiling, add the square leeks and cook for about 3-4 minute (until soft but still a little bit crunchy).

• Blanch the tomatoes for 10 seconds, refresh in ice water and then peel them. Cut the top off a third of the way down then scoop out the seeds using a small spoon. Reserve this for stuffing. • With the remaining 2/3 of the tomato, cut in half and squeeze out the seeds. • Using a thick-bottomed copper pan, sweat the onions and garlic with the olive oil until soft, no colour. • Now add the thyme and then the tomatoes. Season lightly and then stir together. • Place into the oven for 10 minutes, and then stir again. Replace back into the oven for 10 more minutes and repeat until the tomatoes are dry. Leave to cool and then stuff the tops with the fondue, place on a baking tray and brush with olive oil and seasoning. • Place into the oven @ 160ºC for 10 minutes. Remove and leave to go cold. Wrap and shape into balls in cling film and reserve for later use. • When time, simply remove from the cling film and reheat back through the oven.

Saffron Sauce

To serve: • Preheat oven on 180-200ºC • In a non-stick tray put a drizzle of olive oil just to cover the bottom; place in oven to heat. • Season your cod well skin side, and dip in flour (tapping the excess). • When tray is hot enough, put your cod skin size down then back in oven for 4 minutes. • Turn cod flesh down for another 3-4 minutes back in the oven. It may need few minutes more depending on the thickness of the fish. • At the same time place your leek on a plate, quenelles of tomatoes fondue, spread around the mussels, put the cod onto the leeks, sauce over all and serve.


Layered PANNA COTTA Cinnamon Panna Cotta Double Cream Milk Sugar Crushed Cinnamon Sticks Powdered Cinnamon Vanilla Pod Gelatine

600ml 150ml 100g 2 whole 1tsp 1 whole, scraped 7g

• Place the milk, cream, scraped vanilla pods, cinnamon stick, cinnamon powder and sugar into a pan and bring to the boil. • Soften the gelatine in cold water. • When the gelatine is soft, squeeze out excess water and add to boiled mix. • Stir in gelatine until dissolved, then pass mix through fine chinos. • Divide mix evenly into glasses. • Place into the fridge and allow to set.

• Place the butter in a stainless steel saucepan and start to melt. Add the apples, sugar and scraped vanilla pod and pod itself. • Cook the apple to a compote stirring from time to time. If the texture is too runny then leave to reduce down until you arrive at a thick texture. • Remove the vanilla pod, scraping again, and place the apple compote into a blender; blend to a fine pulp and pass through a fine chinos. • Place into a container and reserve for later use.

Important: This must be made a day in advance and left to infuse with the vanilla pod in to mature in flavour. • Place the milk, double cream and vanilla pod into a saucepan and bring to the boil. • Cream together the egg yolks and sugar, add some of the milk and whisk until smooth. • Add the remaining milk and pour back into the saucepan and cook to 85°C stirring continuously. • Pass through a chinos and leave to cool with the vanilla pod placed back in.

Jean-Marc Zanetti has been appointed by Michael Caines to be the Executive Chef at the Michael Caines Restaurant at ABode Canterbury. Zanetti replaces Mark Rossi, who has been the Executive Chef since ABode Canterbury was launched in 2006. Before joining Caines at Gidleigh Park in 1994, Zanetti worked in several Michelin star restaurants in Burgundy and the south of France. Zanetti was given the opportunity to open the first Michael Caines restaurant in Exeter in 1999 as the head chef, where it was an immediate success and achieved many accolades. After working for over 10 years with Michael Caines, Zanetti decided to go and work with John Burton-Race at the New Angel in Dartmouth. After working here he went to work at the Hengist Restaurant in Aylesford, where he worked alongside TV chef Richard Phillips for three years. Zanetti said, "I was looking for a new challenge when Michael offered me the opportunity and I could not resist being a part of this exciting new venture between Michael Caines and Andrew Brownsword. A DAY AT THE VINEYARD WORDS AND PICTURES BY LUKE YATES

THERE IS ALWAYS SOMETHING VERY OPEN, HONEST AND REASSURING WHEN YOU GO TO A RESTAURANT AND SEE THE FOOD YOU HAVE ORDERED BEING COOKED BEFORE YOUR VERY EYES. THE SAME PHILOSOPHY APPLIES TO BIDDENDEN VINEYARDS, WHICH HAS VERY MUCH AN ‘OPEN HOUSE’ POLICY, WHERE YOU GET TO SEE THE ENTIRE WINE AND CIDER MAKING PROCESS FROM START TO FINISH. The present vineyard was established in 1969 by the same Barnes family who run it now, making it the oldest commercial vineyard in Kent. Back then it spanned a humble third of an acre. At present it covers 22 acres of a 70 acre estate, and comprises of gentle facing southern slopes in a shallow sheltered valley, making it perfect for their grapes. An unfair misconception sometimes held about English wines is that they might somehow not be of the same quality as wines from other parts of the world. This is of course, ridiculous - the weather in the southeast is very good indeed for producing the best grapes, as was apparent to see as we toured the vineyards. Indeed, the grapes used are extremely good quality; mainly of Germanic origin and including familiar names such as Pinot Noir and Dornfelder, and of course the Ortega grapes, which are used to produce Biddenden Vineyards’ multi-awardwinning and most distinctive wine. As you walk around the vineyard and associated buildings, you realise that whilst this

is a family-run business, it is nothing other than highly professional. It is clear to see that everything is done properly to the highest standards, not just to make profit, but because the staff at Biddenden Vineyards care about their work and enjoy doing it to the best of their ability. There is a lot of evidence that the owners of the vineyard hold very strong ethical and environmental values, which are reflected in the way they do business. Biddenden Vineyards does not trade with large-scale supermarket chains, preferring instead to support smaller, local businesses by supplying them with their produce. And it seems to work very well for them; Biddenden Vineyards are currently enjoying the most successful year in business since the vineyards opened, and continue to win many awards for their products as well. After a very pleasant tour of the vineyards, it was finally time to taste the fruits of all that hard work. “I have to confess I don’t know the first thing about wine tasting,” I sheepishly admit to Vikki, the head of Biddenden Vineyards’ marketing department. “Oh don’t worry about that - just ENJOY it!” she stated. There is no pretence or snobbery when it comes to their produce; it is there to be enjoyed by all. All of the wines and ciders are of the highest quality - there is no sign of residue or clouding. Obviously I didn’t find every one of them entirely to my personal preference, however none of them were unpleasant in the slightest, and some of them were absolutely delicious. Such is the variety of wines (both single varietal and blended) and ciders produced, that there is almost certainly

something for everyone's taste. Of special interest to me were the ciders, most notably a brand new sparkling cider ‘Monk’s Delight’ - a mulled cider with honey and spices, perfect for warming up those winter nights, especially during the Christmas season. In addition to their wines, it is worth noting that Biddenden Vineyards have also won a number of awards for their ciders, including the coveted CAMRA Cider of the Year award. There is even a non-alcoholic apple juice, again produced to an exceptionally high standard, ideal for the kids, and as Biddenden Vineyards are keen to point out, ‘for the driver’. As well as wines and ciders, the farm shop stocks all sorts of local produce such as jams and chutneys, as well as serving hot drinks, cakes and biscuits. All locally sourced of course. Biddenden Vineyards is open Monday to Saturday from 10am to 5pm, and on Sundays and Bank Holidays from 11am to 5pm. Tours are available for groups by prior arrangement, with free tours on selected Saturdays for individuals. Admission is free, as is the opportunity to taste the wines, but you should make sure you take your purses and wallets as you certainly won’t want to go home empty handed!

As I walked up Aylesford High Street (having never been to Hengist before, or Aylesford for that matter), I was looking for a grand and flashy restaurant jutting out from the other quaint buildings. Because of my expectations, I walked right by, as Hengist rests inconspicuously amongst the rest of the historic architecture.

My guest chose the Poached Sirloin of ’32 Day’ Hung British Beef served with Thyme Pomme Anna, Spring Greens, Creamed Celeriac, Crisp Ox Tongue and Smoked Bacon Cream. Again, the presentation was simply stunning, the beef was flavourful and tender and the accompaniments were perfect.

Upon entering the large lobby, I was instantly impressed by the fusion of modern design with some of the original elements such as the exposed wooden beams next to large chic glass panels.

While at Hengist, you’ll be amazed at the little ‘extras’ you’ll experience, such as a personal visit from the restaurant’s manager and the lovely tasters you’ll receive in between courses. My favourite surprise of the day was our pre-dessert of Lemon and Lime Posette with Raspberry and Blackberry Mousse – both unexpected and delicious.

We were quickly shown to our impeccably set table next to the fireplace and placed our drinks order before perusing the menu. Richard Phillips’ creativity shines through each and every one of his dishes from his interesting taste combinations to his powerful presentations. After placing our orders, we were served canapés of Goats Cheese Puffs with Roasted Beet Root and freshly baked breads. Having enjoyed my prestarters and having been tended to perfectly by the restaurant staff, I was looking forward to my meal ahead. I ordered the Terrine of East Sussex ‘Stonegate’ Goats Cheese for my starter, which was served with Celery, Cox Apple and Walnut Salad, Shallot Cream, Local Asparagus and Walnut Dressing, while my guest chose the Pan Seared Sea Scallops served with Slow Braised Pork, Creamed Cauliflower, Wood Sorrel and Cauliflower Velouté. The presentation of both starters was awe-inspiring, and the tastes and textures were equally spectacular. For my main I enjoyed the most gorgeous Steamed Fillet of Sea Bass served with Salmon and Crab Mousse, Tian of Poached Crayfish, Brown Crab and Tomato Risotto, all smothered in a Vanilla-infused Fish Cream. Who would’ve thought bass and vanilla could be friends? I surely didn’t, but Richard Phillips proved me wrong as the tastes were divine.

For our ‘real’ dessert, my guest and I both chose the Assiette of Chocolate which included Milk Chocolate Tart, Mint Chocolate Fondant (to die for), White Chocolate Sorbet and Crushed Raspberries. Being the chocoholic, sugar-addict, self-professed semi-professional dessert connoisseur that I am, I can say with confidence that this trio of confections was worth every last naughty calorie. Don’t let the inconspicuous exterior fool you; Hengist is a truly memorable experience, from the personal service to the ‘fine art’ cuisine to the interior design. The pure elegance and dining splendour of Hengist is something that will stick with you long after your last bite.

The lunch menu offers something for everyone, with just the right number of starters, mains and desserts to choose from. I started my three courses with Grilled Vegetable & Rosary Goats Cheese Tart with Rocket Pesto. My guests enjoyed the Pork Cheek with Mash & Crackling, and Goods Shed Pastrami with Roasted Tomato Dressing and Gouda. All three starters were big enough to be mains, and were bursting with fresh and local flavours – absolutely delicious.

I stopped by during the week for lunch, and what a lunch it was.

For my main I decided to try the Kentish Ranger Chicken with Wildceps (mushrooms) and Tarragon. The chicken was served in a mouthwatering fragrant sauce with green beans, courgettes and perfect just-like-mama-made‘em roast potatoes. My dining companions chose the Local Wild Bass with Roasted Tomatoes, Anchovies and Garlic, and Wild Boar Sausages with Cider, Apples and Prunes.

Head Chef Rafael Lopez is obviously passionate about his restaurant, and surely knows his food. The open kitchen can be viewed from most tables in the raised restaurant, which overlooks the market below. Rafael and his cooks can be seen working busily (but most definitely having fun) as they whip up original creations throughout the day. The menu changes twice daily, and Rafael never plans his menus ahead. Whatever is delivered in the morning is what Rafael serves, and if it can’t be found in the market, it won’t be cooked. Using his experience and creativity, Rafael creates spectacular dishes on a daily basis which are the description of ‘fresh’.

Even though I was stuffed, I couldn’t possibly pass up dessert (me, pass up dessert?). I went for the Strawberry Tart with Fresh Cream, while my guests had the White Chocolate Mousse with Dark Chocolate Treats, and the Crème Caramel with Apple Sorbet and Shortbread. I managed to eat my entire dessert (it was just too good to waste), and even snuck in a bite of the mousse and crème caramel.

After scraping the last remnants of strawberry tart from my plate, we enjoyed a creamy latte before having a stroll through the market below. During the whole of the two hours I visited The Goods Shed, there was a constant stream of diners, making me realise just how popular the restaurant is, and also realise I seem to have been left out of the loop. Why didn’t anybody tell me about this place sooner? Well, now you know. You have no excuse. You are enlightened. The Goods Shed is no longer a mystery to you; time to plan a visit for one of the best meals in Canterbury.

HAVING BEEN FAMILIAR WITH THE CANTERBURY AREA FOR MANY YEARS, I HAVE BEEN FORTUNATE ENOUGH TO SAMPLE SOME OF THE CITY’S RESTAURANT GEMS. LOCATED OPPOSITE THE KING’S SCHOOL, OSTERIA POSILLIPO PIZZERIA IS A LIVELY RESTAURANT SUITABLE FOR ALL MANNER OF DINING EXPERIENCES, BE IT A CASUAL GET-TOGETHER WITH FRIENDS OR A DINNER DATE. POSILLIPO’S IS A REAL CORNER OF ITALY IN THE HEART OF CANTERBURY AND, DURING MY STUDENT DAYS, WHENEVER I WAS IN NEED OF SOME HEARTY ITALIAN FOOD, THIS WOULD BE MY FIRST STOP. With another Posillipo’s in Broadstairs, with views of the beautiful Viking Bay, the company has gone from strength to strength. Summer 2010 saw the launch of another extension to the franchise, a Posillipo’s restaurant in Faversham. When I heard the good news that owner Enzo was to open his third restaurant down by the creek in Faversham, I was delighted that the old mill building was going to be brought back to life again in true Posillipo fashion, shipping over only the best in Italian furniture and flooring. We were greeted by a warm welcome and were taken to our table, taking in the stylish decor on the way. The waitress soon brought over the specials board for us to view, alongside some warm ciabatta rolls and rosemary bread sticks, classically accompanied by balsamic vinegar and olive oil. As a starter we ordered the Hand Stretched Pizza Bread, Focaccie Acciughe with Anchovies, Olives and Garlic. Some fresh mixed olives also got the ball rolling. Being coastally situated, the menu is full of locally sourced seafood dishes – something Italians are renowned for. I opted for the Deep Fried Calamari which arrived with Baby Squid, Rocket and Herb Mayonnaise, all which I thoroughly enjoyed. From the specials board arrived the Chunky Scallops wrapped in Parma Ham in a creamy Brandy Sauce; this comes highly recommended by two of my guests. Fresh Mussels in a White Wine sauce completed our selection of starters, all of which were filling and perfectly cooked. The mains menu boasts an impressive eighteen pastas dishes including the delicious Pennette Aumm Aumm, with fresh salmon and parsley in a creamy brandy sauce. Other authentic Italian dishes include Risotto and of course, Pizza. All pizzas are cooked in the traditional wood-fired stone

oven and the open plan dining area means that you can actually watch your pizza cook. The Capricciosa was an instant favourite amongst my guests, with egg, ham, mushroom, salami, olives and mozzarella coming together beautifully with the rich tomato base. One of my guests ordered the Zuppa di Pesce, a big bowl of mixed seafood and shellfish in a white wine and cherry tomato sauce, which looked and tasted fabulous. A side of sautéed spinach with garlic and chillies was also passed round the table and quickly demolished. From the dessert board we chose the decadent Hot Chocolate Fondant, the creamy but not over-powering Tiramisu, fresh Lemon Sorbet and a glass of the Sigillo 2005 dessert wine. The wine menu hosts a range of rare Italian wines of special vintage, an added extra for any wine connoisseur. All in all, Posillipo’s is a great choice for a meal out, with superb food and friendly service, all at a great price. The restaurant is open from noon until 10.30pm, 7 days a week.

Taste of Kent Awards is the brainchild of Produced in Kent, the organisation which champions Kent’s home grown food and drink companies in the county. With twelve categories in the 2010 competition, the general public has the chance to select its ‘dozen dazzlers’ by placing their votes online (www.tasteofkentawards.co.uk) before the deadline of Monday 3 January 2011. The three companies receiving the most votes from the public, in each category, will be shortlisted and go before an expert judging panel, mystery shoppers and mystery diners in January 2011 and on 25 February 2011, the final 12 winners will be revealed at a glittering awards ceremony at Leeds Castle. Last year’s Taste of Kent Awards clearly struck a chord with the voting public as all previous voting records were smashed, with votes topping the 10,000 mark. Julie Monkman, manager at Produced in Kent, said, “The 2009 competition clearly hit the right flavour with the general public as voting leapt to over 10,000 votes, smashing all previous records! We saw an incredible 89 per cent increase in votes from the general public and consumers nominated over 680 food and drink businesses and products in the county.

Other double winners included The Mulberry Tree in Boughton Monchelsea which picked up ‘Best Kent Restaurant of the Year’ in both 2008 and 2009 and Shipbourne Farmers’ Market who picked up ‘Kent Farmers’ Market of the Year’ 2009 for the second time.

In an exciting evolution for the 2010 competition, six of the categories have been re-branded to reflect the exciting developments in food and drink retailing, production and dining out. The six new categories include ‘Kent Meat Retailer of the Year’, ‘Best Kentish Brewery of the Year’, ‘Best Kentish Vineyard of the Year’, ‘Best Kentish Cider Maker of the Year’, ‘Kent Artisan Food Producer of the Year’ and ‘Kent Dining Pub of the Year’.

“It’s tremendously heartening to know that in the first round of voting it is the general public who are giving you a big vote of confidence and directly applauding what you are doing. The awards have brought us additional publicity and new customers – many of which have become our long term, loyal diners,” she explained. “We are passionate about serving creative and uncomplicated food that uses local and seasonal ingredients and are so committed to the local cause that we even rear our own pigs in the orchards alongside the restaurant. After the many long hours that we have put into making The Mulberry Tree a success, it was an elation to attend the prestigious awards ceremony at Leeds Castle and be crowned ‘Kent Restaurant of the Year’ for two consecutive years. It was very much the icing on the cake!”

These new arrivals join established favourites including ‘Kent Juice Producer of the Year’, ‘Kent Local Food Retailer of the Year’, ‘Kent Seafood Retailer of the Year’, ‘Kent Food Product of the Year’ and ‘Kent Restaurant of the Year’. Julie Monkman, added, “The huge swell in voting last year is a clear indication that the county has taken the Taste of Kent Awards to their hearts. The awards have become the ultimate accolade of excellence for the companies who win them.”

For four of the award winners in 2009, there were double wins with Biddenden Vineyards picking up both ‘Best Kentish Wine of the Year’ 2009 for its already multi-award winning Biddenden Ortega 2008 and ‘Best Kentish Cider or Perry of the Year’ 2009; whilst Gadds’ No 3 from Ramsgate Brewery won ‘Best Kentish Beer of the Year’ 2009 for the second consecutive year.

Hollingbourne’s heritage trail offers a choice of two routes where walkers can enjoy a leisurely 6 mile stroll (9.6km), or the keen rambler can rise to an 8 mile challenge (12.8km). The shorter route travels west, past the ancient manor of Ripple and back along the Pilgrim’s Way, while the longer main trail takes you out to Eyhorne Street, across the downs and back through the village. Both routes start and finish at Hollingbourne train station so why not go green and leave the car at home?

Those taking the 8 mile central route will leave Hollingbourne and encounter the hamlet of Eyhorne Street. You may find it hard to believe but this quaint sleepy village has an industrial past. At the heart of its industry were the watermills that were once scattered along the Bourne stream. Grove Mill was built on a site that was thought to have been the location of various mills from the 1760’s onwards. Grove was initially a paper mill but due to economic fortunes was recorded as milling corn by 1865, before going back to paper making for a spell and then finally meeting its demise and being demolished in the 19th century. The main route ambles forward and takes you up onto the downs, passing through ancient woodlands and revealing more of the county’s hidden history. As you walk, you will pass close to a field that houses a large pit known as Jack Cade’s hole. Local legend has it that this was a hiding place for a Kent rebel, the eponymous leader of ‘Cade’s Rebellion’, an uprising that

took place in 1450. In fact, it looks as if the county had quite a tradition for notorious rebels; the famous peasants’ uprising, led by Wat Tyler in 1381, had many key ringleaders that hailed from Kent! Another en route attraction is Hollingbourne Manor House, an impressive and well-preserved grade I listed building. Dating from around 1570, the Manor has undergone many changes; the original design, for example, would have been an E-shape, but the north-east wing was destroyed in a fire leaving the L-shaped building that can be seen today. Local legend has it that Henry VIII’s fifth wife Catherine Howard once came to the manor, and now haunts it. There are however other conflicting tales of her ghostly goings-on at Eyhorne Manor and Greenway Court. LOCAL ATTRACTIONS If you are planning on taking the short route why not spend some time after your walk in the local area. There are some wonderful pubs and inns just waiting to accommodate hungry walkers in need of refuelling.

Hollingbourne is also in close proximity to some other great Kent attractions including Leeds Castle. With 500 acres of beautiful parkland, the castle is set on two islands on the River Len and has been home to royalty, lords and ladies for almost 900 years. Open all year round, its special blend of heritage and history, glorious gardens and programme of special events, make it the perfect choice for a day out. Within five miles: • The Bredgar and Wormshill Light Railway - a delightful 2 foot gauge line tucked away near the village of Bredgar, in a richly wooded area of the North Kent Downs. • The Ringlestone Inn – A "Truly traditional family welcome" is really what awaits you as you step back in time to the unspoilt, medieval, lamplit tavern.

TO SOME, ARRIVING IN CANTERBURY AT RUSH HOUR ON A FRIDAY EVENING MIGHT NOT SEEM TO BE THE MOST CONDUCIVE WAY TO START A RELAXING WEEKEND. AS YOU ENTER THE MAGNIFICENT ANCIENT CITY SURROUNDED BY ROMAN WALLS, YOU ARE SUDDENLY VERY AWARE THAT THE ENTIRE POPULATION IS TRYING TO GET HOME. BUT THEN JUST AS I WAS GETTING READY TO SCREAM AT TRAFFIC SIGNALS, OTHER MOTORISTS AND MY SAT-NAV (ALL AT ONCE) I ENTERED INTO A DIFFERENT WORLD ALTOGETHER. TURNING INTO ST DUNSTAN’S TERRACE, IT SUDDENLY WENT QUIET, EVEN SERENE. AND THERE, LOOKING UNDERSTATED BUT ELEGANT, EVERY BIT A PICTURE OF REST AND RELAXATION STOOD MAGNOLIA HOUSE. Built circa 1830, Magnolia House is a Late Georgian home, situated about 10 minutes walk from the centre of Canterbury. From the outside it is instantly classy, but when you get inside, it is even more impressive to behold. Exuding authenticity, it is decorated with furnishings and fittings in keeping with its age, beautiful ornate lighting and mirrors, and eye-catching details, such as vintage local maps and photos.

Having been greeted by owner Isobelle Leggett, I was shown warmly into the guest room, and within no time at all, a pot of tea and a tray of biscuits had appeared as if by magic next to the carved ornate chess set. Isobelle was happy to chat, showed genuine friendliness and an interest in my stay, and even offered to book a restaurant table for me.

Almost reluctant to leave the luxury and comfort of my room, I ventured out into the city. Sure enough, as promised by the advertising material, I found myself in the heart of Canterbury within a few minutes.

Having returned to my room, there followed what can only be described as a perfect night’s sleep, and I awoke the next morning feeling totally refreshed, and more than ready to sample the legendary Magnolia House breakfast experience! Whilst the dining room was every bit as classy and stylish in layout, breakfast was an experience very much removed from the stuffy, silent affairs of some B&Bs found in big cities. Isobelle

appeared from time to time carrying huge trays of delicious food (all locally sourced), and taking moments to keep the conversation, as well as the coffee, flowing nicely. I am sorry to say that, I now realise that I have never stayed in a really good B&B before, and as a result, I don’t think I really understood the ethos of what a B&B exists for. Proving itself entirely deserving of its five-star status, Magnolia House righted that wrong by providing a great place to stay for a good night’s rest, a fantastic breakfast, but above all else, a place that made me feel genuinely welcome, and that felt like a home from home, for which the credit must go to the lovely hospitality, friendliness and generosity of owner Isobelle.

Busy routines and hectic schedules can feel even harder in the colder months as energy levels take a dip and I for one definitely feel the need to take a little time to recharge and reenergise; but it can be hard to find that time for some all important rest and relaxation.

I arrived for my one-night stay on a cold and wet late Sunday afternoon, but on opening the front door to the manor I was greeted with a roaring fire and the buzz of conversation with afternoon tea – the perfect antidote to the winter gloom outside.

With the beautiful and historic surroundings at Eastwell Manor you feel like you have taken a step back in time to an era where the pace of life was far less hectic and stressful. And Eastwell Manor is on our doorstep, set within 62 acres of gardens at the foot of the North Downs in the heart of Kent; so finding time for a short luxury break needn’t seem like an impossible or expensive task.

I made my way up the wide, sweeping staircase to my room for the night. The room was spacious, traditionally decorated with a beautiful four-poster bed, but the real wow factor was the view. Even on a miserable Sunday afternoon I would have been content to sit in front of the window enjoying the view across the formal gardens and reading a good book with some afternoon tea. The peacefulness, scenery and sense of history that comes with the atmosphere of an old manor house were already having a relaxing affect.

The Pavilion Spa is open until 7pm so I still had a couple of hours to make the most of the heated swimming pool, hydrotherapy pool with fantastic massage jets, Jacuzzi, sauna and steam rooms. The facilities are available for the whole of the following day even after you have checked out, so after a relaxing evening in the manor house why not head back to the Pavilion Spa for a spa day and book in for some treatments at the Dreams beauty salon. Or if a round of golf is more your idea of relaxation then complimentary use of the golf course is also included. Feeling refreshed from the spa, my guest and I headed to the bar for some pre-dinner drinks and canapés. Chatting by the open fire, I was surprised just how quickly I was beginning to unwind. To-do lists, daily chores, work and family commitments were already at the back of my mind as we decided what to order from the Manor Restaurant menu.

The menu was very appealing and we took some time to make our choices but settled on delicious starters of Sesame Coated Scallops and Smoked Salmon with traditional accompaniments, followed by the Wing Rib of Scottish Beef for two. Served with pont-neuf potatoes, mushrooms, tomatoes, watercress salad and béarnaise sauce, we were glad we were hungry! Cooked medium rare, the beef was a real treat and drew some envious looks from fellow diners as it was carved at our table. After an extremely enjoyable meal we found a cosy spot near one of the open fires for coffee quickly followed by dozing off in front of the fire. Heading up to bed, the four-poster didn’t disappoint and I enjoyed a very deep and restful sleep, waking up to the sun breaking through the clouds across that wonderful view. Energy levels renewed, I headed down to breakfast ready for the busy week ahead.

WHEN IT COMES TO SHORT BREAKS, WHY NOT THINK OUTSIDE THE BOX? RATHER THAN BOOK AN ALL-TOO-COMMON LAST MINUTE DEAL AND SETTLE FOR A COOKIE-CUTTER HOLIDAY, HAVE A LOOK INTO SOMETHING A LITTLE BIT DIFFERENT, A LITTLE BIT SPECIAL. IF COMFORT AND LUXURY AND SOFT, CUSHY COSINESS FUSED WITH JUST THE RIGHT AMOUNT OF HOME-COOKED HOSPITALITY SOUNDS LIKE HEAVEN TO YOU, A HOLIDAY AT THE OLD RECTORY NORTH, WORCESTER MAY BE JUST WHAT THE DOCTOR ORDERED. Mini bars, all-you-can-eat buffets and branded toiletries have nothing on a luxury self-catering holiday at The Old Rectory. Don’t get me wrong; I love hotels. I like rummaging through the mini bar and ordering room service. What I don’t like is trying to block out the noise of my neighbour’s TV at 3am, having nowhere private to go for some fresh air, or wishing my room had a big comfy chair to curl up in with a great novel. My visit to The Old Rectory in the Cotswolds left me wishing for nothing and offered more than I ever expected. Just under three hours from Maidstone, The Old Rectory in Lower Strensham is conveniently located just 10 minutes from the nearby towns of Pershore, Tewkesbury and Upton-upon Servern, and only 15 minutes from

Worcester and the spa town of Cheltenham – giving guests plenty of options for days out, dining and entertainment. Though it shouldn’t have taken more than three hours to reach The Old Rectory, it took us 4 ? after a major detour because of a motorway closure. To make things even more miserable, it was pouring. Needless to say, we were relieved when we pulled into the long private drive, and our annoyance and misery melted away quickly once we saw the spectacular setting we were to be staying at for the weekend.


The accommodation itself – The Old Rectory North – is a wing of a 500-year-old grade II historic Elizabethan rectory. Sitting magnificently on a hill above the River Avon, the house is beyond beautiful with its striking character, incredible privacy and boasts every amenity you could ask for. The Old Rectory offers self-catering accommodation – in other words, consider it a home from home. No on-site restaurants or latenight hotel entertainment, no full English breakfasts between 8.30 and 10am – just a fantastic homelike atmosphere offering incredible privacy and unsurpassed relaxation. The south wing of The Old Rectory is lived in by the venue’s owners, Peter and Rosemary, who showed us around our ‘home-from-home’ and made us feel instantly welcome. I can’t deny – they were the perfect hosts. Peter and Rosemary have perfected the balance of giving guests just the right amount of privacy, but being there when needed. The ground floor of The Old Rectory North included a large main living area with two oversized sofas, a big-screen TV and a cosy fireplace – the ideal place to snuggle down after a long drive in the rain. There was also a ‘snug’ room – another living area with comfortable seating, games and books. The kitchen was fully equipped with all the pots, pans, dishes and utensils you’d ever need, as well as a full-size washer, dishwasher, fridge/freezer and many ‘necessities’ you’d never find in a hotel such as salt and pepper, ketchup and something I can’t normally live without: kitchen roll. We were surprised to find our hosts had left some wonderful goodies for us, including six fresh eggs (laid by their own chickens that morning), juicy strawberries, local freshly-baked granary bread, some large tea cakes, tea, coffee and even a box of chocolate sweets. To our even greater surprise, they had left a fresh pint of milk in the fridge – teas all around!

The kitchen had a breakfast table which seats 3-5, and there is also a separate formal dining room with double patio doors opening up to one of the best features of The Old Rectory: the view. No words will do the view justice, so let’s just say it was fantastically, stupendously spectacular. As I mentioned, The Old Rectory sits high on a hill above the River Avon, so the view sprawls past the river, through flowing green fields and to the rolling Cotswold hills beyond. The first floor of The Old Rectory North boasts three bedrooms, a mezzanine which looks down onto the main living area below, a family bathroom, and more wardrobe space than you’d ever need. Two of the bedrooms have gorgeous 4-poster beds, and the third has two singles – perfect for the kids. After unloading our bags into our rooms, we caught a few minutes of dry weather on our private patio with a hot cup of tea, and ventured out into our massive private garden to enjoy the view. Sorry hotels, this self-catering holiday thing was really winning me over. We travelled a quick 10 minutes into Teweksbury for a lovely pub dinner before settling down for the evening. Peter and Rosemary have organised an extensive DVD library with hundreds of titles, of which they leave a full list for guests to choose from. A quick text to Peter and he dropped by with our DVDs. We snuggled into the cosy sofas with our bags of crisps for an exquisitely relaxing night.

The Narnia II is a fully equipped, modern yet traditional narrow boat, offering guests the opportunity to take in the scenery, stop off at some of the nearby river towns, or even try your hand at steering and operating a lock gate. Peter provided exceptional company and hospitality, with hot tea and snacks served while we enjoyed the conversation and countryside. Later in the afternoon, we explored a bit of the local area including nearby Defford Farm Shop, filled with local produce, meats and goodies. We picked up some fresh sausages and bacon for the next morning’s meal and spent the rest of the day driving through the countryside, stopping at local pubs and generally enjoying our relaxing break. In the evening we booked out a few more DVDs and played some board games on the mezzanine – the perfect last night to our stay. The next morning, we woke up to the sun streaming in the windows and the sounds of chickens clucking and birds singing. We had been invited to have coffee with Peter and Rosemary on their patio, which we gladly accepted. It can’t get much better than fresh coffee, cakes and wonderful company, all topped off with a to-die-for view. Alternatively, visit the Georg Ots Spa Hotel (also known as GOSPA) on the Estonian island of Saaremaa. A trip to one of the islands is a must and flights and ferries are frequent. Post treatments, take some time to explore Saaremaa. Fresh air is something you truly get to grips with upon arriving in Estonia and heading out of the capital city to one of the islands certainly takes this to a new level. The largest of over 1500 islands surrounding the mainland, Saaremaa offers beautiful sea views. Guests at GOSPA have free use of bicycles, a great way to explore an island with dedicated cycle lanes. Why not cycle to the neighbouring Castle and explore the city of Kuressaare with its traditional Estonian houses and architecture.

Staying in the Hotel Telegraaf ensures that you are ideally situated to explore the heart of Tallinn, the Medieval Old Town. It’s impossible to deny that this is the main reason that most people travel to Estonia, to see the best protected and intact medieval city in Europe. Indeed, the Old Town is surrounded by nearly 2km of its original city wall, dating from the 14th century. Inside the wall, the town hall square is a natural magnet for tourists. Historically it served as a market and meeting place, and was the site of at least one execution.

After a few days of relaxation, head back to Tallinn and explore. The climate of Estonia is characterised by cold winters with snow and reasonably warm summers and Tallinn certainly looks like the kind of city that can deal with any climate, lending itself to romantic winter strolls and summer outdoor dining in equal measure. Eating out in Tallinn is easy and choices are extensive. The Old Town is home to some elaborate medieval ambiances with restaurants like ‘Olde Hansa’ surrounded by candlelight. Black bread is the perfect accompaniment to salty dishes, and pork is extremely popular; traditional Estonian dishes are meaty and rich, perfect for the colder months. Alternatively, The Hotel Telegraaf is said to house the city’s best restaurant. Restaurant Tchaikovsky offers an inimitable fusion of French and Russian cuisine.

As you walk around Tallinn, you start to realise what a diverse history Estonia has. In Freedom Square, you can see the Monument to the War of Independence, commemorating Estonia’s hard-fought struggle to free itself of foreign rule. Through the ages, Estonia has been occupied by the Swedes, the Germans, and most recently, the Russians. The Soviet occupation lasted from 1945 to 20th August 1991 when Estonia declared independence, turning westwards. The whole country now feels a lot more Scandinavian than it does Russian, something EU membership has helped with. Any culture vultures planning next year’s holiday should definitely give Estonia a look. Things are certainly looking up for Tallinn; this December, the city will be hosting the European Film Awards and in 2011 it is set to become the European Capital of Culture. The city is gearing up for a

major cultural agenda covering numerous live performances and an array of other activities destined to put Estonia firmly on the map as a tourist destination. Estonia has a culture firmly steeped in folkloric history and songs. Indeed, The Estonian Song Festival, called the Laulupidu in Estonian, is a hugely popular event. In 2009, more than 26,000 choral singers gathered to perform for an audience of 80,000 people. Why not embrace the Estonian love of singing and visit Tallin’s opera house. Alternatively, plan your visit to coincide with Tallinn Music Week in March, an exciting festival for both music professionals and music lovers. Tallinn will further step up its cultural campaign with theatre events from May-September, the Asian Film Festival and the Dance Festival in August, and a Photography Month in October. With a very low population, it would be incredibly easy to overlook Estonia. Look a bit closer, however, and the country opens itself up; there truly is something for everyone. With Ryanair recently launching Estonian flight routes, Tallinn, and the charming Hotel Telegraaf, can expect plenty more visitors in the foreseeable future. WITH FLYBE FLIGHTS DEPARTING DAILY FROM KENT INTERNATIONAL AIRPORT AT MANSTON, TRAVELLING TO EDINBURGH FOR BUSINESS OR PLEASURE HAS NEVER BEEN EASIER. Having never visited Scotland, I was excited to be making a trip to Edinburgh and was especially looking forward to avoiding the usual motorway dash to a busy London airport, and instead enjoying a much shorter journey to Kent’s very own international airport. From Ashford, the drive to Manston on a quiet Saturday afternoon was a little over a half hour. With ample parking opposite the departures entrance I managed to check in, whizz through security and relax with a coffee and good book in the departure lounge within an hour of closing my front door. I couldn’t help but compare this experience to previous airport runs – motorway congestion, dragging luggage from far-flung airport car parks on cramped buses, queue after queue… Possibly for the first time, I actually felt as if I was already on holiday. My fellow passengers and I were quickly seated aboard our Flybe flight and ready to

go well ahead of schedule, and instead of having to wait our turn for the runway we could just get going and took off several minutes ahead of schedule (another first for me I believe!) After a smooth journey it was hard to believe that an hour later I was collecting my luggage from an airport at the opposite end of the country. Altogether it had taken me just over three hours from leaving my front door to arriving in Edinburgh. I was impressed. After picking up a hire car from the airport I made the short journey to my base for the weekend. A twenty minute drive from the airport, Dalhousie Castle sits proudly in eleven acres of beautiful scenery and woodland. Arriving at dusk, the castle was grandly lit and made a suitably imposing impression.

My room boasted uninterrupted views of the grounds and traditional décor in keeping with the age and location of the castle. The room felt warm and inviting with its tartan cushions and throws, dark wood furniture and soft amber glowing lamps. But modern mixes with traditional in the form of LCD TVs, DVD player and luxury bathroom complete with ‘his and her’ sinks and an extra-deep bath with its own LCD TV. The room was spacious yet cosy; a real home from home, only better!

The Falconry had a wide variety of birds including many different types of owls, peregrine falcons, hawks, eagles, kestrels and even a ‘celebrity’ raven who had starred in various films and television programmes. The staff are clearly dedicated and it was fascinating to learn about the birds and how they care for them. The Falconry offers a number of different experiences involving flying the birds on walks around the extensive castle grounds. Starting at £40 for the Hawk Walk to £125 for the Platinum Experience, three hours flying various birds including the majestic eagle; the Falconry can even offer five-day intensive courses with ongoing support for those who wish to learn how to responsibly fly and care for their own birds. Dalhousie Castle would make a fantastic wedding venue and the Falconry can provide a unique and exciting way to entertain your guests. Their trained owls will fly to the wedding chapel in the castle and down the aisle to deliver the wedding rings, secured in a silk bag, straight to the Best Man.

The hotel was busy and buzzing with guests and a wedding just down the hall, but after closing the heavy wooden door, walking down the short hallway and through another door, my room was totally peaceful. Despite an almost effortless journey I had still managed to work up an appetite so I headed for one of the hotel’s two restaurants. The Dungeon restaurant was very atmospheric, lit entirely by candlelight. My guest and I enjoyed five courses including melt-in-the-mouth Fillet Steak and pan-fried Monkfish with crispy Parma Ham. But our favourite was the White Chocolate Fondant, soft and spongy on the outside and delightfully oozing in the middle; and the generous cheese board which was easily enough for two to share. I was lucky enough to spend some time with the Falconry staff learning about the birds and flying one of their owls, Ted.

Feeling rejuvenated I had an invigorating walk around the castle grounds on a surprisingly warm autumn afternoon. There is a guide available from the hotel reception which includes short walks like this, ideal for building an appetite for dinner, to longer routes for really exploring the castle scenery. After a relaxing day at the hotel, the next morning I headed straight for the historic city of Edinburgh. I used the Edinburgh Pass, available from www.edinburgh.org/pass starting at £26.50 for a one-day pass, and it is well worth purchasing this for your trip. This pass will get you free or discounted entry into over 30 of Edinburgh’s tourist attractions and tours and could save you a small fortune. The earlier you begin using your pass – and the more you visit – the better value your pass becomes. I used the pass to purchase a discounted ticket aboard an Edinburgh city sightseeing bus. This lasted an hour and I used it to get to grips with the city layout as well as learn about the city’s culture and history from a

Last time out in insideKENT Motoring we had a play in Aston Martin’s new Rapide four seater, and a number of people have mentioned that I’d managed the rare feat of writing about an Aston Martin without making a single reference to James Bond. Now, I’d like to say that I was avoiding all the tried and tested licenced-to-thrill cliches because they’d been used enough already, but the honest truth is that I knew what our next drive was going to be, and I was just saving them for this issue. For as anybody who has enjoyed Bond in print rather than on screen will tell you, Ian Fleming’s creation was actually a Bentley man.

And it’s an introduction that requires you get your head around some extremes. In the cabin, for example, you need to understand that your £168,000 buys you a lot less than you might normally anticipate in a superpremium motor. Rear seats are shunned in favour of a carpeted luggage area (no problem for budding Bonds there – I don’t recall him being big on letting the kids tag along), and the weight saving continues with manually adjusted, carbon-fibre shelled sports seats, and the use of composites around the interior where you’d normally find more traditional finishes such as walnut.

And not just any old Bentleys either. 007 liked to have his rides modified to his particular specification – you know the sort of thing, a new engine here, new bodywork there – just to give him that extra edge, so my guess is that he wouldn’t be happy leaving his local dealership with an ‘ordinary’ Continental GT. He’d surely be thinking that 552bhp, 0-60 in 4.6, and a maximum just shy of 200mph wasn’t quite enough, and already be planning his upgrades.

The padding on those seats might also be thinner than you’d expect, but their perfect contours mean they’re no less comfortable for it, and because there’s clearly no lighter alternative to leather and alcantara you still get to enjoy the experience of hand-stitched perfection that only a quality hide interior can give.

But before you risk voiding your warranty, Mr Bond, why not consider a Continental GT Speed instead? A nice round 600bhp, 0-60 in 4.3, and the ability to nudge its way over the magical double-ton. What do you mean, you’re off to Aston Martin? Would 621bhp, 0-60 in 3.7, and a top end of 204mph persuade you to stay? In which case, let us introduce you to the Bentley Continental Supersports.

These and other measures save a whopping 110kg – contributing no doubt to those stunning acceleration numbers – but the Supersports isn’t just about weight watching, because if less-is-more, then clearly more is even more more. Power from the W12 engine is boosted as already mentioned, and a torque figure of 800Nm is 23 percent up on the Continental GT. Continuous all-wheel drive sends it to the tarmac via beautiful ten-spoke alloys, finished in the same smoked steel finish as other exterior design highlights.

Numbers, of course, can only tell you so much, and perhaps the most telling aspect of this weights-and-measures exercise is that once you’re settled behind the wheel you forget all about them. Who cares how the sums add up, as long as the net result is positive...and boy, is it positive. Stupendous acceleration is delivered courtesy of a seamless wave of power that will, unless you’re utterly insane and on friendly terms with your local magistrates, have you bailing out of the throttle way before the engine has given of its best. Play chicken with the six-litre W12 if you must, but you’re going to lose. Carbon ceramic brakes – the largest in the world fitted to a production car – will help save your no-claims-bonus if you get too enthusiastic with your right peg and arrive at a corner too fast. And to be honest, too fast would have to be pretty fast. Even after all the weight-saving measures described earlier the Supersports still weighs in at two-and-a-quarter tonnes, but dial the adjustable dampers to the firmest of the three settings available and the car is surefooted and beautifully balanced. To say agile might be pushing it a bit, but cornering is utterly confidence-inspiring and there’s enough pure grip to ensure that, on public roads, you’re unlikely to get anywhere near any oversteer or understeer shenanigans. Although the ride is stiff it never feels harsh or crashy, but if you want to go for a more relaxed feel you can simply set the dampers to the softer end of the scale and cruise all day on all manner of roads in quiet, if slightly

unconventional comfort. There’s a certain amount of mechanical noise, but it’s never intrusive, and when an engine plays such beautiful tunes you’d feel seriously short-changed if you couldn’t hear them. And of course, should you opt to use the Formula One style paddle shift rather than letting the six-speed ‘box do its own thing, you’ll want those aural clues to give you a feel for when to swap cogs. So would the Bentley Continental Supersports cut the mustard for 007? Let’s say it’s original enough for Connery, sophisticated enough for Moore, and certainly tough enough for Craig – just pick a favourite Bond, and enjoy your licence to thrill.

WHEN YOU VISIT THE CAPITAL YOU PROBABLY DON’T WANT TO DINE AT A RESTAURANT WITHIN A HOTEL, ESPECIALLY WITH SO MUCH CHOICE IN LONDON. HOWEVER, PEARL RESTAURANT IS A BOLD EXCEPTION, AND WITH A STREET-LEVEL ENTRANCE YOU ALMOST WOULDN’T KNOW THE RESTAURANT IS WITHIN A HOTEL. THE ELEGANT DÉCOR, FOOD AND SERVICE (AND SUITABLY ELEGANT PRICES) MAKE THIS A VERY SPECIAL PLACE FOR DINING. Since its opening in June 2004, Pearl has established an excellent reputation for its modern French cuisine created by its Executive Chef, Jun Tanaka. Prior to Pearl, Tanaka spent 10 years working with some of London’s best chefs in seven top Michelin star restaurants learning the art of fine French cuisine. Poached Maldon Rock Oysters with Pearl Barley and Watercress Risotto, Oyster Veloute and Samphire, Denham Estate Venison cooked in a spice-infused Salt Crust with Beetroot Tart Tatin, Pears and Walnuts; and Halibut with Chorizo, Caramelised Squid, Red Pepper and Onion Confit, and Chick Pea Fritters are amongst the dishes on offer – the emphasis being on the creative tastes and fusions of flavours. A tasting menu is also available and can be paired with a variety of wines. The wine card is extensive and there are choices to suit even the most discerning palette.

As you arrive, the 55-seat bar is spacious and is a great place to enjoy a drink whilst people watching ahead of sitting down in the spacious restaurant, which apparently houses over a million hand-strung pearls!
