In the kitchen: Bourbon – Rutabaga Bisque

Ingredients

2 tsp. unsalted butter 2 med. onions, sliced 1 clove garlic, minced 1 ½ lb. rutabaga, peeled and cut into ½ inch chunks 1 lg. carrot, sliced 3 c. chicken stock or canned broth Pinch of celery seed 1 c. cream 2 to 3 tbsp. bourbon salt and freshly ground white pepper to taste freshly grated nutmeg

In a large saucepan, melt the butter. Add sliced onions and cook until soft. Add the rutabaga, carrot, stock and celery seed and bring to boil. Reduce heat, cover and simmer about 30 minutes until rutabaga is tender. In a food processor, purée half of the contents of the pan at a time until smooth. Return the puree to the pan and add the cream and bourbon. Warm the soup over moderate heat, stirring frequently; do not let it boil. Season with salt and white pepper. Garnish with nutmeg or grated carrot. Comment: Interesting mix ending with a creamy consistency. Serves 4.
