Silver Oak Winemakers Lunch Created Gourmet Memories On January 21st, The Founders Club Members had a chance to speak with the winemaker of one of California’s most spectacular vineyards. Daniel Baron of Silver Oak and Twomey Cellars made a rare appearance to introduce and discuss many of his special wines. Chef Marco created an incredible menu that paired perfectly with these delicious wines, bringing out the best flavors of each. Many attendees took advantage of the opportunity to purchase their favorite wines at an amazing price. Everyone who attended had a fabulous time and even had the winemaker himself sign bottles of wine they purchased! It was a unique tasting around the dining room and an event we won’t forget.

AROUND THE CLUB Welcome To Our New Tennis Pro Kieran Killigrew, a career USPTA, USPTR certified tennis professional, has been coaching and promoting tennis for over twenty years. Kieran was born in Washington, D.C. He grew up in upstate New York and graduated from Brockport High School, just east of Rochester. Kieran studied both piano and cello in his younger years, but tennis was his true love. He attended Sonoma State University, located in Northern California, where he majored in Sports Facilities Management and played #1 singles as a NCAA first team all-American. After which, Kieran became the tennis director at the prestigious Sonoma Mission Inn & Spa. As head coach of the Sonoma Valley High School in Sonoma and later at Justin-Siena High School in Napa, he has won championships with both boys’ and girls’ varsity teams. Kieran currently runs the Killigrew Tennis Academy in the summer months in Stowe, VT at the Stowehof Resort nestled in the beautiful Green Mountains.

Chef’s Corner Rack of Lamb “Alla Romana” Growing up I was never a picky eater, and I still have a belly to show for it. My poor mother was always on the verge of locking the refrigerator, but the one thing I could not stomach was lamb: to my young palate it tasted like the Chef Marco Marini leaves rotting in the woods in the fall, and it smelled like the hay in grandpa’s barn. This was disappointing for the family, since in that area, between the Tiber River and the hills of Tuscany, lamb is far more available and appreciated than beef. This went on until one day, around Easter, when my mom decided to fix the stubborn herbivorous with a Roman recipe, that called for vinegar and capers. All of a sudden the acidity of these two washed away the strong grassy smell, the gamy aftertaste, and left only a succulent sweet taste. Now lamb is one of my absolute favorite meals. I share this recipe, which I adjusted behind mama’s back, with all of those who are intimidated by the idea of eating such a strong meat. I assure you that it will almost taste like chicken!

Rack of Lamb “Alla Romana” For 4 people: Ingredients 2 whole domestic racks of lamb (Note: The U.S., especially Colorado, grows the best lambs you can ever have. They are a little pricey but, like anything else, you get what you pay for. If you can’t find domestic go for import, but stay at least on 20 ounces per rack.)

½ Cup Extra virgin olive oil 3 cloves of garlic, chopped 2 Tb capers, chopped 1 sprig fresh rosemary 1 Tb crushed red pepper ½ Cup red wine vinegar (apple cider vinegar works as well, just a bit sweeter)

½ Cup red wine (whatever you are drinking that night) 1 cup chicken stock (homemade is great, but Swanson will do) 1-16 oz. can good quality crushed tomatoes Salt & pepper

Procedure In a large stockpot sear the seasoned racks on all sides, in hot olive oil. Be careful not to burn the oil, take your time. If the oil starts smelling burned discard it and add new oil. When the lamb is dark brown all over remove it, add garlic, capers and rosemary and red pepper, cook for 30 seconds, add wine and vinegar. Let reduce for 2-3 minutes, add the tomatoes, chicken stock and bring back to simmer, season to taste. Drop the lamb back in, and simmer until the lamb is at your favorite temperature, 15 minutes for medium rare, but it will change with the size and quality of the lamb. A good trick to see when the lamb is done is to lightly push on the meat with your finger, and compare it with the consistency of your cheek; if it feels as soft, the lamb is rare, if it feels like your chin, the meat is medium rare, like the forehead, then it’s is medium well. Rest the lamb on a plate for at least 10 minutes; meanwhile reduce the sauce until it looks like a marinara, remove the rosemary, carve the lamb and serve atop polenta (“instant” works great, maybe you can add some crumbled goat cheese in it), your favorite wilted green (I like Swiss chard, but kale, collard, mustard, spinach, they all work) and a good glass of Zin. Buon appetito!

The Scotsman (Men’s Invitational) Thursday-Saturday, March 11 thru 13 This event is the highlight of our Men’s Golf Calendar. A Round Robin format of 45 holes plus practice rounds is not to be missed. So grab your partner and sign up soon as the field is limited. Tournament Winners & News Ladies Member-Member Tournament Our first major event for Ladies golf was conducted on Saturday, January 16. Sixteen ladies competed in our Member-Member. The format is unique with three different six-hole formats. The first six were a two-person Scramble, the second were a Better Ball of Partners, and the final six were an Alternate Shot Chapman format. Men’s Member-Member Championship Our first major Men’s Golf Event took place on Friday January 22nd and Saturday January 23rd. A field of 34 men competed in our 36-hole Member-Member Championship. We dodged some weather and endured some overcast wet conditions but had a great turnout and solid play. The Better Ball format was tightly bunched after Round 1 with Al Bunta and Skip Britton holding a one-shot lead over Ray Bromark and Don Bigger. Round 2 is always a bit more challenging and tests the golfer and his partner. We do know that our field thoroughly enjoyed themselves and had great camaraderie.
