POTATO, SWEETCORN & TUNA CAKES Crispy coated potato cakes make a yummy tea that kids will love! Easy prep and quick cooking time make these a great lazy weekend meal. Serves - 6 Preparation Time - 30 minutes Cooking Time - 15 minutes
INGREDIENTS 500g potatoes, peeled, coarsely chopped 185g can tuna in oil, drained, flaked 1 celery stick, finely chopped 1 carrot, peeled, finely chopped 100g sweetcorn 2 tbsp chopped fresh parsley 1 egg yolk 90g breadcrumbs 2 tbsp olive oil
1. Steam potatoes over a pan of simmering water until tender. When ready, mash until smooth and then place in fridge for 1 hour. 2. Add tuna, celery, carrot, sweetcorn, parsley & egg yolk to the mash and mix everything together. 3. Split the mix into smallish balls and flatten to make burger shapes. Cover with breadcrumbs and place in freezer for 10 minutes to firm up. 4. Heat oven to 2000C and place potato cakes on oiled baking tray. Bake for 20 minutes, flipping half way through.
