SUPERFOOD SMOOTHIE BOWLS
Perfect for those sunny summer mornings!
Makes 2 large portions

INGREDIENTS
• 150g frozen raspberries
• 1 frozen banana
• 10g fresh strawberries
• 250ml milk
• 100ml pomegranate juice
• 2 generous teaspoons of vanilla paste
• 1 teaspoon matcha tea powder
TO SERVE
• fresh raspberries
• chopped almonds
• chia seeds
1. Place all the ingredients in a powerful blender (like Vitamix) and mix until smooth.
2. Divide the smoothie mixture between bowls and top with fresh raspberries, chopped almonds, and sprinkle with chia seeds. It’s perfect for sunny mornings!

CARDAMOM & RASPBERRY RICOTTA PANCAKES

INGREDIENTS
• 250g ricotta cheese
• 150ml milk
• 150g plain flour
• 150g plain flour
• 1 1/2 teaspoon
• baking powder
• 2 large eggs separated
• 4 tablespoons dessicated coconut
• 1 ground cardamom
• 1 teaspoon vanilla paste
• 1 teaspoon vanilla paste
• 2 tablespoons of maple syrup
• 100g fresh raspberries, slightly crushed
• oil, for greasing the frying pan
1. Put the ricotta, milk, and egg yolks into a bowl and mix well to combine. Stir in the flour, baking powder, desiccated coconut, cardamom, vanilla paste, and maple syrup, and gently whisk to make a smooth batter. Beat the egg whites until they become foamy and then fold them into the ricotta mixture.
2. Heat the oil in a large frying pan and drop in 2 spoonfuls of batter for each pancake.
3. Cook the pancakes for a couple of minutes until golden and then flip them over and cook the other side. Repeat with the rest of the batter.
4. Top with with Greek yoghurt, warm maple syrup, and fresh raspberries.

SWEET STRAWBERRY WAFFLES FOR VANILLA LOVERS

TIP: Serve with icing sugar, warm vanilla maple syrup and fresh strawberries.
INGREDIENTS
• 300g plain flour
• 1 1/2 teaspoons baking powder
• 2 tablespoons sugar
• 2 teaspoons vanilla paste
• 2 large eggs
• 80 ml melted butter, cooled
• 2 large eggs
• 325 ml milk
TO SERVE
• icing sugar
• maple syrup mixed with vanilla paste
• fresh strawberries
1. In a large bowl mix together dry ingredients: flour, baking powder, and sugar. Add vanilla paste, eggs, melted butter, and milk, and mix until smooth.
2. Heat the waffle maker, pour the batter onto it in batches, and cook according to the instructions on your device, until golden brown. Then move the waffles onto a cooling rack and repeat with the rest of the batter.
3. Serve with icing sugar, warm vanilla, maple syrup, and fresh strawberries.

• 100 grams grated cheddar
• 1 tablespoons chopped chives
TO SERVE
• rocket salad
• fried mushroom with truffle oil
• fried egg
• salt and pepper
1. In a large bowl mix together dry ingredients: flour, baking powder, and salt. Add vanilla paste, eggs, melted butter, and milk and mix until smooth. Fold in grated cheddar and chopped chives into the batter.
2. Heat the waffle maker, pour the batter onto it in batches, and cook according to the instructions on your device, until golden brown. Then move the waffles onto a cooling rack and repeat with the rest of the batter.
3. Serve with rocket salad, truffle fried mushrooms, and fried egg.
