Three Mushroom and Garlic Grilled Pizza Recipe courtesy of the Mushroom Council Servings: 4

Sauce: 1 4 5 2 3/4 2 1/2 1/4

tablespoon unsalted butter garlic cloves, minced basil leaves, minced tablespoons all-purpose flour cup half-and-half tablespoons grated Parmesan cheese teaspoon fine sea salt teaspoon ground black pepper

Heat grill to medium-high heat, about 425 F. To make sauce: In medium skillet over medium-high heat, melt butter. Whisk in garlic and basil; cook 1 minute. Sprinkle in flour while quickly whisking to form paste.

Other Ingredients: 2 tablespoons extra-virgin olive oil 3 ounces cremini mushrooms, sliced 3 ounces shiitake mushrooms, stemmed and sliced 3 ounces white button mushrooms, sliced 1 ounce dry white wine or chicken stock 1/4 teaspoon fine sea salt pizza dough (14 inches) olive oil nonstick cooking spray 4 ounces whole milk mozzarella cheese, chopped shaved Parmesan, for garnish basil leaves, for garnish

Reduce heat to medium. Slowly pour in half-and-half while continuing to whisk until there are no clumps. Increase heat slightly to bring to simmer. Stir as mixture thickens into sauce, about 1 minute. Remove from heat. Stir in Parmesan cheese, salt and pepper; set aside. In large skillet over medium-high heat, heat olive oil. Add mushrooms and cook until they begin to turn tender, about 2 minutes. Carefully pour in wine or stock and continue cooking until liquid evaporates, about 1 minute. Sprinkle with salt. Stretch dough to make 14-inch pizza. Brush grill grates generously with olive oil. Place dough on grill and let cook about 3 minutes, until underside is browned and dough removes easily from grill. While removing dough from grill, flip it onto baking sheet sprayed with nonstick cooking spray so cooked side is up. Spread sauce over pizza and evenly cover in mushrooms. Add mozzarella cheese. Return pizza to grill, topping-side up. Close lid and let cook 3-5 minutes. Once top crust browns and cheese melts and bubbles, remove from grill. Let rest 2-3 minutes. Garnish with Parmesan and basil leaves; slice to serve. 15

At the Metro East Messenger we believe the Metro East has it all! And that includes several generous non profit organizations that dedicate their time and resources to serving others in our community. In this issue, we are highlighting Twigs for Kids located in Granite City, IL. Unfortunately, food insecurity is a reality for many in the Metro East Community. Some kids dread summer because that means no free lunch. The Twigs program, founded in 2011 by Lisa Guilliams, exists solely for the purpose of battling hunger. Twigs is part of The Family Treehouse, a 501(c)3 charitable non-profit licensed in 2012. Twigs has three programs: Twigs Free Summer Lunch Program - begins the day after school lets out in the spring till it begins again in the fall. The program seeks to target the children who participate in the national free and reduced lunch program during the school year. However, any child who comes to one of the lunch locations receives a lunch, no questions asked. Lunches are distributed Monday - Friday, 11:30 - 12:30 at multiple locations. In 2018, Twigs served 108,047 free summer lunches from 54 locations!

Twigs Pack-a-Sack – provides weekend sacks of food for children who are at risk of having nothing to eat over the weekend. The children participating in this program are selected by each individual school building’s principal and social worker. No child is marked or identified thereby keeping the child’s identity confidential. This program is currently in (14) school districts.

Mobile Market – a once a month program whereby 10,00012,000 pounds of food are distributed to those in need. First Tuesday of each month - Noon - 2 or until the food is gone. Two locations: 2450 Stratford Lane, Granite City, IL (Line numbers are given out beginning at 8:30am) and Triangle Park on the Rock Rd. (in West Granite) Provided in cooperation with the St. Louis Area Foodbank and is open to all.
