How To Help A Local Animal Rescue Covid-19 has effected all of us in the Metro East one way or another this year, especially small businesses and nonprofits. We would like to tell you about a local nonprofit in our area, Partners for Pets, and how you can help. Partners for Pets, a licensed, 501(c)3, no-kill animal rescue in Troy, IL, regularly visits animal control facilities and rescues animals that have used up their time, need medical care, and/or are too fragile for shelter life. They provide care to each animal prior to adoption. This includes, depending on their age: booster shots, deworming, heartworm check & monthly preventative, rabies shot, spay/neuter, grooming, flea/tick prevention, and other necessary care. Unfortunately, the work of saving and caring for animals and helping them find forever homes never stops, even during a global pandemic. Partners for Pets relies on fundraisers to help cover the costs for this care. However, due to Covid-19, they are not able to have their traditional dog walk fundraiser. The good news is they have made it easy for us to "step" in and help by doing a virtual dog walk called The Fast and The Furriest! The $25 registration fee includes a commemorative pet bandana courtesy of Sew Time Embroidery in Maryville. Additional bandanas are available for $5 a piece. All funds will benefit the shelter animals. All you have to do is walk anytime, anywhere and any distance between 7/31 and 8/2. Peanut Butter Pumpkin Dog Treats Like many of you, I have been spending a lot of extra time in the kitchen lately. I have also been trying out a lot of new recipes for the family and Sophie, our 2-year-old Golden Retriever. Some have turned out great, and some have been so-so. This one, however, really exceeded my expectations. I cannot say I have tried it, but from Sophie’s reaction, it is definitely a keeper! INGREDIENTS: 2/3 cup pumpkin puree 1/4 cup peanut butter 2 large eggs 2 ¼-2 ½ cups whole wheat flour (plus more for rolling out) DIRECTIONS: Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
In a large bowl, beat together pumpkin puree, peanut butter and eggs on medium-high until well combined, about 1-2 minutes. Gradually add 2 cups flour at low speed, beating just until incorporated. Add an additional ¼ -½ cup until dough comes together and is no longer sticky.
Working on a lightly floured surface, knead the dough 5 times. (If dough is still too sticky, add an additional ¼ of flour and kneed slowly.) Using a rolling pin, roll the dough to 1/4-inch thickness. Using cookie cutters, cut out desired shapes and place onto the prepared baking sheet.
Place into oven and bake until the edges are golden brown, about 20-25 minutes. Baking time will vary depending on the size and thickness of the treats. Let cool completely. Planning for delicious snacks children can make all on their own (or with minimal assistance) makes for a winning solution, and these Crazy Candy Ice Cream Sandwiches are a prime example. Crazy Candy Ice Cream Sandwiches Prep time: 10 minutes Servings: 6 Instructions: 1 cup vanilla ice cream 1/4 cup chopped candy bar 6 graham cracker sheets, broken into 12 squares 1/2 cup semisweet chocolate morsels 1 1/2 tablespoons refined coconut oil or vegetable oil multi-colored sprinkles (optional) Directions: In medium bowl, stir ice cream until just softened. Stir in chopped candy. Working quickly, scoop ice cream mixture onto six graham cracker squares. Top with remaining graham cracker squares, gently pressing down until ice cream reaches edges of crackers. Place in shallow, wax paper-lined pan. Freeze 1 hour. In small, microwave-safe bowl, combine chocolate morsels and coconut oil. Microwave on high 4060 seconds, or until melted, stirring vigorously every 20 seconds. Let stand at room temperature 10 minutes. Remove sandwiches from freezer. Dip half of each sandwich into chocolate mixture. Immediately scatter sprinkles over chocolate, if desired. Return to wax paper-lined pan. Freeze about 5 minutes, or until chocolate sets. Serve immediately or individually wrap in plastic wrap and store in freezer.
