Welcome to the February issue! It’s still cold and getting dark early and for the most part we are homebound, but we are looking forward to seeing more people out walking and playing golf and tennis. Fortunately it will not be long! Until then, stay warm and enjoy your family. We have another exciting issue this month. I am sure you will all be fascinated by our feature story introducing Patricio O’Ward. I think we have a future F1 driver in our community! Since it is the month of romance, our talented Ivy Summerlin takes some of the pressure off of us with her most romantic recipes. Also, learn how to make a difference in your community by becoming part of The Board of Directors or volunteering at Hill Country Daily Bread Ministries. Your Neighborhood Outreach Committee has been busy putting together a fun-filled calendar of events for 2015. They have fifteen events planned starting with the Spring Fun 5K walk/run. Please note the event dates published in this magazine. The attendance at the 2014 events was phenomenal and I hope we involve even more residents this time around.

Committee Update By Rob McDaniel

Landscape Committee

February is a great month for the Landscape Committee because we can begin our planting! Our spring projects include renovating the mailbox pavilion at Aragon, the two smaller islands on Dominion Drive at the Crescent Circle, and the installations at the newly built booster pump station. We will also upgrade some of the islands along Dominion Drive between Brenthurst and Vineyard. As always, we keep in mind year-round beauty while using drought tolerant and deer resistant plants. A subcommittee has been working on grading other common areas to determine where we will concentrate next, so watch for even more beautiful enhancements soon.

NOC 2014 was a very successful year of events and we are looking forward to an even better year in 2015. Please be on the lookout for email blasts with information on our fantastic upcoming events in The Dominion. We’ll have our New Resident Patio Party on April 9 and a fun-filled weekend of Fiesta events with our Spring 5k/10k Run/Walk April 11 and our Fiesta Party April 12. The Neighborhood Outreach Committee works diligently to welcome new residents into the community every month, and the NOC is always looking for volunteers to assist with this endeavor. We are looking for volunteers particularly in the neighborhoods of The Cloisters, The Reserve, The Legends, The Enclave, Renaissance, The Crescent, Les Chateaux, Aragon, Alturas and The Hilltops. If you are interested in serving as a NOC Representative and assisting in welcoming new residents to your neighborhood, please contact Dona Whitener at donaNtx@att.net .

Finance Since August, the Finance Committee has been working on preparing the 2015 Budget. We contracted with the nation’s largest provider of reserve studies to provide a study of our community. A reserve study includes two critical, interrelated parts: the physical analysis and the financial analysis. Representatives from the company drove around the community and identified all of the components that will need to be repaired or replaced over the next thirty years (physical analysis). The financial analysis converts this information into a projection and recommends how much money is needed in the future to be able to pay for these repairs and replacements. The reserve analysis is then incorporated into our five-year operating income and capital reserve projections to arrive at our annual budget. Based upon these projections, there is no recommended dues increase for 2015. Architectural Control Committee

The Architectural Control Committee is tasked with the continuous and unchanging job to review all new construction and exterior modifications within The Dominion. The committee encourages the construction and installation of improvements that represent good architectural design and quality, and are consistent with the recorded restrictions and guidelines adopted by the committee. They pay attention to the design and aesthetic appearance of exteriors and materials that will ensure the improvements blend harmoniously with existing architecture and natural surroundings, and will preserve and protect Dominion property values. Within the past two months, the


ACC has reviewed and approved 9 new residences and over 22 approvals of modifications and additions. Up to twenty new homes have been completed and ready for move in. The ACC is also transitioning over to digital review for accessibility and better organization. Along with accepting plans in digital format, the ACC Administrator is beginning to accumulate available prior plans to have them scanned to keep on file for easier access; an arduous task since there are roughly thirteen-hundred residences in The Dominion, but will be beneficial in the future for the HOA and residents.

Development

The Development Committee is currently reviewing plans for several developments. These include the addition of an office building behind the current Sales Pavilion on Dominion Drive, and the addition of new neighborhoods in Dominion Hills. The Development Committee recently approved a zoning change request for the former clubhouse for Dominion Hills, which will now be used as office space. In the upcoming months, the Development Committee will be reviewing options to repave, repair and maintain streets in The Dominion, as well as review the need to repair or replace various walls, entry features and lighting along the streets.

Security

The Dominion HOA anticipates spending approximately $1.3M in 2015 for security within The Dominion. This expenditure is principally directed to the utilization of G4S for provision of entry gate access services and patrols, and the use of off-duty SAPD officers, 7 days a week, to patrol The Dominion. Since the utilization of SAPD patrols in August 2013, the reported home burglaries have virtually ceased in The Dominion. The HOA Security Committee continues to evaluate additional security measures, such as additional G4S patrols and enhanced use of surveillance cameras at entry gates and elsewhere in The Dominion. The absence of effective entry barriers around the perimeter of The Dominion presents challenges to pervasive security efforts. The Security Committee and HOA Board remain committed to the maintenance of security for Dominion residents, recognizing and balancing the need to do so in a cost effective manner that allows timely ingress and egress for residents, vendors, and guests. The HOA Security Committee meets monthly at the HOA office and welcomes input on security matters, by either attendance at the monthly meeting or by correspondence to the HOA.

So you want to be on the Board of Directors

….but just don’t know how? Many residents have inquired about the process of being on the HOA board. The easiest way is to first volunteer for one of the committees. The committees are: Development, Neighborhood Outreach, Landscaping, Security, Finance and Architectural Control. By serving on a committee, you get exposure to the operations of the association and meet other volunteers and board members. If during that experience you decide you have an interest in serving on the board, you can let the committee chair or a board member know your desires and they can help you through the process. The other way to get on the board is to be nominated or nominate yourself for the election process carried out at the residents’ annual meeting, held in

April each year. A notice will go out in March asking for nominees. The nominees fill out a brief biographical form and are put on the ballot for the election. We have three positions open annually, each for a three-year term. The board meetings are held the fourth Wednesday of each month and last for about four hours. Being on the board is a rewarding experience and you would be serving our community in a meaningful way. We hope some of you will consider running for the board so we can continue to have an active, involved and diverse group. How did you get into your field? I moved to San Antonio in 1996 and saw the ad for a part-time administrative assistant for golf course maintenance at The Dominion. I had no idea what golf course maintenance was but thought working at The Dominion part-time until I found a “real job” would be fun! I envisioned driving around on golf carts all day! Part-time immediately turned into full time, and several subsequent positions were offered. I never looked for that “real job”! How long have you been with The Dominion? Since January 21, 1996. What is your favorite aspect about working at The Dominion? The Members, without a doubt! So, so many of them are very special to me!

What has been your greatest challenge in your business? Remembering! I am sometimes given reservations to events when shopping at HEB, at Clark High School events, in the ladies room and even once at the airport while on vacation! I love that our Members are so excited about our events!

What has been your most rewarding experience in your business? Seeing Members happy at the Club – we are in the business to make their social and leisure time memorable. I love when they tell us we are doing just that! What are your hobbies and interests? Hobbies and interests... those things I had before my life was spent carting around a busy teenager: I absolutely love yard work (yes, really!), I am trying to learn to crochet, I cannot get enough of books and I really do love when I find the opportunity to sit and just watch TV because it is very rare these days! Favorite quote and why? “Don’t let the fear of striking out hold you back” -Babe Ruth. I love this quote because my dad always quoted it to me growing up. “Life is challenging – you just have to go for it. Some things will work out, some things won’t but you’ll never know unless you go for it!” The Great Charlie Thompson. Every piece of advice he gave me always came back to that quote! I tell my son the same thing now!

Happy New Year Dominion members and residents! We have had a cold start this year but the weather is the main reason we live here and it will be gorgeous soon. This month, I’d like to highlight our shop at the Tennis Center. I am very fortunate to have Cindy Exton as our Shop Manager. Cindy has been here for over 12 years and has built an incredible rapport with our

members. She is an amazing woman who treats all who walk into the shop with kindness, helpfulness and grace. Cindy has a passion for helping others and it shows. The Dominion and I are very lucky to have her. I have asked her to detail all we do on a daily basis for the retail needs of our members and residents.

As Office Manager for the Dominion Tennis Shop, it has been my pleasure to serve the tennis and sports needs of our members and guests for the last 12 years. I’m lucky to have the support and guidance of Amy, our “merchandiser extraordinaire”. Amy has worked in retail for many years. The shop staff includes Erin, Chris, Matt, Josh and Helen. If you haven’t visited us before, we are located in the center of the 13 tennis courts, separate from the main club house and close to the pool. supper club BY Carole Minton

ntertaining programs such as Hawaiian Luaus, Opera Arias, Veterans Recognition, Television Game Shows, and holiday celebrations while meeting new folks over dinner with friends is what Supper Club is about. This type of evening is what you will find if you come to Supper Club on the first Thursday night of the month at The Dominion Country Club. Supper Club began in January, 1999, when five women got together to discuss another way for new members of the Club to get to know other Club members. We wanted to aid The Dominion Country Club community in broadening the “family” aspect of their community. We started off with the five women, along with their husbands, getting together for dinner – sort of a trial run. The husbands liked the idea and thought that it had the possibility of success. Based on this, we planned the next month as our first Supper Club. As time went by, we decided to try a theme night, starting with a Christmas celebration. With a resounding success, we soon decided to try other themes. We have had a Hawaiian dancer come dance and teach us the Hula, the San Antonio Opera on two occasions, Irish dancers and storytellers for St. Patrick’s day, an evening of jazz with a jazz pianist, a replay of the television show “The Newlywed Game”, and various evenings of entertainment and interesting people to speak.

Several of our members are quite good at singing and playing musical instruments and they have performed for us. Their children have also participated which is especially enjoyable for us. We have had various themes over the years with much success. These theme nights have helped us all get to know each other better. Attendance varies from month to month. We range from 45 to 85 people each month. Several years ago, we decided that we should salute the military on the Supper Club night in November. We asked TMI to bring their color guard from their cadet program to present the colors for the military, and one of their cadets to sing the national anthem and God Bless America. That program has been repeated each year and has our highest attendance of the year. These evenings are brought together each year by Brig. Gen. Gary Murray, Lt. Col. Dan Johnston and Carole Minton. To join the Supper Club festivities, just call the Reservation Line and make a reservation for Supper Club if you are a Dominion Club member. FAST TRACK At the age of 15, our greatest priorities rarely surpass driver’s education and who will be our date to the dance. Unless you’re Patricio O’Ward, a jet-setting upand-comer in the racecar driving world. Currently on the Road to Indy, the freshman at TMI knows that his schedule is anything but typical. s soon as I get back from the races I have to do all of the tests, exams, quizzes and homework I missed,” he reveals without a single lament. Since moving to the States from Monterrey, Mexico in the 6th grade, Patricio and TMI have made an agreement: if he keeps his grades up, he’s allowed to miss school. But previous years don’t compare to the demanding year of 2014, a true learning year for Patricio that caused him to miss quite a bit. It was also his first year racing in the French Formula 4 where he won his first ever European Formula car race. Although he only raced half of the season, considering the five events he participated in, he would have finished just four points shy of 2nd place in the general points championship and 1st place in the junior points championship. While he crushed the competition last year, he has yet to receive that vital piece of plastic: his driver’s license. Yes, O’Ward is young, but he doesn’t let his age get in the way of his goals. His hunger and love for the sport is palpable when he speaks of his future in the industry, always displaying his determination to exceed expectations. A Family Tradition They say good racecar drivers aren’t born, they’re made. If that’s the case, Patricio is the exception to the rule. It’s no surprise, as racing is an inherent skill that has been oozing

through his bloodline for generations. “My grandpa used to race cars and he has a passion for cars,” Patricio begins. “My uncle raced Indy Lights, which is one step below IndyCar. It’s just carrying on with my cousin and me.” When Patricio was three years old his grandfather gifted the first generation of grandchildren with a go-kart, but it wasn’t until the age of six that Patricio’s passion for the sport was sparked. “I think I decided I wanted to go to the track because I saw my cousins race and I thought it was really cool,” Patricio remembers. And thus his racing career began at Monterrey Karting Track in 2005. “We first started regional racing locally, and then we just started getting bigger and bigger.” Within five years, Patricio was named USA Champion in the Rotax MicroMax Class as well as the first Mexican racing driver to win at the SKUSA Supernationals in the TaG Cadet Class. From Karts to Cars Eager to make the transition from karts to cars, O’Ward climbed behind the wheel of a racecar at the age of 13; three years earlier than the FIA (the governing body for world motor sport) allows! “It’s tough to change from go karts to cars because it’s a very different car, very different skills and strategies. If you make a mistake you’re done. It’s happened to me. I was in second and it was raining. I locked the four tires and I went off track,” Patricio laughs. “Just keep calm, because when

you get really pumped up and hot, then you’ll start making mistakes. So I just keep calm and cool and do everything I need to do. But so far so good!” Due to complaints from the FIA, Patricio was forced to stop racing in Mexico – a mere setback for the fervent driver. “When they didn’t let me race in Mexico, we went and did two races in Europe and then problems started again. So we found French Formula 4 last year but we didn’t do the whole season. It went really well towards the end of the season; we got a win, a podium and a bunch of top fives. We missed two race weekends so we really haven’t had a full season in cars to fight for the full championship.” Now at the appropriate age, the road ahead looks extremely promising. As the prodigious rookie stands ready to make his full debut in 2015, fellow drivers are keeping a steady eye on him. And that’s with the little practice he’s able to come by. With the nearest track almost four hours away, practicing before a big race can be challenging. “I have a simulator and I can learn the tracks, but other than that, there’s really no time to go to a track and test there because I have school,” Patricio admits. “It’s a very tight schedule, but we find a way.” The teen has turned this disadvantage into an advantage, developing the ability to rapidly adapt to new tracks. “For example, in Europe, I didn’t know any of the tracks. It will help you in the long run, because you will learn how to learn tracks quickly. Some people just go to every track and test, test, test. They will be fast because anybody can be fast with a bunch of hours in the car on the track. If you don’t know the track, learn it very quickly, and can still be on top with those who do, that’s a very big confidence boost.” No Plan B If ever he has time to himself, you’ll find him in the gym, as keeping fit is his first priority, or with friends. Fortunately, most of his friends live in The Dominion so he rarely needs to leave the neighborhood. In the past, Patricio participated in the Club’s tennis camps, but now downtime is a luxury Patricio finds hard to come by. If he’s not racing, he’s training, and if he’s not training, he’s doing homework. But make no mistake, Patricio likes it this way. He knows that his busy schedule is the small price to pay to make it in this industry. There is simply no time to waste thinking of a Plan B. He makes it

clear that, for him, this is not a hobby; this is a career. Although his family supports all of his endeavors, they also make sure that he keeps a level head. “They support me, but they’ve told me that it’s a very hard sport. It’s even easier to be a NFL quarterback than to be a racing driver. Out of 7 billion people in this world, there are only 24 grand prix drivers. That’s my ultimate goal, but I know it’s going to be very hard! If before I end high school, I’m where I want to be career-wise, I’ll keep working on that and leave college aside. If not, I will find a way to do college until I make it.” As for what his goals are in 2015, Patricio simply answered, “To race the Pro Mazda and win the championship.”

tip of the month Being Fit for Golf Clubs That Fit Your Body Structure and Swing By Anthony Re, VP Of GOLF OPERATIONS Additional information by Club Fitting Guide

If you have heard the phrase “It’s the Indian, not the arrow,” then you know how important it is for one to use the correct equipment. For you to perform your best possible shots, having the correct equipment is a must for optimum performance. It is the hope of every golfer that purchases new golf equipment that they are going to get better, and that buying the latest and greatest new driver or set of irons is what is going to make ones golf game better and lower their score.

When you buy new clubs, ask yourself, “did I get them fit for me?” Or did they just look good and feel good so you bought them but the performance is not what you expected. We all want the latest and greatest, but with new technology changing ever so rapidly, clubs today have more components, with many adjustments settings for your swing. So how do you know what to get and how you’re “arrows” should look. Getting a proper club fit is a must. If a club doesn’t suit a player’s swing or physique, it is very difficult to hit the


club consistently well. When talking about club fitting, there are a couple of questions that are frequently asked. “I am working on my golf swing. Shouldn’t I wait until I change my swing until I get fit?” Or “My swing is not consistent. How can clubs that are fit help me?” If a player’s equipment doesn’t fit, he cannot make an efficient golf swing. A player will make compensations in the golf swing to try to correct poor ball flight, caused by the golf club that does not fit. With correctly fitting equipment, a player has the greatest opportunity to make an optimal golf swing. What components make up a club fitting? Here is a list of variables that need to be considered and their effect on ball flight.

Length The length of the club a player should use is influenced by a combination of a player’s height and the length of a player’s arms. The length of a club has a great deal of influence on how consistently the player can return the club to impact. If a player does not have clubs that are the correct length, it is very difficult to get into correct posture at address. When a player is not in correct posture, or balance, the player will seek balance during the swing and change the path of the golf club.

Shaft Flex The shaft is the engine of the golf club. A shaft is simply a timing device that allows a player square up the club face at impact. When the shaft flex does not match a player’s swing, it will affect both trajectory and the curvature of the ball. The correct shaft flex in a golf club will maximize distance and tighten shot dispersion. Lie Angle The lie angle of the club is the angle of the shaft of the club relative to the sole and the ground. The lie angle of the club has a huge influence in ball flight. If a club is too flat, the toe of the club will impact the ground and the ball will tend to push to the right (for a right hand player). If the club is too upright, the heel of the club will impact the ground and the ball will tend to pull to the left. Loft The loft of the club influences the trajectory of ball flight. Trajectory effects distance. In irons, lofts are somewhat standard. However, within a set of irons, the loft needs to be calibrated correctly so that the distances from club to club are consistent. Loft is extremely important with drivers. If a player is going to optimize distance, he must have the correct loft on the driver. It

is a commonly held misconception that less loft equals more distance. The belief is that if the ball is hit lower, it will roll more and go farther. In truth, with optimal trajectory, the ball carries farther, rolls less, but overall distance is greater. The longest hitters in golf launch the ball very high. Grip Size The size of the handle of club affects the amount of hand rotation. Correct grip size allows a player to square the club face at impact. Too large of grip inhibits hand rotation and promotes a slice. Grips that are too small increase hand action and promote a hook. Luckily, club fitting has become very prevalent in the last several years. Every major club manufacturer offers custom fit clubs and most golf professionals are doing club fitting. Remember, if you are thinking of new clubs, take the time to go through a club fitting. With the investment that must be made in golf clubs today, it is foolish not to be fit. student spotlight Name: Brandon Watts Age: 14 School: This is my first year at TMI. I am in the eighth grade What sports are you currently participating in? I am currently involved in skeet shooting, football, lacrosse, golf and tennis. Awards and accolades related to those sports? I shoot professionally. I am a member of the National Skeet Shooting Association. During my first year of shooting in the NSSA, I shot my first 100 straight targets. In 2014 I shot a straight 200. I recently shot at the Junior World tournament and am currently the 28 gauge world champion. I am also currently the number two subjunior shooter in the nation. I am a member of the Texas All State Team and the All American Subjunior Skeet Team. How did you get started in these sports? I started shooting skeet in 4H before shooting professionally. I started playing 54

football and lacrosse when I started attending school at TMI. I was able to start playing tennis and golf when we moved to The Dominion. Outside of sports, what other activities are you interested in? I like to hunt and fish as well. I also appreciate giving back to the community, and I am working on hosting a sporting clays tournament for the Alamo City Cancer Council, a non-profit charity organization, later in the year. What do you want to be when you grow up and why? I would like to attend the US Naval Academy. I have always wanted to be an engineer since I was very young. I love math and science. I would like to train to be a pilot or an aeronautical engineer. What do you love about living in The Dominion? I love the location and amenities in the Dominion and being close to my school. Most of all, I enjoy being able to play golf and tennis right here in the community. My family and I enjoy the time we spend at the clubhouse and the pro shop.

Hill country daily bread

“One day several years ago I walked through the doors of Hill Country Daily Bread Ministries (HCDBM) after two hours of prayer and tears because my children needed food. I was humiliated I had allowed my life to come to this.” Beth had no idea how her life would change as a result of that decision to seek an extra layer of support. She 68

F e b r u a r y 2015

was broken and desperate. HCDBM welcomed her in with compassion and the grace of God. We are a Christian non-profit organization dedicated to helping individuals and families living in poverty throughout eight counties in the Texas Hill Country. We offer intake and support services to people like Beth. We listened, counseled, and prayed with her. “When I came to HCDBM, I was treated with dignity and respect and I was given

angels to lean on in the form of family mentors,” Beth explains about her experience. Hill Country Daily Bread partners with over 150 area churches and agencies to serve over 18,000 people each year. We match families in crisis with families who can encourage them through the difficult times. Beth’s mentor family gave her the courage to free herself and her daughters from a toxic environment of abuse. HCDBM works in the background providing food and resources to the families we serve, but the true heroes are the mentors from our community who do


God’s work. They volunteer from churches in the area to be there for these families to

With Valentine’s Day right around the corner, now is the time to start thinking of how you are going to spoil that special someone in your life. We’ve all heard the saying “the way to a man’s heart is through his stomach.” So light some candles, put on your sexy apron and try out this special recipe for the perfect Valentine’s dinner date! Start it off right Have an appetizer ready to snack on when that special someone arrives. If you are not finished cooking the main course yet, this will be the perfect taste bud teaser and will allow them to snack and talk with you as you finish up the entrée. This quick and easy starter is sure to please. Of course, anything wrapped in bacon is a man’s best friend!

Herb-Rubbed Beef Tenderloin Bacon Wrapped Goat Cheese with Lobster Risotto Stuffed Figs Ingredients: •24 dried (or fresh if available) figs •4 oz. garlic and herb goat cheese (HEB brand is delicious and inexpensive!) •8 slices bacon (pre-cooked bacon makes it even quicker for you if you’re in a rush) Preparation Heat your oven to 400 degrees. Line a baking sheet with aluminum foil and place a rack on top. With a paring knife, cut the figs 2/3 of the way

Ingredients • 1 (1 1/2 to 2-pound) live lobster • 3 1/2 cups chicken broth • 4 tbsp unsalted butter • 1/2 cup diced shallots • 1 cup Arborio rice • 1/2 cup dry white wine • 1/2 cup freshly grated Parmesan cheese • 1 tbsp fresh lemon juice • 2 tsp chopped fresh thyme leaves • 1/8 tsp freshly ground black pepper • Herb-rubbed beef tenderloin

Preparation Bring a large pot of salted water to a boil. Plunge lobster, headfirst, into boiling water. Cover pot; cook lobster 15 to 20 minutes. Drain and cool. Remove meat from claws and tail, coarsely chop, and set aside. Bring broth just to a simmer in a medium saucepan. Keep warm over low heat. Heat butter in a large saucepan over medium heat. Add shallots; cook 5 minutes or until slightly tender, stirring occasionally. Stir in rice and cook 2 minutes, stirring constantly. Add wine; cook until liquid is nearly absorbed, stirring constantly. Add ½ cup warm broth, stirring constantly, until broth is nearly absorbed. Repeat with remaining broth, ½ cup at a time (about 25 minutes total). Stir in lobster; cook, stirring constantly, just until thoroughly heated. Stir in Parmesan and next 3 ingredients. Serve immediately with herbrubbed beef tenderloin. Note: To save time, purchase 6 to 8 ounces precooked lobster meat. Or substitute about ½ pound cooked, peeled, and deveined shrimp. Once you read the ingredients, you won’t even have that guilty feeling after eating a couple of these warm, gooey, scrumptious cakes!


Paleo Chocolate Molten Lava Cake *Makes 2-4 servings Ingredients: • 5 tbsp plus more for greasing ramekins of • grass-fed butter (ghee or coconut oil) • 1 cup Enjoy Life Mini Chocolate Chips (soy free, dairy free) • 2 cage-free egg yolks • 2 cage-free eggs • 3 tbsp coconut palm sugar • 1 heaping tbsp unsweetened cocoa powder • 2 tbsp blanched almond flour • pinch of pink himalayan salt • ¼ tsp of vanilla • unsweetened cocoa powder for garnish (optional) • raspberries for garnish (optional) • caramel sauce for garnish (see recipe below) Preparation: Pre-heat oven to 425 degrees. Grease ramekins well with butter. Using the double boiler method, melt the butter and chocolate together in a mediumsized bowl. In a large bowl, whisk together the egg yolks, eggs and coconut palm sugar until frothy.

Then stir in the melted chocolate mixture into the egg and sugar mixture and whisk until combined. Set aside. In a small bowl, combine cocoa powder, almond flour and salt. Then sift into the chocolate mixture and whisk until combined. Now stir the vanilla in. Pour the mixture evenly into the ramekins. You can use 5 oz. ramekins to make 4 servings, or use 8 oz. ones to make 2 servings. Tap lightly on the counter to remove air bubbles. Refrigerate them for 30 minutes. Place the ramekins in the casserole dish and carefully pour hot water (can be tap or boiled) into the casserole dish until it goes half way up the side of the ramekins. Bake for 15-18 minutes. You will know they are done when the middle doesn’t look quite cooked all the way through but the edges do. Remove ramekins from the casserole dish and let them cool for about 10 minutes. Slide a butter knife around the edge of the ramekin to pull the cake away from the sides, then turn it upside down over a plate and tap the bottom firmly until the cake slides out. Garnish with cocoa powder, caramel and any other desired toppings. Enjoy!

Caramel Garnish Ingredients: • ½ cup of grass-fed butter (or ghee) • 1 cup of coconut palm sugar • ½ cup of canned coconut milk, full fat (room temp.) • 3 cage-fee egg yolks • few pinches of pink himalayan salt Preparation: Over low heat, melt the grass-fed butter in a medium saucepan. Then add the coconut palm sugar and combine with the melted butter, using a whisk. Now add the coconut milk and whisk until combined. Stir in the egg yolks one at a time with the whisk. Then stir in a few pinches of salt. Let the mixture sit over low heat for about 5 minutes; use a whisk to stir the mixture intermittently. Now turn up the heat to medium high until the caramel mixture starts to boil. Whisk, then let boil for a few minutes. Remove from heat, stir and allow to cool. At this point, it should be the consistency of a thick soup and taste incredible. It will continue to thicken as it cools.
