elcome to the 2011-12 edition of Local Flavours, your guide to the delicious local food and drink produced in Berkshire, Buckinghamshire and Oxfordshire! The first local food guide for Oxfordshire was produced in 2000, compiled and distributed by a group of committed volunteers, who believed in the ethos of “local food”. This was the beginning of the Oxfordshire Local Food Group, which later merged with similar initiatives in Buckinghamshire and Berkshire. The BBO Food Group became a Community Interest Company in 2008. Many producers who featured in the first guide - Shaken Oak, Copas Traditional Turkeys, Dews Meadow Farm, Foxbury Farm and Rumsey’s Chocolates - are listed in this year’s edition too. These producers, and many others, benefited from the business development and marketing support offered by the BBO Food Group. The Local Food Guide, in print and online at www. local-food.net, is an excellent way of promoting our local food businesses, and is a popular resource for retailers, chefs and the general public. This year the theme is Community Food, showing the links between food producers and their local communities. These vital connections between producers and consumers will help the local food sector thrive. Community Supported Agriculture, Community Shops, Community Markets, and other local food schemes support their local food businesses and provide them with new ways to market their products.

Love Food Hate Waste

Is local food more expensive? The real cost of food

B

efore the so-called ‘green revolution’ in the 1950s, most of the food we ate was farmed, processed and distributed locally, without many imports from other countries. In the years following the Second World War, pressure was applied to increase productivity, and higher yielding methods and machinery crept in from abroad. Today, the World Trade Organisation, EU, fuel giants and food conglomerates are all familiar terms, and they all dictate our food supply, to the extent that ‘local food’ is now perceived as an expensive and impractical luxury. Why go to the trouble, some ask, of tracking down locally produced and seasonally available food when there are a hundred cheaper alternatives on hand from a large supermarket chain?

Rubbish – counting the cost Fresh fruit, vegetables and salad make up more than a third of households’ wasted food.

Waste not, want not Some food waste is unavoidable, and more appropriate treatments of this can reduce the amount of biological waste going to landfill. While homeowners can contribute by composting their own garden waste, local authorities promote recycling on a larger scale, using organic materials such as food waste and manures to make a gas that can be burned to generate electricity and heat, or processed into transport fuel, or injected into the gas grid. Leftover material can be used as fertiliser in both small and large scale operations. Source: WRAP (www.wrap.org.uk)

This approach fails to take into account the real cost of food; not just in pounds spent at the till, but the damage that intensive farming and worldwide transportation does to soil, air, water sources and wildlife, the effect it has on animal welfare, and the stress, health and noise levels we experience as humans. Local food production eases many of these issues and directly benefits the local economy. A box scheme, pick-your-own or farm shop will typically reinvest 80% of its gross income locally, while a supermarket will spend or leave only 15% of its sales locally. It’s easy to see that the former has far greater benefit for people who live within the community, measured in improved education and health facilities, transport links and leisure activities. Do your bit for the community and grow your own or buy local food, while taking practical steps to reduce food waste and cut the real cost of food.

UK households throw away 8.3 million tonnes of food a year, of which 65% is avoidable. This represents £480 for the average household annually. The main issues are buying and preparing too much food, letting edible food go off either untouched or in opened packets, and misunderstanding sell by and use by dates. or more than 150 years the Elder Stubbs allotments in Rymers Lane, Oxford, have provided space in which Cowley residents can grow their own fruit, vegetables and flowers. Originally set up as compensation for the loss of common land, the allotments’ long history has been chequered – grow your own hasn’t always been in fashion. These days a charity oversees 100 allotments for local residents, besides leasing plots to vulnerable and socially excluded people through two separate charities. The Porch Steppin’ Stone Centre has 10 allotments and a small orchard while Restore cultivates 2½ acres as an organic market garden and orchard under the umbrella of The Elder Stubbs Garden Group. The result is an area of land where a diverse group of people can enjoy the satisfaction of planting, tending and harvesting produce. The Elder Stubbs Charity has planted 1000 native trees, has a pond and wetland area, an osier bed and a hazel coppice, as well as a heritage orchard and wildflower meadow. The charity endeavours to manage the land in an organic, chemical-free manner. Your Guide to Community Food

Community Growing Sites

Growing your own enjoyment Produce grown by The Porch Steppin’ Stone participants is used in meals at its day centre for the long-term homeless and unemployed. The Elder Stubbs Garden Group project is therapy for people recovering from mental illness. Their produce is sold Monday to Friday 10am-3pm. Estate manager Phil Creme, together with a team of volunteers, ensures the site runs smoothly. Machinery is available to site users and there are loos at the Restore buildings, which also include a kitchen, a workshop where a wood recycling project is run, and a shop. The annual Elder Stubbs Festival attracts 3000 people in the summer and has become a key Cowley event. Performing arts, poets and rock stars join gardeners and stallholders among the flowers and vegetables, raising awareness of mental health issues and providing positive images of mental health. W

hen a group of like-minded friends banded together to boost their buying power in 1999 they little thought 12 years later their scheme would be running as a community food co-operative with a large, committed membership, several markets and a shop. True Food Co-op sells organic, sustainably, ethicallygrown local food and household products at evening markets and in its shop in Reading. Volunteers work alongside the full-time buyer, shop manager and markets manager, as well as a parttime food co-ordinator, to keep the not-for-profit organisation operating on as small a budget as possible. Other money-saving measures include buying in bulk, selling items loose so shoppers can buy small manageable amounts and sourcing from local suppliers to reduce food miles and associated costs. The approach gives supporters and shoppers the best possible price without short-changing the producers or damaging the environment. Selling from markets and a shop enables those buying to interact with each other, fostering a sense of community. “We really feel that’s an important part of what we do, which is why we don’t offer veg boxes, though we do get asked about them a lot, “ explains Anna Louise Batchelor, one of the volunteers.

Co-operating for change “We’re a real mixture - a community whose common interest is organic food. Our approach appeals to all kinds of people, from students through to elderly people and those who are on a fixed income. They can come and buy in small quantities. We have a broad spectrum of members – all ethnic groups and backgrounds. Non-members can shop with us as well,” she says. The international financial downturn has brought its own challenges to the group, but membership continues to grow and many more shop with the co-op either at the markets or at the Emmer Green store. “What we try to show people is that it may not be easy but good things can be achieved when people get together and co-operate as a group. Change can and does happen,” says Anna Louise. The True Food Co-op shop at Emmer Green opens Monday to Saturday. Evening markets are held at Silverdale Centre in Earley, The Warehouse Community Centre in Newtown and the Wesley Methodist Church Hall in Queens Road. t takes dedication to keep up a regime of early mornings, twice-daily milking and caring for your “girls” no matter what the weather, or the season. You’re unlikely to make your fortune, either - so why would anyone take up small-scale dairy farming? That’s a question Matt Dale, the man behind the celebrated North Aston Dairy, admits he’s asked himself on many a cold winter’s day, but he wouldn’t swap what he’s doing for life in an office. He’s been on Radio 4’s Food Programme and some of his principles will be familiar to followers of the long-running radio soap, The Archers. Now, inspired by eco-pioneers Pam and Nick Rodway, of Findhorn in Scotland, Matt is offering cow bonds – shares in his herd, to people who want to invest in his vision.

The investor receives a return on their money and gets to name their cow – or cows, which, in turn are all known individually to Matt and are monitored through his close daily contact with the small herd. There’s plenty of demand for North Aston Dairy products. Those lucky enough to live within two-and-a-half miles get a doorstep delivery while other customers receive their milk with North Aston Organics veg boxes. Some of the milk is sold at Wolvercote Farmers’ Market. “They are getting milk from the cow that morning. It’s very fresh and totally traceable. I think there are a lot of people interested in buying local produce, organic and non-organic, direct from the producer,” says Matt.

“The idea is a local person actually finances the purchase of a cow. So, for instance, a cow might cost £1200 or £1300 to buy, they provide that money and they are supporting a local enterprise and it’s a secure and ethical investment which provides us with 22

finance and avoids going through a middle man or a bank,” explains Matt.

Celebrating Local Food

arracks Lane Community Garden is a community-run green space off the Cowley Road in Cowley/East Oxford. The space the garden now inhabits has been transformed by local effort from a toxic waste-filled old garage site into a beautiful garden open to all to visit and enjoy. The garden runs a range of events and workshops throughout the year. In 2010 the garden received funding from the Big Lottery Fund’s Local Food scheme, which enabled the garden to run a threeyear project celebrating local food for the project ‘Eat what you sow’.

In 2011 the garden will host a range of workshops ranging from foraging and wild cooking, to seed and plant swaps and an annual harvest festival.

The garden works with local people to develop events. Cornfield Bakery and the Oxford Bread Group joined for a bread-making event and with Oxford Permaculture for the seed and plant swaps. Members are always looking for locals interested in working with them and would welcome enquiries from smallscale food producers and cooks, from vegetable growers to jam makers. Events held in 2010 included workshops on keeping chickens, beekeeping, seed swaps, and breadmaking.

The garden is also available for bookings. For a small donation, which helps with the running costs of the garden, you can book the garden as a venue for your own workshops.

At Foxbury we act as a food hub for local community and village shops. Each week as well as ordering Foxbury own produce, they can order locally produced foods. Putting the feel good factor into our business has never been more evident than in our community fund raising. It is not only about raising money but also giving local causes exposure to their cause. From the Foxbury Annual Farm Open day with gate money donated to Brize Norton church roof restoration fund, to an annual second-hand book sale where customers bring their unwanted books and then come and purchase

fter several years promoting the three Rs of energy conservation – reduce, reuse, recycle – Abingdon Carbon Cutters have created a sub-group to advance energy-wise food production. Growing your own fruit and vegetables and buying local are just two ideas the group is promoting. Gardening expert Robert Longstaff’s planting and growing workshop have proved popular and there are plans for more in 2011. Schoolchildren and teenagers are being encouraged to get involved, which in turn gets parents interested and brings a family focus to the subject of carbon emissions. “When people told us they couldn’t get to a Friday farmers’ market because they were working, we became involved in setting up a new three-monthly Saturday market selling locally produced food and crafts,” says group spokesperson Anthea Pearson. “ACC have a stall on the market to promote their objectives. We had an apple press there in the autumn, using donated windfalls. Children could have a go and drink the 40

juice they pressed. It generated a lot of interest and discussion. Soup, made with locally grown ingredients, was on offer at the latest market along with the recipes.” “Buying local may not be as expensive as people think,” says Anthea, citing the example of a local producer whose free-range chickens are cheaper than supermarket-produced poultry, because he rears, plucks and sells them himself, cutting out all the other people in the supply chain and keeping his transport costs to a minimum. “One of the things we are trying to get across to people is that cutting carbon doesn’t mean having to wear a hair shirt. Growing and cooking your own food is fun, it’s cheap and it’s nutritious – and it tastes really great.” Abingdon Carbon Cutters is one of an increasing number of Oxfordshire Community Action Groups whose common purpose is to reduce the amount of energy we demand and use. From green space to plate A

s a long strip of green space west of London, stretching from Rickmansworth in Hertfordshire to Slough in Berkshire, Colne Valley Park offers its nearby urban population outdoor leisure facilities and nature conservation through the woodland, farmland and waterways on their doorsteps.

However, Colne Valley Park’s proximity to London’s urban sprawl puts its green space under constant development pressure. But those same neighbours are the perfect market for food produced within the valley. Since farmers felt they were too small, individually, to sell to supermarkets, and too time-constrained to sell at another farmers’ market, Colne Valley Food was set up and is being organised with the help of a manager, Debbie Valman.

Unlike some schemes, which offer customers a choice of produce, regardless of origin, the Colne Valley Food boxes will only supply food sourced within the park’s 43 square miles and from a limited range beyond. “I don’t want to bring in things from say, Dorset and I won’t be buying things out of season,” explains Debbie.“ We will offer complete meal boxes – like a roast box complete with joint, vegetables, fruit pie and cream, a casserole box or a barbecue box in the summer.” As the seasons change, so the boxes’ contents will change, to hold spring and summer vegetables and fruits, like strawberries and apples, spring lamb or game plus locally-made pudding or cake and cream. An afternoon tea box, or a breakfast box is also a possibility. To cut down on delivery miles and costs, the boxes will be delivered on a local milk round or dropped off at central collection points – an office, playgroup, cookery club or book group, for example.

“We’re running a roving market stall, advertising local food to local families and we are also running a box scheme,” says Debbie, emphasising the green credentials behind the group’s ventures.

fter small beginnings three years ago, Thame Food Festival 2010 attracted so many people into the town that some of the stall holders participating had sold out by the afternoon. Its rising popularity is due in part to the backing of Thame’s town centre traders, says Sally Dorling, whose food marketing expertise has been brought in to promote the event. “The festival has been very successful on each occasion it’s been held,” she says. “Thame supports a lot of independent shops, which have supported the festival, which in turn is good for the people of the town.”

ommitment, dedication and enthusiasm. These were just three of the qualities Bradfield Southend residents exhibited to keep a shop and Post Office running in their village. Back in 2004, given a few weeks’ notice that the existing Post Office and shop would be closing, villagers rallied around to set up an alternative in a temporary building the following year. In 2009, their ongoing efforts were rewarded when larger, purposebuilt premises were opened. Julie Noakes explains that more than 500 locals bought a £10 share to raise capital, a sum boosted by a series of grants and fund raising activities. After negotiating a deal with housing group Sovereign, new apartments and the permanent Post Office and village store were built next to the village hall.

Community Shops

A new village hub “When we moved into the new shop there was such a positive feeling about what we were doing,” says Julie. She was made an MBE in the New Year Honours List in recognition of services to the community, but stressed the award recognised the group’s hard work, not just her own. Paid staff and volunteers help keep the place running, but key to the venture’s success is the number of people who use it and its secondary role as a social hub. “We have most of the things you would expect a convenience store to sell,” says Julie. “Newspapers, magazines, fruit, vegetables, tinned food, flour, eggs, sweets, alcohol and including local produce too. We provide photocopying, faxing and dry cleaning and a recycling point for old batteries. We also have a coffee machine.” Now the committee is looking forward to the longterm future. “We can’t stand still, we have to think about things all the time. We’ve just bought a second computerised till, for example, to ensure that we can reduce queues and keep people coming to us,” says Julie. Creating a market trend W

hen schoolgirl Annabel Chaffey said in a Parish Plan questionnaire she would like Hamstead Marshall to have its own shop she prompted Sue Watts, Anne Budd and Lanie Allen to investigate its feasibility. Though a shop proved unsustainable, the three women began a monthly community market, attracting a few diverse stalls before developing into a monthly produce market. “After a while we realised we had made a difference to the village. People who had lived next door to each other for years and barely exchanged a word are now meeting at the market and having a chat. The noise levels at those first few markets were so high we couldn’t hear ourselves think,” laughs Lanie. The market has adapted to suit its customers and signals a change in buying habits, Lanie believes. “The trend is for people to want to know where their food comes from,” she says. Now known as

Hamstead Marshall and Enborne Village Market to reflect support and interest from neighbours, including market stalwarts and owners of Christmas Farm Mike and Phil, the venture is inspiring adjacent parishes. “They’ve taken our model and changed it slightly to suit their needs. We’re happy to offer advice – for example, get lots of people involved and have a rota of assistants,” says Lanie, who admits the team behind Hamstead Marshall and Enborne had to learn from their early mistakes. Pre-Christmas 2010, the market was held at nearby Elm Farm Organic Research Centre, showcasing a greater number of local crafts and gifts, besides the usual local farm produce, artisan-made bread, cakes, preserves and game and proved a huge success. “One couple who came to support us and planned to spend 20 minutes at the market left two hours later and £100 poorer,” says Lanie. Money made from the markets is put back into village projects and events making it a real benefit to the community on all fronts. From Doves Farm Foods

I

n 2005 we were given wheat seeds that had been gathered from old seed libraries and since then we have been replanting these ancient grains on Doves Farm to build up our own Heritage seed bank. This Heritage Wholemeal Flour is ground from ancient varieties of wheat originally grown in the 16th & 17th Century. The dense, dark, flavoursome loaf it makes is very similar to the bread eaten a few hundred years ago.

Ingredients:

Original XX 1tsp Quick Yeast or st Dry Yea Water XX 360ml Luke Warm XX 450g Heritage Grain Wholemeal Flour

XX Mix together the yeast and water and leave to stand for 10/15 minutes.

XX 1tsp Salt XX 1tbsp Oil

XX In a large bowl mix together the flour and salt. XX Add the yeasted water to the flour and mix into a dough. XX Cover the bowl with oiled cling film and leave to rest again for 10 minutes. XX Knead the dough for 10 seconds then cover and leave to rest for 10 minutes. XX Now knead the dough for 15 seconds, cover and rest for 15 minutes. XX Oil the bread tin then knead the remaining oil into dough. XX Knead, shape and mould the dough to fit the oiled 1kg/2lb bread tin. XX Put the dough in the tin and cover with oiled cling film. XX Prove the until the dough reaches the top of the tin, about 40/50 minutes. XX Meanwhile put a tin of water in the oven and heat to 220째C/ Fan 200째C/425째F/Gas 7. sing local fish this terrine is easy to do and is a great way to start a dinner party or just have as a light lunch with toasted granary bread. Or as a posh picnic treat! XX Pre-heat the oven to 180C. Gently fry the shallots in a little oil (do not burn) XX Remove the crusts from the bread and brush with egg white. Cut the salmon fillet into strips and place on baking tray with the bread season with salt, pepper and nutmeg. Put the bread and salmon in a processor until a puree. Add in the whipped cream and half of the dill. Cut up the smoked salmon into small chunks and add to the mixture. XX Fillet the trout (or get your fishmonger to do it) and make sure all the bones are removed, including the pin bones. Season the fillets with salt and pepper. XX Line the terrine with cling film. Place the trout fillets skin side down into the terrine making sure there are no gaps between the fillets. Fill the terrine with the mixture and with the remaining trout fillets cover the mixture so that it is completely covered. Fold the excess film over the top of the terrine. Cover with a lid or foil.

This recipe is ideal for the summer and is a truly tasty, healthy option. XX Mix the marinade ingredients together in a bowl. XX Put the chicken, mushrooms and peppers into the marinade and leave covered in the fridge for at least 30 minutes and up to 4 hours.

XX Thread the chicken, red pepper and mushrooms onto skewers, pour over any excess marinade and grill for 15 to 20 minutes or until the chicken is cooked through. XX Prepare the chilli sauce by mixing the ingredients together and seasoning to taste. XX Prepare the Tims Dairy yogurt dressing in the same way mixing the ingredients together. XX Warm the pitta breads in the oven or under the grill for a couple of minutes. Split them open down one long edge and fill with the shredded lettuce. XX When the chicken skewers are done, pull off the meat mushroom and pepper and stuff into the pitta pockets. Pour over a little of each sauce and serve straight away. XX Serves 4

Galantine of Chicken From Paul Bellchambers, TheLateChef

A

galantine of chicken is an impressive dish, hot or cold. You can serve it with any side dishes you like, baked potatoes and salad, or with new potatoes and seasonal vegetables. You can vary the stuffing to any mix that you fancy, especially using in season ingredients. It is a very cost effective way of making a chicken go further. Great for picnics when cold or as a different Sunday roast lunch. XX Pre-heat the oven to 200C. XX De-bone your chicken. If you don’t want to do this ask your butcher. The process is fairly simple and as long as you have a sharp filleting and paring knife it is not a daunting job. Make sure the chicken is cold before you start.

Stuffing XX Mix chicken mince, tomato paste, pistachio nuts, herbs and seasoning in a bowl, mix XX Lay the chicken skin side down and spread half of the mixture across the centre of the chicken. Add the chopped apricots and lay the sliced ham lengthways across the chicken. Cover with the rest of the mince mixture. Roll the chicken up so that is looks like a chicken again. Secure with cooks string to hold the chicken together. Seal the ends of the chicken with cocktail sticks to prevent any stuffing from coming out of either end.

Meadowsweet Beef in Horseradish Cream

XX Cut the meat into cubes and heat gently in a large casserole until the fat starts to run out. Fry until the meat has browned on all sides. XX Add the onion, curry powder, ginger, sugar and flour and cook for a minute. XX Stir in the stock and bring to the boil, stirring until thickened. XX Add the Worcester sauce and seasoning, cover with a lid and simmer for about 5 minutes. Transfer to the oven and cook slowly until the meat is tender. haring our passion about fresh, seasonal produce with local provenance, is the White Hart at Fyfield. We’ve been working with Mark Chandler, owner and Head Chef to produce a series of seasonal recipes for you to try and home. All dishes have been tried and tested at the White Hart, and all ingredients can be purchased at Millets Farm Shop. XX Lightly dust the ribs with seasoned flour and brown in a hot, lightly oiled pan. XX Remove from the pan and place in a casserole dish (just big enough to fit the 4 ribs snugly). Add the vegetables and garlic to the pan and sweat until golden brown. Add the tomato paste and cook for 2-3 minutes. Add the beer to deglaze the pan and bring to a simmer (do not boil). XX Pour over the ribs. Add the rosemary and thyme and if necessary top up with a little water, so the ribs are just covered. XX Cover and cook at 150C for 2 ½ hours, until the meat is soft and tender and comes away from the bone easily. XX Remove the ribs from the casserole dish and keep them warm. XX Strain the braising liquor into a saucepan and return to the heat. Reduce until the sauce has thickened (so it coats the back of a spoon) and season to taste.

he Copas family have been producing Christmas turkeys at their farm in Cookham, Berkshire ever since Tom Copas left school in 1957. Over the years, Tom’s wife Brenda has not only perfected her cooking method for their birds, but also finetuned old family recipes to create suitable accompaniments. Here we share her traditional stuffing recipe, a favourite of her three daughters. The perfect complement to poultry roasts and special family meals. XX Saute the onion and celery in butter XX Add garlic. XX Stir into the bread crumbs.

Ingredients

XX 175g white or brown breadcrumbs pped XX 3 sticks of celery, cho XX 1 onion, chopped XX 50g butter XX 1 egg, beaten fresh sage XX Handful of chopped XX 1 tsp dried sage d XX 1 garlic clove, crushe XX Salt & black pepper

XX Add sage and salt to taste and some freshly ground black pepper. XX Bind together with the egg. rom The Chiltern Brewery, this exquisite marriage of fine English ale and dark chocolate makes a really moist and delicious cake or dessert option. The beer adds a malty flavour and a rich note and should be enjoyed with a nice glass of Chiltern Ale (instead of a cup of tea). XX Preheat the oven to 170C/Gas 3/fan oven 150C. XX Grease a 23cm spring form cake tin and line the base with greaseproof paper then dust the sides with a little cocoa powder. XX Melt the chocolate and butter in a heatproof bowl over a pan of simmering water then leave to cool for a few minutes. XX Mix the egg yolks, ground almonds and Lord-Lieutenant’s Porter into the chocolate mixture and stir well. It will appear a little grainy which is fine.

Chocolate Sauce From Rumsey’s Handmade Chocolates

T

his is a really easy recipe which is very versatile. If you want a really good chocolate, try sourcing from a specialist chocolate shop. You can keep this sauce in the fridge for a few weeks, and reheat to pour over profiteroles or ice cream. You can also use to mix with cream to use as a filling for a chocolate gateaux.

Ingredients XX 500ml water ed sugar XX 300 grams granulat er XX 175 gms cocoa powd ate col cho XX 175gms plain

XX Bring the water and sugar to boil XX Add the cocoa powder and mix with a whisk XX Bring back to the boil XX Melt the chocolate (slowly) in a microwave or bain marie XX Add the melted chocolate to the mixture XX Bring back to the boil and simmer for 5 mins XX Strain and pour into container XX Use, or store in fridge ready for future use www.rumseys.co.uk

T

he BBO Food Group was launched as a CIC in 2008, but the Food Group in Oxfordshire has been around for much longer, with the publication of the first Oxfordshire Food Directory in 1999/2000. An office base provided by Oxford Brookes University, with financial support from Oxfordshire County Council and the district councils in Oxfordshire enabled the Food Group to appoint its first manager in 2002. With funding from SEEDA and local authorities in Buckinghamshire and Berkshire, the Food Group became the BBO Food Group in 2004, managed by Tamara Schiopu. With a membership of local food businesses from across the region, the BBO Food group was able to flourish, organising a tremendous range of activities and events across the three counties, from running Chefs tours, trade shows and meet the buyer events, to supporting new farmers’ markets across the region. Local produce is now very definitely on the map available in growing numbers of local shops and

supermarkets, as well as over 40 farmers’ markets across the region. And it’s on the menu in many more local pubs, restaurants and other catering venues. Despite the BBO Food Group’s success in generating income from marketing and events, we continue to rely on public funding. Local food groups have not escaped the cuts, and the future of the BBO Food Group is uncertain. This Food Guide is a powerful reminder that, despite the challenges that continue to face local producers and local food production, local food businesses and community food organisations have a strong presence in this region.
