Foraging has been a hot foodie trend for a few years, but now mixologists are taking inspiration from some of the world’s greatest chefs by using scavenged fruit, wild flowers and herbs. In Manchester, bars such as Elixir and The Lawn Club are leading the charge, but it’s even more fun creating cocktails with ingredients gathered by your own fair hands. Take a leaf (ahem) out of Wild Cocktails (CICO Books, £16.99) by botanist Lottie Muir. Here’s our top recipe:

FENNEL, TARRAGON AND CHARD COLLINS INGREDIENTS - 1 1/2 oz fennel-infused gin - 1/2 oz elderflower liqueur - 1/2 oz simple syrup - 1/4 oz fresh lemon juice - 4 oz soda water Fill a Collins glass with ice. Wedge a garnish of fennel between ice cubes and the glass. Add the fennel infused gin, elderflower liqueur, simple syrup and lemon juice to a mixing glass. Fill with ice and stir for 20 seconds until condensation appears on the outside. Strain into the Collins glass, top with soda water and garnish with a rainbow chard leaf and fennel flower.

He may have been exaggerating, but at a new attraction in the Czech Republic beer solves more problems than you might expect. At the Purkmistr beer spa in Pilsen, the West Bohemian town that lent its name to the popular beer, guests bathe in a tub full of warm pilsner while pouring themselves bottomless glasses from a matching barrel. Game on? It costs HBO $6 million to make each episode of Game Of Thrones, the TV series based on George RR Martin’s fantasy novels. That figure is because GOT is now filmed in eight different countries on four continents. Series five’s newest location is the hilltop town of Osuna, near Seville. This teeny town, which few Spaniards could locate on a map, makes a fitting addition to the roster of GOT locations (think pretty whitewashed buildings, a fabulous

crumbling bullring and olive groves), but will it go the same way as Dubrovnik? The Croatian walled city sees 16,000 visitors invade every day, thanks to its notoriety as King’s Landing. Osuna only has 18,000 residents – if 16,000 GOT-crazed fans turned up, could they cope? Locals are waiting to find out. To brave post-GOT Dubrovnik, we suggest waiting for low season. REIGN IN SPAIN More than a million people head to Spain for a golfing holiday every year. Not only has it produced legendary players such as the late Seve Ballesteros, it knows exactly what a fairway fancier wants: first-rate facilities plus a dollop of sun and sea. Some of the prettiest courses can be found near Barcelona: try the PGA Catalunya (pictured; pgacatalunya. com) and the Real Club de Golf El Prat (realclubdegolfelprat.com). Further south the opportunities expand dramatically, particularly around Murcia, which is home to the famous La Manga (lamangaclub.com), and Malaga, where you’ll find the main airport serving Valderrama Golf Club (valderrama.com), the legendary venue of the 1997 Ryder Cup.

MIGHTY APHRODITE The greatest concentration of golf courses on sun-kissed Cyprus can be found on the western shores around Paphos, and none are finer than the luxurious Eléa Estate (eleaestate.com), a newly built par-71 beauty overlooking the sea. If you really like what you see, properties on the estate sell for around £1.1 million, but it’ll cost you considerably less to test yourself on the tricky, Nick Faldo-designed course. The reviewer from Sky Sports reckons that the fourth and fifth are “more sand than fairway”, fairwa so be warned.

GOLF MADE EASY The Portuguese archipelago of Madeira is as close to a far-flung holiday as you can get on “our side” of the globe. To play golf there is a delight, and while your choices are few (the islands only take up as much floorspace as half of Greater London), don’t miss the chance to play at Santo da Serra Golf (santodaserragolf.com), one of the world’s best clubs. Redesigned by golf legend Robert Trent Jones Sr in 1991, it boasts several holes with breathtaking views of the Atlantic.

HOME ADVANTAGE: FAIRWAYS THAT AREN’T AS FAR AWAY MUIRFIELD, EDINBURGH A short drive from Edinburgh, this hallowed links course has hosted the Open Championship 16 times and has roots dating all the way back to 1744. muirfield.org.uk

ALWOODLEY, LEEDS If you need an excuse to linger in Yorkshire, this is it. A classic, 100-year-old heathland course with wonderful greens. alwoodley.co.uk

TURKISH TEE To be brutally honest, there’s only one place in Turkey where the golfing nuts head: Antalya. Once there, they seek out a swathe of green called Belek, which is about as near to a golf Disneyworld as you can imagine. Tiger Woods once caused a media scuffle here during the 2012 World Golf Final, but don’t let that put you off: the explosion of new courses over the past decade means you can usually find a quiet corner. The Montgomerie Maxx Royal course (maxxroyal.com) designed by Colin Montgomerie comes recommended, as does Nick Faldo’s 27-hole effort (corneliaresort. com), which is about 2km – or 10 good whacks – away.

MALTESE MAGIC There’s lots to like about the historic island of Malta, from its lovely, secluded beaches and dazzling blue lagoons to the ancient city of Valletta. But if you’ve brought your clubs you’d better make a beeline for the Royal Malta Golf Club (royalmaltagolfclub.com), which has been attracting holiday-making hackers since 1888. It’s not a long course, at a leg-friendly 5,014m, but it is the only spot for about 100km in any direction where you can enjoy a round. Train your camel With a personality somewhere between Sir Alan Sugar and Jeremy Paxman, the humble camel has only ever been highly grudging when it comes to co-operating with human beings. For millennia, from Morocco to Egypt to the dunes of the Arabian Empty Quarter, we’ve been thrown off, spat at, bitten and generally treated like a below-par Britain’s Got Talent contestant at the hands of these most miserable of mammals. OK, so they’re prepared to walk us across mile upon mile of featureless, barren desert. But can’t we be friends while they do it?

There were camels in Tunisia long before the first tourists ever set foot in the country. But, as the nomadic way of life slowly disappears, camels, far from being made redundant, are just as important now as an easy way for visitors to get a (rather bumpy) feel of what traditional life was like for the tribes that criss-crossed the gargantuan plains and peaks of the Sahara. But how do you get the best out of your beast and turn it from snarling foe to ally? Here are seven tips to get your camel to start caring.

Let your camel have a good old sniff. Camels become more trusting the more they’re familiar with your odour, so let them have a snort around your person before you start riding. Rumours that camels are particularly fond of anyone wearing Lynx Africa are, so far, unproven.

To make your camel kneel so you can clamber on, gently pull the rope downwards. If the camel refuses, then softly tap on its feet. Talk to it, but never shout. Make your camel feel comfortable. It doesn’t matter what language you use. Camels have so far failed to master even the basics of Arabic.

Very gently, place a rope around the camel’s neck, tie it in a knot and tug on it so the camel feels that you and he/she are joined together. Do try not to strangle your camel. As with humans, this act can cause bad feeling and resentment.

Keep talking to your camel while you let it smell the saddle in your hands. Camels love familiar smells, so it can help if you splash a little camel urine over the saddle. Don’t be so prudish. This is the desert, not Downton Abbey.

Can you believe it’s almost time for you to defend your title? The Rio Olympics are just round the corner. Yeah, they come around so fast, the Olympics. I’m actually nervous because I have to race well to qualify and lay down a marker. Apparently it’s going to be a tough course in Rio. Shortly

You have a healthy rivalry with your brother Jonny. Can you remember when you guys really started being competitive? We’ve always been competitive. It started the minute we began doing sport – whether it was a football match in the garden or table tennis. I wanted

to beat him from then on. I think in some ways competing against your brother is easier because you know each other so well. I know what his strengths and weaknesses are. Despite competing, we do help each other and share information. Whether Jonny listens to the advice I give him I’m not sure! What are some of your favourite cities around the world to compete in? I love racing in Stockholm. It’s a really good course and there are always decent crowds. Hamburg is also great. And then London, of course, is fantastic, especially the Olympic course. You often get up to 100,000 people cheering you on. We are very lucky in that we get to race in a lot of different places.

It’s quite a nice sport because you’re always out and about. You’re running around and riding around. So even if you don’t have enough time to properly explore things, you always get a proper feel for a place. With all the travelling, how do you ensure you feel fresh and ready to compete when you get off the plane? We tend to travel a good few days before the event starts. And then it’s just being healthy on the flight, keeping hydrated and being comfortable. Do you ever make a mental note when racing that you want to come back to a place for a holiday? Yes, there are a lot of places I’ve been to that I want to go back to. I would love to do more skiing. I loved skiing when I was younger and I haven’t really been able to do a lot of it over the last 10 years. So I would love to go to St Moritz. I spend a lot of time training there in the summer. I’ve been there every year for the last six or seven years. It would be great to go back in the winter and ski there.

You mention how much you love cake on your Twitter account. Which is your favourite? I love any kind of cake! We spend a lot time riding our bikes in the Yorkshire Dales and we’ll stop at a cafe and have tea and cake. It all depends on the mood I’m in, so it could be chocolate, carrot cake. Can you tell us about the Brownlee Foundation, which encourages children to be more active by introducing them to the triathlon? The main reason for starting it was the realisation of what sport means. Jonny and I as individuals don’t just get a career out of sport, but also a healthy lifestyle. At school, as an overactive kid, it was very good for me to expend some energy, and it would be great if we could pass any of that on using triathlon as a vessel. Last year we managed to get 1,200 school kids in Leeds to do a triathlon and be active for a day, when they might not have been otherwise. In the past decade, the world has gone bonkers for burgers – but has the hype for gourmet versions gone too far? The hamburger is one of the world’s most uncomplicated food creations (basically meat in bread), but hit a burger joint today and you can choose from patties topped with peanut butter (Elvis’s favourite, apparently), fried noodle “buns”, and pigeon and worm burgers (yuck). Last year Burger King Japan got on the weird wagon with its black burger, featuring charcoal cheese and squid-ink sauce. We need to go back to basics, and there’s only one country to look to: America, the home of the humble hamburger. Indeed, along with the likes of “The StarSpangled Banner”, the Statue of Liberty and Britney Spears, it’s one of the country’s biggest cultural icons. Which is why Aussie chef Daniel Wilson went to the Big Apple to learn how to make the perfect burger. And then he wrote a book about it. “I did my chef training in Grand Rapids, Michigan, for three years and then spent six months in New York,” says Daniel. “I have to say I ate a few burgers in that time! I love the simplicity of the USA’s classic, old-school burger. I believe if you start with good ingredients then you’re already ahead of the rest.” Well, quite. Named after his restaurant, Daniel’s book, The Huxtaburger Book: The Art And Science Of The Perfect Burger (Hardie Grant, £16.99), starts off dissecting the essential elements of the burger, such as the bun (“If it’s on ciabatta, focaccia or Turkish bread, it’s not a burger – sorry!”); the meat (“The beef patty is the star. If your patty isn’t good, the whole burger is ruined…”); sauces (mustard, mayo and ketchup, of course); and cheese (optional, but it’s not really an American burger without some). Why so serious, Daniel? “The idea of meat in a bun with fixings and condiments is nothing new, but the quality and type of ingredients can greatly affect the outcome.” Daniel’s classic, the Huxtaburger, is simplicity itself – although his beef patty is a little extravagant, made from freshly minced Wagyu beef. It would be pretty boring to write a cookbook with just one burger recipe, so while the Huxtaburger is the star, Daniel does have a few off-the-wall ideas: a tonkatsu pork burger with apple and fennel slaw; a soft-shell crab burger with green mango salad and chilli dressing; and, um, the “douche” burger, with Wagyu beef, foie gras aand cherry ketchup. “Purists argue that a burger must contain a beef patty – all the rest are actually sandwiches. But you can make up your own mind.” sandw

Blag your way into Cannes Need a Hollywood hotshot to direct your film? Or just fancy partying with the A-list? Here’s how to fake it at the world’s biggest film festival I’m at the Maps To The Stars premiere. Every seat in the stadium-sized Grand Théâtre Lumière cinema is occupied, and my invite only came via a producer friend with an absent plus one. My view of the screen is slightly obscured by an oversized pair of Gucci sunglasses perched on the perfectly coiffured bob of a woman with the kind of deep-set tan that only comes from months of sunbathing on a yacht in St Tropez. Suddenly, there’s an outbreak of applause and just 10m away is Robert Pattinson. He’s wearing a black tux and a midnight-blue shirt, and when he waves in my direction, I wave back in the hope that somehow he sees me – and not St Tropez tan woman. This is Cannes, after all, where anything is possible. I’ve been issued with a yellow press pass, which is low down the access food chain but gets me into the international pavilions where each country has a marquee for networking. It also gets me into the press screenings. Above yellow are blue then pink; both fast-track you through the vast screening queues. White basically means you’re Steven Spielberg. But how can any normal person hustle their way into the world’s biggest film festival? OK, you might not have directed a blockbuster anywhere outside of your dreams – but do you have a film blog? Do you tweet about films 24/7? Do you have a Vimeo page full of vlogged movie reviews? If you do, try applying for that yellow press pass – you never know your luck. Even beyond the application deadline, journalists have been known to receive accreditation. If you’ve tried that with no success, don’t put away your black tie just yet. There are other chances to rub shoulders with the right people. Jonathan Crocker, former editor of Little White Lies film magazine,

recommends hanging out at The Petit Majestic: “a little corner pub where all the Brit journos go for a beer between screenings and interviews. That and the lawn outside the Grand Hotel.” It’s on that lawn I get chatting to PR Tina McFarling about just how big Cannes has now become. “In the 1990s there were seven or eight films that grossed more than a million,” she tells me. “In the noughties there were about 2,000.” The hub of the activity is centred along La Croisette; the designer shopflanked strip that serves as a kind of catwalk for Hollywood A-listers. At the marina end a huge stage is erected to allow the talent access into the Lumière – and for us mere mortals to watch them. If you’re looking dapper, one of the local photo agencies may snap you and present you with a card. You’ll have a limited time to retrieve the pic online and order it as a Cannes memento.

It’s here Uma Thurman and John Travolta hosted a party to celebrate Pulp Fiction’s 20th anniversary at last year’s festival, with champagne cocktails served on the twice-raked sand. Or try your luck at the Hotel Martinez (cannesmartinez. grand.hyatt.com), where Kylie and Cara Delevingne stayed in 2014. Blacked-out limos roll up in the early evening awaiting their posh passengers, so you’re pretty much guaranteed a glimpse of a celeb. Afterwards head to Euro-flash Gotha (gotha-club.com), where Justin Bieber stripped off to show his tats during last year’s festival, then had a rap battle with Wesley Snipes. Finally, if you’ve failed to hop on a yacht or charm your way into an afterparty, head to an open-air screening at the Cinéma de la Plage on Macé Beach. Tickets are available on a first come/first served basis and films begin at 8.30pm once darkness has fallen. Even if you don’t meet any Hollywood stars, at least you’ll see some real ones. Guests at Ibiza Gran have easy access, via the east wing, to the sophisticated Cipriani restaurant (cipriani.com), which also has outposts in Miami, Bodrum and Hong Kong. The Bellini lounge has views of the Dalt Vila, the walled part of the old town, but the views inside are well worth pulling out the selfie stick for. This, after all, is where Orlando Bloom tussled with Justin Bieber last July, and where the Kardashian clan hobnobbed with Lindsay Lohan and Sean “Puffy” Combs. This year the complex is set to open a new casino, and an entertainment space that will host a Cirque du Soleil spectacular. Once you’ve digested your pasta, make like KK and head to Amnesia (amnesia.es), where she and Paris Hilton buried the hatchet last August. The former besties allegedly fell out of touch when Kim’s quick rise to fame threatened to topple Paris’s reign as

Hollywood’s social Queen Bee. But when Paris regrammed a photo of them both in the VIP section saying: “So much fun with @KimKardashian this weekend at @AmnesiaIbiza. The first time we ever came to this magical island was together. Such an amazing trip! Great catching up with you too beautiful!” the peace treaty was confirmed. Finally, we recommend heading to nearby San Rafael. It’s where Kim celebrated the 40th birthday of Riccardo Tisci (Givenchy’s artistic director). The stud farm he rented for the bash is private, but the village itself, with its white-washed church and pottery shops, is well worth a visit. After an afternoon’s mooch, head to Fay, the new rooftop Asian restaurant at the Cotton Beach Club (cottonbeach club.com), which could well be where the Kardashians rock up next. Prague’s food revolution Move over Heston, Ferran and friends. Meet the new wave of creative chefs transforming the city into Europe’s latest culinary capital

Stuffed cabbage, dumplings, pork knuckle: Eastern Europe doesn’t exactly have a reputation for creating delicate flavours and pushing culinary boundaries. But in recent years a handful of visionary chefs in the Czech capital have been leading a foodie experiment – with mouthwatering results. First up came Michelin-starred La Degustation Boheme Bourgeoise (ladegustation.cz), which caused a stir in 2011 with its innovative six- (or, for real gluttons, 11-) course tasting menu that put a 21st-century twist on the recipes of local 19th-century culinary heroine Marie B Svobodova. Soon after came the gregarious British chef Paul Day and his Asian fusion hit Sansho (sansho.cz). Bursting on to Prague’s foodie scene in 2011, Sansho’s six-course taster menu quickly became legendary among epicurious locals, with unpretentious yet inventive dishes such as crab sliders with

wasabi cream, melt-in-the-mouth pork belly in sticky-sweet pepper sauce, and trout smoked in jasmine tea. While the cooking was cutting-edge, the setting, with its simple interior dominated by long communal tables, was as down-toearth as Paul himself – who can often be spotted chatting to diners about the provenance of the restaurant’s meat (always Czech, always ethically reared), while ensuring everything meets his exacting standards. Across the street from Sansho on Petrske Namesti, Paul also recently launched Maso a Kobliha (“Meat and Doughnut”, masoakobliha.cz), a pub/ butcher aiming to convert Czechs to no-nonsense British classics like venison pie, faggots and peas, and Scotch eggs. Black Country native Paul has already garnered the seal of approval for his pub grub: five months after opening its doors in September 2014, Maso a Kobliha made it into the prestigious Michelin guide. The recipes are gutsy

– often literally, as there’s offal aplenty on the menu – but Paul’s “whole animal philosophy” isn’t faddy experimentalism. “It’s not about aiming to shock, but you might have a really good chilli and not know there are three pigs’ trotters in there,” he says. Whatever your feelings on innards, few will be able to resist resident baker Juliana Fiserova’s delectable custard doughnuts: the perfect post-sightseeing sugar rush. Elsewhere, you could be forgiven for thinking that Heston Blumenthal was presiding over the latest arrival, Field (fieldrestaurant.cz), which first fired up its stoves in November 2014. However, according to head chef Radek Kasparek, Scandinavian cuisine is the major inspiration behind the unorthodox menu. “Before Field I thought the same as 95 per cent of chefs in Prague,” says Radek, also the presenter of hit Czech TV show Kasparku, Var! (Kasparek Cooks). “Now, I’m trying to break away and

find my own path – to provoke.” With this in mind, his dishes are presented among bark and moss as though they’ve come from a forest glade; sauces are created from unusual bases such as bread dough; and savoury classics like steak tartare are served with a twist, such as a scoop of Béarnaise ice cream. “I’ll never have chocolate fondant or vanilla panna cotta on the menu here: it would be boring,” says Radek. Dessert fans won’t go home disappointed, though: expect a myriad of palette-tingling flavours including tangy rhubarb, salty caramel and fruity tonka beans. This bold selection of flavours is “Free Range Dining” or as the avant-garde kitchen king puts it, “utter freedom in creativity”. The results are delectable, and leave no room for doubt: Prague is putting flavour at the forefront. Holiday in Prague with et2.com and et2holidays

Don’t let knee conditions spoil your summer Knee problems are extremely common but with appropriate treatment, they do not always have to curtail enjoyment of golf, tennis, cycling or other summer activities. The normal function of the knee depends on smooth, gliding joint surfaces, aided by meniscus cartilages, stabilised by ligaments. Pain, instability, catching and clunking, are all symptoms of knee problems. Instability can be caused by a definite injury to a ligament, for example the anterior cruciate (ACL), or may be a side effect of background osteoarthritis (“wear and tear”) or meniscus (‘cartilage’) tears. Although meniscus tears often occur in fast-moving pivoting sports such as football or rugby, the commonest cause is disappointingly mundane; for example, standing from sitting, kneeling or crouching. Lining up a putt therefore has its own inherent dangers, particularly into and beyond middle age. There may be sudden pain or a click, often on the inner aspect of the knee, and swelling may occur later on. Typical ongoing symptoms are of pain, catching or clunking. Diagnosis is relatively straightforward, but occasionally an MRI scan is necessary. Treatment initially is rest, anti-inflammatory medicine and physiotherapy, but if it fails to settle,

ARTHROSCOPY (keyhole surgery) is a safe and reliable procedure. The torn fragment is trimmed leaving as much normal cartilage behind as possible. It is done as day case surgery, and you may be back in action in 2-4 weeks. Osteoarthritis, where the joint surfaces are worn down to the bone, is a more insidious condition which can be very painful and disabling. Many golfers can still struggle stoically around the course, and it might give a bit of incentive to keep the ball on the fairway, but eventually symptoms deteriorate despite simple measures such as physiotherapy and pain-killers. In this situation PARTIAL or TOTAL KNEE REPLACEMENT can be considered. Knee replacement involves resurfacing all or part of the knee with a metal and plastic bearing. A successful result, which specialist knee surgeons expect in more than 95% of cases, can give phenomenal pain relief and functional benefit. Daily life can be hugely benefited, and low impact sporting activities may be resumed. “EVERYONE’S BEEN VERY NICE TO ME SINCE I WON A BRIT AWARD. The reviews have even been better, even though I’m not really doing much differently. It just goes to show that if you win an accolade, people start looking at you in a new light.” A healthy dollop of scepticism isn’t the only thing Paloma Faith has to offer when JetAway catches up with her a few dates into her UK arena tour. On stage she’s larger than life – best known for her raw, soulful voice, bold fashion choices and bouffant of wild strawberry curls – but on the phone to us en route to her next gig (last night Newcastle, tonight Cardiff), she speaks in a soft, sugary voice. We were expecting her to be gregarious and gobby, but maybe she’s still in shock. After all, it was only ten days ago she won Best Female at the Brit Awards, the icing on the cake after her third album, A Perfect Contradiction, became 2014’s best-selling album by a female artist in the UK. After seven years in the industry, the 33-year old who, by her own admission, thought she might be a perpetual runner-up – the bridesmaid but never the bride – has finally made it. And she’s endearingly unfazed by it all. “I still don’t really look back on the last 12 months and feel it’s my life,” Paloma says. “I’m a big fan of Instagram, and I posted a picture up the other day that one of my team had taken of the audience from the stage, and I was like, ‘Whose life is this?’ And it was mine!” she laughs. Her disbelief and delight at winning was clear from her acceptance speech, in which she dedicated her Tracey Emin-designed statuette to “all the underdogs and all the grafters”. What did she mean by that? “I could stand up there and say, ‘I won!’, but so much has gone into it, and so many other people have contributed towards it. When I win an award it’s not just for me, it’s for all the others who have worked around me and who have believed in me.” Like who? “From a base level,

my school teachers, who were brilliant and really creatively encouraging, to all the people who taught me how to dance and those I worked with while I was trying to get signed. And those who rig stage lighting, build tour sets and load trucks – all the things that people overlook. If I’m honest, I feel more of an affiliation with the underdogs than I do with the success stories. I feel closer to the underdogs because I was one for such a long time.” True to form, Paloma’s table at the Brits was filled with her oldest friends and closest team members. There wasn’t a celebrity chum in sight, unlike many others, who surrounded themselves with A-listers – something she found odd. “Ellie Goulding presented an award to Taylor Swift calling her ‘my friend’, and then Taylor Swift was like ‘my friend Ed Sheeran’. It all felt a bit cliquey,” she says. “But I’ve always kind of felt like that in life, really. I’ve never really been in the in-crowd.” Born and raised in East London, Paloma’s first step towards stardom was learning ballet aged four. It was something her mother encouraged her to do,

but not because she was a pushy parent. “She put me in dance classes because I was quite clumsy as a child. My mum is terribly uncoordinated, too, and she didn’t want me to feel the kind of physical awkwardness that she’d spent her life feeling.” After completing her A-levels, Paloma went on to train as a professional dancer, something she now says was a mistake. “It was brutal, and not very intellectually stimulating. It’s all about technique and it makes you physically obsessed, which obviously can lead to issues to do with eating and body dysmorphic disorder.” The subsequent theatre MA she took was the antidote – a sort of creative rebirth – and from there she began performing in pubs and clubs, initially mimicking soul and jazz singers such as Billie Holiday and Etta James, whose records still have an obvious influence on her. A record deal eventually followed, as did three double-platinum albums. Using her fame and position to speak out about issues that matter is clearly important to Paloma. In spring this year she joined the march for equality in London on International Women’s Day, talking passionately about her beliefs to the world’s media. “Afterwards Annie Lennox sent me a message just saying thank you for reminding her that she’s not the only one doing this, and she’s glad another

So, would she say she’s a feminist? “I was brought up a feminist, and I think feminism gets a bad name. People think it’s just a group of angry women but it’s not – I know loads of men who are feminists. It’s about wanting equal rights, and just because women in this country have advanced, it doesn’t mean there isn’t further to go,” she says. “Seventy per cent of our government is male, and that’s not representative. And beyond the confines of our own country there’s still a lot of injustice going on because of gender. We should take responsibility for each other. As an artist I don’t think enough people in my industry use their position to speak about things that are going on.” She talks enthusiastically about the UK election, having taken left-wing political journalist Owen Jones on tour with her as a sort of support act, inviting him to speak to the audience for 10 minutes before she takes to the stage each night. She’s aware it’s an unusual move. “People say, ‘What’s the point? It doesn’t make a difference,’ but if everyone did something to change things then eventually we would. So my main message on this tour is vote in this election, especially if you’re a woman. Oh, and also, don’t vote UKIP,” she laughs.

After the UK leg of her tour, things show no sign of slowing down, with performances lined up in Australia, Croatia and Hungary before she hits the summer circuits, where she’ll be playing everywhere from the New Orleans Jazz & Heritage Festival to Scotland’s T in the Park and V Festival in Essex and Staffordshire. “It’s amazing playing festivals in the UK because the crowd sings along. When I go abroad I’m still working on those territories so it’s more like trying to persuade people, but British festivals feel like a homecoming.” Away from the spotlight, Paloma’s personal life is also blooming. She’s been in a relationship for two years with someone she is careful to shield from the public eye, but says she’s happier than she’s ever been. “Being away from home is more stressful for the people you leave behind,” she says.

“So it’s challenging. I’ve been in relationships before where the other person couldn’t cope with it, but now I’m with someone who really understands, so it doesn’t put too much pressure on us. He just focuses on being happy when I get home rather than being annoyed with me for going away.” Clearly loved-up, she admits her thoughts are now turning towards other life goals. “In all honesty, I would like to have had a child by now, and as a woman you have that body-clock issue going on – I turn 34 this year and I feel like I need to get on with it.” So where does she see herself in a year’s time? “I’d like to be releasing my fourth album and holding a baby,” she confesses. Is her boyfriend on board with that? “He’s got no choice!” she cackles. And judging by her successes to date, when Paloma sets her mind to something, it’s only a matter of time. Once upon a time in the States, when alcohol was outlawed during the Prohibition years, the proliferation of illegal bars and concealed clubs confirmed what we always suspected: anything forbidden is fun. But it wasn’t about the booze or the underground social scene, it was about being in on a brilliant secret. These bars were called speakeasies, not only because you were

encouraged to keep your voice down (so as not to alert the neighbours or the police), but also because you weren’t supposed to talk about their existence. Almost 100 years on, and Rome has got in on the act – with no Prohibition required. One of the best places to drink creative cocktails is hidden behind a vintage phone cabinet; another is accessed through a freezer door in

a humble sandwich shop; another is concealed behind a wardrobe at the back of a restaurant. Some places require a password to get in; at others, it’s a matter of calling ahead or simple word of mouth. Fortunately, you won’t need to arrange a secret rendezvous to discover the capital’s best speakeasies. Here’s our lowdown of the coolest and most clandestine cocktail bars in town.

THE JERRY THOMAS PROJECT Five years ago, three barmen who had been working all over the world came together with the idea of bringing cocktail culture to Rome. “We had plans for a barman school,” says cocreator Roberto Artusio. “My colleagues Leonardo Leuci, Antonio Parlapiano and I were sitting in a bar discussing the idea one night. It was a dark little place without windows on the street. When the owner explained they were selling up, we suddenly realised that we were sitting in a room that we could transform into a speakeasy and teach cocktail seminars on the side.” The very first speakeasy in Rome, Jerry Thomas is still the king for those in the know – this is where barmen and chefs come to drink after work. “We have a collection of more than 800 bottles of spirits,” says Roberto, “and now we produce our own artisan vermouth, gin and bitters. There’s live music from jazz musicians on Tuesdays and weekends.” Jerry Thomas is concealed behind a matt-black door with a brass owlshaped knocker and a neatly inscribed plate bearing the words “Professor Jerry Thomas”, and the name is a homage to one of America’s original cocktail kings. Rome’s oldest speakeasy is also one of the hardest to access: priority is given to members who come equipped with the password of the day (there’s a hint on the bar’s website) as well as a table booking. However, by calling 24 hours before to reserve a table (the bar seats just 35, so we suggest you do the same), we were waved straight in, no password required. CLUB DERRIÈRE When Francesco Gasparri opened a cheerful osteria in September 2014, he was determined to create a dark twin, with a seductive, mysterious bar concealed inside. And indeed, Club Derrière is a delicious contrast to the restaurant’s homely cream interior, with concrete and brick walls and a glassed-in bar area that looks like the work of a creepy collector (note the vintage butterfly and frog collections, battered armour and well-worn rugs). “Speakeasies are the trend of the moment in Rome,” says Francesco. “And they’re the kind of bar I like to drink in. They create a relaxed ambience, with just the right amount of exclusivity. There’s no mobile signal in here so Club Derrière is about meeting people and talking to each other, not staring at your phone. The Club had two windows and doors opening on to the piazza, but we bricked them up to create a really intimate den.” On our first visit we fumbled around trying to locate the entrance. The door is marked 59 and equipped with a bell. Ring once, and one of the barmen will come and let you in. During the osteria’s opening hours, there’s another entrance: through a white wardrobe at the back. “We only serve cocktails here, no beer or wine,” says Patrick. “But we’re not snobs: ask us to mix anything, and we’ll happily oblige. I’d advise clients to try something a little bit special: we have artisan Italian liquors and after-dinner amari that you won’t find elsewhere.” Live jazz music on Fridays and Saturdays reinforces the Prohibition vibe. ARGOT There are no signs outside 93 Via dei Cappellari, but if you peer through the glass door, you’ll see candles burning in a dusky atrium beneath an old mirror. A doorman will step out of the shadows to ask who you are. Show some polite interest in becoming a member of club Argot, and suddenly you’ll be whisked downstairs where owners/barmen Francesco Bolla, Gabriele Simonacci and Gianluca Melfa will look you up and down and (if they like the cut of your jib) drink a glass of prosecco with you before allowing you to sign the register at this members-only speakeasy.

The team met while working at different establishments across the city, and were inspired to strike out on their own, naming their bar after the criminal dialect of Paris’ infamous Court of Miracles. “We don’t ask customers to remember a password, but anyone who drinks here has to become a member because of the kind of licence we have,” explains Gianluca. The doorman gave us a bit of a grilling on arrival, but five minutes later, we were in. We now have live gigs up to four times a week.” The cocktails are stellar – the Chocolate Cobbler was our favourite, featuring pressed fruits of the forest and orange with cocoa-bean liquor, a shot of red wine and a dash of port – although, unlike many contemporaries, they do serve wine and beer. SPIRITO It’s midnight on a Friday and a queue is snaking out of a sandwich shop in the hip neighbourhood of Pigneto. But this isn’t a mass attack of the munchies. Instead, the well-dressed crowd are disappearing one by one through a white side door that looks like a meat freezer with the words carni scelte (“choice meats”) written above in neon script. Pass through and you’ll enter Spirito, one of Rome’s newest speakeasies and the brainchild of Massimo Innocenti.

“I’d owned Necci, a restaurant and bar in a 1930s villa over the road, which had its kitchens opposite, for some years,” says Massimo. “I decided to move the ovens and open a sandwich shop hiding a fun secret: a speakeasy. In this day and age, everything is available on the internet, so I wanted to get back to something which was communicated by word of mouth.” Entering Spirito feels like wandering on to a film set. The barmen, in striped shirts, add a touch of vintage French flair, and they’re working behind a bar

fashioned from a casino table. No beer or wine is served, just exquisite mixed drinks with a twist, such as powdered meringue to balance the bitterness of gin. “What really gives Spirito an extra dimension is its roof terrace,” says Massimo. “It’s really popular for long, slow Sunday lunches and the vibe is completely different in the daytime.” Monday – Saturday, 8pm – 4.30am; Sunday 12 – 4pm, 6pm – 2am. THE CORNER CLUB Situated on one of Rome’s most elegant hills, The Corner is a new boutique hotel featuring 11 rooms inside an exquisite turn-of-the-century villa. With its firstrate restaurant and cheerful groundfloor bar and bistro, called Bistreet, you’d be forgiven for staying and drinking in either. However, those in the know head for a curious, old-fashioned public telephone at the back of the bar – and vanish after lifting the receiver. The trick is in the phone number, which unlocks a concealed door leading into the Corner’s secret, Parisian boudoir-style speakeasy. “The Corner Club was conceived as a unique party venue,” explains events manager Giorgia Iannone. “It’s intimate and fun. When we host private gatherings here the guests like having to dial their way in. However, on a normal night, we usually leave the phone unlocked so anyone can walk in and have a drink.” We enquired at Bistreet, and one of the waiters was happy to show us the way into the Club. Tuesday nights have a cool gothic vibe, with music to match, while Fridays and Saturdays see low-key DJs playing until 4am. Like most people, I have an endless slew of shudder-inducing teenage memories, yet one particularly haunts me: an illadvised family trip from our house in eastern France to Lisbon. A trip that my father – whom my mother lovingly nicknamed “El Cheapo” because of his mean streak – insisted we take in a nonair-conditioned car during a sweltering summer with record-breaking high temperatures. By the time we limped into the Portuguese capital, my brain had melted into such mush that all my memories of the city are a hot, resentful blur. So, there’s some irony in the fact that I’m returning to Portugal for the first time 20 years later, now cast in the role of the annoying parent, my 15-year-old son David in tow.

Luckily for David, I don’t know how to drive, so we’re flying. And our destination isn’t Lisbon, but the wet and wild Algarve region, where we’re having a mother-son surfing getaway. The closest my self-declared nerd of a son has gotten to “catching a wave” is reading the adventures of the Silver Surfer, among his pile of comic books. His heart is currently set on becoming a stand-up comedian – one with a rather twisted sense of humour, if the way he ribs me when I’m struck with a mysterious (age-related, he says) shoulder pain days before our adventure is anything to go by. As our flight takes off, he adds insult to injury by burying his big, bushy head right into the sore spot and falling asleep, while I cross my fingers this Portugal trip won’t prove a disastrous sequel to the previous one. It’s all health nuts and kids,” he says, pointing to a snap of his daughter, who started surfing aged five. Playsurf appears to be one of the smaller outfits here, which means David gets a one-on-one tutorial with his 18-year-old teacher, Gabriel. I happily lay on the Portimao beach,

called Praia da Rocha, watching them go through their stretching exercises before getting down to business in the water. The crowd around me is young and laid-back. Even the waves seem chilled and unthreatening. In the distance I see Gabriel coaxing David through several wobbly attempts to pop up on his board. I get distracted by my book, but when I look up, I see David finally standing up on his board and steering it like a pro. I’m proud, and so is he, smiling broadly as he joins me: “What a rush! It was repetitive but so much fun!” Stinking of seawater, he falls asleep in his hotel bed immediately upon our return, like a robot whose batteries have suddenly petered out. Come morning he’s recharged – albeit aching. After ploughing through the hotel’s breakfast buffet, it’s back to the beach. My shoulder’s still being uncooperative so I bunk off again, but David’s in fine

company, sharing Gabriel with three other wannabes: two teens and a sevenyear-old called Matthew who reminds me of an over-enthusiastic puppy. When he emerges from the water two hours later, David’s smile is slightly less wide than the previous day when he’d enjoyed beginner’s luck. But never mind, there’s another session to go tomorrow. We while away a gorgeously bright afternoon sampling some of Algarve’s famous seafood in a snack shack on the beach – including the biggest seabass you’ve ever seen, and a small school of grilled sardines. This before winding back to Carvoiero where we drop by Gelados & Companhia (geladosecompanhia.com), an ice-cream shop heartily recommended by our lovely taxi driver Paulo. David picks a gruesome combination of homemade

For wave after wave, I just keep wiping out pathetically. I laugh it off

The next day I finally squeeze into my wetsuit. And you know what? I look hot. Where’s Bruno when you need him? I follow David and puppy dog Matthew to the beach where Gabriel painstakingly

talks me through the steps to climbing atop my board – which all promptly fall out of my head when I slip into the water. For wave after wave, I just keep wiping out pathetically. I laugh it off before settling on body boarding for the rest of the afternoon. Matthew gives me pitying looks, but the family’s honour is safe thanks to David, who owns the waves, riding them with enviable ease. “That was awesome! It’s the first time I’ve ever been better at something than you!” he crows as we head home. “Erm, what exactly am I better at than you?” I ask, genuinely curious. He pauses to think: “Figuring who the bad guys are when we watch TV shows?” Looking at his big goofy grin and newly confident swagger, I declare the Portuguese holiday curse officially over. A SHORT WINDOW? The Azure Window on the Maltese island of Gozo got a little bit bigger in April 2012 when part of it broke off. There was a flurry of worry from locals that it might totally collapse in the near future, but Malta’s environmental ministry has concluded that it’ll be decades before this iconic arch in the sea disappears completely. The Azure Window was immortalised in the hit TV series Game Of Thrones (where it provided the backdrop to Daenerys and Khal Drogo’s wedding), but if you want to see it in all its glory, you’d still better go soonish.

Previously known as Texas Hollywood, it’s now called Fort Bravo, and a lot of filming (movies and TV shows such as Doctor Who) still happens here. He joined cabin crew member, Julie Robin, in surprising the pre-school class of three to five year olds. They chatted to the young aviation enthusiasts about what their jobs involve and where they fly to, before holding a fun masterclass on how to deliver a captain’s announcement and a safety demonstration. The class was also presented with a Jettoo lion mascot from the airline to look after.

Safety onboard Everyone at Jet2.com and Jet2holidays is dedicated to ensuring you have a safe, comfortable and enjoyable flight. That’s why we have the following guidelines in place YOUR SAFETY Knowing what to do in the unlikely event of something going wrong could make all the difference to you and your family. Our cabin crew are specially trained to ensure you remain safe at all times and they will guide you through a safety demonstration before take off. It’s really important that you pay attention to this as it contains vital information on the location of the exits and how to use the emergency equipment. Our primary concern is your safety at all times, but please remember that it is an offence to refuse any lawful command from the captain or the cabin crew.

MOBILES & ELECTRONIC DEVICES The use of mobile phones, e-readers, laptops, notebooks, tablet computers, MP3 players and handheld electronic games etc is restricted onboard. Once the aircraft doors are closed you must ensure your item is placed – and remains – in flight mode for the duration of the flight to avoid any accidental reception or transmission. All devices must be fully switched off and stowed securely for take off. Our cabin crew will let you know when it is permitted to use your devices and will remind you when they need to be switched off. Please remove your headphones for the Safety Demonstration.

SEATBELTS You will need to fasten your seatbelt when the plane is moving along the ground, as well as during take off and landing. It’s a good idea to keep it fastened and visible to the cabin crew whenever you are seated, too. Children under two will need to sit on your lap secured with one of our infant seatbelts. If you need some help, our crew will be happy to assist.

SMOKING Smoking is not permitted on any of our flights. This includes the use of electronic cigarettes as well. You must not smoke anywhere inside the aircraft – including your seat, the aisle or in the toilet – or during your journey to and from the terminal building. If you do smoke, you may face prosecution and a substantial fine – it’s just not worth it!

PASSENGER CONDUCT POLICY We want you to have a great time while onboard, but we also expect you to behave in a responsible manner at all times. We believe that our passengers and staff should not have to experience foul language or any other unacceptable behaviour that reduces overall enjoyment onboard. If you fail to follow our policies, you will have to face the consequences, which could include being banned from future flights, fines or even prosecution.

ALCOHOL Alcohol and flying don’t always mix well! Being in the sky increases the physical effects of alcohol on your body. You do not have to abstain totally, but think twice before having too much to drink. It’s actually illegal to be drunk on a plane, so take it easy! It’s also worth remembering that if you are going to have an alcoholic drink it must be supplied from our SkyShop bar. In the interests of safety, you are not allowed to consume your own alcohol onboard.

INFANT FLOTATION EQUIPMENT Those of you travelling with infants under the age of two will notice that our cabin crew will hand you an infant lifejacket prior to take off. This is a requirement under the European Aviation Regulations that all airlines must adhere to. You will find instructions on how and when to use it on your safety card (located in your seat pocket) and also on the packet itself. If you have any questions, please feel free to ask us. It is an offence to open the packet or remove it from the aircraft unless instructed to do so by your cabin crew. Please ensure that you hand it back to the cabin crew at the end of the flight.

KEEPING YOU SAFE & COMFORTABLE Changes in the cabin air pressure can make you feel a bit strange! If you experience discomfort in your ears, simply swallow hard or hold your nose and gently breathe out with your mouth closed. You will arrive happy if you arrive hydrated, so we recommend drinking plenty of water and having a little sleep rather than sleeping the entire flight. When you are allowed to get out of your seat, walk around to stretch your legs. If you feel unwell, please tell us and we will look after you! Hypodermic needles are permitted onboard for medical use only and should always be disposed of safely in a sharps box. If you need to dispose of any sharp item, please contact the cabin crew.

HOT DRINKS Should you order a hot drink onboard, please take extra care and always use the lid provided, making sure it’s securely fastened. Do utilise the cup holder on the back of the seat in front of you to safely store your drink. Following these simple steps will reduce any chance of spillages and injury, and allow you to safely enjoy your warm beverage.
