Hiking for the NSPCC A merry band of over 30 hikers from SPAR NI dusted off their walking boots to tackle this year’s NSPCC HACK, a demanding 20-mile route in the magnificent Mourne Mountains. SPAR NI Representative, Laura Johnston, said: “Our team trained hard and worked together to get across the finish line. Having worked hand-in-hand with the NSPCC for many years, we are fully aware of the amazing work the charity does. We hope to raise £2,000 through this event."

Go GREEN DAY A group of SPAR's stores in the north of England made a tremendous effort to hold a special 'Go Green Day' recently, to raise money for the NSPCC and ChildLine. Staff and customers threw themselves into the fundraising fun, with green fancy dress, green cakes and green raffles, creating a fantastic atmosphere in their stores and raising a whopping £15,000 between just 90 stores! Staff at the Haworth store made a champion effort, working with local traders to put together a raffle, with prizes including vouchers for meals, spa

treatments and a SPAR hamper. Their top seller, Andrew, sold over £200 worth of tickets in the week building up to the event – well done, Andrew! On ‘Go Green Day’, the Haworth staff held a grand draw and sold NSPCC pins and cupcakes, made by the children at Haworth

Primary School. It was an event for the whole village and everyone got behind the cause – and had a lot of fun, too! A big congratulations also goes to SPAR Accrington, SPAR Stakesby and SPAR Manor Garage, who each raised over £850.

he NSPCC has been SPAR’s chosen charity for the past seven years and for the last two years, this has involved supporting ChildLine, a service provided by the NSPCC. ChildLine is the UK’s free, confidential 24-hour helpline and online service for children and young people in danger and distress. During the past seven years, we have raised over £3.5 million for the NSPCC and ChildLine – and we’re not stopping there!

Makeaway... NOT TAKEAWAY Eating in is the new going out, so instead of ordering a takeaway, make your own delicious, speedy versions at home – or try our ultimate fast food option

Chicken Tikka Masala Prep time: 10 mins Cook time: 17 mins Serves 4 Ingredients 1 tsp vegetable oil 1 large onion, finely chopped 4 skinless, boneless chicken breasts, cut into chunks 1x200g can chopped tomatoes 2 tbsp tikka masala cooking sauce

1 Heat 1 tsp of vegetable oil in a pan and add the finely chopped onion. 2 Cook the onion for 2 minutes, then add the chunks of chicken. Cook the chicken for a few minutes to seal it. 3 Add the can of chopped tomatoes and stir well. Then add a jar of tikka masala cooking sauce and stir again. 4 Cover the pan with a lid and leave to cook through for 15 minutes, stirring from time to time to prevent it from sticking.

Serve with... Basmati rice (stir a teaspoon of turmeric into the cooking water for a Pilau-style rice). To cook the rice, bring a large pan of water to the boil. Add 1/2 to 1 teaspoon of salt (optional) and 250g of rice (for 4 servings). Bring back to the boil, stir well. Lower the heat to a fast simmer and cook until tender. Drain in a colander and allow to stand for 5 minutes before fluffing with a fork and adding a little butter or oil (optional).

Spicy Sweet & Sour Chicken Prep time: 5 mins Cook time: 5 mins Serves 4 Ingredients 1 tbsp vegetable oil 2 chicken breasts, sliced 1 jar of Szechuan Kung Po cooking sauce Cashew nuts roughly chopped to garnish Spring onion chopped to garnish

1 Heat 1 tsp vegetable oil in the wok or a deepsided frying pan. 2 Add the sliced chicken breasts and stir-fry for 5 minutes or until cooked. 3 Pour over the jar of Szechuan Kung Po cooking sauce, stir thoroughly and heat through. 4 Garnish with chopped cashew nuts and chopped spring onion.

Serve with... Jasmine rice. To cook the rice, bring a large pan of water to the boil. Add the rice, bring back to the boil, and stir well. Lower the heat and cook for about 20 minutes until tender. Drain, allow to stand for 5 mins then fluff grains with a fork. Or if you prefer, serve the dish with egg noodles.

Classic Lasagne 1 Warm the oil and butter in a heavy-based casserole dish over medium heat. the onion and gently fry for about 5 mins until softened. Add the celery, carrots and garlic, and cook for another couple of minutes, stirring. 2 Stir in the beef and cook until browned. Add the bay leaf and milk, bring to the boil, then simmer for about 10 mins, until the meat has absorbed the milk. Season with a pinch of nutmeg.

3 Pour in the wine and let it simmer until it has evaporated, add the tomatoes and stir thoroughly. Simmer very gently, uncovered, for at least an hour, then correct the seasoning. 4 Pour enough sauce into the baking dish to cover the base. Place a layer of lasagne sheets on top, followed by a layer of meat sauce, another layer of sauce and a handful of Parmesan. Add two or

1 carrot, chopped 2 celery sticks, chopped 1 garlic clove, finely chopped 11/2 tbsp plain flour 1 tbsp tomato purée 425ml beef stock 1 tbsp Worcestershire sauce Few thyme sprigs 1 bay leaf For the mash 1 kg potatoes, chopped 115ml milk 15g butter 100g Cheddar, grated

1 Heat 1 tbsp oil in a large saucepan and brown the mince. Put to one side. Put the rest of the oil into the pan, add the vegetables and cook on a gentle heat until soft, about 20 mins. Add the garlic, flour and tomato purée, increase the heat and cook for a few minutes, then return the beef to the pan. Add the stock, Worcestershire sauce and herbs. Bring to a simmer and cook, uncovered,

for 45 mins. Check after about 30 mins – if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season, then discard the bay leaves and thyme. 2 Meanwhile, cook the potatoes until soft, drain and allow to dry for a few minutes. Mash with the milk, butter, and threequarters of the cheese and season. Heat oven to 220°C/200°C fan/Gas 7. 3 Spoon meat into an

ovenproof dish. Pipe or spoon on the mash to cover. Sprinkle on the remaining cheese and cook for 25-30 mins, or until the topping is golden.

Nothing says ‘comfort food’ more than plump, juicy sausages and creamy mashed potatoes topped with a rich onion gravy. Add a little mustard for extra zing!

Prep time: 10 mins Cook time: 20 mins Serves 4 Ingredients 1 tbsp olive oil 1 red onion, thinly sliced 2 tsp soft brown sugar 900g potatoes, peeled and cut into small chunks 8 premium sausages of your choice 1 tbsp plain flour 300ml hot beef stock, made with a stock cube 100ml red wine 1 tbsp Worcestershire sauce 100ml milk, warmed 50g butter 2-3 tsp wholegrain mustard

1 Heat the oil in a large frying pan. Add the onion and sprinkle with the sugar, then cook gently, stirring from time to time, for 12-15 minutes or until the onion is lightly caramelised. 2 While the onion is cooking, boil the potatoes in lightly salted water for 15 minutes or until tender. 3 Heat a little oil in a pan and lightly fry the sausages until browned all over. 4 To make the gravy, sprinkle the flour over the caramelised onion, stir and cook for 1 minute, then gradually stir in the stock, wine and Worcestershire sauce. Add the sausages, bring to the boil, then reduce the heat and leave to simmer gently. 5 Drain the potatoes and return to the pan. Mash with the warm milk, butter and mustard to taste. 6 Dish up and enjoy!

TRADITIONAL APPLE CRUMBLE AND CUSTARD Everyone’s favourite pud!

Prep time: 10 mins Cook time: 30 mins Serves 4 Ingredients For the filling: 450g cooking apples 2 tbsp golden caster sugar Pinch of ground cinnamon For the topping: 115g cold butter 115g golden caster sugar 175g plain flour For the custard: 290ml milk 1 tsp vanilla essence 2 eggs, yolks only 1 tbsp caster sugar Preheat the oven to 180º C/ 375º F/ Gas 5 2 Peel, core and chop the apples into chunky pieces and place in a shallow baking dish. Mix the cinnamon with the sugar and sprinkle over the apples. 3 Put the flour and sugar in a large bowl. Cut the butter into small pieces and add that to the bowl. Rub the butter into 1

the flour and sugar until you have a very coarse mixture. 4 Sprinkle the crumble topping over the apples. 5 Bake in the oven until golden (about 30 minutes). To make the custard, bring the milk to the boil and remove from the heat. In a large bowl, beat the eggs with the sugar. 6 Pour the hot milk over the egg yolks, whisking vigorously, then return to the pan. 7 Stir over a low heat for 5-6 minutes, until the mixture thickens. Drain into a bowl and add the vanilla essence.

from schoolboy to store owner When I started working for the local grocery shop as a young lad, I had no idea I would end up running 10 SPAR stores !

P

eter McBride was just 10 years old when he started a part-time job in his local grocery store in Mullaghmore, Northern Ireland. While his friends were out playing and kicking a football about, young Peter was going off every weekend to earn his pocket money. Little did he know how much it would pay off, as that part-time job turned out to have enormous consequences for his whole life. Twenty-five years on, Peter is managing that very store – and nine other SPAR stores to boot, and he is very proud of the achievements he has made along the way. “One thing I am genuinely proud of is that we have created more than 300 worthwhile, sustainable jobs for local people, and I feel like we’re giving them the same chance that I was given as a boy.” Peter puts his success down to hard work and customer service.“It sounds like a cliché but we really do try to put the customer first,” he says, “and we try to become part of the communities we are in. ” A great example of this was his 25th anniversary celebrations, when Peter invited the whole community to join in the fun at his Omagh store. “It was important for me to do this as our customers are the lifeblood of our business. I wanted to thank them for their fantastic support over all these years.”

And does it really fuel you sufficiently for the day ahead? How to make the perfect bacon buttie Bread, bacon and sauce are the key ingredients for this scrumptious sarnie. Cook two or three back bacon rashers under a preheated oven grill for 7 minutes until crispy. Place the bacon between two slices of soft, thick buttered farmhouse bread or a roll, and top with a dollop of sauce. Nutrition High in salt and fat but also a source of protein. uying a ticket in a SPAR store has proved lucky for several lottery winners. Railway contractor Keith Williams of Merthyr Tydfil was one of the 100 UK millionaires created in July’s special EuroMillions Millionaire draw. Keith plays Lucky Dip numbers on the EuroMillions and bought his ticket from SPAR in Castle Street in Loughor, Swansea. It wasn’t until Monday, when he popped into the Nisa store in Waunarlwydd to pick up a cold drink, that he checked his ticket. A new house is on the cards! Paul and Marie Kibler from Sutton Coldfield banked a whopping £2,194,776 win. Paul has played his three lucky lines on Lotto regularly and bought his wining ticket in the SPAR store on Whitehouse Common Road in Sutton Coldfield. The couple checked online but weren’t able to decide how much they’d won.

“Paul thought it was about £50,000, I was thinking £2,000,” said Marie. “It wasn’t until a call from Camelot, when they said, ‘you’ve won the jackpot’, that we knew. I just burst into tears.” Carmel McErlean from County Antrim described herself as a ‘plain ordinary housewife – just like most people’. But five lucky numbers and a bonus ball changed all that, and the factory machinist from Portglenone has £169,404 to prove it. Carmel , who bought her ticket in the Portglenone Post Office and SPAR in Ballymena, does the same two lines every Saturday – the first with random numbers, the second based on family birthdays. “It was the random numbers that won”, she says. “My husband Peter checked the numbers in the paper the next day and we just couldn’t believe it. I’ve never been a particularly lucky person – but now all that’s changed.”

/ cups soda water 1 tsp balsamic vinegar 6 medium sized strawberries 10 basil leaves, roughly chopped 160ml pineapple juice 2 tbsp lime juice 1 1/2 tsp sugar Crushed ice

8 sprigs fresh mint leaves 3 teaspoons sugar 10ml lime juice 90ml orange juice 8 ice cubes 100ml soda water Orange slices

330ml soda water 60ml pomegranate juice Fresh pomegranate seeds (optional)

Method • Place 6 mint leaves and the sugar in a bowl and mix • Add the lime juice and orange juice and stir thoroughly • Add the ice cubes and mix until the sugar dissolves • Top off with the soda water, pour into glasses and add orange and mint to serve

• In a large bowl, combine the pineapple juice with apricot or mango juice and lime cordial • Add the chilled sparkling lemonade and serve

• In a tumbler, combine the basil, strawberries and lime juice. Gently pound to break up the berries and release the basil flavour. • Add the soda water, balsamic vinegar, pineapple juice, sugar, and ice. Shake for several minutes. • Strain only half of the mixture, so that you still get a few pieces of basil and strawberry in each glass
