BLT Dip

Ingredients:

8 slices crisp, cooked bacon 1 medium tomato, chopped 3 ounces shredded swiss cheese ½ cup mayo ½ cup small onion, minced

Directions:

1. Preheat oven to 375 degrees. 2. Combine all ingredients in an ovenproof dish. 3. Bake for 15-20 minutes until bubbly and slightly browned. 4. Serve with your favorite crackers!

Light Avocado Mango Salsa

MAKES 4 SERVINGS

Ingredients:

1 large avocado, diced 1 mango, diced ½ red onion, diced 5 strawberries, diced 1 lime, juiced Salt & pepper to taste

Directions:

1. Dice up avocado, mango, onion and strawberries 2. Juice the lime. 3. Mix avocado, mango, onion, strawberries and lime juice in a bowl. 4. Add salt and pepper to taste. 5. Serve!

Caesar Salad Dressing

Ingredients:

1 cup mayo 1 tbsp lemon juice 1 tsp Worcestershire sauce ½ clove of garlic (more or less to taste) ½ cup grated parmesan cheese 1 tbsp milk salt & pepper to taste

Directions:

1. Place all ingredients in a food processor and blend. 2. Once finished, use immediately or refrigerate.

Can be served over grilled chicken and Caesar salad.

Chef Peter Culthrop's Salad Dressing/Marinade

Ingredients:

½ cup balsamic vinegar 1 tbsp A-1 Sauce ¼ cup seasoned rice vinegar 1 tbsp mirin 2 tbsp sugar 1 tbsp soy sauce 1 tbsp sesame oil 1 tbsp dry mustard 2 tbsp fish sauce 2 tbsp ginger 1 cup oil salt and pepper

Directions:

1. Blend all ingredients together and it's ready to go!

Delicious as a marinade for any meat as well as a dressing for any type of salad!

Corn & Bean Dip

Ingredients:

¼ cup sugar ¼ cup apple cider vinegar ¼ cup extra virgin olive oil 1 can white shoepeg corn, drained 1 can black beans, rinsed and drained 1 bunch chopped scallions (white parts and some green) Crumbled feta cheese

Directions:

1. Mix sugar in apple cider vinegar until dissolved. 2. Whisk in extra virgin olive oil. 3. Add corn, beans and scallions. 4. Toss in crumbled feta cheese (add this in when serving).

Best if made hours or a day before serving.
