This Ain’t No Flatlander BBQ! BBQ is truly America’s only original cuisine. It differs by region, even by towns. Every style has its own sauces, kinds of wood used for fuwel, length of cooking time and on and on and on. Chef Mike Peterson has fiddled with BBQ variations for years. He has BBQ’d Memphis Style, St. Louis Style, Texas Style, Kansas City Style, Santa Maria Style, and most styles in-between. What he serves up here is Traditional Slow Smoked Western Style, bent on his own ultra-secret ingredients and backed by lots of experience. Chef Mike had the idea for a railroad steam engine BBQ nearly three decades ago, when he was operating a tiny 30” BBQ. For years he plotted, planned and finally designed his dream. It was built locally and to the dismay of the Highway Patrol acting as escorts, he had it legally hauled up to Oakhurst. The Yosemite Tri-Tip Express is a giant 38 ft. long smoker that weight in at 16,000 lbs. It burns about a cord of hardwood a week: live oak, white oak & black oak. There’s even a smoker where we bake bread, cook veggies, rice and the “Best Beans in the West”!!! Want to see it? Just ask your server. We love to show her (the locomotive) off!
