Even though Father’s Day may not look the same as years past, there are still plenty of ways to celebrate the fathers in your life and help them feel appreciated. Here’s a round up of ideas for you. Whatever you choose, Dad will love creating great memories with some of his favorite people.

Serve Up Brunch. Let Dad sleep in while you make him a brunch full of all his favorites. Go all out with the eggs, bacon, sausage, pancakes, OJ and of course coffee. Or you could make this breakfast casserole the night before and pop in the oven in the morning. Ingredients: 24 ounces frozen shredded potatoes salt and pepper 12 eggs 2 cup half and half 1 teaspoon season salt 1 1/2 cup cheddar cheese grated 1 1/2 cup pepper jack cheese grated 2 cup chopped ham or your preferred meat (sausage and/or bacon would also be great) Instructions: Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper. In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham. Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight. Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

Hit The Golf Course. At the time of this writing, golf courses are opening up (no golf carts, though). A round of golf is a great way to spend quality time together and get some exercise. Go On A Picnic. Pack a meal, load up the family and head out the door for a family picnic at a local park or even your backyard. There are many benefits to picnicking that we often overlook. Spending time outdoors and breathing the fresh air relieves stress, boosts your mood and leaves you feeling rejuvenated. The warm air also relaxes everyone which can improve communication, creating a better bonding experience. Don’t stress over the food. Keep it simple. Play Games. Games are a great way to get everyone together to create fun memories. If you’ve worn out your current games during quarantine, look for something new! Fire Up The Grill. There’s nothing better than a meal off the grill on Father’s Day. Looking for a new recipe? Give our Shrimp Foil Packets a try. They are fool proof! Ingredients: 1lb shrimp, peeled and de-veined 2 ears of corn on the cob, husked 1/2lb andouille sausage (or kielbasa sausage) 1lb baby red potatoes, cut into 2” pieces 3 TBLSP old bay seasoning OR Code 3 Spice Sea Dog Rub salt and pepper, to taste 1 tablespoon minced garlic 6 tablespoons butter melted chopped fresh parsley and lemon wedges, for topping (optional) Instructions: Chop corn into thirds, then chop each third in half lengthwise. Boil corn and potatoes for 10 mins.

Drain and set aside. In a large bowl combine shrimp, sausage, corn, and potatoes. Stir together melted 3 tablespoons butter, Old Bay seasoning, garlic, and salt and pepper to taste and pour over shrimp, sausage, and veggies. Stir to coat. Divide between four 12x12 inch sheets of aluminum foil. Fold edges of foil up around the food to create a closed packet. Cook on preheated grill over medium-high heat for 8-10 minutes on one side, then flip and cook another 5-6 minutes on the second side. Alternately, you can bake the packets at 400 degrees for 15-20 minutes until corn is tender and shrimp are pink and fully cooked. Serve shrimp boil packs topped with chopped parsley, lemon wedges for squeezing.

Summer Activities For Kids With the continuation of the COVID-19 restrictions, summer camp plans have changed drastically for kids. Need help keeping your kids busy? Here is a round up of ideas to keep the kids active and learning. Virtual Camps and Online Activities: •

City Museum On Air: Every Monday through Friday, the staff, crew, artists, and historians of The City Museum in St. Louis are going LIVE on Facebook to share stories, offer free art classes, and entertain you in all the ways they know how (read: mischief, mayhem, and making).

Camp Wonderopolis: This online summer-learning destination lets you choose what kinds of activities you want to focus on, from music-making to city-building to fitness; camp is free, but you can purchase Camp Kits to enhance the experience.

Varsity Tutors Virtual Summer Camps: Varsity Tutors is running lots of weeklong camp sessions for no cost, with classes that run the K–12 gamut. You can hunt and find one that matches your kids' interests, from recycled art for kindergartners and LEGO moviemaking for elementary students to Minecraft storytelling for middle schoolers and podcasting for high school students.

Outschool: Outschool offers an enormous assortment of virtual summer camp activities for kids and teens who have a range of interests. They are taught via group video chat by independent teachers at an affordable rate.

GoNoodle: Need to burn off some energy? GoNoodle YouTube videos get kids moving to be their strongest, bravest, silliest, smartest, best selves. Over 14 million kids each month are dancing, stretching, running, jumping, deep breathing, and wiggling with GoNoodle.

Drive Thru Farmers’ Market System Wondering how to get fresh, farmers’ market items during lockdown? Local communities have recently created a whole new drive thru market system! The new system allows customers to place their orders and prepay online. On pick up days, customers drive to the designated pick up area, remain in their vehicles and their orders are placed inside their car. For the most up to date drive thru procedures, be sure to check each market’s Facebook page or website. Maryville Farmer’s Market (Maryville) Drive-thru market customers can place orders through the Facebook page (https://www.facebook.com/MaryvilleILFarmersMarket/) before noon on Thursday and pay online. Pickups are on Thursdays, from 5 pm to 6 pm in the parking lot of the Maryville Village Hall, 2520 N Center Street. If you’re looking for an easy dessert, this Whoopie Pie recipe is the perfect way to cap off weeknight meals. Find more dessert recipes at Culinary.net.

Whoopie Pies Ingredients: 1 box spice cake mix 1 1/2 cups apple butter 1/2 cup canola oil 2 eggs 8 ounces cream cheese 4 tablespoons butter 3 cups powdered sugar 2 tablespoons milk 1 teaspoon vanilla Instructions: Heat oven to 350 F. Line baking sheet with parchment paper. In large bowl, whisk spice cake mix, apple butter, oil and eggs. With ice cream scoop or large tablespoon, spoon batter into rounded heaps, about 2-3 inches in diameter, onto parchment paper. Space spooned batter 2 inches apart.

Bake 14 minutes. Let cool. In large bowl, beat cream cheese, butter and powdered sugar until smooth. Add milk and vanilla; beat until blended. Frost flat sides of pie halves and place halves together. Refrigerate and store in sealed container.
