A trip to Ireland is often a journey of discovery and its not unusual for Americans to fnd we are not only welcome, but at home away from home. With the strength of the dollar against the Euro and the plethora of easy fight choices from America to the Emerald Isle, there is no better time to go than now. I fell for this beautiful country and friendly people during a recent visit and I’m excited to share just a few of the highlights from my own journey to help plan yours. Beginning a trip in Ireland’s capital of Dublin is a fantastic way to start an Irish experience by taking in all the city’s arts, entertainment and culinary offerings. I enjoyed the understated elegance found behind the Georgian townhouse doors of the 5 Star Merrion hotel, which is a lovely way to slip in after an overnight fight. The city streets are a mix of past and present, a journey easily taken by walking its sidewalks as well as by visiting some of the country’s most famed museums and galleries. Among my favorites is the renowned Trinity College where one can easily get lost within the manuscripts of Oscar Wilde, Bram Stoker, and Jonathan Swift or the illuminated pages of the ancient Book of Kells. Ground yourself in the city with a stroll through one of the city’s peaceful green spaces and join in a conversation at a local pub. The Irish people you encounter will live among your most cherished memories. Ranked as one of the top destinations to visit in Europe, Dublin was a perfect starting point for my frst few days and I recommend you defnitely plan at least two nights here. Ireland is a quaint sized country and you could easily drive from coast to coast in half a day. I chose the most ideal way to watch the Irish countryside go by, from the window of private car on a personal chauffeured tour where the sights and history were explained by my knowledgeable driver and I didn’t have to worry about making a wrong turn. The beauty of the Midlands region, sixty miles from Dublin, is a sweet way to ease into the countryside. In County Laois, the rolling hills, grazing horses and sheep provide a different sort of welcome as we approach a new level of elegance and hospitality for an overnight at Ballyfn, the 5 Star luxury country house affectionately known as the diamond in the emerald. Visiting the small villages in the foothills provides a wonderful opportunity to meet the local people without hustle and bustle. Ballyfn itself offers a range of topnotch activities and championship golf is just a short distance away. As our wheels turned south towards the coast, the natural beauty of County Cork opens a window into the wildness that awaits us further west. Recognized as the gourmet center of southwest Ireland, food takes top billing here. Ballymaloe Cookery School in East Cork attracts foodies interested in learning how to bring home a taste of Ireland, which I enjoyed thoroughly. Garinish Island in West Cork, gives garden and nature lovers a unique experience to explore a fantastical paradise of fower and fauna. The yachting harbour town of Kinsale is maze of winding streets dotted by galleries, shops, and lively bars. Next we move to the Emerald Isle’s untamed west coast, which has long been a magnet for travelers, offering one of the richest cultural

touring routes on the globe and fresh seafood. Visitors to Kerry are spoiled for choice. The Dingle Peninsula places you strategically in the middle of some of the prettiest scenery, incredible food, and local art. We were only a boat ride away from the Blasket Islands, home to some of the richest history in Ireland. At Waterville, golfers can swing into action at one of the country’s most spectacular courses with breathtaking ocean views. Map of Ireland Horse lovers can gallop away at Rossbeigh Beach, which caters to riders of all levels. The Ring of Kerry offers travelers the chance to experience a bounty of what the gorgeous county has to offer as it passes through small towns, postcard scenery, and restaurants providing some of the freshest farm to fork fare. At the southwestern edge of the Burren is Ireland’s rocky landscape national park region in Clare. We are drawn to the magnifcent and mesmerizing Cliffs of Moher. A walk along this UNESCO Heritage Geopark soaring high above the Atlantic Ocean with pathways and viewing platforms along the cliff edge, is the perfect opportunity to stretch our legs. The Burren Smokehouse gives visitors a chance to taste and learn about smoked Irish organic salmon. Further north lays the fjord of Killary Harbour, a natural border between Mayo and Galway smack in the middle of Connemara’s breathtaking landscape. The area is known for its wildlife as well some of the most delicious mussels on the island. Located in the little town of Cong in County Mayo, a stay at Ashford Castle is akin to stepping between the pages of a fairy tale meets history book and is a true refection of the Ireland you seek. The old world charm that captivates visitors from the moment they approach the 350-acre estate is topped off by the generous Irish welcome of bagpipers. Once settled in, its beauty and grandeur is crowned by 21st-century luxuries and service. It’s not every day we can call a castle home but Ashford’s activities ensure you receive a proper taste of Ireland. One of the most unique experiences is trying your hand at the ancient art of falconry. For adults and children, Ashford’s Hawk Walk is a magical opportunity to get up close and personal with these amazing creatures. Guests who prefer nature from a different point of view can explore the primeval forest paths on horseback, soaking up the majestic scenery of the shorelines as well as Connemara’s mountains further west. Whether spending the day exploring local attractions, tasting your way through foodie activities in tiny Irish towns, or day tripping to a neighboring county, the siren call of Ashford Castle’s creature comforts is hard to resist. A bronze conservatory is home to the hotel’s spa and ftness center overlooking Lough Corrib, one of Ireland’s largest lakes. The facilities include a Hammam, a relaxation pool, and the latest in wellness innovation. From fne dining to relaxed pub fare, four main dining rooms present an entirely different experience to indulge your senses in Ireland’s creative cuisine. It’s a royal sendoff to end a trip here. North, south, east or west, Ireland’s luxuries are too vast and varied to capture in one visit or in one article. From the Editor-in-Chief Webster’s defnes the word “beauty” as: Perceptual experience of pleasure or satisfaction. ‘Perceptual’ is the key word in defning beauty as it is truly just that, subjective - hence the phrase “beauty is in the eye of the beholder.” I was recently scrolling through Facebook when my fnger that was rapidly dancing down the page suddenly stopped. A friend had posted a selfe that looked as if it were straight out of the pages of the September issue of Vogue Magazine. In spite of it bein being taken casually from her iPhone and posted with the intention of it remaining on Facebook- it actually looked as if it were the result of an elaborate production. Its not that she isn’t beautiful to begin with as I actually recognized her graceful yet powerful presence the night I frst met her, but for this photo, there was no make-up artist, glam squad, professional lighting or renowned photographer. It was an iPhone capturing an impromptu ‘photo shoot’ and the result was both moving and beautiful. It was Ashley, the wife of Nick Jacobson, the renowned Nashville restaurateur behind 360 Wine & Bistro and Party Fowl. Tis picture caused me to pull over on the side of the road and just stop. Obviously, the frst thing I thought was that it was one of the most beautiful pictures I had ever seen. Ten I wondered why. I wanted to understand my personal defnition of beauty and so the digging and journey began. My internal search did not end when I got back on the road, en route to the appointment I was already late for – and those who know me, or who have ever had an appointment scheduled with me, all have one fact in common which is the experience that I am, unfortunately, never on time. Over the past month while refecting on what beauty is, my mind wandered in a million directions. I surrendered to my innate inquisitive nature in order to allow it to guide me through the process. Naturally, my journey started with my childhood in order to go back to my foundations of what I thought was beautiful. As a little girl, I experienced frst-hand how cruel children could be. It wasn’t their fault, it was just their way of trying to justify or validate the fact that they, too, were diferent. It felt like that awkward phase we all experience during adolescence lasted forever for me. My father’s height was one among many genes I inherited from him, but this one gene in particular always made me the tallest in my class. Also, using clothes as my personal vehicle for self-expression and self-discovery may perhaps have been perceived by others as too experimental, yet it was truly my interpretation of what I would see throughout the pages of my mother’s fashion magazines that she kept on her bedside table. But regardless of the reason, my classmates always made me pay dearly for whatever it was about me that was apparently ‘unacceptable’ to them in their malleable and young minds. I remember so vividly the countless days my mother would pick me up from school with tears pouring down my face, completely devastated after a day at school. Troughout the entire school, I was known as ‘the elephant.’ Drawings of elephants were taped to my locker. Elephant calls echoed in the halls each time I was on my way to class. Needless to say, I quickly developed an aversion towards that animal and still to this day, do not necessarily have a fondness for the creature. As a child, when you are labeled as something that is not attractive, you begin to believe that there really is something wrong with you and the way you look. You believe that whatever you are is simply not enough. Your young defnition of beauty becomes what others tell you it is based of of their translation of the images they are exposed to through any type of media. Tey make it crystal clear to you and others that you share nothing in common with Cindy Crawford, further solidifying the distance felt between you, perfection and ultimately, beauty. Most young girls evolving through their youth, transitioning from girls to ladies, fnd it hard, even today, to fathom that there is beauty truly specifc to them. It is only with time and nurturing relationships that they, like me, can begin to believe that not only their beauty but also their defnition of beauty is far more profound and individual to them and not what their peers or even the media cast it to be. Te more I thought about my own personal journey to defne beauty, the more I was provoked by Ashley’s selfe and the more I wanted to delve even deeper in defning what the word beauty really means. I opened my computer and Googled “who is the most beautiful woman in the world.” In seconds I was scrolling through images of truly breathtaking women - women our culture gravitates towards when connecting the word to an individual. Almost all of them seemed to be classic examples of how our culture defnes the word ‘beauty.’ Tat is, all of the images but ONE. And, yet again, my fnger stopped. At frst glance, it was obvious the woman shared none of the common elements associated with the attractive women who I found on that page. My reaction to her photo was quite visceral. I felt sick to my stomach as I read about the woman photographed. I was devastated 30 slmag.net


that a man with absolutely no connection to her life had given her the title “World’s Ugliest Woman” and posted it for all to see. And the woman in the photograph did. It was only by chance that she came across the post and it caused her heart to break as she read only a few of the thousands of comments left by others. Comments such as “Go ahead and do us all a favor in placing a revolver to your head” and “I hope I never have to look at you in person as the sight of you would probably make me vomit.” I know the pain I felt growing up. I still recognize the scars left behind from my youth. But that pain I remember from my childhood immediately became insignifcant to the pain inficted on this woman. Her name is Lizzie Velàsquez. Lizzie sufers from a disorder so rare that there have been only fve documented cases in the world to date. Te disorder, as you can see, has ravaged her body. She is a mere 46 pounds, is blind in her left eye and will soon lose sight in her right. In addition to battling life-altering medical issues, Lizzie is forced to battle daily the narrative told to her by thousands of people who don’t know her, her condition or her personal story. Lizzie said she was initially devastated when she discovered that she has been crowned the ‘ugliest woman in the world.’ Ten she became determined to set the record straight. She knew she was anything but what others saw. Her indisputable courage has recently placed her among some of the world’s leading thinkers and doers, headlining a TED Talks conference in Austin. She engaged thousands of individuals while speaking of the afect public ridicule has had on her life and the enormous responsibility she now feels to help redefne that one word – beauty. And in my mind, she is right. My defnition of beauty has evolved during this entire journey and it will never have the same meaning since experiencing Lizzie’s story in particular. Te word ‘beautiful’ alone is powerful, however, the power each of us attain once we understand what that word truly means can never be quantifed as the afects that understanding can have on our lives is infnite. I remembered how much I believed those girls when I was young. And although wiser now, I still hear their words and elephant calls. But I now frmly comprehend that we don’t need a team of makeup artists, renowned photographers or special lighting to make us beautiful. It is all and always has been there. It is just up to us to recognize what our own, individual beauty is, tuning out and shielding our personal defnitions from the ones that are imposed on us by others. As the mother of a little girl, I cringe at what is in store for our 4 year old daughter Carolina who inevitably will have experiences with her peers that will cause scars on her evolving defnition of beauty. I cannot protect her from what others will say. But I can tell her what I see. I can tell her to actually embrace the height that she, too, has inherited from her grandfather. I can tell her to not hold back when it comes to using her fashion sense as a means to express herself, as seen in both my husband and me. I can also tell her if anyone chooses to call her by an animal’s name, like an elephant in my case, as opposed to her birth name, to actually take it as a compliment as our creator put beauty in each and every part of life on this planet. But if she needs particular help with this last point, we can discover it together as I now recognize that the greatest gift I can give my daughter is to help nurture her ability to not only fnd beauty in herself, but most importantly, always in others. Beauty IS in the eye of the beholder. Today, however, I am a much better and informed beholder, which I know will serve me well as both my husband and I raise our daughter Carolina. Tere is only one Cindy Crawford in this world but at the same time, there is only one of each of us – equally as beautiful just with diferent names and characteristics that make our defnitions of that one word truly individual to us all.

FORM FOLLOWS FUNCTION Porsche invests $100m in its new North American Experience Center Written by Andre James I wasn’t the most enthusiastic student in elementary school, spending a great deal of time daydreaming and flling the cover of my notebook with sketches of my dream car at the time: a Porsche 930 Turbo. I thought of the teachers who chided me for my preteen doodling as I sat idling behind the wheel of a 2017 911 Carrera S on the track at the new Porsche Experience Center in Atlanta, the throaty rumble of the engine purring like a contented cat. If they could only see me now I thought. Opened in 2015, this one-of-a-kind facility–the frst automotive experience center to open in North America–is constructed on 27.7-acres adjacent to the Hartsfeld-Jackson Atlanta International Airport at a cost of $100 million. Serving as the U.S. headquarters for Porsche, the entire facility employs in excess of 400 people. Architecturally speaking, the 220,000-square-foot facility projects a Euro-modern aesthetic that is distinct from yet reminiscent to its counterpart in Stuttgart, Germany. While all of the aforementioned bells and whistles are wonderful in their own right, truth be told, what brought me to the facility was the opportunity to experience the 1.6-mile driver development track behind the wheel of one of 77 high performance vehicles kept onsite. As a Porsche owner (in North America anyway), one rarely has the opportunity to put their vehicle through its paces (not legally anyway), and the experience ofered at the Experience Center is a truly bespoke one. More of a skills course than a true racecourse, an instructor meets with the driver prior to their 90-minute session to assess their ability level and discern what skills they’d like to work on before selecting one of six available driving modules: Handling Circuit: Te 1.6-mile course is designed to mimic a winding country road with a number of corners and undulations. 36 slmag.net

Here, a driver learns the finer points on choosing the correct path when negotiating the curves and proper application of accelerating and braking technique. Kick Plate: The kick plate is a flush-mounted, hydraulically actuated plate placed before a wetted epoxy surface. As a vehicle travels over the plate at a safe speed (approximately 20MPH), sensors move the plate randomly left or right to mimic sliding that might occur during inclement weather conditions. It is a hair-raising experience that tests vehicle control skills when encountering a skid or spin. Off-Road Course: With 21 different off-road obstacles, including a 1.1 ratio hill climb and a 45-degree vertical descent challenge, the course demonstrates the expansive capabilities of the Porsche Cayenne's of-road engineering and safety technology.


Dynamics Area: Tis tests the speed, agility and lane-change performance on a large asphalt pad designed to simulate unique maneuvers one may encounter during daily driving. Low-Friction Circle: Provides over-steer capabilities of a Porsche vehicle at a low-friction circle with uniform inward slope and polished concrete surface. Low-Friction Handling: Similar to the Low-Friction Circle, except it introduces a series of unique, tight curves with a mixture of various radius types and on-and-of camber corners. Porsche owners can also take delivery of their vehicle at the Experience Center and have the opportunity to track a vehicle with similar specifcations to their own to avoid wear and tear on their new personal automobile.

Savvy art and antiques collectors look forward to more than just sunshine and warmer temperatures in June. Summer represents the peak of the picking season for those willing to invest the time and energy into a hopping calendar of estate sales, auctions and flea markets. With all of the hype and television shows surrounding the art of the true find, one might believe that nothing of value slips through the cracks anymore. Rest assured fellow treasure-hunter, there is still gold to be found at the end of the rainbow. Seek, and ye just may be lucky enough to fnd. Read on for just a few examples of fabulous fnds that were sold for great gain in the auction galleries at Garth’s and Selkirk. Pufy Sleeve Artist When a seasonal staf member at Garth’s went estate-sale hopping with a friend last summer, she knew enough to realize that the most unassuming object could be worth a lot of money if placed in front of the right audience. While she made a number

of purchases, the $5 she spent on two small, framed items measuring approximately 4.5” x 5.5” would turn out to be one of the luckiest decisions of her life. Te hollow-cut silhouettes of a man and woman (presumably a pair), with clothing and accessories painted in watercolor, were created in the 19th century by an individual known only to scholars as “Te Pufy Sleeve Artist,” in reference to the signature design of his subjects’ clothing. When highlighted in Garth’s September Americana auction, they brought an impressive return of $7,800! Te Stallion Heist Rummaging through a large estate sale in Louisiana, Missouri, an astute antiques dealer was surprised to fnd a beautifully executed oil-on-board by American artist J. F. Stephens among a stack of seemingly unimportant prints and paintings. Depicting the stallion Heist in a landscape setting, the painting is fully inscribed with the date, artist’s signature and a banner reading: “Heist 2043,


IMP. German Coach Stallion. Property of Atlas and Pleasant Hill Co, Ill.” Included in the sale was a wonderful collection of legal documents and stock certificates related to the important racehorse. His $50 buy secured an amazing return when the painting then sold as a featured lot at Selkirk for $6,120. Folk Art Plaque As a group of siblings determined the fate of a massive amount of sentimental and household objects left behind by their deceased parents, a keen estate sales professional suggested they bring one particular object to a complimentary appraisal event at Garth’s for evaluation. Te relief-carved and painted wood panel was given to their parents by family friend Elijah Pierce, who happened to become one of the most well-loved folk artists of the 20th century. Signed and dated February 18, 1960, the work of art refects Pierce’s deep Christian values and sold for a gratifying $21,150 at Garth’s last spring.

Bronze Buddha While preparing for an impending downsize, a central Ohio woman first tackled the basement of the home her family had occupied for more than thirty years. Sifting through photos, old record albums, school and work memorabilia and discarded projects, she discovered a forgotten trinket her husband had brought home from a military tour in Asia decades earlier. On the advice of a friend, she brought a handful of items to be reviewed by the appraisal staf at Garth’s, including the East Asian bronze Buddha. Hoping it might be worth a few hundred dollars, she opted to leave it for the summer auction at Garth’s rather than sell it amidst household furnishings in an upcoming neighborhood garage sale. “Laughter is timeless, imagination has no age, and dreams are forever.” – Walt Disney Walt Disney World and I were both toddlers when our paths frst crossed in the 1970s, and in the ensuing years, I spent many a happy childhood vacation cavorting around the Magic Kingdom, and later EPCOT. Today, the 27,000-plus-acre complex is the most visited vacation resort in the world, with attendance in excess of 52 million. The phenomenal growth came as quite a shock when a trip there presented itself to me after a two-decade hiatus. Even with familiar scenes that tugged at the heartstrings, I admit to being just a wee bit overwhelmed and underprepared for it all, going so far as to eschew it entirely from any future vacation

plans. Tat was until the Four Seasons Orlando came on the scene and lured me back for another look. Situated on Disney-owned property, the Four Seasons Orlando, opened in 2014, is ideal for those who desire close proximity to the parks as well as a respite from the crowds and the theme. In fact, the property, constructed in a lakeside Spanish Revival-style to refect Florida’s golden age, is quite a haven for those without children, boasting an adults-only lakeside infnityedge pool, the Tranquilo Golf Club and an 18-treatment room spa with six couples’ suites.

Te interiors throughout the hotel, designed by Pam Anderson of Anderson Miller Design, are what I would describe as “punchy,” executed as they are in lively hues with whimsical architectural details such as fretwork, mosaic tile and wallpaper that whisper, rather than shout, its Disney afliation. For instance, the 32,000 crystals that comprise the chandelier in the lobby emulate the freworks visible nightly from premium park view guestrooms and the rooftop terrace. Guests rooms feel very residential, a comfortable feeling that extends to the sprawling Royal and Presidential Suites, each of which boasts a unique design scheme. Standouts among the six restaurants on property include PB&G, an indoor-outdoor venue near the sprawling pool and recreation complex that serves up traditional Southern fare and a great selection of bourbons and specialty cocktails. At the lobby bar, which overlooks the lake, the Black Bottom Peanut Butter Pie is to die for. The heritage of Italian-born Executive Chef Fabrizio Schenardi is palpable from the excellent gelato on offer at the Lickety Split cofee house to the veal and lobster ravioli at Ravella, which serves three meals daily (as well as The Good Morning Breakfast with Goofy & Pals character breakfasts on Tursdays and Saturdays) from its open kitchen with a wood burning pizza oven. To say Schenardi is passionate about his craft is an understatement. “I have to admit, I don’t have much down time. Most of the time, I think about food,” he said. At the rooftop restaurant Capa, which means “cape” in Spanish, a dramatic ceiling installation of undulating red fabric calls to mind the iconic matador’s tool. Te tapas-style menu is packed with sure bets and a staf that must certainly possess ESP for their ability to guide patrons expertly along their culinary dinner journey. “Lots of people don’t use Mediterranean cuisine the way it’s supposed to be used. I like to experience it authentically,” said Schenardi.

Encompassing a full five-acres, Explorer Island offers activities for all ages, from toddlers to adults, with a lazy river, interactive splash zone with waterslides, a lakefront infnity-edge pool with dive-in movies, separate recreation zones for children and teens, and a complimentary daily kid’s program. An ice cream shop, basketball court and a trio of Har-Tru tennis courts round out the complex. For the topic of this article, I gave myself a daunting task – selecting the perfect French wine fight. Reviewing some of the “best of the best” wines from France was very difcult, as they are all top quality, must-have wines. I poured over my notes and picked four favorites. It was harder than I could imagine; I could have easily selected a dozen for the perfect French wine fight. But since I had a self-imposed limit of four, allow me to propose a near fawless and absolutely delicious list of fantastic French wines in several diferent styles. Brut Premier Cru Egly-Ouriet “Les Vignes de Vrigny” NV (Champagne, France) Champagne hails from one of France’s most northern wine producing areas, about 90 miles northeast of Paris. Te region is only about 60,000, acres. If that seems large, consider that the Napa Valley is 225,280 acres. Egly-Ouriet is a “grower producer,” which is to say, unlike many of the large prominent Champagne houses, they grow and produce their Champagne and do not purchase grapes or wine. Tey are a small, quality-driven estate and are noted for ageing their wines longer than required by law and for the age of their vines. Tey follow the philosophy that older vines produces better wines. Champagne can be made from Chardonnay, Pinot Noir and Pinot Meuiner grapes. Tis Champagne is very unique

as it is made from 100 percent Pinot Meuiner and is aged 35 months. It is a full-bodied, sparkling wine with the complex flavors of baguette, Mirabelle plums, blackberries, lemon, minerals and ginger. Tis is a great example of Champagne to go with more than appetizers; it would be delectable with rack of lamb. Chambertin Clos de Beze Gerard Raphet 2002 (Burgundy, France) The greatest Pinot Noir on earth comes from Burgundy, and in Burgundy the hierarchy is like a bull’s eye target, going from a larger area to the smallest area, where the price gets larger as the area gets smaller. So, the hierarchy of Burgundy is Regional, Village, Premier Cru and Grand Cru. Tis wine is one of only 39 Grand Crus of Burgundy. Burgundy can be one of the most difficult wine areas to understand, which adds to its mystique and interest. It has long been considered the Holy Grail of Pinot Noir and Chardonnay; it is what most producers outside of Burgundy compare or contrast their Chardonnay and Pinot Noir to. It has more legally defned wine areas than most countries, although a couple of easy things to remember are that white Burgundy is made from Chardonnay and red Burgundy is made from Pinot Noir. Gerard Raphet is a small domaine making extremely high quality wines. This wine comes from a half-acre of 75-yearold vines, a minute production that is worth seeking out. Te wine is medium-bodied and uses 100 percent new oak, but you

cannot tell as the crisp, bright raspberry and cherry fruit is not overwhelmed by it. The wine is aromatically complex with a multiplicity of favor seldom found without power. Tis is an elegant wine with the flavors of baking spices, minerals, light smoke and earth, all in an absolutely beguiling silky texture. Chateau Petrus 2000 (Pomerol, France) Tis wine comes from Pomerol, which is located in the region of Bordeaux. Te soil is very unusual for this area. It is almost all sandy-clay, which allows the vines drainage, but it is important as it adds richness and lowers acidity in the wine. This is particularly well-suited for the Merlot grape, which makes up about 95 percent of Petrus’ blend, with the balance being Cabernet Franc. In order to increase the concentration of the wine, yields are extremely low. Petrus’ vineyard workers perform a crop thinning process to remove bunches of grapes so that each remaining bunch can be even more concentrated. Tis drastically reduces the quantity but increases quality. Tis mythical winery produces what is generally considered the greatest Merlot in the world; about 4,000 cases are made annually. Integrated long tannins make this wine soft, silky and polished, and inherently drinkable at a young age but still a compelling full-bodied wine, with the concentrated favors of plums, black cherries, oak, vanilla and spice. It is an elegant, rich

and beguiling wine that comes from an assuming little chateau that produces one of the world’s best and most expensive wines. Chapoutier Banyuls 2008 (Languedoc-Roussillon, France) Tis is a fortifed wine, fortifed with pure un-aged grape brandy. Te fortifcation halts the fermentation, leaving the wine naturally sweet with its own grape sugar and between 15-20 percent alcohol. If you think there isn’t a better way to finish a delicious dinner than with an excellent dessert, well I say you should consider this luscious dessert wine, which can act as dessert in a glass or the perfect accompaniment to a dessert. If you are doing the latter, be certain to make sure the wine is as least as sweet as the dessert. For if the dessert is sweeter then the wine, the wine will seem sour, and in truth very few wines go with a dessert that is over-the-top in sweetness. Made from 100 percent Grenache Noir, this is a medium purple-red colored wine with the favors of raspberries, cherries, blackberries, chocolate, baking spice and red anise, all deliciously sweet in a full body. Tis is the wine for chocolate, just be sure the chocolate is not too sweet. Michel Chapoutier is the owner and winemaker of this famed Rhône winery that branches out in the Banyuls region in the South of France to make this fortifed wine. A GRAND ADVENTURE Experiencing the Grand Canyon from rim-to-river on a seven-day rafing trip with Western River Expeditions Written and Photographed by Bridget Williams Lava Falls. The mother-of-all rapids in the Grand Canyon had been lurking in our collective consciousness ever since we disembarked in the tranquil waters of the Colorado River at Lee’s Ferry, mile zero of our 188-mile, seven-day rafting adventure with Western River Expeditions late last summer. Up to this point I’d spent the previous fve days with my head cocked back like a Pez dispenser stuck on open – the antithesis to my normal cell-phone gazing stance – trying to comprehend the magnifcent and nearly incomprehensible grandeur and scope of this world wonder. As if the scene were scripted, there was a clap of thunder and a lone dark cloud unleashed a torrent of rain just as the roiling waters of the rapid came into sight. A herd of big horn sheep, the most we'd seen all week, clustered along the river's edge as though they were jostling for the best view of the potential carnage. I could have sworn I heard Te Ride of the Valkyries playing. "Suck rubber!” our guide exclaimed with more emphasis than at any other point on our journey, and I, along with the 58 slmag.net

seven other brave souls straddling the banana-shaped rubber tubes at the front of the raft, clenched the ropes with all our might, lowered our torsos, kissed the rubber like it was our one true love and hoped for the best. In less time that it takes to type this sentence, we were back in tranquil waters – though, at least for me, my heart was still lodged in the back of my throat. A quick head count to confrm all were accounted for was followed by a chorus of cheers to release the pent-up adrenaline from such an exhilarating ride. To be honest, deciding how best to fully express my awe in the space allotted for this story proved to be a daunting task, that after several rewrites seemed best likened to squeezing the proverbial camel through the eye of a needle. The beauty and vastness of the landscape aside, there were a million soul-stirring moments aforded by a rafting and camping experience such as this, and I worried that my simple words on paper might fall short in conveying their impact.

Sleeping under the vastness of a pitch-black night sky, seeking out familiar constellations among a billion pinpoints of light; bathing in the ice-cold water of the Colorado River or a gentle waterfall; stufng ourselves silly at every meal on food so tasty it was hard to imagine that it was prepared in a makeshift kitchen set up on a riverbank from perishable goods stored under a raft; watching the endlessly fascinating interplay of light and shadow on the towering canyon walls; hearing stories of the roughnecks and renegades from past generations who tempted fate by running the very same rapids in vessels I’d be nervous to launch in a pond; becoming friends with people from all walks of life who’d been strangers when we started the journey; being forcefully disconnected from technology for a week; and tackling my fear of heights are just a few of the indelible memories. 60 slmag.net

Founded in 1961, Western River Expeditions is the largest licensed outftter in the Grand Canyon. Each of their 60 licensed guides completes 300 hours of training in swift water rescue certifcation, CPR and First Aid Certifcation, a state licensing test, food handler's education, on-river cooking courses, geology and interpretation classes, and Western's renowned custom guide-training program before escorting his or her frst guest down the river. We met our guides and fellow travelers at Lee’s Ferry, an area that served as an important river crossing starting in the mid-19th century up until construction of the Navajo and Glen Canyon bridges. Here, at the northernmost end of Grand Canyon National Park, the Colorado River is much calmer than the waters that lie above and below. Prior to the trip we were given a detailed itinerary and packing list (note: even though you think it’s August in Arizona and you’ll be plenty warm enough, don’t forget your raingear).


We learned how to pack our dry bags and loaded our gear and ourselves onto the J-Rig rafts for a safety talk as we foated down the tranquil waters. While this is a fully supported trip, there is plenty of hands-on activity, from gripping the ropes of the raft and holding on for dear life, to helping unload the kitchen and campsite equipment each night as part of a fire line and setting up and taking down your tent each day. Being among those who thought there was no way I could possibly experience cold on a summer's day in Arizona, a dousing splash from the frst rapid we encountered taught me otherwise, and I quickly made a beeline to retrieve my raingear, which I donned faithfully every day thereafter." Lunch was had at Redwall Cavern, a vast limestone cave whose opening reminded me of a whale shark with its mouth agape. Te soft sand within provided cool respite from the blazing

sun and an ideal spot for a game of Frisbee. Te remainder of the day was spent riding a few “warm-up” rapids, each of which has an accompanying anecdote, before stopping at our frst campsite for the night and the moment the less “outdoorsy” folks in the group had been anticipating with a little dread. Feeling adventurous (even after spending a good deal of time pondering a very hairy tarantula that seemed to venture out of his subterranean home each time I wandered by), we decided to eschew a tent and sleep under the stars, finding the “perfect” spot on a rock outcropping near the river’s edge. All was perfect until a sprinkle turned into a steady rain and we spent the remainder of the night huddled under a plastic tarp hastily thrown across the branches of a scrubby bush. Any hint of lingering drowsiness was quickly eradicated by my morning bath; I could linger in the frigid water just long enough to lather up, run out and catch my breath, and run back in for a rinse.

From day two onward, we fell into a comfortable rhythm. Periods of tranquil water were interspersed with rapids of varying intensity. Sprinkled in-between were pit stops to explore magical places like Hidden Elves Chasm, Deer Creek Falls and Havasu Canyon. At the latter I found myself in a precipitous state of being frozen in fear while trying to navigate a narrow path that meandered along the edge of a several-hundred foot drop deep within Havasu Canyon. Lured by the promise of a Shangri-la-like experience in the arid environs, I’d written of our guide’s very frank description of this section of the trail, jauntily traversing boulders along the steep ascent that took us 62 slmag.net

high above the river. Time seemed to stand still as I allowed the others in the group, who were unafected by what I viewed as certain death, to pass me by so I could will my feet to inch along this tricky section of the trail. Guide Mackay Crabbe patiently spurred me on by promising a special treat the other’s missed as they hurried by. After what seemed like an eternity, I traversed the tricky spot. As I stopped to catch my breath, Crabbe directed my gaze high on an opposing rock to where the ghostly outlines of a series of ancient pictograph handprints were visible. As an ardent admirer of Southwest culture and archaeology, I considered it my reward for a job well done.

Each night our campsite was unique and somewhat random; while our guides had an idea of where they planned to stop for the night, multiple variables factored into where we actually ended up. One thing was for certain: we never went hungry. Anticipating mediocre camp food, I was in awe of the multicourse, restaurant-quality meals we were served. Prawns, Caprese salad, thick-cut steak, barbequed chicken, grilled rainbow trout and even ice cream, were a few of the all-you-could-eat oferings available. Each morning I looked forward to a hearty breakfast, washed down with a strong cup of “campfre cofee,” as a surefre way to jumpstart my day. Lunch was a more casual, though no less hearty afair, during which I learned that peanut butter and jelly and jalapenos rolled into a tortilla is quite tasty. Te sun was the director of our days. With no electricity to extend our outdoor activities, as the shadows grew longer and daylight waned, we bid our travel mates adieu and headed to our 64 slmag.net

respective campsites. As the frst rays of dawn lurched over the canyon walls, the chorus of sounds created by breakfast being prepared served as our wakeup call. On our last evening, following the wild ride provided by Lava Falls, I waded into a deep eddy for my fnal bath in the frigid water. I let the gentle current pour over me, while turning 360 degrees to capture a mental picture of this moment, hoping to make it an indelible one before an impending feeling of numbness in my lower extremities fnally forced my exit from the water. We exited the canyon at mile 188 in grand fashion – via helicopter – that took us to Bar 10 Ranch where a warm shower awaited us. In today’s interior design world, there seem to be two current schools of thought with no gray area in between: Clients are opting for either an abundant use of saturated color or a subtle, soothing palette of neutrals. Both are highly efective and can be used to craft substantial, dramatic, wow efects. How that is done exactly, is best left to professionals as it’s not quite as efortless as it may appear. The bold use of color can produce undesirably jarring results while a home enslaved to nothing but neutrals is often downright underwhelming. From the minute we arrived to meet prominent Middle Tennessee interior designer Robin Rains, founder of Robin Rains Interior Design and Shelby Ray, her design associate of 15 years, at the renovated Belle Meade home of clients Davonna and Randy Wachtler, we observed how Rains had resolved that particular design dilemma. Stepping across the threshold of the Wachtlers’ “friends and family entrance,” we immediately noted Rains’ striking use of blackand-white, supported by an assemblage of neutrals. “In order to make 70 slmag.net

neutrals pop in a design concept,” Rains explained,”it’s necessary to incorporate texture upon texture.” And, that is precisely what this design duo did to transform this traditional Belle Meade estate with 15 rooms into a modern interpretation of current interior trends. The Wachtlers and their two teenage sons, Haden and Harrison, relish the privacy of the property as well as its outstanding views. As the president and CEO of Warner/Chappell Production Music, one of the world’s largest music production companies, Randy Wachtler wanted his home to provides a daily respite from the rigors of an all-in career. The couple’s former dwelling in the exclusive Williamson County enclave of Beech Hill, which sprawled over 10,000 square feet on a 10-acre setting, offered the degree of privacy which the couple required. Rains had awakened that property with her distinctive design flair, so when the Wachtlers discovered and purchased an 11-acre estate in Belle Meade, they knew before they’d fnished signing the closing papers, that Rains’ expertise would be a crucial element in their grand “moving-closer-to-town” plan.

Tey were also surprised that the Chickering Lane location wouldn’t necessitate any relinquishing of their seclusion. Even more fortuitous was the fact that a year later entertainer Justin Timberlake’s mother and stepfather were interested in acquiring the pair’s Beech Hill residence. Te stars quickly aligned, and voila!,the Wachtlers engaged both Rains and architect Ron Farris of Farris Concepts in Architecture, and the renovation was rapidly underway. More than a year later, guests frequently pass through the easily accessible, arched “friends” entrance with its original French screen doors. An existing vintage black-and-white mosaic marble foor provided the bones for Rains’ design plan. She and Ray began by covering the shiplap walls and beamed ceiling (created from the original foor joists) in Sherwin Williams’ “Pure White” paint. Tey incorporated the owners’ wooden farm table from their previous home and had a custom, faux ostrich banquette with nail head trim, designed for lounging as well as dining, made to go with it. The host and hostess chairs are slipcovered in an Art Deco-infuenced, geometric printed linen. Wherever possible, they used washable fabrics for ease of maintenance. Te indoor/outdoor powder-coated steel chairs are from Made Goods while the owners purchased the bentwood chair at Nashville’s annual Antique and Garden Show. Rains convinced the Wachtlers to keep a unique propeller fan that came with the house as she felt it brought added architectural dimension to the room and its wood happily matched the farm table. Te propeller also leads the viewer’s eye toward an Ed Nash painting hanging above the banquette, which is fanked by a pair of vintage wrought iron sconces. Deco concrete planters (scouted on a buying trip to France) flled with clump moss. Te sand linen slipcovered iron bar stools from Arteriors are small, unobtrusive and lightweight enough so that they can be easily moved around the kitchen’s three islands. With one of the islands on wheels, chances are the stools could turn up anywhere. Te kitchen has a European undertone feel with its two sets of arched French doors and patterned marble foor. Tere are also two Sub-Zero refrigerators and a Wolf stove anchoring the washed brick wall at the back of the space. Rains had the kitchen cabinetry painted with Sherwin Williams “Grizzle Gray” and added cast iron industrial lighting pendants over the islands, which are topped with black soapstone or white marble. Te designer, who says she lives for the “hunt” of found objects, strategically placed a large marbleand-brass scale from France, a stone mortar and pestle, several muted Oriental rugs and an oversized round breadboard brought from Belgium, in the kitchen. Tere are black-and-white etchings on the wall and a photograph of the homeowners’ boxer, Lucy, who is, coincidentally, also black-and-white, with some neutral brown mixed in, just like the rest of the home. From the kitchen, one set of French doors leads into the dining room with its caramel-colored toile wallpaper and chairs done in a luxurious cut velvet damask the shade of muted tofee. Te efect of the multitude of warm brown neutrals is timeless elegance. Te other set of doors opens into the formal entrance hall with a winding staircase which sports a fashion-forward antelope print carpet on its treads. A stately English bench, which also made the journey from the Hidden Valley house, welcomes guests there when


they enter. “We married the pieces they already owned with some new acquisitions,” Rains pointed out. Te architectural details of the house itself, such as the Deco-inspired dental moulding around the doors leading to both the living and dining rooms were retained and painted white, while the wood foors received a transparent black stain treatment. Artist Ted Saul’s pale distressing of the doors adds the fnal classic but modern touch. Te living room, of the foyer, leads to the sunroom and is an ideal spot for the Wachtlers to entertain. “Tey have a clear sense of their style,” Rains said, “and wanted to keep the home neutral. For example, we covered the Lee Industries sofa in a gray Belgian linen. You know, gray is the new beige,” Rains said with a laugh. “We added the Angora pillows, the Chivasso Fabrics gray-and-white damask pillows and the old English architectural etchings in similar, but not ‘matchy-matchy,’ gilded frames on the wall above for the textural element.” Te cofee table, with its antique mirrored top and iron base, was custom-made in three separate sections so that any part can be moved to confgure multiple seating areas in the room. Rains painted the freplace black and replaced the existing gas logs with oh-so-modern black architectural freballs with white crystal ash. Adorning the mantel are several pieces of Mercury glass repurposed from the inside liners of old thermoses which the designer sourced in Belgium. Cozily grouped around the freplace is a custom daybed, tufted and covered in an ivory glazed linen surrounded by mismatched chairs of different shapes and sizes from a Julian Chichester tuxedo parlor chair to a pair of Michael Taylor iron chairs to a wool fannel Hickory Chair ottoman to a

crushed velvet Romo fabric on a Noir chair with an iron frame. Layers and layers of glorious texture create a harmonious rhythm through the single tone of color. “When you layer a lot, you have to have understated elements,” explained Rains. “Te lighting in the room helps achieve that.” A large black grand piano and oil painting dramatically ground the room while the lighting lends an airiness. Te cylindrical translucent silk shades of the foor lamps seem to melt right into the pure white walls. Lighting, an essential textural element, according to Rains, totally sets the mood. Te sun shining through the ivory silk drapes during the daytime to the fickering fames of the freplace at night, create an impeccable ambience, she said. Of note, is the designer’s application of texture in the wife’s study, wet bar and elevator off the living room. The pale taupe contemporary leather chair is centered on one side of the desk facing two vintage chrome sling chairs crafted from diamond weave white yarn. Te wall behind the Vintage Millwork wet bar, which is functionally located between the study and living room, was painted black and then wallpapered with an openwork, gold leaftextured paper by Weitzner, Ltd. It allows the ebony color to peek through, reminiscent of the kind of “torn hole-y jeans” which are all the rage in contemporary fashion today. A beaded chandelier in black, cream and brown hangs overhead. Te home’s original elevator is also located in this space. Rains and Ray said they had fun imprinting it with a vibe of old Hollywood sex appeal using a white tufted wall covering, a swirly black-and-white carpet, a midcentury sconce and a retro black wall telephone. slmag.net

Rains, who prefers local sourcing, went to Kenny and Company in the Gulch for all the plumbing, Vintage Millworks for the cabinetry and Mission Stone for the marble in the Ron Farris-designed, spa-like sanctuary.”We fell in love with the glass-and-marble mosaic tile in the showroom and used it for the shower foor, which became the focal point of the room and the primary inspiration for the entire process. Calcutta Gold Marble European-sized rectangular tiles were used on the floor of the bath with smaller tiles of the same material used around the shower walls. The over sized glass enclosure with two doors appears to just foat in the center of the room. Te soaking tub was centered in front of the picture window to take full advantage of view of the woods and pool area, where a new pool house is being constructed. For privacy, the designer installed Hartman and Forbes programmable, motorized woven silk-and-wooden shades. Teir texture plays nicely of the ever-changing light as it dances from surface to surface while showcasing the spectacular beauty of the vintage Murano glass chandelier. “Tis room was about keeping it all

white,” explained Rains, with the textural interest provided by all of the other sparkling elements. An Alpaca “pouf ” from Emporium Home waits patiently for the homeowner by the tub along with a brushed gold, hammered metal chair by Made Goods nearby. Tis light, white and modern space ofers a clean, fresh counterpoint to the traditional architecture found throughout. Te Wachtlers wanted an addition to the home that was both liveable for a family of four and entertainment friendly. They brainstormed with Rains, Ray and Farris in order to devise a swoon-worthy media suite with its own staircased-entrance over a much-needed garage. With its white washed Provenza wood flooring, black marble and dazzling silver-and-white metallic herringbone wallpaper, this inviting area projects an upscale, fun sense of style. Te classic linear metal staircase railing was sourced from Elon’s Metal Works while rope lighting was used to illuminate an under-the-staircase reading nook where two armless host chairs, covered in glazed linen, beckon. Up the winding staircase, under a stunning spiral crystal chandelier, past a white resin tusk sconce, a large window with black mullions and white casing and an abstract painting by Kelly O’Neal, guests arrive at the entertaining heartbeat of the Wachtlers’ home. Te Art Deco pendant lighting above the bar was purchased first and then the custom media bar, topped with black and white striated marble, was built as a fitting complement. Its black leather barrel-back bar stools add a casual, L.A.-nightclub vibe. There’s also a wine room here, a white marble guest bath with a fanciful black wallpaper stamped with silver lizards by Osborne and Little, a pool table, conversational casual lounge and a theatre room. At the top of the steps, visitors can view the Wachtlers’ album cover collage, all of which hold personal meaning for the couple. Randy, a world class music industry veteran, has spent more than 30 years in the business. His company has composed works for countless wellknown TV shows, as well as movies, so this grouping represents a visual stroll through his life’s work. Te room’s wonderfully unique ceiling came from Southern Accents Architectural Antiques in Cullman, Alabama. It is a charred cedar resembling an old Japanese custom called shou-fugi-ban. “We really wanted black wood and happened to stumble upon this company. There was so much more dimension to this wood. Te charring adds an interesting depth 78 slmag.net

and you can still see the graining, so it has reinvented itself in a diferent way,” Rains said. The game table is surrounded by durable, yet comfortable chairs fashioned from seat belts by the Phillips Collection. In the lounge area, an elongated, crushed gold, washed linen velvet sofa, accented with Oushak overdyed pillows and Restoration Hardware embroidered geometrics, literally calls out to those in need of relaxation and a cocktail. A Lucite chair from Mitchell+Gold is covered in a coordinating geometric print while a faux leather ottoman and a pair of Lee Industries gray flannel swivel chairs complete the setting. One of Wachtler’s drums, retroftted as a side table, serves as a visual exclamation point. With the Wachtlers mission accomplished, Rains and Ray, dashed of to Paris to hit the incredible Clignancourt fea market and all other markets in between. Tough they’ll arrive home long before their shipping container lands on this side of the ocean, rest assured that when it does, it will be packed to the brim with oneof-kind treasures, oozing with texture and patina. Some of the pieces will have been selected specifcally for clients and some to be housed momentarily in Leiper’s Creek Gallery, while awaiting shoppers with a discerning eye to happen by and take them home. “We just like to buy things we love! Eventually we fnd the perfect spot for everything,” they said without the slightest note of concern in their voices. And obviously the Wachtler’s agree. sl

When Andrew Whitney landed the prized position as Virago’s executive chef just 15 months ago, he felt he had reached his personal summit. After all, the prestigious McGavock Street establishment had just hired the former food truck manager and chef at the ripe old age of 27. Anyone lucky enough to spend 10 minutes with Whitney quickly senses his enthusiasm for the job has not ebbed since he took the helm. “Tis has been the most humbling experience I’ve ever had,” Whitney confded during a recent chat, which occurred within several weeks of tying the knot with fancée Diandra, earlier this spring. Whitney said he simply cannot envision how life could possibly improve. He has frmly planted himself at this M Street fagship eatery in the hip Gulch district of Nashville and said he plans on remaining. “I love Nashville. It’s where my roots are and where my family is. Nashville is home. Tis is my dream job; the epitome of my career.” Dallas-born Whitney spent eight years in Southern California before his family moved across the country to Middle Tennessee more than two decades ago. At 15, during a stint as a dishwasher

at a Smyrna doughnut shop, it had not yet dawned on this future chef-to-be that the food service bug would capture his imagination. Tough he tried other odd jobs, he kept returning to the industry. He spent some time in Manhattan exploring fine restaurants and exceptional food before heading back down south where he enrolled in Atlanta’s Culinary Institute in order to add the necessary skills and credentials to what would become his life’s work. As executive chef for Riff ’s Fine Street Food including its award-winning food truck with its Korean-inspired cuisine, Whitney fne-tuned his epicurean expertise as well as his deftness for management. Several years later, Whitney learned that Virago’s coveted head chef job was going to be available and decided to go for it. “Coming from a food truck background with no tenured clientele, I had no idea if I was truly ready for this kind of position. In fact, I almost didn’t apply.” But, once he received his second call back to cook for managing owner Chris Hyndman and former chef Sean Austin who was moving up to General Manager, he said his butterfies vanished and his confdence in his abilities soared. For the next few months, he worked alongside Austin, who trained him to take the reins. “Tis has been the best learning experience and I’m now ready to make my mark on Virago,” Whitney noted. He fell instantly in love with his new staf of 25 and the afection seems to be reciprocated. And as anyone knows, a happy kitchen is a productive one. The kitchen, like the menu, is divided into two parts: the sushi side and the Robata grill side. Te sushi side, which is open to diners, showcases three to nine sushi chefs, depending upon the night, as they perform their ancient craft for all to see. Guests can elect to sit at the bar or be ensconced in one of the plush, cabanastyle booths, at both locations they will receive full service from the staf and access to the entire menu. Virago’s seafood, of a quality often found only in much larger locales, is fown directly from Tokyo and Hawaii. Te restaurant’s Gulf seafood can be documented online as to in which specifc area it was caught and which fsherman landed the catch. For the value-oriented customer, Virago ofers “Maki Sake Mondays” which entertains sushi lovers by ofering half-price fare from 5 to 10 p.m. with cocktails and sake available at two-forthe-price-of-one. Tis is an opportune time for more adventurous diners to move into uncharted waters and sample a stunning

assortment of options including the Hamachi hand rolls with shisho jalapeno ponzu, the Tiger Roll of spicy tuna topped with shrimp, serrano and wasabi tobiko, or the Hamachi Crudo which features red Yuzu Kosho, micro lovage, cucumber and avocado. And certainly, by all means, martini lovers should not overlook the chance to try the Wasabi Martini, a specialty cocktail packing just the right amount of liquid heat. On the other side of the kitchen is the Robata grill, where Virago’s famed Wagyu beef and Compart Family produced Pork Belly are seared to mouth-watering perfection. Virago was Tennessee’s frst restaurant to introduce this ancient Japanese concept - a method of quick grilling without the smoke, due to its 1400 degree temperature. Tis allows meat to be cooked without covering its favor. In a corner of this hive of industry, stacks and stacks of cast iron skillets (Southern grandmothers would be especially proud of the continuing use of their timehonored cookware) conspicuously stand ready for use in creating house specialties such as the Tamari soy-braised chicken thighs with crispy chicken skin, togarashi honey and snow pea slaw and the oft-ordered Wagyu Tataki, a center-cut strip loin, hardseared and topped with honshimeji mushrooms, soy pickled tomatoes and micro celery. slmag.net

A notable new spring feature being ofered is the pan-seared scallops with spring pea and white soy emulsion topped with fennel, black garlic and red currants. Vegetarians can enjoy the Donburri Bowl, comprised of sticky rice prepared in a 700-degree clay bowl served with a soft boiled egg, seasonal veggies and miso remoulade as well as sides like fried soy pickles, crispy Brussels sprouts, miso caulifower, crispy okra or the V2 Edamame. Chef Whitney shared with us the secret ingredient in the scrumptious V2 sauce. It is made of soy, brown sugar and - drumroll, please - orange marmalade. “None of our sauces overpower the meat,” said Whitney. “But the little bit of sweetness in the V2 sauce goes perfectly with the fattiness of the beef, as well as with our vegetable offerings.” Most of Wagyu beef comes from Texas, America’s only pure bred Wagyu beef source. “All of our protein is raised humanely, with the ultimate respect given to the product. We build relationships with our vendors. Tey know our standard: the best of the best,” Whitney said. “I don’t mind being pretentious one bit when it comes to this area. We also source our

produce either locally, when possible, or from close by at Creation Gardens and Woodson Ridge Farms. We use very little processed foods. Everything we do, we make, which costs more. Quality is always frst and foremost.” Although this restaurant is tucked right in next to Moto, Saint Anejo and Rosewall - three other M Street Entertainment Group properties - it has minimal street presence due to its hidden side entrance and unobtrusive sign. Once inside, most patrons are surprised by its unexpectedly expansive size. Tere are seven bars, including a sake bar displaying the Southeast’s largest collection. Tere is even an intimate private room for 20 guests called Te Lotus Room which is notable for its highly original, bunched-chopstick ceiling decor and sliding geisha-like doors. Te leather-clad booths and many intimate table zones located throughout the establishment enable the restaurant to serve around 350 diners on any given night. Te open kitchen, the see-through geometric iron dividers and the oversized two-sided bar help defne the eating area, providing privacy no matter where one sits. Even


the spacious, river rock-walled room at the rear of the establishment with its changeable LED lighting is comfortably cocoon-like. Te tigerwood and cement walls, the use of kasa-styled shades covering the pendant lighting, the herringbone, and the mother-of-pearl tile on some of the bars and containers of bamboo all work seamlessly to create a restrained, sophisticated ambiance. Virago’s interiors simply ooze pure high-style sex appeal. Its wildly popular rooftop bar, which opened for the season in early April, serves a full menu outside, which complements the evening breeze and the commanding view of downtown Nashville. On a recent Friday night, our party ventured to McGavock Street for a tour, tasting and chat with Virago’s outstanding team of industry professionals. Manager Alex Bailey, who started as a hostess at Virago six years ago, and manager and beverage director Oleg Bulut guided our culinary adventure. They suggested we begin at the sake bar, which includes an outdoor seating area, atmospheric white bee lights and pots of tall, bushy bamboo. Server Sean Lepard and bartender Lauren Holcomb provided

us with exceptional service. We started with the famous V2 edamame, crispy Brussels sprouts and Maine lobster shooters, which you don’t actually “shoot” but allow to marinate in the spicy red curry sauce before devouring. Bulut suggested the Chirashi Don, the chef ’s fresh daily sashimi selection, as well as the perfect accompaniment – a bottle of the crisp, light Konteki “Pearls of Simplicity” sake wine. It was very refreshing with notes of lemon, honeydew and licorice. “One does not get a hangover from sake,” explained Holcomb and Oleg in more detail than we want to go into here, but trust us, it is true. And by the way, in Japan, sake refers to any alcoholic beverage. While you might not think of Virago as a dessert kind of restaurant, you would be wrong. Laura Altizer, the pastry chef, prepared the most decadent spiced pecan pie with charred homemade marshmallow and sweet potato gelato. Pair that with a cappuccino served under a powerful industrial heater while enjoying a crisp spring night and we had ofcially attained nirvana. A little later, a band tuned up in the lounge and it was ofcial, the weekend had begun.

30th ANNIVERSARY BALLET SEASON CELEBRATION It was a simply spectacular evening celebrating the thirtieth anniversary season of the Nashville Ballet. Te incredible team of Co-Chairs Mary Morgan Ketchel and Sharon Sandahl had the idea to incorporate song and dance, keeping in mind that a songwriter is to music as a choreographer is to dance; neither can achieve full potential without the other. Entertainers for this anniversary celebration were Jana Kramer, Karla Davis, Victoria Banks and Tia Sillers. Sillers was the inaugural recipient of the Nashville Ballet Synergy Award. Tis award recognizes individuals who have made outstanding creative contributions to inspire dance. Sillers accepted this award for her Grammy Award-winning song, I Hope You Dance, she performed the song live to original choreography by Christopher Stuart. Nashville’s own Julie Stadler with David Medeiros of Dance Network gave an outstanding performance with a rhythm-style ballroom production. Spring forals of robust colors in orange, pink, peach, teal and cream were magnifcent, all created by volunteer support. DO LASERS GO AWAY IN MAY? Written by Dan Hatef, M.D.

What a busy and exciting time these past couple of months have been. Everyone is booking appointments to get rejuvenated for awards shows, the Frist Gala, Mother’s Day, Steeplechase, the Swan Ball, and in general to look their best for summer. Recently, a few of my laser patients have mentioned to me that they are in a hurry to get everything complete before June, because they were under the impression that they cannot have any laser treatments done in the summer. This question has become so common that I thought it would be benefcial to devote this editorial to this concern. WHAT CAN’T YOU HAVE DONE? Although this belief that a patient cannot do any laser treatments during the summer is a myth, there are certainly some procedures that should be approached with caution. Intense Pulsed Light laser treatment, in general, is the worst procedure to have in the summer. It is strictly attracted to pigment, so while it can be done in experienced hands for patients who are generally out of the sun, for the most part, it should be avoided during the summer months. WHAT CAN BE DONE WITH CAUTION? While they are some of our most popular treatments, laser hair removal and laser vein reduction generally should not be performed when a patient is going to be in the sun a great deal of time for a few days before or after. Tis is because the lasers target pigment in the skin. When you have had, or are about to have, a great deal of sun exposure, the laser will not be able to easily focus on the spot we are trying to target. Additionally, the sun can make your skin more sensitive and more easily injured from the laser. Tat being said, laser hair and vein treatments can be done during the summer – you just have to make sure you avoid the sun before and after. WHAT CAN YOU DO WITHOUT ANY CONCERNS? Laser genesis is probably the best treatment to have during the summer. Tis is a 1064 nm Nd:YAG laser that has become a very popular skin rejuvenation treatment in my practice. Because it is not a resurfacing treatment, it is not going to cause baby cells to come to the surface and make you more sensitive to the sun. It is putting heat below the skin, encouraging collagen stimulation. It is a gentle way to encourage that youthful glow and improve skin texture and tone in any skin pigment at any time of the year.

Another good treatment modality is not a laser – it’s radiofrequency. Radiofrequency, or RF, is where small, frequently vibrating radio waves hit your skin and cause tightening. We have seen excellent results on the body, helping patients get that last bit of abdominal and buttock tightening they have been trying for all winter, as well as in the face, where you can make the jawline a little bit tighter and the facial soft tissue tone just a bit more youthful. Finally, “RF Microneedling” is the hottest new aesthetic treatment to have come around recently – we offer this in our practice, and are happy to perform during the summer months. However, because this is causing small injuries to the skin, the sun must be avoided for a couple of days before and after. In summary, there are many good laser and nonsurgical aesthetic treatment modalities that you can do during the summer months. Read about your options and become more educated about what you are considering. Speak with your physician or a highly-experienced laser aesthetician, and feel confdent that you can stay rejuvenated during these summer months. Te Oscar goes to....Te Belcourt Teater. Tis 90-year-old theater is in the midst of a most exciting renovation, thanks to the patrons and supporters of the silver screen. Tis 15th annual fundraiser was held at the temporary venue, War Memorial Auditorium, another Nashville historic treasure. Guests walked the red carpet adorned in attire of many past and present day movie legends, attending the showing of the 88th Annual Academy Awards. Food bufets lined the auditorium, compliments of Whole Foods Market with wine and spirits by Lipman Brothers. Interspersed the food stations were the silent auction tables, overfowing with items from entertainment to getaways. Te award for 2016 Best Actors, Te Papa Joe Lightman Award, was presented to Amos Gott and Holly Hofman, Co-Chairs of this spectacular Hollywood afair. 4

“It will be an art lover’s dream!” exclaimed Rhonda Wernick Co-Chair with gallery owner Ron York for Art On Te West Side. Tis was the third year with more than 50 regional artists displaying and selling their artistic works in a juried show held at the Gordon Jewish Community Center. Tere was a great variety of art including sculpture, clay works, paintings, jewelry and glass. Te artists were on hand chatting with attendees at the opening cocktail reception, feasting on tastings provided by local restaurants, caterers, bakeries and friends of the GJCC. Five Wealth-Building Tips for Women in Their 20s & 30s There’s no better time to start amassing savings than when you’re still a young adult.

That’s because your investments have years—decades, really—to grow. Moreover, you may have more disposable income at this point in life than you will have when you’re older and have more financial obligations. Building wealth isn’t challenging if you take the right steps at the right time. Here are five tips for building wealth as a young adult woman: 1. Save at least 10 percent of your income. The more income you stash away now, the less work saving will seem when you’re in your 40s or 50s. Try saving at least 10 percent of your income in a tax-advantaged retirement account such as your employer’s 401(k) plan. If you’re self-employed, consider setting up a solo 401(k) plan or a Simplified Employee Pension (SEP-IRA) that will give you a tax deduction for your contributions. Once you start saving in a retirement plan, aim to raise your contribution amount by 1 percent of your income annually until you reach at least 20 percent of your income. 2. Te menu inspired from Downton Abbey’s own Mrs. Patmore’s kitchen consisted of cheese and fruit platters, mini croissants with cranberry chicken salad, sausagestufed mushrooms, roasted pepper quiche, tomato stufed with wild rice salad, and mini Reubens and shepherd’s pies. Inspired from Mrs. Patmore, Bacon and Caviar Gourmet Catering presented this scrumptious bufet for the afternoon tea. Downton Abbey, the British drama series, followed the lives of the Crawley family and its servants in the family’s classic Georgian country house. A Finale Afair was held to beneft Nashville Public Television and a farewell toast to the end of the highest-rated drama in PBS history. Te event was held at the Noah Lif Opera Center, guest dressed in 1920’s attire as their favorite Downton Abbey character. As we say farewell to Ladies Mary, Edith, Cora and Violet, as well as, Robert Crawley, Earl of Grantham, we shall always remember this PBS/Masterpiece gift, Downton Abbey.

2016 FRIST GALA PATRONS’ PARTY

Patrons of the 2016 Frist Gala were treated to a taste of Madrid held at the Frist Center for the Visual Arts. Hosts of the evening were Judith and Richard Bracken, Jana and Ansel Davis, Kate Grayken and Lynn and Kenneth Melkus. Te evenings theme was drawn from one of the oldest and most signifcant private collections in Europe, Treasures from the House of Alba: 500 years of Art and Collecting. Tis exhibition, now on display at the Frist, brings together more than 130 works of art dating from antiquity to the twentieth Century, featuring works by Goya, Murillo, Titian and Rubens. Tis is the frst major exhibit outside Spain of works from the collection of the House of Alba- a prominent Spanish noble family with ties to the monarchy since the ffteenth century. Te 2016 Frist Gala was held in April under the leadership of Co-Chairs Elizabeth Dennis and Daphne Butler. Tere was not a red rose, tulip nor hydrangea left in Nashville, red and Madrid, a striking afair!

RUNNING OF THE BULLS-2016 FRIST GALA

Unlike anything Nashville has ever seen, Frist Gala Chairs Elizabeth Dennis and Daphne Butler chose an edgy and contemporary Spanish theme for this year’s Gala. Guests found unexpected and memorable details at every turn. Inspired by the current exhibit at Te Frist, Treasures from the House of Alba, the chairs and design team, Big Event, Inc. transformed the Grand Lobby into an early evening on Barcelona’s Las Rambla. Street performers wore dramatic famencoinspired costumes and mesmerized the patrons with their graceful performances. A mock Running of the Bulls served as the splashy dinner bell as three enormous white bull heads were puppeteered through the crowd chasing the requisite runners in white costumes while volunteers and staf rang cow bells, shouted jeers and waved red bandanas. Once inside the massive all white dinner tent guests felt the edgy and chic design with the crisp canvas of white, everything white, linens and chairs even the carpet which allowed focus on the incredible light show overhead. As the evening progressed, the music and the light show evolved from somewhat calm to up-tempo and fully mesmerizing. Te co-chairs and design team worked especially hard to showcase a modern visual art form in a contemporary setting, their interpretation of the “New” Spain. An edgy, chic and most sophisticated Spanish evening, Te 2016 Frist Gala, an evening of magic.

What is your ftness background, and what challenges do you face regarding your own personal ftness? First of all, I’m a working mom and I’m seven months pregnant with twins, so that’s a challenge in itself ! I’ve been a personal trainer for 12 years and have been with Fitness Together for 10 years. I graduated from Western Michigan University with a degree in exercise science, and I hold the industry’s gold standard of certifcation with the American College of Sports Medicine as an exercise physiologist. Right now my biggest challenge is to stay active during my pregnancy, when I’m heavier and my energy is sapped. I lose my breath easier, but I still try and strength train four times a week, because it really boosts my energy level and I know it will help me recover faster after my delivery. I love what I do, and my clients at Fitness Together have become good friends. Tey even hosted a baby shower for me last weekend! I’ve never worked out with a trainer before and I think I would be uncomfortable working out around a group of people. Will there be people watching me? Walking into a gym with all the equipment and people can be overwhelming and intimidating. Our studio is designed with private rooms as well as some open areas, so clients can have all the privacy they want. Why is 1-on-1 personal training more effective than other ftness programs? Everyone has different strengths, weaknesses, injuries, goals and busy schedules, so it’s important to have a

program designed specifcally for your individual needs. Your workout should be challenging but achievable, and be tailored to your current ftness level and health and injury history. A comprehensive ftness program includes strength training, a custom cardio plan that fts into your day, and nutrition counseling that considers your body’s energy needs, your lifestyle, and your weight management goals. With our professionals, you can make the best use of your time---our training sessions last only 45 minutes because we focus on combination exercises that use multiple muscle groups at the same time. I’m in my early 50s, and I’m beginning to notice stiffness in my back and aches and pains here and there. Is this just part of the aging process? More aches and pains come along as we age, but many can be managed or resolved through movement. We have clients ranging in age from 12 to 84, including those with history of cardiac events, joint replacement or sports injuries. We train for general ftness, weight loss, injury prevention or rehabilitation, and occasionally some sports-specifc training. Exercise is not only good medicine, it is a great stress reliever, can help you sleep better, and can contribute to better health in many ways such as lowering your blood pressure, cholesterol, and blood sugar. Can I actually enjoy working out?

WINTER LIGHTS

Winter lights were in brilliant sparkle for the annual Family & Children’s Service signature fundraiser. A musicflled evening start to fnish with cocktails followed by a seated dinner held at the Commodore Ballroom of the Vanderbilt Student Life Center. A stellar list of honorees: Caroline and Rob McNeilly receiving the Jane Eskind Leadership Award, and William Liles the recipient of the Mary Jane Werthan Award. Tese deserving honorees brought in a sell out crowd to honor their great leadership and vision. Te lives of so many have been enriched and our community is a better place to live and learn, thanks to the McNeillys and William Liles. A wonderful evening with entertainment by David Anderson and Te Erik Blue Band, dinner by Emily and Jim Frith and Corner Market.
