How to Select the Freshest Produce There are many things buyers can look for when selecting fresh tomatoes at the market. It is best to choose a tomato that is rich in color, preferably deep red, bright orange, yellow, or rich purple. Tomatoes can be found in all colors, and provide healthy nutrients. Avoid tomatoes that have wrinkles, bruises, or soft spots as these may be old or damaged. Tomatoes from Soave Agricultural Group and Great Northern Hydroponics will yield to slight pressure but still be firm and have a sweet fresh fragrance. To maintain fresh tomatoes, it is best to store them at room temperature and out of direct exposure to sunlight. Stored this way, tomatoes can keep for up to one week. If a tomato becomes very ripe before you are ready to use it, you can place it in the refrigerator where it may keep for a couple more days. Tomatoes can also be sorted for future use by freezing them. Chopped tomatoes and tomato sauce will freeze for up to six months and can be enjoyed in a variety of recipes. Tomatoes can also be dried and stored in olive oil in a cool dry place for use in pastas or other dishes.
