WHAT WOMEN WANT!
WOMEN WANT TO AGE WELL, NOT HIDE THEIR AGE, OR BE DEFINED BY THE NUMBER OF BIRTHDAYS. SOME CALL IT AGEING GRACEFULLY, OTHERS CALL IT BEING BLESSED TO AGE!
By Cosmetic Nurse Rajdi Gemeri
The ‘invisible years’ can be described as a stage in life where we feel like we are no longer ‘seen’ the same way in society as we once were. A time in life when we all start to experience a change in our physical appearance, the changes to our skin, our bodies, and our hormones. A time when we start to do things for ourselves and not for others to notice us! This is why I wanted to write this article; because as a fifty-something woman, I am now on this journey.
Rapid changes in my skin led me to search for products and treatments that improve the quality of mature skin – what improves hydration, firmness, and light reflectiveness of skin?
The number one request we hear at Pause is that women want to have healthy skin. Their top priority is to feel better about themselves. That means having healthy-looking, radiant skin that they don’t have to try and cover up. We all know the older we get the less forgiving makeup and concealer are!
Common age-related skin concerns are dryness, looseness, age spots, capillaries, wrinkles, and the loss of volume causing jowls. All of these are exacerbated when entering perimenopause/menopause. Hormone changes can leave our skin unbalanced, dry, and aged almost overnight. Products that once worked can suddenly stop working.
At Pause, our focus on skin health encompasses hydration, elasticity (the ability for the skin to bounce back), laxity (the looseness or loss of firmness), and smoothness (quality and clarity) to achieve individual skin goals. Our consultations determine your skin goals and how the use of prescription skincare, in-clinic skin and injectable treatments can help achieve that healthy glow.
Advances in cosmeceutical skincare have seen developments in products designed specifically for estrogen-deprived menopausal skin by working on estrogen receptors to trick the skin into thinking and behaving as if it were younger. Other products work on the microbiome of the skin (working
on the good and bad bacteria on the skin) and then there are ones that target age spots by stopping cells at the DNA level from replicating and making more pigment. Other advances include how deeply ingredients can penetrate the skin, how they can influence the skin’s structure, and better hydrate the skin by making proteins in the skin responsible for hyaluronic acid and collagen production. The science of active cosmeceutical grade skincare is fascinating and one we try to be abreast of. There are even moisturisers that can plump your skin for up to eight hours and work on transmitters in the skin that injectables work on!
Injectable products continue to evolve, and some are designed to remodel the skin, stimulate collagen and elastin production, and work on the vitality of fat pads (they shrivel as we age). Other products contain ingredients to help lighten and brighten the skin. Muscle relaxants can be used to not only reduce wrinkles but to also have a tightening effect on the skin helping to minimise the appearance of pores and jowls if placed correctly into the right muscles. Injectables are so much more than just replacing volume nowadays.
New devices are continually being developed to maximise collagen and elastin production to achieve skin tightening and toning and minimise the appearance of pores, wrinkles, pigmentation, and vessels. Technology is advancing at rapid rates so much so that once upon a time these treatments would have sounded too good to be true. I can reassure you nothing is introduced into the clinic without being tried and tested first to ensure results can be expected.
We are never too old to start caring for our skin. If you’re not sure where or how to start, we offer complimentary consultations, and it would be our honour to help you.
Here’s to redefining ageing with confidence!
With love,
Rajdi

SURVIVING THE HOLIDAYS
By Abbi Golightly
1. Have a back-up plan
No matter how hard we try to make Christmas that “picture-perfect” day, things can and often do go wrong, especially in separated families.
If the issue that arises is small, just make a note of it for the following year so you can think about what happened and do what you can to stop it from happening again.
Unfortunately, high spirits (including daytime drinking of alcoholic spirits!) and the build-up of family pressure can erupt on Christmas Day which can result in plans being ruined, orders being breached and sometimes, just downright terrible behaviour.
If these things happen to you, protect the children from exposure to such behaviour and if necessary call 000
immediately for support if your or the children’s safety is at risk. If your lawyer is closed over this period (most firms close for around 2 weeks), make a note of what happened (as close as possible to the event so that your recall is clear) and then book a meeting with your Family Lawyer as soon as possible after they re-open.
2. Try to remember the true meaning of Christmas
Christmas is really about love, family, friendship and appreciating how privileged we are.
It is not about winning the battle with your ex, being the parent who gives the best gifts, the one who spends the most money, or the parent who takes the kids to the best theme park or holiday destination. Kids know when you are competing for the title of “best parent” and, in all honesty, they don’t like it.
OMB FAMILY LAW’S TOP TIPS FOR SUMMER HOLIDAYS
3. The world will not end if the children do not see both parents on Christmas Day.
It may be best to allow the children to spend Christmas Day with one parent and Boxing Day with the other, allowing the children to enjoy time with both sides of the family without feeling rushed.
This is particularly important if seeing both parents would cause the children to spend a significant amount of time travelling between households. A common solution is to alternate the year in which the child spends Christmas or Christmas Eve with each parent. Remember that Christmas is for the children first and foremost, so put your personal feelings, opinions and wants to the side and make arrangements that benefit your children primarily.
4. Changeover should be stress free – do not fight in front of the children.
Exposure to conflict has lasting effects on children and can damage the relationship between a child and their parent.
If you believe that it likely that the other parent will become verbally or physically abusive to you when delivering or collecting the children then you must consider safe alternatives such as having a trusted friend or relative assist with changeover, or depending on the age of the children allowing them to enter their parent’s property and you remaining outside in the car or at the kerb side.
5. Do not prevent a child contacting the other parent.
It is important for children to have a meaningful relationship with both of the parents where at all possible. If your child wants to call their mother or father in their time with you, use your discretion as to whether timing is appropriate but otherwise you should encourage regular contact especially if the child expresses the wish.
Let them enjoy telling their other parent about all the wonderful things that have occurred in your household and allow their other parent to experience that joy. It is only a small imposition on your time, but will mean the world to the other parent.
6. Communicate and be flexible.
Keeping an open communication with the other parent is best for the children as long as that communication is respectful. You should try to provide information to the other parent on anything to do with the children that is relevant to the other parent’s time with the children or regarding the children’s activities, schooling, health or well-being. Also if changes need to be made to arrangements from time to time, try to accommodate if possible provided enough notice is given.
7. Allow your child to take items of comfort or gifts between homes.
Particularly for young children, having favourite and familiar items with them can assist them to settle in the other parent’s home, such as teddy bears, blankets, or favourite toys, provided that there is a clear understanding between the parents that these items travel with the child and if something is left behind and the child becomes distressed, how that item will be delivered back.
Making children keep their toys and gifts at your house creates a circumstance whereby the children think something is wrong with their other parent’s home. Allowing free passage of toys and belongings ensures that the children feel they have two homes rather than two “houses” – the difference is immense
8. Where problems arise, consider mediation as a first option.
Unhelpfully many services including legal services close over the Christmas and New Year period. Unless there are very urgent circumstances or there is a significant risk of harm (in which case you can contact the police), you should contact a mediation service in the New Year to arrange for Family Dispute Resolution so that 2024’s holiday period doesn’t suffer from the same hiccups that 2023 did.
If you anticipate issues, then please engage with your legal team now, to ensure that steps can be taken to progress matters and agreements reached, prior to the Christmas 2023 closure.
From the OMB Family Law family to yours, we hope that your 2023/24 holiday period is filled with joy and wonderful memories. We remain available to assist you during the holiday period by reaching out via our website, omb.com.au

(about 7 months post surgery) my mum asked me what I wanted for Christmas – at that time I was bang on the 95kg – and I decided I wanted to finally do my skydive.
On my 12 month “surgiversary” at exactly the same time I was under a year prior – I threw myself out of a perfectly good aeroplane and FINALLY got to experience that amazing freefall over Kirra beach, and yes I’m going back for more! If I hadn’t had this surgery I don’t think I would ever have been able to skydive, and yes my friends and family think I was nuts for throwing myself out of a plane! This surgery, along with all the other good things like being able to sleep, less achy joints and being able to buy clothes more readily, has helped me to finally live that dream.
Advice for anyone considering the same surgery as you?
Go and get a consultation! Just go and find out what your options are. You may ultimately decide it’s not for you, or you may grab on with both hands and go for it – but how do you know until you go and find out? I have found it worth it for me, and so have a number of other people I know – so go and find out for yourself.
Charlize Theron: Gorgeous and Gutsy
CHARLIZE THERON IS EQUAL PARTS GORGEOUS AND GUTSY, GRACING OUR SILVER SCREENS, SMALL SCREENS AND BILLBOARDS FOR MORE THAN 20 YEARS. SHE IS AS FEARLESS IN LIFE AS SHE IS IN THE ACTING ROLES SHE CHOOSES, HAVING PLAYED EVERYTHING FROM A SERIAL KILLER TO A SUPERHERO.
In an industry teeming with talented performers, Charlize Theron has long stood out as a multifaceted actress capable of tackling any role—no matter how complex or controversial.
At 48, she has an Oscar, a Golden Globe, and numerous other accolades under her belt, yet her attitude remains as downto-earth as ever; so what makes Charlize Theron one of the brightest and longest lasting stars in the Hollywood galaxy?
Born in Benoni, South Africa, on August 7, 1975, Charlize Theron’s early life was not without its share of hardships. Raised in a household marked by domestic abuse, Theron witnessed her mother, Gerda, shoot her father in self-defense when she was just 15. “That experience shaped me in ways that I can’t put into words,” Theron shared in an interview with ABC News in 2019.
But it is often these hardships that produce diamonds, and this experience undoubtedly influenced her resilience, tenacity and ability to take on roles that explore the human experience of gritty realities.
Only a year after her father died and when she was just 16 years old Charlize moved to Italy, where she worked as a model. After two years in Milan she decided to relocate again, this time to the United States to further her career in modelling and dance
before turning to acting. But her path to success wasn’t always a smooth one.
“I was broke, I was taking class at the Joffrey Ballet, and my knees gave out. I realised I couldn’t dance anymore,” she recounted to Vanity Fair in 2020.
But it was this very setback that nudged her towards Hollywood. Her breakthrough came in the form of 1996’s 2 Days in the Valley, a role that allowed Charlize to showcase her range and which set her path to take on leading roles, the first of which was the character Mary Ann Lomax in 1997’s The Devil’s Advocate alongside Al Pacino and Keanu Reeves.
From there Charlize enjoyed plenty of success with leading roles in Mighty Joe Young, The Cider House Rules and The Italian Job, but it wasn’t until 2003, when Charlize played serial killer Aileen Wuornos in the film Monster that audiences were able to see Charlize’s real range and ability to transform herself completely.
Theron underwent a remarkable physical transformation to play Aileen Wuornos, gaining around 14kg, shaving off her eybrows and wearing prosthetic teeth to play the role.
“I never questioned it, because transformation is just what I do. I like to get into the makeup, the hair. The whole thing happened so organically. We built teeth and played around with contact lenses. Toni G, who did the makeup, played a huge part, too. She has this incredible eye. You can’t just take a mask of somebody and put it on someone else. You have to manipulate the features of the actor. She really transformed my face,” Charlize said in an interview with Oprah in 2005.
Her performance was outstanding and earned her the Best Actress Academy Award in 2004, proving her critics wrong and cementing her ability and versatility as an actor.
One of the most striking aspects of Theron’s career is her versatility. From action-packed films like Mad Max: Fury Road to dark comedies such as Young Adult, she refuses to be pigeonholed. “I think the biggest mistake an actor can make is to categorise themselves,” she told The New York Times in 2017.
Apart from her contributions to cinema, Theron is also known for her philanthropy. She founded the Charlize Theron Africa Outreach Project in 2007, aiming to improve the lives of young people in her native South Africa through education, health and safety initiatives. “I always knew I had a platform, and it was always my intent to do something meaningful with it,” she revealed to Variety in 2019.
With several upcoming acting and producing projects, including a sequel to Netflix’s The Old Guard and Furiosa the next installment of the Mad Max franchise, as well as other productions through her successful production companyDenver & Delilah including new true crime docuseries Last Call: When a Serial Killer Stalked Queer New York . Theron shows no signs of slowing down. “I still have so much to do and explore,” she mentioned in an interview with Harper’s Bazaar in 2021 and it still rings true in 2023.
Charlize Theron is not just a leading lady; she is a force to be reckoned with. From her turbulent beginnings to her rise as one of Hollywood’s most versatile and talented actresses, she defies categories and expectations at every turn.
In an interview with The Wall Street Journal in 2016 Charlize said, “You can never get to a place of comfort in this business. As soon as you hit that little cushy spot, somebody’s gonna kick you out. So I have a constant need to do it better.”
And she always does.
In a world of fleeting fame, Charlize Theron’s allure remains constant, grounded in her incredible talent, versatility, and an insatiable desire to excel. She is, indeed, a star.

Calibrate Reds™ from eimele ® A New Healthy Weight Management Formula
THE USE OF INJECTABLE SEMAGLUTIDE MEDICATION HAS BEEN DOMINATING THE GLOBAL WEIGHT-LOSS LANDSCAPE IN 2023, BUT ITS INVASINESS, HIGH COST, SIDE EFFECTS AND SPECIFIC FORMULATION AS A DIABETIC MEDICATION MAKE IT LESS THAN DESIRABLE FOR SUSTAINED, LONG-TERM USE IN WEIGHT MANAGEMENT. THIS IS WHERE NEW PRODUCT FROM EIMELE®, CALIBRATE REDS™, SETS A NEW BENCHMARK IN SUSTAINABLE WEIGHT-LOSS.
These injectables prove that GLP-1 stimulation helps control blood sugar and can have a significant impact on both appetite, blood sugar spikes and weight-loss.
Leading Australian plant-based nutrition company, eimele®, has used this approach to craft Calibrate Reds™, an ingestible alternative to weight-loss injections, using a unique blend of patented and trademarked active ingredients.
The phytonutrient rich formula works at the root cause of weight gain and supports healthy weight-loss by regulating blood sugar, when used in conjunction with a program of reduced intake of dietary calories and increased physical activity.[2]
When we have excess blood sugar and insulin levels following a meal, the body is signalled to store it as fat. Calibrate Reds™ uses patented, hero ingredients such as Reducose™ and Morosil™ to disrupt the way the body stores fat and assist with weight-loss.
Reducose™ stimulates GLP-1 to reduce insulin spikes
When we eat, a hormone called GLP-1 signals the release of insulin within the body, its job is to remove sugar from the blood. Reducose™, an extract of white mulberry leaves, is one of the patented ingredients in the Calibrate Reds™ formula. It reduces the body’s release of insulin and puts your body into fat burning mode rather than fat storage mode. By stimulating the body’s GLP-1 generation, Reducose™ also promotes an increased satiety effect for (feeling ‘full’) up to three hours after eating, by around 70 percent.[4]
Morosil™ helps reduce stubborn fat
Morosil™, a trademarked extract derived from Sicilian Moro red oranges, is another hero ingredient in Calibrate Reds™. These sweet blood oranges are now widely recognised for their effectiveness in assisting with weight-loss. Studies on Morosil™ have demonstrated that it helps reduce stubborn abdominal fat, with participants in a clinical trial experiencing a 3.08kg reduction in body weight within 12 weeks.[5] In another clinical study involving Morosil™, the reduction in the abdominal fat mass of participants was approximately 11 percent.[6]
In addition to the Morosil™ and Reducose™, Calibrate Reds™ is formulated with other bioactive ingredients to support overall health including Inulin, a prebiotic for gut health and Roselle and Okra which are rich in antioxidants, Vitamin C, magnesium, potassium and other essential minerals.
You can find Calibrate Reds™ at eimele.com priced at $110 for a one off purchase, or $99 per month on subscription.
GLP-1 – What is it and how does it affect weight-loss?
What is GLP-1?
GLP-1 is a hormone that has several roles, including:
• Triggering insulin release from your pancreas: Insulin is an essential hormone that allows your body to use the food you eat for energy. It lowers the amount of glucose (sugar) in your blood.
• Blocking glucagon secretion and regulating blood sugar levels
• Slowing stomach emptying and increasing satiety (feeling full when eating)

Drew Harrisberg talks Calibrate Reds ™
Drew Harrisberg, brand ambassador for eimele is a qualified exercise physiologist, sports scientist and diabetes educator who is passionate about health and wellness. Drew’s own journey towards wellness began when he was diagnosed with diabetes. This diagnosis led him to turn his life around by adopting a healthier lifestyle, diet and positive mindset.
Tell us about your experience with Calibrate Reds™?
As eimele’s brand ambassador, one of the perks of the job is complementary stock from the brand and I got Calibrate Reds™ in my last delivery. I’ve been taking it for around 3 or 4 weeks now. I’ve found it convenient and easy to use, the sachets go into my gym bag or my pocket, and I use it just before my two biggest meals each day, normally lunch and dinner.
What benefits have Calibrate Reds™ customers experienced when using the product?
We’re hearing different things from different people, but overall, we’re discovering that it’s working as we expected, which is great. Calibrate Reds™ helps with a few different things, first of all satiety. This stops people snacking, which is where the extra sugar often creeps into our diets. The second is regulating blood sugar, which helps with balancing that blood glucose spike that happens at meal times.
Have you found Calibrate Reds™ easy to use?
So easy and convenient, I love the ingestible format and it tastes good too – a red berry flavour, not too sweet or too strong. The powder dilutes easily with water and you can stir it into a glass or shake it up in a bottle. You can even sprinkle it onto your food – it’s quite versatile.
Why should people consider using Calibrate Reds™ as part of their health and weight-loss journey?
It’s completely natural and it works effectively, also it’s a sustainable solution that you can keep taking over time to ensure that the weight stays off. The hero ingredient, Reducose™works by stimulating GLP-1 to reduce insulin spikes when we eat. What has been quite effectively demonstrated by the semaglutide injectables is that GLP-1 stimulation helps control blood sugar and can have a significant impact on both appetite, blood sugar spikes and weight-loss and it’s those insights that eimele has taken and worked with in this formulation.
Why is it important that Calibrate Reds™ uses plant-derived nutrients and ingredients?
Everything from eimele® is plant based, safe and uses the highest quality natural ingredients, this is part of our brand promise to our customers and also forms part of our Therapeutic Goods Association credentials. Morosil™,present in the Calibrate Reds™ formula, is a trademarked extract derived from Sicilian Moro red oranges. These sweet blood oranges are something of a ‘super fruit’ when it comes to fat reduction.
What lifestyle factors should people keep in mind to get the full potential out of Calibrate Reds™?
As with any weight-loss activity that you’re undertaking, the more positive lifestyle choices you can make to support your general health and well-being, the better your results from Calibrate Reds™ will be. I’d recommend keeping an eye on the total amount of calories you’re consuming and increasing your physical activity. Find something you love to do that’s active and if you really struggle, buy a skipping rope or do a 15 minute YouTube workout, or a 20 minute walk each day. I actually have a subscription based daily exercise programme on my website, www.drewsdailydose.com
THE EYES HAVE IT
AS WE AGE OUR BODY NATURALLY CHANGES SKIN NATURALLY LOSES ELASTICITY AND DELICATE SKIN CAN START TO SAG, ESPECIALLY AROUND THE EYE AREA, BUT THERE IS SOMETHING THAT CAN BE DONE ABOUT THIS COMMON OCCURRENCE - BLEPHAROPLASTY, MORE COMMONLY KNOWN AS EYELID SURGERY.
Blepharoplasty, more commonly referred to as eyelid surgery can be performed on both the upper and lower eyelid and is an option most commonly considered by patients who have developed fatty deposits around the upper or lower eyelids, or those with excess or sagging skin around the eye area.
These fatty deposits or sagging skin can give patients a tired look, and in some cases can even restrict a patient’s vision. Eyelid surgery will remove these fatty deposits and tighten the skin around the eyes, improving the appearance of the patient’s eye area and/or alleviating any loss of vision due to the sagging skin.
Before meeting with a plastic surgeon to discuss your eyelid surgery requirements, patients will need to see their GP to discuss the issues they are experiencing and receive a referral. Prior to your procedure, your surgeon will meet with you to understand your needs and the outcomes you are hoping to achieve, and to discuss the options available to you.
Once a procedure has been decided on, the surgeon will carefully assess your eye area to determine the most appropriate surgical plan for your individual needs. Your surgeon will discuss the plan with you in detail, along with any risks and the intended outcomes before proceeding to surgery.
Some eyelid surgery can be performed under local anaesthetic, however Dr Widdowson may choose to perform this surgery under general anaesthetic as it can be quite difficult for patients to remain calm and still for the entire surgery. It is also very important that the experience of surgery is made as stress free as possible for patients in order to achieve the best outcomes.
In upper eyelid surgery the surgeon will make an incision in the natural crease of your eyelid and any excess skin or fatty deposits will be removed or redistributed and the eyelid tightened in order to alleviate any vision loss and provide an aesthetically pleasing look to the eye. Making the incision in the eye crease is the best position for optimal surgical outcomes and will also minimise the appearance of any scarring that could occur.
In lower eyelid surgery, the surgeon will make an incision under or inside the eyelid and any excess skin or fatty deposits will be able to be removed or redistributed and the skin tightened. This incision site is ideal as it most often leaves no visible scar.
Blepharoplasty is a day surgery procedure which means patients will head home the same day of their surgery. Once discharged patients will need to follow an at-home care routine that will include administering cold packs to reduce swelling and bruising and applying eye ointments and drops to keep the eyes clean and lubricated.
Most patients recover quite quickly from this type of surgery, needing only around two to three days to start feeling normal again, and only two to three weeks recovery time before resuming all ordinary activity. However, it should be noted that all surgical procedures carry risks and that individual results can differ between patients.
Patients should be able to see the full results of their surgery within one to two months and these results can last between five and ten years, and in some cases even longer.

The outcomes shown are only relevant for this patient and do not necessarily reflect the result other patients may experience as results may vary due to many factors including the individuals genetics, diet and exercise.

• 2 tbsp extra-virgin olive oil
• 50g unsalted butter
• 8 garlic cloves, unpeeled and smashed
• 2 tbsp capers in brine, rinsed
• Half a bunch of sage, leaves picked (about 20–30 leaves)
• Zest and juice of half a lemon
• 100ml chicken stock
• Fine sea salt
• Freshly cracked black pepper
NOTE
To butterfly a chicken breast, lay it on a chopping board with the thicker end pointing away from you. Press down onto the chicken with the palm of your hand while you use your other hand to cut through the length of the chicken breast using a chef ’s knife, aiming to get as close to the centre as possible. Do this slowly and carefully. As you cut, use the hand that’s pressing down on the breast to lift the top piece of breast away from the bottom. Cut all the way through to the other end, leaving you with two thin slices of chicken breast.
Butterfly the chicken breast (see note) and place it in-between two sheets of baking paper. Use a rolling pin to bash the chicken until it’s 3–4 mm (about 1/8 inch) thick. Remove the paper and season the chicken with salt and pepper on both sides. Tip the flour onto a plate or tray and coat the chicken in the flour.
Set a wide, flat frying pan over a high heat and add the olive oil. When the pan is hot, add the chicken and cook for 1–2 minutes per side, until slightly golden. Remove the chicken from the pan and reduce the heat to medium.
Add in the butter and garlic cloves. When the butter has browned, add in the capers and sage and fry for 30 seconds. Next, add in the lemon zest and juice, along with the chicken stock. Simmer the pan sauce until it has reduced by half, then add the chicken back in, coating it in the sauce and cooking for a further minute just to heat it through. Serve immediately.

METHOD
Before you begin: A food processor makes quick work of chopping the chilli, French shallot, ginger and garlic. Be sure to add each ingredient separately, so they chop evenly.
For the ginger and chilli jam, combine the chilli, shallot, chilli flakes (if using), garlic and ginger in a small pot and add the oil. Sizzle this over a low heat for 15–20 minutes, until most of the water in the aromatics has evaporated and they are just beginning to brown. Stir often, ensuring you scrape the bottom of the pan. Some bits will stick and caramelise, which is fine; just make sure they don’t burn. Carefully (it will spit!) add in the Shaoxing wine, soy sauce, sugar and fish sauce and simmer for 5 minutes, until the mixture appears jammy and has thickened. Set aside.
Place a rack in the top-third of your oven and preheat to 220°C. If your oven has a grill (broiler) option, use that here to cook the prawns on a high heat.
Line a baking tray with baking paper and lay the prawns on the tray. Spoon a couple of teaspoons of the ginger and chilli jam over each prawn and bake in the oven for 5 minutes, flipping them over halfway through cooking. Note: if using your grill, you may need to adjust the cooking time slightly – you’re looking for the prawns to turn a nice pink colour.
Remove the prawns from the oven and serve with wedges of lime and perhaps a small ramekin of the ginger and chilli jam on the side.
PRAWN WITH GINGER AND CHILLI JAM
INGREDIENTS
MAKES APPROXIMATELY 4 SERVES
• 12 extra-large prawns, peeled and deveined, heads and tail left on
GINGER AND CHILLI JAM
• ½ cup diced red chilli (deseeded), about 3 long red chillies
• ¼ cup minced French shallot, about 1 large shallot
• ½ tsp Korean red chilli flakes (optional)
• 1 tbsp minced garlic (about 3–5 cloves)
• 1½ tbsp minced ginger
• Generous 1/3 cup neutral oil
• 1½ tbsp Shaoxing wine
• ½ tbsp light soy sauce
• 1 tbsp white (granulated) sugar
• ½ tbsp fish sauce
TO SERVE
• 1 lime, cut into 4 wedges
NOTE
I’ve written this recipe to be cooked using your oven but these prawns would be excellent cooked on an outdoor charcoal grill. Just brush the prawns with a small amount of neutral oil and grill for 2 minutes per side. Spoon the ginger and chilli jam over the cooked prawns.

GOLD COAST LOCAL CHARITIES LUNCH
Gold Coast locals enjoyed a fantastic lunch at Market Bazaar Restaurant at QT Hotel in Surfers Paradise recently, all in support of the Gold Coast Hospital Foundation. Fantastic food, conversation, raffles and auction prizes made this an incredible day that raised over $7,000 for the Gold Coast Hospital Foundation to help purchase a new Halo machine for Parkinson’s Disease sufferers. What made this event even more special was a number of ladies who chose to celebrate their birthdays at the lunch, asking that instead of gifts, support should be given to this worthy cause.
