UP CLOSE AND PERSONAL The age-old debate regarding which came first – the kiwi or the egg – has been resolved after a clutch of great spotted kiwi eggs from the West Coast recently hatched at the New Zealand Conservation Trust’s kiwi breeding facility at Willowbank. The Christchurch-based programme is the only facility in the country breeding the precious natives, and it is hoped up to 20 new chicks will be raised this season. While these super cute bundles of national pride are off display, you’ll get to see them if you take the Kiwi Breeding Tour.

COLD-BREW COFFEE The hottest trend among caffeine connoisseurs is pouring decidedly cool. Cold-brew coffee, perfect for long hot summer days, is the result of coarse coffee grounds being soaked in room-temperature or cold water for 12 hours or more before filtering. The tasty result is a smooth, sweeter tasting rich coffee that’s lower in acid and more concentrated, courtesy of the grounds not coming into contact with boiling water. Cold-brew can then be heated and served as the traditional cuppa joe, but makes for a particularly excellent iced coffee, and is also a great mixer (unsurprising when its taste is typically described as “liqueur-like”). EDESIA It’s 6:30 on a Saturday night and Edesia is packed to its glittering gills. We have no booking and tickets to The Mikado in an hour’s time – mission impossible, right? Not so – we’re quickly accommodated and perusing the menu as a bar table is made up in a prime, window-side spot. The ultimate in destination dining, Edesia is an oasis in the heart of Addington’s industrial precinct, a location which lends the hard-to-find, underground cool that’s so hot in New York dining. Inside, moody dark wood joins twinkling Luigi Bormioli glassware, while at the rear a glass wine vault incubates some seriously covetable French bubbles. Following some expert guidance we select the Pan-fried Marinated Pork Fillet, Silverfern Reserved Eye Beef Fillet and Beetroot and Feta Salad. Wine reccomendations allow us time to enjoy the moment, and we’re sipping Elephant Hill Chardonnay and Craggy Range Te Kahu as our meals arrive. Looking for the next big thing in summer swilling that’s super easy to fix, crazy refreshing and guaranteed to blow your guests’ hair back? Then it’s time to turn back the clock, tap into a swinging classic and get your Aperol Spritz on. The go-to-drink over the European summer, the revival of this thirst-quenching elixir knocked summer perennial Pimm’s off its perch during its recent blitz of Europe. Passing the Cityscape road test with flying colours and resembling bottled sunshine, this breezy, bitter-sweet, low(ish) alcohol aperitif is almost as easy to make as it is to drink. Booze hounds can kick it up a notch with a shot of gin to really get the party started. Aperol Spritz Ice 60ml Aperol Apéritif 90ml Prosecco (or another dry sparkling white wine) Splash of soda water 1 slice of orange Pour Aperol in a large, ice-filled white wine glass and add the Prosecco (and gin, if using). Gently stir (once!) and finish with a splash of soda water and the orange slice.



TRENDING: NATURE’S BOUNTY Cityscape caught up with Otautahi Urban Foraging’s Joanna Wildish for the lowdown on the latest foodie trend. How did you get involved in foraging? My first time foraging would have been collecting plums with friends and older siblings as a kid, maybe aged 4 or 5, and it’s just something that continued. What’s driving foraging’s popularity? I wonder how much it’s to do with the increasing costs of living that we are seeing more and more of this happening – a movement born of necessity perhaps? People are also becoming, or maybe re-becoming, more socially and environmentally conscious, so it’s probably something to do with both these things. What are some of the benefits of foraging? Foraging helps you to appreciate where your food comes from, what’s available locally and is a great way to connect with neighbours and others around you. Tell us about the Edible Garden City plans. Our group, along with Soil & Health Canterbury and Rangiora Earthquake Express, are in the process of developing a food forest project to increase free and locally available food. Foraging is a growing movement worldwide, so creating spaces and places for this in our own city is important. What can be foraged in Christchurch? There is so much really … from walnuts to nettles, apples, feijoas, pears, plums, chestnuts, watercress, kawa-kawa, puha, lemons, you name it! What’s the golden rule of foraging? Only take what you need (leaving some for others, including birds and insects) and share what you find.

We’re still praising the Millionaire Mojito and crispy duck with caramelised mandarin sauce. Mexicano’s Day of the Deadthemed new kid on the block combines margaritas (Té de Fumar, pictured, is our poison of choice) with a bodacious tuna ceviche. Tequila Mockingbird This south of the border bombshell introduced us to the supreme Grapefruit Gin & Tonic – we’re also quite partial to their spiced crispy pork. Revival Bar Sweet live tunes and Kirin on tap keep us coming back to this nostalgic stalwart. Harlequin Public House Chill with an Asahi off the tap in the summer sun or tuck into the Saturdays-only 48-hour lamb shoulder. Cruz Bar The former gay hot spot with the once pricey tap water and chilled vibe is perfect for a late night stomp. Mashina Lounge Underground Russian vodka den housed in a somewhat converted car park with awesome live music.

Celebrate Canterbury’s gourmet bounty while keeping your food miles down as Cityscape pairs the region’s most delectable goodies. In our first union we match BBQ buddies craft beer and boutique banger with Golden Eagle Brewery’s Solo Lupulus and The Sausage Shed’s Spicy Chorizo. Drinkin’ Living large at 7.3% and giving off whiffs of lemon peel and pine needles, it’s clear this smoothdrinking burnt gold IPA with staunch Canterbury cred is going to be able to hold its own. Eatin’ This Kaiapoi-made Spicy Chorizo is a feisty, manukasmoked pork sausage that marries garlic, pepper and paprika, rounded out with cayenne pepper to crank up the heat. MEET THE ARTISANS Cityscape suffers some serious job envy catching up with She Universe’s master chocolatier Oonagh Brown. How did you become a chocolate alchemist? Chocolate found me. I never believed I was creative until I started playing with chocolate. Where do you get your chocolate? We predominantly use Belgium couverture chocolate and we also buy beans from the Pacific Islands. What’s the best thing about being a chocolatier? I have, on-hand, the best chocolate in the world! Do you ever get sick of eating chocolate? Chocolate is the most sacred and ancient ingredient on the planet, it’s been here for thousands of years – I can definitely take a few more years! The secret to making great chocolates? Living a life of creativity, constantly stepping into the new and having the courage to follow my inner knowing. Most unusual creation? We create a lot of unusual flavours! My favourite thing to do is create chocolates for wedding couples. I meet them over hot chocolates at our cafe in Governors Bay and learn about their love and capture their story in unique flavours which have included beetroot and balsamic, curry and mango, and brie and hazelnut. Is white chocolate really chocolate? If it contains cocoa butter from the cacao bean, then yes. How can we enjoy chocolate more? Let it melt on the palate, without chewing. This allows the full experience of chocolate to be known – the mouth feel and the release of flavours.

BURGERLICIOUS Sure Christchurch serves some banging burgers from stellar establishments the likes of Burgers & Beers and Pomeroys, but flying under the radar are the made-from-scratch (we’re talking buns, burgers, chutneys and mayo!) gourmet bad boys being flipped behind the bar bus at Smash Palace. In order to navigate this fine line we’ve enlisted local bar tsar and Mexicano’s GM Jamie Andrew Lawton to create an exclusive recipe for Cityscape – behold the … Watermelon and Tequila Punch + cardamom and mint-scented ice Serves 10 For the ice Boil 2 litres of water and let cool. Lightly crush 10 cardamom pods and heat in a dry pan for about 5 mins or until cardamom starts to scent. Place cardamom, water and 5 mint sprigs in a 2-litre ice cream container and freeze overnight. For the punch 5 cups of seeded watermelon, cut in to 2cm pieces 1 cup of Martini Bianco Vermouth ½ cup of Blanco Tequila ⅛ cup of white creme de cacao 120ml freshly squeezed (not bottled!) lime juice 3 tbs of castor sugar 1 ½ cups of hibiscus & rose tea (cold) Blend watermelon, lime and sugar till sugar is diluted and pour into punch bowl. Add vermouth, tequila, tea, white crème de cacao and stir till combined. Add the ice block half an hour before you’re ready to serve and punch on!

The main idea is to reduce repetitive stress injuries in your joints, which stem from landing with heavy heels, by landing each stride towards the middle or front of the foot. If you want to give it a go now that the weather’s warming up, here are a few tips: start things low and slow; stay light on your feet, and concentrate on forward movement, not bouncing up and pounding down; and start with hard surfaces as grass can be uneven (and might also hide pointy nasties).

HOME GROWN: PUSHING THE BOUNDARIES Cityscape catches up with Graham Sercombe, master craftsman behind Governor Cricket Bats. How long have you been at the crease? I’ve been making bats for about 21 years, although I’ve been repairing bats for a bit longer. That’s how it started – from blade repairs and replacing handles. Where do get your wood? I import English willow from J.S. Wright and Sons in Chelmsford, Essex, England. Tool of the trade? The bat press, as that holds the major process and art of crafting a bat to a high standard. Tell us about the custom made process. Everything from blade and handle length, weight, grade of willow, grain structure, back-lift, including sweet spot, edge thickness, blade shape, bowed or traditional straight blade through to grip colour are all customised to the client’s specifications. What’s the hardest/trickiest part of that process? Ensuring the edges and face of the bats are pressed correctly. Favourite part of the job? Putting the Governor stickers on. How long does it take to make a bat? It’s a total of about 4 hours, although not continuous. Career highlight? Watching my bats on the odd occasion on TV, or Peter Fulton scoring 301 not out for Canterbury against Auckland back when I sponsored him. Who would you love to see swinging a Governor? My son, but he plays badminton! Seriously, maybe Alistair Cook. When I’m not turning out precision sporting equipment I’m … Coaching badminton or watching Chelsea. What’s one thing that’s just not cricket? 20/20.

WATCH Mud, Review by Nick Paris, Alice in Videoland. Mud is an adventure about boys Ellis (Tye Sheridan) and Neckbone (Jacob Lofland), who find a man named Mud (Matthew McConaughey) hiding out on an island in the Mississippi. Mud describes fantastic scenarios – he killed a man in Texas and vengeful bounty hunters are coming to get him, but he’s planning to escape with the love of his life, Juniper (Reese Witherspoon). Sceptical but intrigued, the boys agree to help him. It isn’t long until Mud’s visions come true and their small town is besieged by a beautiful girl with a line of bounty hunters in tow. Mud conceals and reveals a lot of a boy’s own world, and McConaughey excels once again so close after Killer Joe and the under-valued The Paperboy. Must see.

LISTEN Pearl Jam Lightning Bolt, Review by Chris Mooar at Pennylane Records. It doesn’t seem that long ago that Pearl Jam unleashed their debut Ten on a flannel-clad Grunge generation. Vedder, a spokesman for disenfranchised youth, was sort of like a cool older brother: head-strong, opinionated, dangerous and with a big heart. Once the rock n roll outlaws, now PJ are ‘Dad rockers’, and the flowing locks have been replaced by grey hair. So have they still got the fire in the belly? Yup, you bet. The album opens with a string of belters, some classic PJ ballads to slow the pace (maybe too much in the middle) but in all, this is PJ rockin’ and with enough anger to make you feel that they mean it and still care.

CINEPHILES: TRACK STARS Scheduling can be a bitch! Just ask Rachel Weisz (The Mummy), who signed on to star alongside leading man Colin Firth (A Single Man) in the upcoming bio pic The Railway Man, but had to pull out due to reshoots on other films. One actor’s loss is another’s gain, as Firth personally invited Nicole Kidman to take on the role of his cinematic wife. Based on former British soldier Eric Lomax’s autobiography of the same name, The Railway Man retraces Lomax’s (Firth) life as he confronts the Japanese officer who tortured him during his time as a prisoner of war forced to work on the Thai-Burma Railway.
