WHET YOUR WHISTLE

Word on the Street

The essential hangout for anyone who appreciates a good G&T, WHET Drinking Room offers a collection of no fewer than 151 (!) different gins from all over the world. They even match gins to specific tonics, and if it all seems a bit daunting, the knowledgeable crew behind the frosty-topped ice bar in the sexy space are always on hand to learn you up. Clearly this is the place to celebrate World Gin Day(s) – tap WHET’s special June 6 to 10 celebrations. They’re not just weirdly obsessed with juniper berries, though; their range also includes 45 Kiwi craft beers and 50 whiskies! Add live music and lip-smacking bar snacks, too; we’re in night-out heaven territory here. whet.co.nz

A feast for the senses

The CSO continues a tradition of their own of recent years (as well as some much older ones) on June 10 with A Royal Feast. This hugely popular occasion (a sell out in 2016) on the orchestra’s programme is part of their Baroque-inspired Winter Series, and sees lucky attendees feasting on a sumptuous three-course meal served up by Continental Catering and matched to Pegasus Wines in the Arts Centre’s magnificent recently restored Great Hall. The meal is interspersed with the Orchestra performing Handel’s splendiferous and justly celebrated Water Music Suite – itself first performed to revellers in 1717 on a party cruise down the Thames for King George the First and his hangers-on. Time to live like a royal! cso.co.nz

LITTLE ITALY The Colombo will be waving the green, white and red flag during June for their Italian Month celebrations. It coincides with the Cinema Italiano Festival screening at the Academy Gold Cinema. Expect the European-inspired mall to be fully decorated in all things Italian, Italian takes on tasty eats from the food hall and dining outlets, live music and more in a celebration of viva la dolce vita! thecolombo.co.nz

PRE-TRENDING Cityscape scours the globe to find out the hot and happening trends in the gourmet scene before they hit the local scene (or bypass us completely).

Snow patrol

Perfect for hitting the slopes in style, Mercedes Benz’ GLS 350d reaches new heights in off-road capabilities, throwing in new levels of comfort along the way. With the 3.0 V6 diesel motor under its sculpted bonnet teamed with a super smooth ride courtesy of fully automatic damping, seating for 7 (and a spacious 7 at that!), and aggressive traction, you’ll find nowhere is off limits. For the ultimate experience, pencil in an epic road trip down to Queenstown for the ultra-lux 4-day champers-fuelled ski extravaganza that is Clicquot in the Snow (3 – 6 August). Turn heads on the mountain with its rugged good looks, then turn them again when you engage the ‘Off-road+’ traction control mode’s locking centre diff and low-range gearbox and start dominating the road less travelled. mbchristchurch.co.nz

TREE OF LIFE

Taking their name from the stunning 6-metre art piece tree they share the atrium of the ANZ Centre with, Arbo/ Arborista is a slick new relaxed café/ espresso offering positioned not only in the heart of a building, but in the heart of the rebuilding city centre too. Contemporary and bright, full service café Arbo offers tempting cabinet fare as well as a full menu bursting with seasonal delights, while little espresso bar Arborista powers out C4 Krank coffee all week before making an Optimus Prime-like transformation into a wine bar on Thursday and Friday evenings; tasty sharing platters, premium wines and craft beers sate the after-work crowd. Grab a Three Boys and some truffle salt fries, chill out under the tree and toast to new regrowth in the CBD! arbo.co.nz

CITYSCAPE.CO.NZ Winter 17

UK family restaurant Maxwell’s has launched Cheesebomb Burgers on the world. Diners pour a mug (really!) of hot melted cheddar over the top of their classic beef burger. It's a thing of calorific beauty.

Halloumi chips: yes they’re a thing, and we need them in Christchurch! Luckily they’re easy enough to make; cut a block of halloumi into sticks, lightly coat in four and deep fry for super tasty cheesy fries.

Minneapolis brother and sister duo Aubry & Kale Walch are behind The Herbivorous Butcher, where they ‘make’ BBQ ribs, salami, and meatballs that look and taste like the real thing from a plant base.

Mello cello

Making a welcome return to New Zealand’s shores, world-class cellist Daniel Müller-Schott (along with his 290-year-old cello) is joining the New Zealand Symphony Orchestra for Schumann & Barber at the Isaac Theatre Royal on June 21. This sumptuous programme features some of the most emotionally stirring music ever put to paper, with Müller-Schott’s energetic and fearless style bound to ensure Robert Schumann’s achingly romantic Cello Concerto in A minor is a highlight of the 2017 season. The orchestra also takes on Brahms’ appropriately-named Tragic Overture and Samuel Barber’s renowned Adagio For Strings, a haunting, melancholy piece that has been played to mark the deaths of Princess Diana, JFK, and the victims of the 9/11 attacks. Barber’s own Symphony No. 1 rounds out the concert, with maestro James Feddeck’s crisp interpretations sure to inject the evening with a profound emotion. nzso.co.nz

Taking their tasty treats to the street, the team at The Nook are rocking an authentic and tricked up Thai street food cart straight from the bustling streets and foodie heaven of Bangkok. Look for their slick new eats wagon outside their New Regent Street restaurant on the weekends and at events and markets around the city, turning out primo Thai-style pancakes, BBQ chicken and pork skewers, deep fried chicken wings, soups, sticky rice and more. Perfect for a Thai-style mini break in the heart of the city! thenook.nz

DON’T GIVE UP YOUR DAY JOB I can just make out what Underground Coffee Roasters’ head roaster extraordinaire Lewis Fitzgerald is yelling at me over my earmuffs and the roar of UG’s coffee roasting machine. The aroma of roasting coffee and toasty heat the city’s only Sivetz Fluid Bed Coffee Roaster is cranking out makes this a great place to be on a cold day. Sure it’s loud (nearly 100 decibels!), but each roast only lasts 11 to 12 minutes, and the Sivetz’ multitasking capabilities means we’re kept busy measuring/pre-blending beans, vacuuming them into the hopper, roasting, cooling, and storing, tweaking temperatures all the while to ensure a smooth roast. “The secret is making sure the bean temp and air temp rise consistently,” yells Lewis. I run a gloved hand through the roasted beans in the cooling tray, watching the next batch of the popular Avant Garde house blend tumbling against the viewing window on the cushion of hot air and changing from green to yellow, orange, brown and finally a dark chocolate colour. The noise means we can’t rely on the cracking of the beans to judge how they’re going; instead Lewis has a mad scientist’s list of timings and fluctuations to guide us (plus the beans' smell and colour), and with each roast worth over $300, we follow it to the nano-second! undergroundcoffee.co.nz

Movers & shakers

Cityscape ventured upstairs into Empire Bar & Izakaya’s über-fancy VIP room to catch up with legendary bar tsar/ manager and cocktail whisperer Simon Kerr. What’s your signature cocktail? It's actually a variation of our flagship cocktail – a Salted Caramel Espresso Martini (see recipe on page 41). It's a great cocktail to get the night started! In-house infused Vanilla Belvedere Vodka, salted caramel syrup, and a double shot of espresso. What’s the secret to a killer cocktail? A balance of look and taste are key components to any great cocktail. Complementary flavours are a must. And ideally good chat across the bar is the final ingredient! Favourite place to go out for a big night? Empire and Baretta are great for nights out. Both are open late, with each having something a bit different to choose from, whether it's beers alfresco in the courtyard at Baretta, or some late night club bangers next door at Empire. Where is CHCH's hidden gem? O.G.B! Not so hidden but a fantastic spot for a drink or two at any time of the day. Favourite Sunday afternoon spot? Anywhere with a view and a cold pint – some amazing hospitality offerings are popping up in the city.

It's fine wine and Euroinspired exotic cuisine at Northwood’s swanky The Option Bistro & Wines. Their gourmet’s paradise menu features French fave duet Escargots á la Bourguignonne (snails cooked in garlic and herb butter), served with crostini and matched to a glass of traditional Chablis, for just $23. They're one of the few places in the South Island serving this stunning union, and there's more enticing options on their menu and global wine list. theoption.co.nz

HOME COOKIN’ Green Dinner Table is a concept that’s joined New Zealand’s burgeoning meal plan delivery service scene, but with a bit of a twist – the meals they deliver fresh ingredients and recipes for every week are all plant-based. The locally-based company is the baby/brainchild of chef Tom Riley and health enthusiast and former ambulance officer Cole Stacey. Tom and Cole aim to empower people to make positive changes to their health and environment via eating more vegetarian fare, and their tasty programme of meal ideas (think the likes of miso mushroom meatballs with soy-spiked tomato sauce, or roast pumpkin and black kale risotto with maple-glazed pumpkin seeds) are designed to maximise the deliciousness of the fresh, locallysourced seasonal produce they deliver, making the transition easy! With plans for both couples and families, covering 3 or 5 meals a week, you can pick an option to best suit your needs and budget, and then it’s just a matter of letting the weekly goodness show up at your door! greendinnertable.co.nz

ART

SUPPLIES Cityscape curates some stunning artworks from around the city that are designed to bring any space to life, start conversations, and be pondered over.

BREAKTHROUGH, 1970

THE DISAGREEMENT, 2014

Artist: John Jagger Price: $2,450

Artist: John Pule Price: $55,000

Contemporary, relevant and exciting, this stunning piece from renowned Californian artist the late John Jagger sees the famed animal sculptor turn his gaze to man. (Depth: 370mm, height: 415mm, width: 220mm.) Typifying Modern Californian sculpture, the piece is of copper-clad steel set on a black Belgium marble base, and comes with artist’s signature and original sale documents. mrmod.co.nz

Auckland (by way of Niue) artist John Pule’s pieces reflect his Pacific roots. He often wears his heart on his canvas, as is evident in this mixed media piece (2,000mm x 2,000mm); there’s always a very personal aspect to be found in his work. Conceived and made from the imagery and material of tapa cloth, John’s works acknowledge dynamics of migration, procreation and settlement. thecentral.co.nz

MURMURATION 17, 2017

RED DOOR, 2017

Artist: Neil Dawson Price: POA

Artist: Min Kim Price: $5,400

Influential Christchurch artist Neil Dawson has worked as a full-time sculptor since the late 1980s and has brought us such iconic works as The Chalice in The Square, the recently installed Fanfare on the northern motorway, and Arts Centre fixture Echo, which is scheduled to be returned home to the North Quad soon. His laser-cut steel pieces have a way of tricking the eye, offering fresh perspectives and a sense of beauty and awe, as is evident in Murmuration 17, which will join his exhibition at The Central from 20 July to 20 August. thecentral.co.nz

Inspired by her extensive travels, particularly when living and studying in Italy for two years, local artist and owner of the Bryce Gallery Min Kim works predominantly in oil, watercolour and ink. A passionate, sought-after artist, her works range from the abstract through to the classical, a stunning example of the latter being her bold and vibrant Red Door (775mm x 1,075mm), a framed oil on linen piece which evokes the old-world charms of the Italian countryside. brycegallery.co.nz

BEHIND THE MASK, 2017

OLLO, 2016

Artist: Joel Hart Price: $2,500

Designer: Kerry Argus Price: $2,000

Joel Hart creates pop-culture inspired urban works such as blue-tinged beauty Behind the Mask (1,000mm x 1,000mm), a multi-layered mixed media piece on perspex and box framed. Touching on themes of love and death, Hart’s work tells stories of strength and hope to create raw emotion and passion. joelhartdesign.com

Local designer Kerry Argus’ perpetual, playful calendar Ollo is constructed from 12 sheets of hole-punched and brightly colour-coated steel. Complex patterns of holes and flashes of colour viewed through the overlapping sheets create the number of each calendar month, with dates tracked with a magnetic ring. ollo.co.nz

ur stealthy glide through the Jurassic Parkproportioned and elaborate wrought-iron gates of Pegasus Bay Winery sees all eyes on Mercedes’ newly-minted C200 Cabriolet, despite fierce competition from the line-up of European lux vehicles glistening in the midday autumn sunshine in the car park of the Waipara wine region’s heavy-hitter. It’s little wonder; practically predatory with its sleek, low slung and aggressive stance, the C200 exudes the edgy, barely-veiled menace and agile grace of a panther ready to pounce, although I could be biased, having been effortlessly seduced by the vehicle in our drive up from Lyttelton.

Convertibles on the open road are generally a windy and noisy affair, but not so the C200. Dynamic and cutting-edge styling converge with some aerodynamic genius, especially when the AirCap buffer above the windscreen and rear air deflector are engaged. If I really concentrate, I can feel the wind gently teasing my hair (I think), with the top down doing 100km/h on State Highway 1 – but that could be the cunning addition of the AirScarf system caressing the back of my neck with warm air. Combine this with heated seats, and you have a convertible for all seasons. What’s more, we don’t have to have K.Flay jacked to the ceiling when our favourite tracks

28

CITYSCAPE.CO.NZ Winter 17

come on to hear them, with the 5 Loudspeakers suitably pimped out with FrontBass. Back in the car park, looks alternate between envy and awe; we’re getting used to them, having already stopped at Amberley’s Nor’Wester Café for a heartstarting, precision-crafted Allpress Espresso sipped under the dappled sunlight of the spiky leaved giant palm, from where we can spot rubbernecking passers-by taking many a second (and third) look. Indeed, it’s an eye-catching display of inimitable beauty – dazzling jet black and shining chrome exterior melds with buttery cream leather seating and brushed aluminium featured across the futuristic dash.

I can’t help myself and also give it a second look, over my shoulder, as we make our way to the winery homestead’s towering pink turret, almost expecting to see a shiver of anticipation ripple through its lustrous, metallic black body. The first tasting is a given; the Sauvignon Semillon is a perennial favourite, and on a semi-summer top-down day like today, it’s a perfect sipper in the rustic, wooden and delightfully anachronistic surrounds of Pegasus Bay’s refined cellar door. We move onto their game-changing Gewürztraminer, teasingly exotic on the nose with pawpaw and laced with a gingery warmth on the palate and a refreshingly dry finish that is deemed boot-worthy. While I pull the pin, my partner in crime works through some reds, settling on the dark cherry elegance of the Pinot Noir. It feels good to be back behind the wheel, where intuitive handling joins a well-thought out cockpit and everything is within reach. Paddle shifters allow you to take

things into your own hands, but the 9G-TRONIC transmission is seamless, so I let the vehicle do its own thing. I’m also easily won over by the tightly-wound 2.0-litre, turbocharged 4-cylinder engine, which takes us from a gentle purr to a throaty roar when I put my foot down, turning our wine trail road trip into a hunt as we prowl the vineyard roads. It’s still a cracker of a day when Waipara Hills’ iconic roadside building comes into view and, basking in the afternoon sun in the landscaped garden and overlooking the endless rows of vines, we enjoy the epitome of a Euro-style alfresco vineyard lunch. We devour a baguette featuring an eye-rollingly good spiced prune fromage, a dreamy and indulgent combination brought home with the addition of the slightly sweet onion jam, which is gently cajoled into submission by the delicate acid profile of the multi-award winning Equinox Riesling. Several wineries are still on our hit list, so it’s on to mains and the

29

CITYSCAPE.CO.NZ Winter 17

the precision pairing of a delicate, fluffy gnocchi with the moreish hum of chorizo, tangy preserved lemon, crunchy pine nuts and sharp parmesan. This masterpiece is sublimely matched to the stone fruit freshness and mineral tingle of the Equinox Sauvignon Blanc. Similarly inspired is the comfort on a plate that is the beef ragout, which is bolstered by earthy mushroom and tossed through fresh pappardelle, and has its own elegant suitor in the devilishly enticing Equinox Pinot Noir, which is resplendent with soft tannins and sun-warmed red berries. Both wines make it to our boot, which is surprisingly spacious giving the elaborate folding roof mechanisation, with room for several cases more. Luxury with a conscience As the world’s luxury markets clamour to implement the now essential element of sustainability into their brands, Cityscape caught up with local sustainable luxury pioneer Peri Drysdale at Untouched World to find out what it took to bring her vision to market before sustainability was even a consideration.

Y

ou’re a pioneer in combining luxury with sustainability. Why was this so important when you were starting out? As I travelled around the world exporting our first brand of knitwear, Snowy Peak, I became really concerned about the trajectory the planet was on. I saw the environment deteriorating year on year, at a time when business and government focus was all about growth at any cost. After a mental game of tug-of-war between thinking that it was too big a problem for one person or business to tackle, but also not being able to ignore what I had seen and knew, I decided my best chance to try and make a difference was to create a positive and aspirational sustainable brand that showed you could be good to the planet and its people and still enjoy great design, style and comfort. I wanted to reach opinion leaders and people in the global population that had the greatest capacity to make a difference themselves. This meant we needed to be at the luxury end instead of the jute/ hemp sack cloth end. How did you make this vision a reality? Back then no one was really using the word sustainability in the context of business – or government, in fact. The first thing we did was have our entire team read a bunch of books we bought on sustainability. Then we agreed on what being sustainable as a company meant for us. We were invited to join a pioneering group of eight organisations from New Zealand and Australia called Redesigning Resources. We met each week to figure out how to create a sustainable organisation and set ourselves projects and

30

targets, and used our internal group peer pressure as motivation. It was tough going, but it was very good. We had help from other organisations in the group who had skills we didn’t have and needed, and in return they were able to come into our business on a weekly basis and learn about implementing this in a business context. At the end of the process a book was written, with the goal of providing sort of a blueprint for others to follow. We wrote our first comprehensive Sustainable Development Report two years later, which was a massive achievement. We now do new ones every two years. What were the major hurdles? There were so many! We needed to make products our customers would love so much, they would be inspired to want to know more about them. But much more than that we had to think about the business process: energy, waste, material use, reducing waste to landfill, reducing waste in production, right down to the little stuff like setting up Bokashi buckets in our tea rooms. We have always been a company that looks after its people well and have had a high level of engagement, with a low turnover and low sickness rates, so that side of the sustainability picture wasn’t something that was difficult, but it all had to be documented. Being a truly and holistically sustainable company is so much more than doing one sustainable line or one or two projects. We’d embarked on an all-consuming, whole-company approach, which involved a lot of difficult decisions. The reality is the price you pay to create sustainable fashion can be higher, but we believe it’s worth it.

FEATURE Luxury With a Conscience

How do the principles of sustainability influence your design? A key platform for sustainability is to use less, so our aim is to create wardrobes that are super stylish, multi-tasking and won’t be in one season and out the next. They also have to be easy to care for and comfortable to wear – basically those pieces you want to go to in your wardrobe time and time again because they look good and make you feel great. Our aesthetic is ‘less is more’, which means the cut has to be superb, the fabrics exquisite, and the quality of the construction has to be extremely high. Design for sustainability is involved and comprehensive, from considering not just the production impacts of materials (fabrics, buttons, etc.), but also their ‘in use’ impacts on the environment once purchased. For example, how and how often a garment is cleaned can have more impact than its original production. What about end-of-life use – can it be upcycled, recycled, composted, or does it end up in landfill? We also want to know as much as we can about the human side of production. Who has grown the fibre, processed the fibre, the yarn, the fabric, who made the garment, what were their working conditions like? Fortunately we produce most of what we do right here in Christchurch, so we know the answers to much of this. Our design meetings are much more involved, thinking wise, than if we weren’t sustainability focussed. It is a journey; what we can’t solve in one collection may be possible next time. Tell us about the fabrics/yarns you’ve created and the reasoning behind them. We’re constantly working on new fabrics and materials to bring to our customers; various blends of organic cotton and merino, left-field plant materials, and combinations of recycled fibres, but we do have a couple of firm favourites. Our machine washable Merino fabric (Mountainsilk™) is, I believe, the best Merino fabric on the planet. It is easy care, requires minimal laundering, won’t pill and will hold its shape and colour. This is due to the technology behind the fibre selection and yarn that goes into this fabric. Our Ecopossum™ knitwear is a favourite with customers. We got involved in bringing

32

possum and Merino to the market over 20 years ago, as it was just such a wonderful fibre combination, being so light yet warm and having such amazing performance characteristics. It was a perfect material for us, as it was utilising a fibre that was then being wasted. To bring this to market I practically had to do a PhD in all things possum so that we could deliver a high quality product from what was a variable fibre depending on the age of the possum, the region it came from and what time of year it was. We somehow managed to perfect the recipe, and have gone on more recently to introduce two new variations on Ecopossum™; Kapua™ (dehaired possum blended with Cashmere) and Cassum™ (dehaired possum blended with exceptionally fine, 15 micron Merino). Both blends are divine to wear and take luxury to another level. What are your proudest achievements? I am constantly humbled by how well the Untouched World name and kite logo is recognised around the world. It’s pretty exciting when the likes of Barack Obama and Prince Harry are spotted wearing our garments, but equally I get a huge buzz out of people telling us how much they love their Untouched World garments and our brand. Probably what I’m most proud of though is the recognition Untouched World has achieved at global level for our Sustainable Development work. UNESCO has us on their website as one of three global exemplars of Education for Sustainable Development. We have been working with the UN now since 2006 and in the last year we have become a founding partner of their new GAP (Global Action Programme). The Untouched World Charitable Trust (funded by the brand and some wonderful partners) is delivering ground-breaking ‘Leadership for a Sustainable Future’ programmes, and seeing young people coming through these programmes inspired to go out and make a difference, really makes me feel like what we’re doing is all worth it. It’s a massive team effort and it’s only made possible by the truly extraordinary people we are fortunate to have working with us in the company and alongside us on this journey. untouchedworld.com

RESTAURANT REVIEW

Pescatore

Cityscape checks in to the fine-dining seafood restaurant for a meal that amply reinforces the reasons for its reputation as one of the city’s best places to eat.

T

he deceptively simply-titled ‘crab, caramelized corn’ touches down with a flourish and the white plate is turned clockwise into position. It’s a cheeky nod to the fish and chip shop staple, but looking at the pale pink cylinder of sous-vide crab meat nestled besides a bright yellow corn puree and two tiny and perfectly-placed basil leaves, it’s obvious that similarities end there. We’re an hour into city fine dining stalwart Pescatore’s legendary three-hour degustation menu, recently recreated by new chef de cuisine Ryan Henley, and the crab is the third dish on the seven-course menu, following a welcome ‘tea’ (a rich, beautifully balanced salty-sweet broth of malt and buckwheat) and a dainty amuse-bouche of tiny cubes of scallop and salmon tartare, piled atop a smooth river stone.

The delicate crab seamlessly marries with the creamy, earthy sweetness of the corn, nutty brown butter and the welcome fresh burst of the basil to cut through the richness. Add an expertly paired glass of Nautilus Albarino 2016 (all honeysuckle and stonefruit), retrieved from one of the country’s finest cellars, and you have a next-level dining experience. Entering earlier via a teasingly obscure set of padded white

leather doors on the second floor of The George hotel, we’d been welcomed by the megawatt smile of our disarmingly attentive host for the evening, Lauren Gibson, who deployed refined theatrics in sweeping back a translucent curtain to show us to our table under a coloured crystal lightshade. From here we enjoy peerless views across the Avon River and over to Hagley Park. Henley’s menu, a fitting celebration of seafood and local produce (often foraged by the chef himself), is a culinary masterstroke of juxtaposition, where what should be warring flavours combine in a symphony of carefully orchestrated tastes, textures and aromas unlike anything you’ll find elsewhere in the city. Epitomising this concept is the chamomilecured tuna, where the oily, bitter fish becomes impossibly fresh, delicate and intensely moreish when paired with flakes of kina snow and lightly acid pickled cucumber and dill. It’s a revelation in its gastronomic alchemy, and simply sublime between sips of Te Kairanga Chardonnay 2013.

Rockstar Pizza & Drink Parlour

The former Chinwag venue along Victoria Street is almost unrecognisable, transformed as it is into the 80s dive bar cool of a New York loft that is Stealth Hospitality’s ballsy venture into the live music scene, Rockstar Pizza & Drink Parlour, where the local rock scene gets real. Stripped down and de-flashed, it’s a gritty masterclass in nailing a makeover and creating something unlike anything else in city. Joining the requisite dim lighting, retro gig posters plaster the walls, while bursts of hot neon fire up darker spaces, there’s metal caging covering the windows, black booth seating, and an enormous black bar that dispenses everything from huge pitchers of beer through to tricked-up adult milkshakes, a succinct wine selection covering off the essentials, and some serious alcoholic alchemy in the form of a bangin’ line-up of house cocktails. A curation of essential grunge bar eats fills the menu; the headlining pizzas are broken down into red and white sauce bases and named after legendary rockers. There’s also a selection of Big T’s Burgers and sides (fries soggy with gravy!), and you’ll also want to get the super-crunchy coated goodness of CFC (Canterbury Fried Chicken) to sustain yourself between sets. MEAT MARKET

Cityscape catches up with Cashmere Cuisine’s Kurt Robinson on the finer points of the slow cooking revival. It’s often said good things take time, and it’s certainly the case with the slow cooking trend. Combine satisfying comfort food with often lowmaintenance cooking, and you can see the appeal. The secret is using the right cut of meat (choose pork/lamb shoulders, point end brisket, beef spare ribs and beef cheeks), using exciting stocks (for pulled pork try apple cider, cardamom pods and fennel) and rubs, and cooking evenly over a long period for moist, tender results. Options include an oven on low heat, crock pot, charcoal BBQ and offset smokers. At Christmas I cooked a whole butterflied lamb Asado/Argentinean-style over the hot embers of a blue gum fire pit. Using a bay tree branch I basted the lamb every half hour with a marinade of olive oil, rosemary and garlic over the 6-hour cooking time, and the result was simply stunning – the meat was falling off the bone! cashmerecuisine.co.nz

WINE LIST

GRAPE EXPECTATIONS Cityscape caught up with Waipara Hills’ new winemaker Andrew Brown as he settles into his new role at the award-winning winery. How would you describe your winemaking style? I like to make honest wines, which express where they come from and boast textural qualities. I am passionate about capturing flavours at their peak in any given season, so working with the viticulture team throughout the growing season and making the all-important picking decisions at harvest is essential. In terms of winemaking, drinkability is key, as is tying in my take on site and varietal expression. What attracted you to Waipara Hills? I’ve always been a fan of Waipara, so the opportunity to take up the role as Waipara Hills winemaker and to work with the vineyards and fruit from this region was a big draw card. Waipara Hills has a fantastic viticultural team, led by Waipara Hills Vineyard Manager Jean-Luc Dufour, who planted the vines and has been there for more than two decades. He’s a huge asset. How will you put your stamp on your vintages? I’m keen on trialling varying levels of ‘skin contact’ with aromatic varietals such as Riesling and Sauvignon Blanc and Gruner Veltiner and Muscat. It’s a technique that can add another layer to the aromatic and textural profile of a wine. I want to evolve my own winemaking style along the way … such an exciting challenge! How has your international experience influenced your winemaking? Overseas harvests are hard to beat; I had some fantastic times in Alsace and Oregon, and would recommend to anyone starting out in the industry that they should notch up as many overseas vintages as they can – I wish I did more! Vintages in the old world in particular open your eyes to how controlled we keep things in the wine making sense here in New Zealand. It’s great to experience a different approach. What’s your favourite drop? I’m pretty keen on most varietals, but if I had to pick it would be Pinot Noir and Riesling. Riesling – particularly from Germany and right here in the Waipara Valley – has always been a favourite of mine because of its stylistic versatility. Off the back of the Pinot 2017 celebration I was able to try a plethora of site-expressive Pinot Noir from this country, which has taken my interest in that varietal to the next level. Tell us your fave wine fact. There is more Pinot Gris (Grauer Burgunder) being made in Germany now than Riesling. Which is the most underrated wine? Riesling. People love to drink it but they don’t buy it. As I mentioned, it’s a favourite of mine because of its stylistic versatility; I think people are really missing out! waiparahillswines.co.nz

The

GOOD LIFE With Dr Libby Dry, flaky skin doesn’t have to be your reality this winter. There are numerous ways to take care of your skin; here are my top tips to get it glowing from the inside out.

H

ydrate Skin loves hydration! Your skin is your biggest organ and it needs a steady supply of fluid to stay hydrated, plump and glowing. Ensure that you are drinking plenty of filtered water, herbal tea, organic bone broth and veggie juices to help keep your body and skin hydrated. Fluids also help to flush out any harmful substances from the body and prevent these substances from needing to be excreted through the skin, where they can cause damage. Nourish Start by eating real food. Real food, as it comes in nature, is packed with a range of nutrients, all of which promote great skin. Vitamin C is particularly helpful for skin, as it helps to combat free-radical damage, which is part of the cause of aging and wrinkles. It’s also essential for the production of collagen, which is responsible for maintaining the structural integrity of your skin. Vitamin C-rich foods include citrus fruit, kiwifruit, capsicum and broccoli. Skin loves fat! Fat helps the skin to maintain its moisture barrier,

Rock Chic

which helps keep skin soft and prevents drying. Dry, flaky skin or cracked heels and cuticles can be a sign that you are lacking in essential fatty acids. Omega-3 fats are particularly helpful, and are the type of fat that most people are deficient in. Oily fish like sustainable sardines or salmon, chia seeds, flax seeds, and walnuts are wonderful sources of Omega-3 fats. If you have any dry patches of skin, coconut oil makes a great topical moisturiser. Look after your gut If the gut is not working optimally, it will often show up in the skin, as the skin is just another pathway of elimination for the body. Flare ups of pimples, acne, rosacea, eczema, and rashes are a signal that other body systems may not be functioning at their best, and more often than not, it is the gut that is not as happy as it could be. A diet high in plant foods, drinking lots of water and avoiding caffeine, trans fats, processed sugars and alcohol can all contribute to good digestion and happy, radiant, clear skin. drlibby.com

Transform your living room with a stylish Rinnai Evolve 1250 landscape fire from Edward Gibbon – keeping warm never looked so good. edwardgibbon.co.nz

Redefining luxury Cityscape caught up with award-winning architects Tobin Smith and Blair Paterson from CoLab Architecture to discuss the changing face of Kiwi luxury design. Architectural photography: Jamie Cobel

O

ver the last 10 years we have witnessed a major shift in what we consider to be ‘luxurious’ when referencing domestic architecture in New Zealand. A term that once seemed to resonate with large dwellings and palatial styling has surrendered to a new, more modest archetype. Finally, a sense of place is winning over indulgence, with greater consideration being placed on context, quality of space and materiality. This is music to the ears of many architects. It’s not unusual nowadays to see a small courtyard house in Auckland being celebrated as New Zealand’s ‘house of the year’, or a high-end accommodation development on the Banks Peninsula picking up a ‘small project’ architecture award. These are the projects that are defining luxury in New Zealand, and are seen to be creating a vernacular that is far more suited to our humble ‘Kiwi’ mannerisms. It is our belief that genuine luxury in domestic architecture can be found in many areas. It can be a relationship to a landscape or the framing of a critical view. It can be the creation of space and volume and a celebration of detail and material. Above all, it should be purposeful and serve as a personal sanctuary for the owners and occupants. One of our recently completed central city projects (pictured) adopts these principles. It is a thoughtful design of modest scale and sits as a strong statement of contemporary architecture within its street context without being ostentatious.

Redefining Luxury HOME & LIFESTYLE

The brief from the client requested a gallery space to display a collection of their daughter’s art, as well as a ground floor living space free of walls to offer unobstructed access to a north-facing courtyard. The result is a house that manipulates space and volume to create an internal environment of two extremes. To the south is a double height gallery space flanked with walls either side for displaying art. Sunlight is drawn through a large skylight that pierces the ceiling over a feature steel and timber stair. Conversely, the living space to the north is open and free of fixed partitions. Large doors slide back to connect the interior and exterior spaces, extending the living experience and blurring the line between in and out, while a generous master suite on the first floor is positioned to maximise morning sun and overlook a private garden. This is a house rich with detail, volume and material that prioritises quality of space over unnecessary exuberance – an inner-city retreat for our busy professional clients. colabarch.co.nz

OPEN HOMES – TIPS TO SECURE A SALE

A

n open home is the biggest gun in your house sale arsenal, and the best way to secure a quick sale at the highest price. When it comes to open homes, it’s a case of the more the merrier – the more you have the more people you are likely to get through, increasing the chances of prospective buyers falling in love and buying your

house. I work to a minimum of three open homes a week, usually one on a Wednesday or Thursday and one every Saturday and Sunday for a minimum of 45 minutes, though an hour is best if possible. Timing, or time of day, is important too – you have to take into account the current season and time your open homes to showcase your house at its

brightest and sunniest. Things need to be bright inside too; a good real estate agent will turn on all your lights during a showing and, where necessary, suggest where higher wattage bulbs are needed to brighten darker rooms. Not surprisingly, presentation is everything. I make it a rule to never show an empty house and will often recommend home staging (including selected art pieces for the walls) that really showcase the house as a spacious, warm and welcoming space. In winter you want it to be toasty warm – if there’s a fire start it in the morning to heat the house and have all heat pumps going with scented candles and diffusers also helping to create a cosy atmosphere and calming house. The number one rule, however, is: Make it sparkle! There’s no way around this – you are going to have to get down to some serious cleaning (or pay for a professional clean) of every surface inside and tidy the yard to maximise street appeal – achieve these and you’ll be one step closer to seeing the sold sticker out the front of your house! maryturnbull.harcourts.co.nz

Home Sweet Home CS LIVING

HOME & LIFESTYLE The Lux Outdoors

Cityscape caught up with Canopy Landscape Architect’s Gabe Ross and Paul Roper-Gee to discover the 5 golden rules of creating a luxurious garden.

S

towe, Versailles, Sissinghurst, Villa Lante. We’re inspired by fabulous gardens on grand palatial scales, but luxurious landscapes can come in all shapes and sizes. They are intentional gardens, distinctively matched to people and place, and crafted to last. We’ve chosen five design principles to bring a touch of luxury to your corner of paradise, large or small. A luxury garden is: 1 MATCHED TO ITS PEOPLE Whether your bliss is found in getting your hands dirty, a perfect spot to read a book, or as a social hub for friends, you should be able to find it in your garden. Gardens can tell stories of the owners’ origins, experiences and dreams. Luxurious gardens should be beautiful to look at and to live in. Clever, flexible spaces organised around who the owners are and what they do enable them to use and share the garden in ways they enjoy most. 2 GROUNDED IN ITS PLACE A timeless landscape is sensitive to the local environment and context, working with the conditions and

acknowledging its surroundings (even if through contrast). Luxuriant planting comes from careful selection to match the soils, microclimate, light and temperature of your location. 3 WELL CRAFTED Whether it is paving, decking, or a detail like a pot or a piece of furniture, well-made objects and carefully selected materials bring character and longevity to a landscape. Colour, decoration and furnishings can tell the story of who you are and what has made you.

Finishing touches

Add a touch of lux to your backyard with Canopy Landscape Architect’s picks of what’s hot in outdoor furnishings.

Elba Table (RRP $889) and Dining Seats (RRP $442 each, covers RRP $35 each) from BoConcept. boconcept.com

4 A FEAST FOR THE SENSES Fragrance, textures, colours, sounds and tastes that change with the seasons make being in the garden a rich experience and create wonderful memories. 5 DOESN’T COST THE EARTH A luxurious garden can be earth-friendly too. Taking time to ensure elements of luxury do not come at the expense of the environment or other people’s welfare creates a garden of integrity that can be fully-enjoyed and appreciated. canopy.co.nz

READ The Cows, Dawn

O’Porter When hilarious funnywoman Kristen Wiig (Bridesmaids) calls a book “funny and excruciating”, you just know it’s going to be some good reading. Actress, producer and author O’Porter (wife of Irish actor Chris O’Dowd) has the literary world abuzz with her fearlessly frank and funny debut adult novel The Cows. Breaking free from the herd has never been so searingly funny (or cringe-inducing) for Tara, Cam and Stella, who all find life isn’t always under your own control! Vibrant, sassy, sexy and hilarious, O’Porter captures what it means to be a woman in modern society, and the devastating impact social media can play in turning your world upside down. RRP $35

LISTEN

Gargoyle, Mark Lanegan Band Review by Garry Knight, Pennylane Records. The Screaming Trees’ former frontman delivers his 10th solo release with Gargoyle, a brilliantly crafted mix of grunge/ rock with touches of synth and electronica. Stand out tracks include ‘Nocturne’, featuring Lanegan’s dark, raspy vocals over a grungy guitar, and ‘Goodbye to Beauty’ which is an acoustic delight, moody and sombre. Collaborations have been a feature of Lanegan’s solo career, with him having worked with the likes of Queens of the Stone Age, Moby and PJ Harvey. Blues Funeral, Lanegan’s 2012 release, is my personal favourite, but I am already loving Gargoyle; give it a listen and you won’t be disappointed.

WATCH

Aquarius Review by Nick Paris, Alice in Videoland. Clara (Sonia Braga, Kiss of the Spider Woman), a 65 year old widow and retired music critic, was born into a wealthy and traditional family in Recife, Brazil. She is the last resident of the Aquarius, a two-story building built in the 1940s. All the neighbouring apartments have been acquired by a company which has plans for the plot. Clara has pledged to only leave her place upon her death, and engages in a cold war of sorts with the company; a confrontation both mysterious and nerve-racking. This tension disturbs Clara and puts an edge on her daily routine, and gets her thinking about her loved ones, past and future. This edgy tale resonates strongly amongst the march of currency.

CINEPHILES The

killer clown that launched a thousand nightmares (alongside the one in Poltergeist) is tipped to hit the big screen in September, with New Line Cinema’s remake of Stephen King’s petrifying cult novel It. Pennywise, the red-balloonbearing, bloodthirsty shapeshifting clown (this time played by Bill Skarsgård) is back, terrorising the seven members of The Losers Club in small town Maine. While the 1990 made-for-TV miniseries – featuring Rocky Horror alumni Tim Curry – was more campy than creepy, the remake is cranking up the scares and has had audiences screaming at its trailer at film festivals. Best leave the popcorn and drink on the armrests!

BATTLE ROYALE Based on Tinseltown’s legendary catfight

between fading mega-stars Joan Crawford and Bette Davis on the set of Whatever Happened to Baby Jane, FX’s Feud: Bette and Joan is a brutal docu-drama about two women trying to claw their way back to the top while battling misogyny, the Hollywood machine, and vitriolic gossip columns. Playing the aging, hard-living broads with standout performances are Jessica Lange (Crawford) and Susan Sarandon (Davis), who are joined by a host of A-listers in the often hilarious and ultimately devastating tale of disposable celebrity.

WHAT’S ON Ballet fans should prepare themselves for an electrifying night on June 9/10 at the Isaac Theatre Royal as the Royal New Zealand Ballet present three works by acclaimed modern choreographer Alexander Ekman in Three by Ekman. Cacti captivated audiences during the RNZB’s Speed of Light tour in 2016, while intimate piece Tuplet riffs on the splitsecond precision of modern dancers at the top of their game, and the larger work Episode 31 is a torrent of youthful vigour that harnesses the energy of New York. With accompaniment by the New Zealand String Quartet, this is definitely one for arts fans to get in their diaries. rnzb.org.nz

WHAT’S ON

Oil’s well

Midnight Oil, the legendary Aussie rockers and agitators behind such huge hits as ‘Blue Sky Mine’, ‘Beds Are Burning’, and ‘Power and the Passion’ are finally headed our way again, having announced their first world tour in more than 2 decades (it’s been 20 years – too long! – since they played in New Zealand as well). This is a revival tour with a bit of a difference; it can’t be many touring rock bands that can boast of having a former parliamentary minister (Peter Garrett) as a frontman! Don’t miss the chance to catch the veteran crew in long-overdue local action at Horncastle Arena on September 11. midnightoil.com

Internationally acclaimed Belgian violinist, violist and conductor Sigiswald Kuijken formed the String Quartet that bears his name in 1986; they’ve been wowing music lovers all over the world ever since. Locals get their chance to enjoy this acclaimed group’s musical artistry thanks to Chamber Music New Zealand when the Kuijken Quartet play the Charles Luney Auditorium on July 12, offering a special chance to catch some greats of the chamber repertoire as performed by truly top-level international talent. chambermusic.co.nz

WHAT’S ON

A History of Violins Murder most (comically) foul makes its way to the orchestra pit when the CSO brings Lemony Snicket’s The Composer Is Dead to local audiences at the Charles Luney Auditorium on July 19. Dramatic music, mystery and the dark, sometimes macabre humour that is Lemony Snicket’s trademark is the order of the day as the Inspector investigates the orchestra section by section in this musical whodunnit – which also makes for a convenient introduction to orchestral instruments for younger audience members. Find out what the violins were up to on the night of the murder, if anyone saw the harp, or if the trumpet is protesting just a bit too much in this family-friendly mystery. John Williams’ Suite from Harry Potter and the premiere of a brand new work from local composer Hamish Oliver, as well as Ravel’s famous Bolero and Malambo by Ginastera round out a school holiday special from the CSO that’s got a little bit of something for everyone. cso.co.nz

WHAT’S ON The Last Word

THE LAST WORD

Y

ou’ve played the lead in Carmen before; how have you prepared for New Zealand Opera’s version? This is my first time in New Zealand, and I am very excited as I always dreamed of coming here. Carmen is a role I have played for many years, and is one of my favourites. Now the next important step to prepare for the production is to work with the rest of the cast and the creative team in the rehearsal room to bring Carmen to life. I’m really enjoying working with our director Lindy Hume – we have a similar vision of Carmen as a strong woman with her own beliefs about her place in the world. I love playing Carmen this way. How would you describe your character? I think of Carmen as someone who is pure and sincere, because she acts on her true feelings and beliefs. She has great strength of character and she’s someone who is ahead of her time – she’s not afraid to go against the status quo. She challenges the place of women in society. I see her as a kind of female Don Giovanni. I am so in love with this character that I sometimes forget she never existed.

progressively less healthy through the story. The same thing that draws Don Jose to Carmen is what he eventually tries to destroy in her. Carmen doesn’t fulfil his idea of what a woman should be – but she’s not willing to be controlled by the expectations he has of her. The price for her freedom is very high – it is her life. But this is a price she is willing to pay.

Carmen Chameleon

Cityscape talked to Georgian opera bombshell and leading mezzo-soprano Nino Surguladze ahead of her turn as the lead in New Zealand Opera’s upcoming production of Bizet’s classic, Carmen.

The opera is 142 years old. Why do you think it’s still so well loved? Carmen has some of the most famous arias in all of opera, and a storyline that is still very relatable. It’s all about identity, it’s very dramatic – and there’s a love triangle! This is a hugely anticipated production – what can we expect? There’s a lot of action on stage – there are fight scenes, music you’ll instantly recognise, love, betrayal, tragedy and even moments of humour. Audiences are going to go away thinking about what they’ve seen on stage and how the themes are still relevant today. What’s the hardest part of your performance? Carmen is a role that demands great vocal stamina and this is a very physically demanding production, so I have to make sure my voice and body are fit.

Tell us about the relationship between Carmen and Don Jose. They are a couple with a very complicated relationship that gets
