Our favorite Christmas was spent traveling along the famous Romantic Road of Western Bavaria. Drive through the snow-covered Black Forest, home to fairytales and Christmas markets with their wooden stalls and hand-crafted gifts. Slow down for pampering at a famous Baden Baden spa and wellness resort, then continue along the Romantic Road to Münich for the lively celebrations, cathedral organ concerts, and ice skating in the shopping plaza. Spend Christmas in the village of Oberammergau, home of the famous Passion Play performed every 10 years since the 1600s. Enjoy a sleigh ride Christmas morning to Linderhof Castle and feast on amazing local dishes for dinner. A journey to the end of the Romantic Road with your visit to Neuschwanstein Castle provides a happy ending to your fairytale Christmas.

A staggering ninety-five percent of individuals will suffer from some form of chronic, ongoing pain throughout their lives- most commonly, in the neck, the back or both. After learning such a shocking statistic, I’ve been anxious to dive deeper into the medical practice of one local doctor driven to change, and ultimately better the quality of life of his patients who, unfortunately, are a part of a category bursting at the seams. I walked into the office of Dr. Brandon Tolman excited and charged, as I’d been preparing for this editorial for months. However, I wasn’t prepared for the whirlwind of emotions I experienced during this much-anticipated interview. Whether it was feeling enthused from the start, saddened by the above statistic, overwhelmed by the significant amount of sources of pain and even more expansive amount of treatment resources, Dr. Tolman’s constant, contagious tone of hope is what truly affected me the most during our two hours together. If it’s one thing I learned during our visit, it is that pain works just like compounding interest. Using this financially-driven metaphor, leaving your principal untouched becomes a powerful, lucrative method to grow one’s initial investment. In regards to pain, allowing the original source to go untreated or, even worse, mistreated, leads to exponential damaging affects on one’s physical health. This parallel remains the driving force behind Dr. Tolman’s medical practice, Integrity Pain and Center for Regenerative Medicine. He and his highly-skilled team of passionate practitioners remain laser-focused on locating the principal source of pain in order to customize a restorative treatment unique to each patient. After graduating from Colorado State University with a Bachelor of Science in Exercise and Sports Science, Dr. Tolman took his studies to Virginia Tech to study kinesiology and received his medical degree from The West Virginia School of Osteopathic Medicine. He then spent his residency working alongside an elite team of physicians at renowned Chicago-based Midwest Orthopedics, the same doctors entrusted with the physical health of Major League players from both the White Socks and Chicago Bulls. In 2015, Dr. Tolman began his advanced training in preparation for his fellowship in Interventional Spine and Regenerative medicine. While Dr. Tolman’s credentials continue to grow daily, his professional path began to steer in the direction of regenerative medicine early on after two personal injuries provoked both frustration and fascination. His intuitive belief & expanding knowledge in Western medicine not being the only means to heal triggered his initial research into stem cells and PRP. The excitement after discovering and confirming that healing is possible from within was thrilling and has continued to ignite him ever since.

“I get a lot of patients that, after being seen by ten different physicians, still don’t know the problem,” states Dr. Tolman, “but I don’t like that answer.” It is here, in this very statement, I found the foundation behind what truly sets Dr. Tolman apart. Opened in the late 1800s as a haven for well-heeled Brits, following a $160 million renovation, the historic Britannia Hotel in Trondheim, Norway is poised to define Norwegian hospitality for luxury travelers well into the next century. Written by Bridget Williams Warm and fuzzy feelings distilled from childhood memories can sometimes percolate in the subconscious and impact our lives years later, as the re-opening of the Britannia Hotel in Trondheim, Norway attests. At the tender age of 14, Trondheim native Odd Reitan, now a self-made billionaire, resolved to one day own the world's most northerly "palace" hotel, first opened in 1870. Reitan has remarked fondly of being warmly welcomed into the grand confines of the hotel's glass-domed Palmehaven dining hall on special occasions as a young boy. As a present-day visitor, it is easy to imagine Reitan as a wide-eyed boy surveying the voluminous space, first unveiled in 1918 as a magical touch of the tropics in this most non-tropical of places. After acquiring the Britannia, Reitan knew that too much nostalgia could be stifling. The multi-year, $160 million renovation he orchestrated preserved the hotel's most significant historical attributes while adding amenities to lure the next generation of tastemakers with an eye for luxury. Commanding a city block in the center of this pristine city, located just 60 miles south of the Arctic Circle, the juxtaposition
of old and new is apparent as soon as you enter the Britannia's lobby. Awash in Italian marble, dotted with gleaming crystal chandeliers, and featuring art by contemporary Scandinavian artists, the dÊcor strikes just the right balance between masculine and feminine. It reminded me of a finely tailored gray pinstriped suit dressed with a pink silk pocket square. Just past a dramatically scaled staircase that conjures many a moment of grand arrival over the years is a bank of high-tech elevators that transport guests quickly and quietly between floors. Colors of the carpet runners that line corridor on each floor dissolve from grey to blush and cream, reminding me of the way the sun gradually dissipates the marine layer. A member of The Leading Hotels of the World, each of the 257 rooms and suites boast Carrara marble bathrooms and handmade beds by renowned Swedish company Hästens, the latter of which speaks to the hotel's no-expense-spared attention to detail. The bed in my two-floor suite provided a sleep so deep I awoke with the folds of my luxurious pillowcase imprinted upon my cheek.

Standing on the balcony of my room, I was able to detect the subtle scent of the briny Norwegian Sea that wafts over the rooftops of this fjord town. By a lucky coincidence, my visit coincided with Syttende Mai, or Norwegian Constitution Day (May 17), so from morning until night, I was treated to an endless parade of parades. Similar to 4th of July but dressier, the holiday was wonderfully devoid of any shows of military force or political grandstanding (except for the Star Wars club marching in stormtrooper garb). Everyone was attired in traditional dress or their Sunday best, singing, waving flags, and eating copious amounts of ice cream. I truly believed that this might be the happiest place on earth that day. Of the eight Michelin-starred restaurants in Norway, two are in Trondheim: Fagn and Credo. Britannia's Executive Chef Christopher Davidsen, a 2017 Bocuse d'Or silver medalist, has his eyes on a star for Speilsalen, the most elevated among the six restaurants and bars at the Britannia. for the senses, patrons are treated to multi-course meals that are planned, prepared, plated, and presented with expert precision. A former ballroom, the dining room is outfitted with original scenic wallpaper, crystal chandeliers and a pair of glass greenhouselike chambre séparée that accommodate up to 12 guests each. Befitting each course is custom Christofle china adorned with patterns culled from the hotel's archives. "My philosophy is to use high technique with local ingredients and a twist of flavors from around the world," said Davidsen of the menu at Speilsalen. Like the Britannia's owner, nostalgia informs the cuisine, allowing Davidsen to take favorite ingredients and treasured dining experiences from his childhood and reinterpret them as culinary fine art. Four-time Norwegian wine sommelier champion Henrik Dahl Jahnsen oversees the wine pairings. "When our doors open, the curtain goes up, and the show can begin," Davidsen remarked.

With a 10,000-bottle wine cellar, the hotel's Vinbaren is heaven on earth for oenophiles. Descending into the cellar via a stairwell lined with mirrors, reminded me of images of Coco Chanel's Paris apartment. The wine list includes both established and emerging regions, and Jahnsen said their aim is that each guest can find a bottle from "home." The house vintage Champagne from Maison Ayala is exclusive to the Britannia and pays homage to a partnership that spans more than a century. As a self-professed cocktail connoisseur, I was partial to the fanfare at the chic Britannia Bar, where the sometimes weird and always wonderful cocktail menu literally encompasses smoke and mirrors. Head bartender Øyvind Lindgjerde spent three months devising the cocktail menu, even building a bar in his home to use as a laboratory. The bar's inventory includes 25 types of aquavit, a flavored spirit produced in Nordic countries since the 15th century. saunas, and a whirlpool positioned under a ceiling designed to replicate the Northern Lights. Trondheim is a very walkable city, and during the summer months, explorations on foot can stretch into the wee hours under the midnight sun. After a sublimely satiating feast at Speilsalen, rather than head to bed on a full stomach, I changed into my walking clothes and set out to explore the city. I began my trek with a stop at the exquisite and ancient Nidaros Cathedral, the northernmost medieval cathedral in the world before moving on to admire the colorful buildings lining the canals. By the time I reached the top of a nearvertical street that is home to the world's only bicycle lift, I was nearly breathless. Near the top was my final destination: a large park surrounding the Kristiansten Fortress. By the time I arrived, it was approaching the midnight hour; yet the light was as bright as the spirits of those gathered here to walk their dog, listen to music, picnic, or just soak up the sweeping views of the city and the sea. It was one of those magical travel moments I won't soon forget.

Also memorable were meals at Bula Bistro (bulabistro.no) and Rom & Kjøkken (toromogkjokken.no). With a red bandana tied around her head like a modern-day Rosie the Riveter, Reneé Fagerhøi, the chef/owner of Bula, turns out food as lively colorful as her personality. Growing up on what she describes as a "biodynamic commune with no TV," Fagerhøi said that after becoming a chef, she appreciated the cooking skills picked up as a child. Her ten-course tasting menus are designed to "reflect what's happening in the world," and might encompass everything from pig ears to scallops. "It can be anything as long as it's delicious," she explained. Outside the city limits, some 5,000 islands beckon. Zipping along the water at up to 67 knots (78mph) aboard an open-air Rigid Inflatable Boat operated by Fjordrafting (fjordrafting.no) was my favorite mode of transport. The jostling and jumping, particularly in areas where the waters were a little choppier, is best described like riding a wooden rollercoaster. island of Bogøya, that is available to rent. With just 16 residents on the island, staying here is the epitome of getting away from it all. Slightly more populated, but still only home to 60 hearty souls year-round, Sula is the largest island in the region. The lightkeepers house is available to rent from a couple who also operates a small café with offerings made from ingredients foraged on the island's scrubby, windswept hillsides (sulakultur. com). Surprisingly upscale for such a remote place is Terna Brygge (ternabrygge.no), a seasonal restaurant and event space. If you are longing for langoustine or any of the sea's delicacies, don't miss the "Everything on the Table" spread put on by Ansnes Brygger Restaurant on the island of Ansnes (ansnesbrygger.com). Exactly as it sounds, copious amounts of seafood are accompanied by beer brewed next door. In a country where it's nearly night for four months out of the year, this feast was yet another reminder that Norwegians certainly know how to make hay while the sun shines. It happens every time. About 15 minutes after taking off from Miami International Airport en route to the Bahamas, a ripple of oohs and aahs begins to cascade down the aisles. "Look at that water…so blue!" Like moths to a flame, all eyes are glued to the windows. It is a sight that continues to enchant, no matter how many times you've been privileged to see it. It had been decades since my last visit to Atlantis Resort on Paradise Island in the Bahamas, and I arrived with a little skepticism packed in with my swimsuit. However, any preconceived notions I had were quickly dispelled by the resort's upscale offerings, which make it possible to "stay small" within this behemoth property. There are five distinct lodging options at Atlantis, with The Reef and The Cove occupying the top spots in terms of luxury and amenities. When Atlantis opened two decades ago, food and dining weren't at the forefront. Over time, the resort whipped up a magic sauce of celebrity chefs culled from around the globe. Upping the ante even more, they added up-and-coming Bahamian chefs and culinary innovators, thereby solidifying its reputation as a foodiefriendly destination. Today, there are 40 restaurants and lounges on the property, including celebrity chef collaborations with José Andrés (Fish by José Andrés), Nobu Matsuhisa (Nobu), Todd English (Olives), and Angelo Elia (Casa D'Angelo). McKenzies started out serving covetable conch dishes from a ramshackle stall under the bridge to Paradise Island. The Atlantis Blue Project Foundation is the resort's nonprofit organization dedicated to saving sea species and their habitats. Guests can have a direct hand in conservation through activities such as the Sea Turtle Release Experience. The adventure begins beneath the resort, where you get a behind-the-scenes understanding of the resources needed to care for the resort's 50,000 marine animals. It's here where you meet and name the juvenile sea turtle that will be released. From there, it's a short and scenic boat ride to the release spot at Green Cay. It's an immensely pleasurable experience to snorkel alongside your turtle in the open ocean at the moment moments it is released into its new home. Taycan, the first all-electric sports car, marks a new era for Porsche in the field of e-mobility. It is also the casual command used to control many aspects of the 2020 Porsche Taycan. It is one of the numerous ways the brand's first allelectric sports car differentiates itself in the burgeoning e-mobility field. Porsche invested some six billion euros for the launch of the Taycan, demonstrating the company's commitment to electric mobility. Even before its simultaneous three-continent debut on September 4th, more than 20,000 Porsche enthusiasts around the globe made a down payment to join the ranks of prospective buyers. Moments after the reveal, a production Taycan set off from Niagara Falls on a 408-mile "real world" road trip to New York City. After traveling 250 miles, and with 39 miles of range remaining, the Taycan stopped for a top-up charge at an Electrify America charging station in Bloomsburg, PA. A two-minute charge, which brought the battery up from 14 percent to 85 percent, was enough to power the sedan for the remaining 158-miles into New York City. Taycan buyers get three years of free charging at the 300 Electrify America stations currently operating in the United States. 44 slmag.net
Recognizable as part of the Porsche family in general and the Panamera in particular, Michael Mauer, Head of Style for Porsche, said that the Taycan is unique in terms of its proportions. "With a brand that is as strong as Porsche, it would not be a good idea to ignore all of the brand's characteristic design elements," he explained. The design team mated the brand's most familiar design cues with features unique to the Taycan to craft a unique brand expression. Selecting a name for a vehicle without a predecessor presented an exciting challenge for the Taycan development team. "A name for a car is ultimately an emotional decision—but one that should be based on facts and arguments. That requires a systematic approach and a lot of attention to detail," said Michael Reichart, project manager for the Taycan naming project. The Taycan moniker made the cut following a year-and-a-half of small-to-large focus groups around the globe, along with linguist and legal reviews. Composed of two terms of Turkish origin, Taycan roughly translates to "soul of a spirited young horse."
The innovative chassis systems include adaptive air suspension with three-chamber technology including PASM (Porsche Active Suspension Management) electronic damper control, as well as the Porsche Dynamic Chassis Control Sport (PDCC Sport) electromechanical roll stabilization system including Porsche Torque Vectoring Plus (PTV Plus). Capable of generating more than 750 horsepower, and with a top speed of 155 mph, the Taycan Turbo S clocks the zero to 60 mph sprint in 2.8 seconds; the 670 horsepower Taycan Turbo comes in under 3.5 seconds. The Turbo S has a range around 260 miles, while the Turbo's range is up to 280 miles on a single charge. For many, the familiar throaty rumble of a Porsche serves as its acoustic calling card and is an attribute noticeably absent in an electric vehicle. To compensate, the company offers "Porsche Electric Sport Sound" as a $500 standalone option on the Turbo model, and as standard on the top-of-the-line Turbo S. While the soundtrack is definitely dissimilar from its petrol-powered siblings, one could argue
that it is better than silence for those who desire an auditory indicator for all of that horsepower. Inside the cabin of the four-door sports car, there's a reduction in the number of classic hardware controls such as switches and buttons in favor of touch operation or the "Hey Porsche" voice control function. Standout material options include sustainably tanned Club Leather OLEA, which uses olive leaves in the tanning process; eco-friendly Race-Tex, a high-quality microfiber material partially made of recycled polyester fibers; and a floor covering made from Econyl, which uses recycled fishing nets in its manufacture. "We promised a true Porsche for the age of electromobility – a fascinating sports car that not only excites in terms of its technology and driving dynamics, but also sparks a passion in people all over the world, just like its legendary predecessors have done. Now we are delivering on this promise," said Michael Steiner, Member of the Executive Board of Porsche AG – Research and Development. Pricing for the 2020 Porsche Taycan stars at $152,250. MASTER SOMMELIER BRINGS BOUTIQUE WINE TO YOUR DOORSTEP Written by Neil Charles
To be anointed with the title Master Sommelier (MS) is to be recognized as a wine professional occupying a position in the very highest echelon of the trade. Of the hundreds who aspire to the qualification every year, fewer than five percent eventually acquire the honor, an epic achievement that can take many years of dedicated study to realize. Although the idea of becoming a sommelier and drinking great wine every day sounds romantic and wildly appealing, the fact is that the sommelier’s job is essentially to sell wine while providing a uniquely positive experience for the client at the same time. Wine is about pleasure, or at least it should be, and a sommelier’s primary objective is to lead a guest to a rarefied realm of pleasure while making a profit for his or her employer. At a busy upscale restaurant, sommeliers may get to spend just a few minutes with a guest, during which time they need to take stock of the person’s preferences and find their comfort zone before guiding them towards two or three compelling options that will appeal on every level. “Just because we know a lot about wine doesn’t mean we have the same tastes as somebody else,” says Master Sommelier Ian Cauble. “People drink what gives them pleasure, and our job as wine professionals is to bring things that make people happier.” All this requires a host of skills, some of which are inherited, some of which are acquired. Of the former, elevated intelligence, patience, and an ability to read minds are useful traits; a comprehensive knowledge of the subject ranging from vintages, grapes and regions, to winemaking, pairings, and trends, accounts for much of the rest. Although crucial to the process, the most visible aspect of being a sommelier -- that is, the service itself -represents only the tip of the iceberg. For Cauble, the stressful process of becoming a member (one of only 269 in the world) of the ultra-exclusive Court of Master Sommeliers was complicated by the fact that he was one of a handful of candidates followed for almost a year by film cameras that unflinchingly recorded the extraordinary pressure that such an undertaking can inflict. The entire process can be witnessed in the excellent award-winning 2012 documentary “SOMM”, which has become a Netflix hit. In spite of the added anxiety of a hovering film crew, “it was an honor to share my story with the world,” says Cauble. “Although at times, it added a lot of pressure to know that at the end of the movie people would find out if I had either failed 46 slmag.net
or succeeded.” The outcome has been well-known for years now, but the documentary still makes for thrilling viewing. Growing up in Huntington Beach and studying at Sonoma State University, Cauble caught the food and wine bug early on. After a lengthy period of travel around North Africa and Europe, culminating in a lengthy stay in Portugal, he landed a job at a well-known wine merchant in Beverly Hills. The next stop was Las Vegas, home to the highest concentration of Master Sommeliers anywhere. It was here that he began his studies in earnest and, having been crowned Best Young Sommelier in the World in 2011, went on to pass the MS the following year. Five years ago, Cauble and his business partners created a new direct-to-consumer wine retail company, SommSelect, geared towards hunting down unique, often small-production wines seldom, if ever, seen in even high-end wine stores. Operating from a warehouse in Napa, SommSelect offers two new wines a day and three different membership levels that encourage wine lovers to expand their horizons. “A lot of people come home on a Friday night, and open the same wine they’ve been drinking for months,” he says. “We offer them the opportunity to try something different, and provide them with the expert and informed opinion of a Master Sommelier.” To that end, each email offering comes with a comprehensive account of the wine’s origins, its story and taste profile, as well as a detailed recipe for a compatible dish, providing customers all the facts they need to make a well-informed purchase. The memberships, which include a blind tasting option, allow aspiring oenophiles to engage in the tasting and analytical processes key to becoming a master. With so many retail outlets going the corporate route, pushing more or less identical lineups of predictable, mass-produced wines, SommSelect forges a refreshingly independent path: selections are based entirely on Cauble’s and his team’s personal assessments of a wine’s quality, and there are many surprises. With an eye on consumers at all levels, SommSelect keeps its prices fair by importing directly and offers extremely attractive shipping and storage options. The SAV's commanding presence, when viewed from the front, comes courtesy of the largest kidney grill ever for a BMW. The generous width of the car is further accentuated by slim twin headlights with striking blue x-shaped elements. Rear doors are longer than those at the front, which speak to the spaciousness inside. This design element, combined with ample ground clearance, makes getting in and out a breeze. At the rear, the space between the LED taillights in bridged by a chrome bar, a design cue borrowed from the BMW 7 Series sedan. The electric twosection split tailgate offers hands-free operation with the optional Comfort Access Package. Intuitively grouped in the center console are the iDrive Controller, the gear selector, the start/stop button, the Driving Experience Control switch, and buttons regulating the air suspension and optional off-road modes. Luxe glass applications are an available option for selected controls. "Hey BMW" is the casual prompt to summon the digital helper as part of the standard BMW Intelligent Personal Assistant. For those desiring to be on a first-name basis with their digital PA, the driver also has the option of giving the system a name of their choosing. Over time, the PA learns the driver's routines, preferences, and habits and can subsequently apply them in the appropriate context. Saying "Hey BMW, I'm cold," will prompt the PA to spring into action and adjust the temperature accordingly. For getting even cozier with the car, there's a Caring Car function. It offers a choice of four in-car experiences that encompass functions such as seat massage, fragrance, and music to suit the
driver's current mood. Also of note is the Digital Key function, which allows the car to be locked and unlocked using a smartphone, thereby dispensing with the need for a conventional car key. The trio of turbo-charged engine variants benefit from the latest generation BMW xDrive intelligent all-wheel-drive and newly developed, precisely tuned chassis technology. In 2018, Richland Building Partners sought out the expertise of JL Design to outfit their modern, multi-family project on the corner of 8 th Ave. S and Argyle Ave. in Nashville. Principal Designer, Jessica Davis, and her team embarked on the mission to execute each of the twelve townhouses that comprised the new complex. And excitingly, just before the project was complete, real estate investors, Terry and Laurie King from Memphis, purchased all twelve townhomes to begin a new and exciting venture that would be called “The Collective on 8th.�

The Kings wanted to create a whimsical interior, while staying classic and functional and felt that JL Design could perfectly provide them with this vision. The ultimate goal was to create extraordinarily unusual spaces, and quickly! Jessica immediately began the concepts for each of the twelve homes, each being its own unique oasis. Furnishing and decorating everything from window treatments to dĂŠcor to selecting dishes and accessories in a total of roughly 36,000 square feet can be quite an undertaking. Not to mention, all within the 90 day deadline Jessica and her team were given to complete the “turn keyâ€? project. But the team not only delivered within the given timeline, but also totally nailed it on creativity, design and overall whimsy. To help with wow-factors and little surprising moments within the space, Jessica hired set designers, artists and installers to contribute their expertise by adding extra flares like colorful walls, hand-painted murals, fabricating artificial balloons, and mounting shoes and Yo-Yos from ceilings, to name a few.

The JL Design team wanted to go above and beyond to deliver on the King’s request for a totally unique set of spaces. In the “Vibe” unit, cassette tapes were mounted to the top of the wall above a David Bowie print and then pulled the tape out at varied lengths to create texture and interest. In the “Pop” unit, a bright and bold color palette was used as the team’s muse. And they even added scratch and sniff banana wallpaper, along with artificial red balloons that appear as if they have floated to the ceiling. In the “Lush” unit, Jessica dreamt up an installation of high-heel shoes that appeared to be walking on the ceiling. The shoe installation ultimately leads you to the roof deck. And a guest favorite, the design team even collaborated with a set artist to incorporate posed Barbie Dolls appearing to swim on the ceiling, perfectly positioned to creatively hide an attic access door. From large format funky wall murals from “Flavor Paper,” to Cuckoo clocks, Yo-Yos and Slinkies, this vacation rental community is no short on inspiring creativity. LOU, WHO?
CALIFORNIA-BRED FRANCOPHILE FRESHENS LOCAL FOODIE OPTIONS Written by Gloria Houghland / Photographed by Michael Scott Evans A white, 1930s Craftsman-style house, sits, unobtrusively, at 1304 McGavock Pike, close to the fork in the road, in Riverside Village. Like others in the neighborhood, the small but charming abode has an expansive, covered front porch. Visitors might notice that the front door and windows on this one have been newly painted a chic, shiny black while, in the tiniest of fonts, three lowercase letters appear where they are least expected: at the roof’s apex, where they spell the word – l o u. So, exactly, who and what is lou? Well, therein lies the mystery. Music City’s newest and most sublime restaurant, lou nashville, is part all-day brunch and café, and part bar a vin. The aforementioned fork in the road has great significance. Chef/Owner and world traveler, Mailea Weger, was searching for just the right spot to launch her own restaurant concept, a combination of New Age California cuisine playfully juxtaposed with traditional Old World style. There have been many forks in her personal road, too, though she seems to have always managed to choose quite wisely. She grew up in Los Angeles and in her twenties pursued a career in fashion. While on a two-year hiatus in 2009, she travelled throughout Europe, where a random opportunity to work in a restaurant- the Old Museum of Architecture’s Café A in Paris, France serendipitously occurred. Weger quickly became deeply enamored of the art of cooking and creating. Upon her return home, she enrolled in the Culinary Institute of San Diego, where she devoted herself to the study of French techniques. She next took flight across the country to New York, before landing in New Orleans, and then pivoting back toward Los Angeles. She would eventually be recruited to open what would become the super-stylish, highly touted Echo in Paris.

Two years later, Weger initiated her search for the ideal location for own restaurant. Her parents had retired to Franklin, Tennessee, where she, of course, visited regularly. Like many, she fell in love with Music City and the region. She felt that the area was affordable, the traffic and accompanying congestion manageable while the natural abundance was exceptional. But, it was the kindness of the community that cinched the deal. During the time that she was developing her business plan, a picture of the quaint East Nashville Craftsman crossed her desk. In less than a minute, she knew that it had a soul worthy of the future lou. Obsessed with how lou should look, she immediately determined that she would transform the blue structure with gallons upon gallons of white paint. “The entire city of Paris is white and pale. I wanted my guests to feel transported there. In Paris, all the pretty, popular girls are named Lou. They are flirty and smart. They dance and laugh and are super hip, yet, classic,” she said dreamily. This image began to take hold in Weger’s consciousness. She imagined that the parents were probably artsy; a combination of her own bohemian, California-dreamin’ mother and a fictional well-read and charming Frenchman. She wanted her restaurant to reflect the special dining culture of Paris, where you can sit for hours and curate your own dining adventure from beautifully presented, shared plates. The California aspect brought the healthy-ish side into play, while emphasizing seasonality and sustainability with vegetable-forward dishes, a focused selection of proteins and an all-natural wine program. While Lou originated as an imagined character, she was coming to life in Weger’s mind’s eye.

“I wanted to have an all-day café type of vibe and at night a charming, romantic, dinner option. It needed to feel both French and lived in. I wanted both aspects to feel like me…as if I invited you to my home,” Weger explained. She enlisted the savvy assistance of 1767 Design to flesh out the full vision of lou. With its vintage, wall-papered walls, the resurrection and restoration of the original brick fireplace, and the addition of an antique mirrored bar with the daily wine offerings scribbled in white acrylic paint, lou has fast emerged as that girl—the one whom everyone either wants to be or wants to know. The globe pendant lighting, brass details, rattan chairs, and the cake-stands of luscious pastries all suffuse the space in an atmosphere akin to having casually draped a “City of Lights” movie restaurant set with an abundance of extra-fine cashmere throws. The fresh flowers, candles, and shelves of stacked plates and glassware complete the ultra-chic, bistro feel. Weger is joined by pastry chef Sasha Piligian (formerly of Sqirl in LA) and General Manager Lily Coleman from NYC and Beverage Manager Tony Aquilina, who hails from Minneapolis. These outsiders, who have held their arms wide open to fully embrace our city could not be more hospitable and warm. They already have that authentic Southernness, that thing that evokes an “always lived here” quality. Piligian’s pastries are unique, creative and unrivaled (try the buckwheat chocolate chip cookie or the cornmeal, pepita and lime shortbread), but her ever-changing “whatever Sasha wants” ice cream has been lauded by other local restauranteurs who have made the eatery an industry hot spot because of its weekday brunch.

Aquilina and Weger, while having each spectrum of the wine palette covered (he leans toward classics, while she likes funkier, out-there wines) balance each other so that the 12 daily all-natural wine offerings are a curated assortment of varietals by glass or by bottle. As they like to say, “natural is a process, not a flavor profile.” The beverage program also includes wellness elixirs, a coffee program featuring Canyon Coffee from LA and a low-ABV cocktail menu. Weger, while cooking behind the scenes 24/7, takes the time to come “work the room” with GM Coleman. Talking to guests and finding their taste preferences helps her recommend and explain specific dishes. “While in Paris, I learned to use acids, herbs, fire to add char, ethnically diverse spices and numerous preservation techniques. Anyone can poach an egg, but I want to create flavor profiles for my customers,” she noted.

The affordable pricing is a definite plus at lou. “I want you to come see me a lot, not just for a special occasion,” Weger says earnestly. “We are excited about our menu and we want you to have a fine dining experience while having warm and inviting service.” The menu changes frequently, based on customer preferences. Favorites are now the seasonally rotating breakfast cakes (best to couple that with breakfast wine, a discounted-by-the-glass list derived from unfinished bottles from the night before); any wine from the skin-contact category, poached eggs in black sesame-miso butter with pink peppercorns, and a dinner menu with dishes that fall into categories such as sea, land, pour la table, and market veg, which currently includes Weger’s oh-so-popular Japanese street corn topped with seaweed aioli and togarashi. All are deliciously divine. Along with being an artistic chef, Weger is also fun, flirty, dances and laughs. She is pretty, but approachable. She’s bohemian, yet classic. She eats ramen at home and concocts gourmet masterpieces at her restaurant. She is a delightful dichotomy. If you haven’t guessed by now, (because she barely acknowledges it herself ), Mailea Weger is, most definitely, the total embodiment of that girl……yeah, the one named lou. sl Diners can enjoy both brunch and dinner at lou, Tuesday – Sunday.

An awesome evening, the Second Annual Think Pink TN event was held in October at the Richland Country Club. Co-Chairs Blair Lund and Whitney Williams welcomed a sellout crowd for cocktails and hors d’ oeuvres prior to the presentation of the evening. This event benefits the Sarah Cannon Cancer Center. Through its services, Sarah Cannon is providing state-of-the-art cancer care close to home for hundreds of thousands of patients. Speakers of the evening included Dr. Richard Geer, Lindsey Coleman, and the lovely Angela Pacheco. Angela shared her journey as a breast cancer survivor with the great help of the Sarah Cannon Cancer Center.

A spectacular starlit evening, I must say after sundown it became quite pleasant in this warmest Nashville Social fall season. River Swing kicked off 20 years of success ensuring clean water and healthy rivers in Tennessee. The Andrew Jackson Foundation hosted the 2019 Hermitage Gala at the Omni Nashville Hotel. Gala Co-Chairs Kim Holbrook and Robin Puryear orchestrated this gala as a lovely evening of legacy and historical notes, while honoring some very special guests. The mission of the Andrew Jackson Foundation is to preserve the home-place of Jackson, to create learning opportunities, and to inspire citizenship through experiencing the life and unique impact of Andrew Jackson. An evening of honors, the 2019 Lewis R. Donelson Award was presented to Laurel and Louie Buntin, the 2019 Jackson Award was presented to The Honorable Lamar Alexander. Acclaimed journalist and historian Rick Atkinson delivered this year’s keynote address. Referring to Atkinson, the best quote of the evening, “To say that Atkinson can tell a story is like saying Sinatra can sing”. Another wonderful, historic, sell-out Hermitage Gala.

CAN BODY LANGUAGE HELP FIX HEALTHCARE? IT SURE LOOKS LIKE IT… By Scott Rouse
Healthcare professionals are experiencing unprecedented changes, causing stress for patients and staff. Technology is severing the doctor-patient connection, leading to lawsuits and failing practices. The cost of medical malpractice is well over $55 billion a year. Is there a way to slow the tsunami of lawsuits? Is there a way to “re-connect” doctor and patient? Staff and patient? Doctor and staff? It’s looking more and more like body language is the antidote. That’s due to a plethora of studies on malpractice cases proving the importance of the doctor’s bond with patients. The key is knowing how to bond with patients. In a nutshell, it’s just good old bedside manner. I grew up in a healthcare family. My father is a retired physician and was Chief of Staff at Oak Ridge Hospital. During his career he was a general practitioner, a surgeon, and in his late 30’s began a radiology practice. So, I’ve seen and was taught, the doctor’s side of using bedside manner and body language. That was the initial spark that fueled my interest in human behavior. When I was seven, I wanted to be a doctor. My family lived in a small town in Kentucky. I watched in awe as my father calmed frightened mothers, quietened crying babies, and befriended patients. He made them feel they were the only people in the world while talking with them. He would soothe and comfort the dying and their families with what looked and sounded like effortless little talks. He would tell me all about bedside manner, what worked, what didn’t, and why. “Connecting is simple. The person you’re talking to is probably scared to death. Something is wrong, That’s why they’re seeing you. As their doctor your job is not to fix them. Your job is to heal them. You can’t treat people like sick cattle or a broken tractor. You must respect them.” In 1993, there was a study called the “Instantaneous Impressions” study. It proved those first few seconds a person sees you, a decision is made about how they will feel about you now, as well as long term. My father figured that out long before there were any studies. “Make sure you have a pleasant look and demeanor before you speak to a patient” he’d say.

Since then, my study of human behavior has been a virtual blueprint on how to create and maintain doctor-patient relationships. For example, does the person/patient believe what the doctor is saying? Is the person/patient telling the truth? Is the person/patient leaving out part of the information asked about? Does the person/patient like or dislike the doctor? Trust the doctor? Trust the doctor’s judgment? Is the person/patient there for reasons other than what they say they are? What nonverbal cues can doctors use to let patients know they’re not just listening, but listening to and thinking about everysingle-word? Should the doctor touch the patient? If so, where? For how long? How often? What are those critical secrets and keys? What can doctors say to help create that bond? The key here is to “match” the voice tone and speak in a similar manner as the patient. Dr. Milton Erikson is the first to really “deep dive” into these studies. Everyone speaks and communicates in a unique way. Yet, each person’s style falls into one of three categories. Visual, Auditory, or Kinesthetic. If you’re a doctor, try this. As you talk with the patient for a few minutes listen for these words and phrases: Visual “I see what you’re saying” “It looks good to me.” Words that relate to seeing. Then there’s Audible “I hear you” “That sounds interesting.” Those words relate to hearing. The third is Kinesthetic “That feels right to me” “It may be rough at first, but it will go smoothly later on…” “She’s not warm and fuzzy.” Those are about feel and touch. Once you decide what category the patient speaks from, you speak from that same category. Match that category and speak with their tone of voice. If they’re a bit scared and their voice tone is a little high, start up there with them. “Match” them. As you converse over the next 2 or 3 minutes, begin lowering your tone towards normal, and they will follow. The same goes if they sound down and depressive. Start down there with them. Match them. Then slowly begin working them back up to normal. You’ll be surprised how well this works. There are so many things doctors can do to create and maintain that important, connective bond. 2019 Magnificent Heritage Ball Celebrating the people of Tennessee and their rich heritage and spirit, the Heritage Foundation of Williamson County hosted their 46th Annual Heritage Ball. Held on the Eastern Flank Battlefield, it was an evening of majestic beauty chaired by Tracy and Bill Frist. Currently, the Heritage Foundation is working on the largest preservation project in its 52-year history, the former campus of The O’More College of Design. The efforts of this outstanding gracious ball were in support of this monumental project. The dinner tent, designed by Amos Gott was perfect, showcasing the Rich Heritage of Williamson County. A lovely seated dinner was followed with epic entertainment by Kix Brooks and special appearances by the Fisk Jubilee Singers and the one and only Reba! The Craig Duncan Orchestra performed for mid-night dancing under the autumn stars. 7

2019 Chukkers For Charity The largest polo event in Middle Tennessee, Nissan’s Chukkers for Charity benefiting Saddle Up! and The Rochelle Center. Chukkers for Charity took place in early September at Orrin Ingram’s farm, Riverview Farm. John and Crispin Menefee’s Ironhorse Farms and John’s sister, Eleanor Menefee Parks’ Colonial Hill Farm were the team sponsors, creating a bit of sibling rivalry. The event was themed “Divots and Downton: An afternoon of Polo and Ponies.” A perfect theme, as this year the teams were divided between the USA and the British Commonwealth, with players from each region. An antique car show was held during the polo match half time. Enjoying the 23rd the annual polo match with perfectly attired patrons in their Downton Abbey era attire.

Karl and Sarah Worley are excited to announce ‘za, a wood-fired pizza restaurant in Hillsboro Village, officially opened this fall at 2005 Belcourt Avenue. ‘Za features handcrafted pies with locally sourced, southern ingredients from the same duo behind Nashville’s brunch staple, Biscuit Love. Inspired by a recent trip to Italy, the Worleys discovered that pizza—just like biscuits—brings everyone to the table. Karl, who leads at the culinary helm, saw obvious parallels between the Italian and the Southern American food culture so close to his heart, and so ‘za was born from this inspiration to merge the two in an effort to create a new dining experience for Nashville. At the heart of Nashville’s Hillsboro Village neighborhood, ‘za offers a fast-casual experience. Guests begin by ordering from a menu of 12-inch pies at the counter, and then have the option to “takeout or hangout.” The menu is comprised of nine signature pies such as That Hipster Place in Brooklyn, with Red Sauce, Soppressata, Mozzarella, and Hot Honey; The Rescuer, with Red Sauce, Sausage, Mozzarella, and Mint; and The Thoroughbred Hillbilly, with White Sauce, Mozzarella, Benton’s Prosciutto, and Dressed Arugula. looking for an extra saucy experience, six “dip dips” including ranch, honey, spicy honey, pesto, red sauce, and garlic oil can be served alongside the pies. In addition to the pizza, there are two salads on the menu, Kale Caesar with Spice and a Grain Salad, as well as an appetizer of House-Made Ricotta Dip with Honey, served with baked dough balls. On the sweet side, The Vincenzo is a playful take on tiramisu with a caramel crunch. Local and regional beer and wine by the glass are available for purchase. Family-style tables made by local craftsmen, Novel Woodworks, offer communal dining to inspire conversation. The space is clean and modern, utilizing elements such as subway tile and light maple wood, a color palette of deep red, off-white, and charcoal. A handmade Southern Italian pizza oven was crafted by Naples, Italy-based Stefano Ferrara, whose family has been building brick ovens in the region for generations. The Neapolitan oven is jet black, and named “Devault,” after Karl’s favorite culinary school instructor. A mural, painted by local artist Becca Wildsmith, depicting Bill Murray’s likeness and an accompanying quote (one of Karl’s favorites from the comedian) adorns the wall of the patio. sl ‘za will be open 7 days a week from 11 a.m. to 9 p.m.

Rocketown, Comedy for a Cause A hilarious benefit for Rocketown was held at their facility in mid-October. Rocketown is a faith-based youth outreach facility. Their mission is offering hope to the next generation through Christ’s love. Contemporary Christian Music Artist Michael W. Smith founded Rocketown in 1994 forming a faith-based youth outreach Safe Place in the heart of Downtown Nashville. The Betty Dickens Service Award was presented to Judith Bracken, Jessica Bracken Boyd, and Jacqueline Bracken Fisher. An evening of knee-slapping fun with comedian, and special guest, Ryan Hamilton entertained after the lovely seated dinner.

The Nashville Ballet hosted a most enjoyable cocktail event at the fabulous Noelle Hotel. Since its founding in 1986, the Nashville Ballet has grown to become the largest professional ballet company in Tennessee, presenting a varied repertoire of classical ballet and contemporary works by noted choreographers, including Nashville Ballet’s Artistic Director Paul Vasterling. This annual event honoring the Ballet Benefactor’s Society was a great evening of Ballet philanthropic leaders and supporters.

The Agape Animal Ball This unique, animal-themed masquerade ball was held in honor of the many animals and families whose lives have been changed through the Agape program over the past 15 years. Agape has earned the title of Best Animal Rescue in Middle Tennessee for seven years. What a party, themed Under the Sea, hosted by Tito’s Handmade Vodka and the Agape Animal Rescue. Held at the Factory in Franklin, Under the Sea was magical with lovely schools of mermaids frolicking the ocean floor with colorful sequined gowns and tails. An amazing evening of dinner, dancing, silent and live auctions, all to benefit the future of the most needed and most appreciated Agape Animal Rescue.
