o long winter – it’s been swell, but boy have we ever been hanging for spring to roll into town with its riotous explosions of colour courtesy of new blooms, blossom and fashions (along with lighter, seriously tasty new season menu eats and drinks!). To celebrate escaping winter’s icy grasp, we’ve pumped up our fashion offering, tapping into the genius of leading designers Karen Walker, Trelise Cooper, Margarita Robertson (NOM*d) and Vicki Taylor (Taylor) in our ‘Fashion Forward’ feature (p17) for the inside word on what’s hot and happening for the spring/summer season. All Hail the Hall

After being off the city’s venue menu since the quakes, the Arts Centre’s Great Hall opened again on 1 June. In a stellar return to form, the Hall’s magnificent full-wall stained glass window has been completely reinstated as part of the Arts Centre’s $290 million restoration project (which should be nearly half completed by the end of this year) – also back after a long absence is historic scientist’s hangout Rutherford’s Den, rebuilt from the inside out and now open with a new range of informative interactive exhibits.

he city hospitality scene just keeps on heating up! Luckily for you Cityscape is here to keep you clued up. Listen in: at the bottom of the BNZ Centre in Hereford Street, you’ll find the tastiness of new Indian street food eatery Mumbaiwala Indian Street Kitchen, while the Lichfield Street rebirth keeps getting better with the opening of Sal’s New York Pizzeria at number 146. While you’re still in the CBD, you can now hit the Mediterranean Food Company for delicious pizza and pasta dinners on Friday nights (and look out for their new Rangiora outfit, opening soon), and keep an eye out on progress too at a new permanent site for Rollickin’ Gelato at the end of New Regent Street. Over in Riccarton The Craic Irish Bar has undergone an awesome new makeover, while in exciting news for shoe lovers Skechers has opened its first South Island store at Westfield Riccarton. Look out for exciting new dining options in the form of the brand spanking new Fig Restaurant at Quality Hotel Elms, exciting Argentinian asado dining at Embers in the Papanui Club – with your meat cooked over an open central fire pit – or fresh, delicious salads and souvlakis at Riccarton Road’s Oregano Salad & Grill. Pressed for time? The Colombo is offering a new personal shopper service. And if you’re hitting one of the regular live gigs at Ferrymead’s Orange Studios, you can now tap their “Saxy Time” bar, where your delicious Three Boys beer arrives via saxophone beer tap that plays classic sax tunes as it pours!

The Iconic:

Isaac Theatre Royal

ith roots in the city’s very fabric, the Isaac Theatre Royal has been knocking around in one of three forms since 1863. The first iteration, located across the road from the current site, started out as the Canterbury Music Hall, before swishing things up with the names Royal Princess Theatre and then Theatre Royal following a refurbishment. Fast forward 13 years and local architect A.W Simpson designed new digs on the same site, which opened in 1876. Work on the beloved venue we now know started at the end of 1906 and was completed 15 months later, and included the now-famous Italianate painting of scenes from A Midsummer Night’s Dream by G.C Post. In 1928 huge internal renovations stripped out the interior, removed support pillars and added cantilevered seating for optimal viewing, with a slick new marble staircase also installed. It was all smooth sailing until the earthquakes rocked the old girl – with talk of demolition circling like a vulture, the theatre trust powered on with the city behind them and fundraising assistance from legendary thesp Sir Ian McKellen and Diana, Lady Isaac (whose name honours the venue). The theatre was restored to its full Edwardian glory, with a triumphant re-opening in November 2014.

OK – so you lost an afternoon at work making sure you snagged those tix as soon as they dropped, you’ve cleared the morning post-gig for recovery purposes, and you’re amping to catch your fave band of all time (seriously, they’re finally playing CHCH!). Give thanks to the gods, but take heed rock-jock; they’re a lot of other people’s favourites too, and those peeps don’t need you demolishing all their joy. First off, if you wanna be rocking that primo stage-front possie and fist pumping the night away, arrive early. No-one likes that person that turns up two minutes before the show and shoves their way up to where the people that have been waiting hours are standing – besides, that person you’re dragging in your wake of shame looks hella embarrassed! ‘Don’t shove’ is a good rule in general, in fact – if you find forward progress impeded, it’s probably because there’s no more room. Live with it! (See: arrive early, above.) Consider: do I really need a terrible cellphone video recording I’ll never watch again? (Live in the moment champ, and keep the douche factor low.) Finally, drinks are for drinking – not throwing, jostling, spilling, wetting, and fight starting. Maybe stay up the back to enjoy that tray of 4 brimming cups of beer, instead of optimistically hoping the crowd will miraculously part like the Red Sea. Now, enjoy!

Close to Home

Dead Set

Christchurch is set to hit the small screen with new comedy show Dead Famous, written by Hollywood writer Max Hoffman and local lad Aaron Keown, the pair behind city-based 03 Productions. Deemed a sitcom based around a ‘dodgy PR and events company in Christchurch’, it was shot with a local cast and crew with the exception of Axis of Awesome lead singer Jordan Raskoulos, who plays an MP. Dead Famous went into post production in August and will be shopped around the networks in September – look out for it!

Influential Christchurchbased artists have collaborated to develop CoCA’s latest innovative exhibition, Contemporary Christchurch, which celebrates the range of exciting and inventive art that’s being created by local artists in and around Ōtautahi. The works chosen each engage with Christchurch’s changing and unique locality, community and situation, making the exhibition something of a snapshot not only of the city art scene, but the city itself as viewed through the prism of the arts. DON’T GIVE UP YOUR DAY JOB My spiralling’s all out of whack, causing my bouquet to bulge and all my precision-placed flowers to independently move around the bouquet – it’s like watching time-lapse footage of Gondwanaland breaking up, and I have as much control over stopping it. The mediumsized bouquet I’m working on should have taken around 10 minutes to make the journey from flower selection through to the bodacious, bundle-of-joy-bringing bouquets Moffat’s Flower Company is famous for. But edging towards the 30-minute mark, I still haven't nailed mine, which is meant to be bound for Auckland. Resident floristry genius Tessa smiles kindly and offers pointers picked up over her 35-year career as I battle to restore obedience to my wayward bouquet. Tessa advises that once tied off and with stems clipped, our bouquets should be able to stand upright on the table – her bouquet, an artistically displayed explosion of colour bound to delight its recipients in Wellington, stands handsomely at attention. I don’t even need to put mine on the table top to know that it’ll be leaning like the Tower of Pisa and quickly topple over. My effort doesn't make it to Auckland – instead it comes back to the office with me where it has a Monet effect – looks good from a distance, but up close it’s a hot mess. My colleagues suggest I give it to my mother, the insinuation clear: it’s a bouquet only a mother could love. And she does! www.moffatts.co.nz

Stag Night/Hen’s Party OK, so the Big Day is happening – congratulations! But before you can even

think about that, there’s the Big Night to get through first. The stag night/hen’s party has ruined many reputations in its time, and a fair number of friendships as well; it’s all fun and games until someone loses a bride. Yes it’s an epic night of partying, sure, but you want a night to remember that’s 1) memorable for the right reasons; 2) actually able to be remembered. So clue up! When it comes to the evening itself; eating is not cheating! Don’t make that classic mistake of assuming you’ll get some dinner somewhere along the way; a big meal is going to be your best friend tonight. A few shenanigans are par for the course – take your ribbing/punishment with good grace, but don’t be afraid to put your foot down, because in the days of social media, a photo of you Glad-wrapped in the birthday suit to a lamppost or shoulder-riding a male stripper on Facebook may not play so well with potential employers (you may want to set a general ‘no photos’ rule ahead of time, in fact). If you’re seriously worried about what your dodgiest mates might subject you to, consider tapping the older generation for an invite – a parental figure along for the ride is nature’s handbrake on bad behaviour. And know when to bail – DO. NOT. do those last round of shots. High-tail it into a cab and start focussing on the recovery ahead; it’s going to need all your attention!

The vanilla and chocolate bring out the flavour notes in the bourbon and coffee liqueur, with the Laphroaig bringing another level of depth to the overall flavour palette. What’s the secret to a killer cocktail? Balance! A cocktail is only as good as its proportions. The right level of base spirit, citrus and bitters are essential to making a killer cocktail. Fave place for a big night? Mexicano’s. Tequila and tacos? I don’t see how you could conquer that for a perfect night. Christchurch’s hidden gem? The Poplar Social Club. This speakeasy style cocktail lounge is part of Dux Central, with its entrance hidden down Poplar Lane. Lush wallpaper, comfy booths, and a cocktail list with something for everyone – a visit to our cocktail maestro Charles Gillet is a must do when visiting Christchurch. Fave fancy eats? Crunchy, fresh, feisty and obscenely moreish, King of Snake’s spinach leaf is a tightlycoiled flavour bomb of roasted coconut, peanuts, garlic, chilli and lime, and effortlessly seduces. Eschewing street frontage and rubbernecking gawkers, Stealth Hospitality’s flagship epitomises off-the-grid nonchalance. Equal measures chic sophistication and rock star swag, this post-quake bar raiser has become the measuring stick of cool with its flawless union: a slick fit-out, top-of-the-game Asian fusion fare, and that elusive hybrid of über professional, efficient and disarming Kiwi charm/service that's usually reserved for the country’s luxury lodgings.

Suitably impressed, we’re blown out of the water when the mains arrive: the painstakingly prepared crispy pressed half duck with caramelised mandarin sauce is an immediate

favourite – delicate, moist and decadent, with the edgy-sweetness of the mandarin and restrained seasoning allowing its crispy hero to soar – while the Penang curry marries melt-in-the-mouth tender beef cheeks awash in a velvety, punchy curry with soft-boiled eggs with melting yolks and a crunchy scattering of fish crackling that adds a next-level textural surprise. Surprising also is the liberal use of fresh coriander in the stir-fried exotic and common greens which, for some reason, is sorely lacking from so many Christchurch ingredients lists. We meet our sticky end with lime pudding – its rich, silky custard tingles with lime and citrus segments and is gently soothed by the addition of fresh coconut milk. MUMBAIWALA INDIAN STREET KITCHEN

ringing the famed street food of Mumbai to the city, the team at Mumbaiwala have faithfully recreated Indian roadside vendor chic in the BNZ Centre on Hereford Street. From the rusted iron work and pared-back fit out (think makeshift hip) you’ll feel as if you’ve just walked off the dusty streets into this haven of righteous Indian eats. Pull up at a (literally!) old skool table and chairs and peruse a menu that spans street food fierceness including dabeli (an Indian slider that’s a crunchy taste explosion of vegetables, peanuts, and chutney), karela coconut prawns, squid bhajee, keema pav (spiced minced lamb and peas on a toasted, buttered pav bun) or the feisty firangi frankie – an open ended baked roomali roti parcel filled with chilli paneer or chicken tikka. For something even more authentic, tackle the Dabbawa Special – the shared three-layered tiffin hides a traditional lunch of murg makhani (a.k.a. butter chicken), diwani, basmati rice and a naan. Elsewhere on the menu taste sensations abound in the form of tandoor-grilled lamb and chicken, curries and some slamming sides of bean porial, green apple pickle and fresh and feisty kachumber (Mumbai slaw). Wash it down with a Kingfisher (natch!), craft beer or an Indian-inspired cocktail – Bombay Colada or Kachumber Cooler anyone? Cityscape gets the word on rocking lamb from Cashmere Cuisine’s Kurt Robinson. Rack Definitely one of the best cuts; mix fresh herbs like rosemary, parsley, mint and thyme, a handful of breadcrumbs, finely chopped almonds and a touch of olive oil and rub over lamb. After about 20mins in a medium-high oven it cooks into the most amazing crust. Butterflied Leg Ask your local butcher to bone out a leg of lamb and butterfly open. Mix together Moroccan spices such as cumin, paprika, coriander, cinnamon, all spice, cloves, salt and pepper and olive oil and marinate for 12 – 24 hours, then lay flat in a roasting dish and cook in oven at 190°C for about 40mins or cook on a BBQ hot plate for 10 – 15mins each side, resting at least 10mins before carving. Roast Leg Spring lamb can be cooked slightly hotter and faster, as it’s lean and tender. It’s the hero of the dish, so don't over season; simply rub with garlic, rosemary, salt and olive oil. Put into a medium – hot oven for about 1 hour and 20mins, resting 10mins before serving.

Pan-fried Whitebait with Saffron Butter Sauce (BEURRE BLANC) Shopping List Butter Sauce 60mls white wine (dry) 60mls whitewine vinegar 2 tbsp shallots (finely chopped) 80mls cream 1 pinch saffron 250g unsalted butter (cubed and chilled)

Pan-fried Whitebait 200g whitebait 2tbsp flour (seasoned) 30mls cooking oil 40g butter ½ lemon Flakey sea salt

Making it happen For the sauce: boil wine, vinegar, and shallots in a small saucepan over moderate heat until liquid is syrupy and reduced to 2 – 3 tablespoons. Add cream, and boil for 1 minute. Reduce heat to moderately low and add a few cubes of butter, whisking constantly. Add remaining butter a few pieces at a time, whisking constantly and adding new pieces before previous ones have completely liquefied (the sauce should maintain the

consistency of hollandaise), lifting pan from heat occasionally to cool. Remove from heat and season with salt and pepper. Pour through a medium-mesh sieve into a sauceboat, pressing then discarding shallots. The sauce will hold for a few hours in a warm space as long as it doesn’t get too hot or too cold. For the whitebait: drain the whitebait over a fine strainer to remove any moisture, lightly dust with the flour and shake the excess flour off on a strainer. Heat a nonstick fry pan over a high heat, add the oil and when hot add the butter, followed quickly by the whitebait. Toss the whitebait in the pan to lightly fry, finish by squeezing the juice of the lemon over the whitebait, then season with salt to taste and serve. If you are doing larger amounts, cook the whitebait off in small batches and keep warm until serving. Serve with a wedge of lemon and garnish with broccolini, asparagus, shaved fennel, diced tomato or watercress.

For the cocktail, add all ingredients to a cocktail shaker. Dry shake, then add ice then shake further. Spritz the glass wash inside a chilled coupe glass. Stain cocktail into the glass and garnish with chocolate powder and three coffee beans.

Return of the chard

nce the darling of the 80s white wine set, Chardonnay fell hard and fast from grace, going from ‘It drink’ to ABC (anything but Chardonnay) almost overnight. Pop culture hasn’t been kind, with Bridget Jones’ Chardonnay-fuelled escapades and Kath & Kim dropping the ‘h’ and introducing ‘Car-donnay’ to the world, but the once maligned grape is now ripe for a comeback. So what went wrong? Pegasus Bay Wine’s Edward Donaldson (right) believes heavy-handed winemaking, over-the-top use of oak and Tall Poppy syndrome played their parts, while Waipara Hills Wine’s Simon McGeorge (left) points to changing tastes and the excitement surrounding Chardonnay’s successor Pinot Gris’ arrival in 2003. Both agree that modern winemaking techniques have now re-elevated the previously cumbersome drop. “A lot of winemakers have sought a much greater degree of balance between their ‘winemaking’ influences (i.e oak and malo) with their fruit characters, allowing people to see the fruit between the trees,” says Simon. “I think there’s also a greater desire to get more integration between the different flavour aspects, making the wines more seamless and elegant.” So what should we be looking for in a killer Chardonnay? “Great Chardonnay is more than just fruit and oak. In my opinion it has a degree of minerality that gives it an extra dimension of complexity and interest,” says Edward. “I’m a sucker for a hint of ‘struck match’ in my Chard, something you often see in white Burgundy and are starting to see more in the best new world examples. I love drinking Chardonnay where the wine maker is pushing the boundaries, but hasn’t gone too far. It’s a fine line!” For Simon it’s a combination: “Chardonnay can have many guises, but I always like to see good fruit expression complemented with well-balanced oak and in a style that works with the fruit. I’m a big fan and follower of texture, and Chardonnay should certainly exhibit weight, yet the natural acidity should always be there at the end to lift and brighten the finish. Whatever the style, it should be a wine of layers and complexity.” For maximum enjoyment, both recommend a slight chilling before serving. Time to jump back on the Chardonnay appreciation bandwagon, then!

Naturally we’re drawn to a way of life that promotes health; however, some of us may need a little bit of extra care as we transition into summer. You may decide to incorporate just one of these tips, or try all of them – simply do what works for you. Remember success is the sum of small efforts, repeated day in and out.

oving in the morning Begin each morning with some sort of gentle stretching, yoga, Pilates or a brisk walk. Walk without sunglasses early in the morning so the sunlight can assist the production of serotonin, our feel good, happy, calm and content hormone. Regular walking has been shown to help prevent type 2 diabetes, osteoporosis and some cancers. This week give yourself a target of walking briskly for at least 30 minutes most days. Bounce Get a mini-trampoline and do some rebounding in your living room. Bouncing on a trampoline is like a gentle massage for your lymphatic system. The lymphatic system clears toxins, waste and excess fluid from the body and rebounding can help you to experience more energy across

your day. View food as nourishment Many people have a love/hate relationship with food, which is often exacerbated by years of dieting or calorie counting. When you look at a food, instead of looking at the caloric value, consider what nutrients it supplies you with and how it will make you feel. Ask yourself the question ‘will this nourish me?’ before you eat. Turn off the television Although some television programmes can be educational, generally television is better switched off. Read more books and set yourself a target that instead of one hour of television watching you’ll read a book. Reducing your exposure to bright light at night can also help you improve your sleep quantity and quality. Prepare your own food Many people eat a nourishing

Restorative rituals Taking a relaxing hot bath with Epsom salts and soothing herbs while listening to soothing music will do wonders for your mind and your muscles. Cityscape caught up with Kiwi opera legend Teddy Tahu Rhodes ahead of his picking up the straight razor as the Demon Barber in New Zealand Opera’s Sweeney Todd.

A CLOSE SHAVE

ell us about the relationship between Sweeney and Mrs Lovett. It’s kind of a relationship where they need each other really. I think they are two people in this world that have different needs and they just cross each other’s paths; I think in time they get to become very fond of each other. I think throughout there is a genuine affection between to the two of them. What have you learnt about your character that you didn’t know before taking on the role? When you think of Sweeney you think of the Demon Barber, but he’s actually quite a tragic and sad man. He’s had a tragic life, so the story of his murderous side is just an extension of his exterior to the real tragedy of his life that has caused him to become the way he is. He’s a man who’s been unjustly imprisoned for 15 years, and had his wife and child taken away from him so the story of him is quite sympathetic I think. It’s a tragedy really.

What’s your take on Sweeney Todd – ‘Demon Barber’ or misunderstood businessman trying to diversify his brand? You can’t deny there’s a Demon Barber side of him. Misunderstood businessman is a bit of stretch, but he’s certainly an unjustly persecuted man! Pies are famous for hiding nasty surprises; what’s your pie horror story? I don’t have one – I think of pies as being pretty good really! I think if you’ve grown up in New Zealand the pie is quintessentially associated with us in some way. It’s very rare that you get a bad pie – how can you get a bad pie? I think if you stick to the good tried and true mince pie you’ll be pretty safe. How do you follow someone like Johnny Depp? I follow a rule that you don’t try and ever be what someone else has done. You just can’t, so I will put my little take on it. I can’t possibly attempt to follow Johnny I’m afraid!

This is a hugely anticipated production – what can we expect? It’s a great night of entertainment. Sweeney Todd is a comedy within a great black drama. It’s immensely entertaining, the production is going to look great, and the Isaac Theatre is the perfect setting for the old streets of London – because you’re that close to the stage, it will feel like you’ve been transported back to 18th century England. The cast is amazing and it’s going to be an awesome show, and I’m very excited to be coming back to Christchurch. Tell us about your favourite scene. My favourite scene is the very first one, and it’s a scene I’m not necessarily in to the end! The opening overture is so dramatic – with the full ensemble it brings everyone on stage at once, and from the very first note it transports you back to old-world England.
