A Renaissance of Christmas Spirit By Anne Eickstadt Correspondent

The 16th Annual Boar’s Head Festival in Marengo comes to pass on Saturday and Sunday, December 5 & 6. Over 150 members of Zion Lutheran Church and the community work together to share the good news of Christ’s birth through singing, dancing and music. “For many people, the Boars Head Festival is the start to their holiday season,” Drama Director Barb Warmbold tells me. “For a small town, it’s [the Boar’s Head Festival] a surprisingly beautiful and professional depiction of God’s greatest gift to man.” “The colorful Boar’s Head ceremony became part of the Christmas celebration in the great manor houses of the Middle Ages but had its roots in pagan times when the boar was the first dish served at a Roman feast. The church endowed the custom with symbolic Christian meaning and elevated it to the service of God, enriching the lives of all it touched. Sponsored by the Lord of the Manor, the ceremony became a Service of Praise to Jesus Christ, Lord of the Universe and Redeemer

of the World. In Medieval England the ferocious boar was sovereign of the forest, a menace to man and symbol of evil. The presentation of the boar’s head at Christmas signifies triumph of the Christ Child over sin. No one knows who planned the first Boar’s Procession, but it was in use at Queen’s College, Oxford, England, shortly after that University was founded in 1340 and continues to be presented there today. The ceremonies attending the presentation of the boar’s head grew and became more elaborate over the centuries. The ice sculptures in front of the Dole Mansion are gently melting in the fall sunshine on Saturday morning, December 6. The s’mores table is ready and campfires to toast the treats are being lit. check out all the exhibits, displays and activities. The laughter from the activities draws me upstairs. Just inside that door, Mellie’s Chocolate & Co. from 2 North Williams Street in downtown Crystal Lake is displaying luscious confections that are very tempting. “Take a step back into the past with everything made fresh and homemade. Our candies are made here on premises, guaranteed to make your taste buds soar!!” Mellie’s can be found on Facebook at Mellie’s Chocolate & Co. Next to that booth is The Cookie Garden with owner Jeannie Valera. “I started working for the company 18 years ago. A year and a half ago it became my company,” Jeannie says. “We’re very

popular on the east coast and the west coast but in Illinois no one knows us.” Based in Wood Dale, The Cookie Garden creates unique gourmet cookie bouquets for all occasions. Their gourmet cookies are ¼ lb. each, made with the finest ingredients and are baked fresh daily. www. Executive Director Siobhan Cottone tells me, “We’re really excited to be able to continue the tradition. This is our third year. We’ve added wonderful new attractions that children and families alike are excited about. We have a horse-drawn carriage and a berry-go-round. We have ice sculptures and s’mores stations. It’s been a very festive and enjoyable day here. The kids are mesmerized by Elsa and Santa. What’s wonderful is that this event is

for all ages. We’ve had over 50 of Santa’s elves (volunteers) come out to help us. We thank our sponsors and members who have helped us grow and make this a signature event. We couldn’t have done it without them and our elves.” The Dole Mansion is part of the Lakeside Legacy Arts Park at 401 Country Club Road, Crystal Lake, Illinois, 60014. Built in the 1860s, it has survived a long and varied past, including as a home with a half mile racetrack, a country club, a monastery, a school, a church and more. Centegra opts not to treat unvaccinated children By Samantha Fetzner Reporter

At the beginning of December, Centegra Physician Care publicly announced they would no longer treat any unvaccinated children. Despite the definitiveness of that statement, the organization went on to expound by saying patient welfare will always be put forth. The decision to follow this protocol falls in line with expectations set forth on a national scale by the Centers of Disease Control and Prevention. The exclusion to this policy will be those patients visiting the ER. The policy only impacts Centegra’s outpatient patients. Children who are not up to date on their vaccinations at the start of this policy will be able to receive vaccinations they have missed or not yet had before being turned away to find other providers as well. The policy effects all legal chil-

dren- meaning those 17 and younger. Said children must have all recommended vaccinations to continue being treated by their Centegra physician(s). The vaccination schedule can be viewed at Centegra’s website here: http://centegra.org/ child-immunization-schedule/. The flu shot is not on the requirement list, but Centegra strongly recommends it. Existing patients who have not adhered to the schedule were made aware of the requirement before releasing the news to the public. Overall the policy has been implemented for new parents or patients looking for first time care within the network. Choosing to exclude unvaccinated children from treatment is not a statement of personal choice by the network, but a belief in the science which shows the benefit of the vaccinations in preventing serious illness. After an

alarming number of preventable illnesses in young children have been reported, the network felt it was necessary to do something to help alleviate these occurrences. Responses to the new policy have been plentiful, but appears to be more positive than negative at this point. Although Centegra is following the Center for Disease Control and Prevention’s vaccination schedule, they opted not to follow suit in the case of treatment for unvaccinated patients. The CDC has publicly opposed refusal of treatment to unvaccinated children, but more and more networks and physicians are implementing these types of policies. While the change may not be advantageous to everyone, Centegra is one of many health care providers who believe vaccinations are a key component to the health of our youth.

Founded in 2009, Galloway’s Chicago Subs has decided to open its second location in the area. After operating out of their storefront on Randall Road across from McHenry Avenue with great success, Galloway’s second location will be just down the street. Taking a spot inside the Algonquin Meijer, Galloway’s Chicago Subs will have great potential to service hundreds of new customers per day. The store’s average foot traffic exceeds 3,000 people per day. Located at 400 S. Randall, approximately three miles south of the 1295 Randall location in Crystal Lake, the family-owned shop will take over the space in the store that used to house Meijer’s vision/eye center. Owners Judy and T.J. have invested money to renovate the space to suit the business’s needs. The changes were complete within a short time span and the location has been operating since the end of November. The business, once run

while the Galloway’s still held independent full-time positions, has flourished within the community. Six members of the eight-person Galloway family have been working in the Crystal Lake location. New employees have been added to accommodate a second location. During the warmer months, the Crystal Lake location offers an outdoor patio. They also deliver lunch out of that location from 10:30 a.m. to 2:30 p.m. Monday through Friday. Although the Meijer location won’t allow for a patio, it certainly adds a level of convenience along the Randall Road corridor, as well as for Meijer shoppers. The Sub’s storefront is located in the front of the store, allowing customers to stop in just to grab a sub, or grab their meal at the end of a shopping trip, without ever having to step outside. While the amenities between the two locations differ, the addition of the second location will certainly improve accessibility for shoppers and patrons further South.

Avoid diseased or insect-damaged plants, said Jennifer Fishburn, a horticulture educator with University of Illinois Extension. Exposure at freezing temperatures even for a short time can damage leaves and cause flower drop, so before taking them outdoors, carefully wrap plants. These cacti don’t have true leaves; instead they have flattened stem segments.” The most widely grown species is the Thanksgiving cactus, also called a crab cactus, Schlumbergera truncata. The stem margins have two to four sawtoothed projections resembling crab claws. Flowers are produced from late November to late December. Thanksgiving cacti are often forced into bloom and sold at Christmas time, and are often misnamed Christmas cacti. Flower colors include white, red, lavender, salmon, orange, and yellow. Christmas cactus, Schlumbergera x buckleyi, has scalloped or rounded stem margins. Flowers are generally showy from late December through March. The flowers are formed at the tip of the segments. Easter cactus, Rhipsalidopsis gaertneri, has four to six rounded teeth along the stem edges and brownish hairs at the leaf tips. Shades of pink or red flowers appear during March through May. Easter cactus may rebloom. Thanksgiving and Christmas cacti blooms are triggered by day length. They bloom when they receive 12 to 15 hours of darkness each day for five to six weeks combined with cool night temperatures. Some cacti will bloom if exposed to prolonged cool temperatures between 50 to 55 degrees during the fall regardless of day length. “To initiate flower buds, place Thanksgiving and Christmas cacti in a room that doesn’t receive artificial light at night such as a spare bedroom or basement,” Fishburn said. “Cacti can also be placed in an unheated porch until temperatures reach 45 degrees. Plants should receive bright light during the day with 55 to 65 degree

temperatures. When plants are in flower, keep them in a bright, indirect light. Ideal temperatures are 70 degrees during the day and 65 degrees in the evening. “Don’t let the soil dry out during flowering. Flower buds will drop if they receive too much light, are exposed to drafts or temperature extremes, or if the soil gets too dry,” Fishburn pointed out. “If plants fail to flower, this could be due to interrupted nights or high temperatures.” During the growing season when the plant is not flowering, water plants thoroughly but let

them dry slightly between waterings. A major disease of holiday cacti is root rot caused by overwatering. Water when the top inch of soil is dry to the touch. When the plant is actively growing, between April and October, fertilize every two to four weeks with a complete houseplant fertilizer, following the directions on the label. Holiday cacti require a bright but filtered light indoors. Keep in mind that holiday cacti thrive on neglect. “This winter, brighten up the indoors with a flowering holiday cactus,” Fishburn said.

WASHINGTON — With Thanksgiving behind us, the holiday season is just gearing up. The next few weeks are full of good cheer and plenty of food. To help keep your holiday season healthy, the U.S. Department of Agriculture’s (USDA) Food Safety and Inspection Service (FSIS) is issuing holiday inspired food safety recommendations for your Christmas, Hanukkah, Kwanzaa, New Year’s Eve, Three Kings Day, or other festive gatherings. These tips come from years of experience working to make sure that the meat, poultry and egg products you eat are safe, wholesome and properly labeled. To start, download the FoodKeeper application. This smartphone and tablet app created by FSIS will help you evaluate what items in your refrigerator and pantry are still good and what may be past its prime. As you’re putting together dishes for meals at home or parties at work, it will help you make sure you’re using fresh ingredients. The FoodKeeper offers storage advice on more than 400 different food and beverage items and can help you decide what you can keep and what you should throw out. It also offers handy guidance on leftovers, which you’ll probably have a lot of after the big meal. Download the FoodKeeper today on your Android or iOS device. Steps to follow when cooking a holiday roast: • Use separate cutting boards, plates and utensils for raw roasts and cooked roasts

to avoid cross-contamination. • Wash items such as cutting boards that have touched raw meat with warm water and soap, or place them in a dishwasher. • To avoid overcooking beef, veal, pork and lamb roasts use a meat thermometer. These roasts should be removed from the oven when they reach an internal temperature of 145 °F and allowed to rest for three minutes before serving. • Turkey, duck, and goose should be cooked to an internal temperature of 165 °F as measured by a food thermometer. Temperatures should be taken in three areas of the bird: the thickest part of the breast, the innermost part of the wing, and the innermost part of the thigh. Food safety tips for holiday party buffets: • Keep hot food hot and keep cold food cold by using chafing dishes or crock pots and ice trays. Hot items should remain above 140 ˚F and cold items should remain below 40 ˚F. • Use several small plates when serving food. • Discard perishable foods left out for 2 hours or more. • Leftovers should be refrigerated or frozen immediately in shallow containers. Reheat leftovers to 165 °F. • If you’re transporting precooked food to a holiday get together, keep cold foods safe on the way there by placing items in a cooler with ice or gel packs to keep them at or below 40 ˚F. If you’re transporting hot foods, wrap dishes in insulated bags or towels and newspaper to keep their temperature above 140 ˚F.

Top food safety holiday gifts: • Food Thermometer: a useful tool for even the most experienced cook as it is the only way to ensure that meat is fully cooked. • Cutting Board: using separate cutting boards for raw meat and ready-to-eat food is a great way to prevent crosscontamination. • Kitchen Towel: these towels should be washed frequently to avoid cross-contamination, so a home cook can never have enough kitchen towels. Steps to follow mail delivered holiday food: • Check with the mail delivery company to ensure they send perishable items, like meat and poultry, cold or frozen and pack it with a cold source. Foods should be packaged in a foam or heavy corrugated cardboard container. Delivery should occur as quickly as possible – ideally, overnight. Foods should arrive frozen or partially frozen with ice crystals still visible or at least refrigerator cold – below 40 °F as measured by a food thermometer. A Very Merry Huntley By Anne Eickstadt Correspondent

Huntley, Illinois is kicking off the Christmas season with a two day event. Friday, December 5, has evening events with caroling and free hot chocolate at the Town Square provided by Trinity Lutheran Church. This is followed by the Lighting of the Christmas Tree. Over at the Municipal Center is the Kris Kringle Market and a horse-drawn sleigh ride through Parisek Park. Kids can make crafts for free and the donations for the Tree Decorating Contest are going to the Grafton Food Pantry. Mrs. Claus is greeting the kids near the door and chatting with them. Meanwhile, the Huntley Area Public Library is hosting Santa Claus himself. Santa is posing for pictures with the children. Entertainment is being provided by Lollipop the Clown and by Dave Gutshall and Andy Huber. On Saturday the fun continues at the First Congregational Church at 11628 E. Main Street. Children are fascinated by the live reindeer that are stationed near the front door. Inside, the

Fellowship Hall contains an Indoor Farmers’ Market. Many of the vendors here were at last night’s Kris Kringle Market at the Municipal Complex. Wayne’s Fruits & Vegetables’ booth is being attended by Wayne & Linda Warkowski. “All our jam comes from fresh fruit. Linda makes everything. We can make it right out of our own kitchen,” Wayne says. “All our honeys are not heated. They come straight out of the hive and into the jar. We are just north of Marengo and south of Harvard. My mom died when I was born. My dad raised us. If we didn’t help each other, we didn’t have nothing,” she

says. “I’ve always baked cookies. When I was 16, my dad gave me a cookbook and I have been baking fancy cookies ever since. I gave cookies to my grandson (one of ten grandchildren).
