Apple Canyon Lake is hosting its first annual Trail Trekker 5K Color Fun Run/Walk Saturday, July 30.
Watershed to the forefront. “We are working on a watershed plan with our neighbors to create an area in which we are all invested because the water that runs into the lake from surrounding areas needs to be properly managed and the water that runs beyond the lake travels to the Apple River touching any number of area communities, so it requires management as well,” Carton said. She said the Trail Trekker is a fun family activity with something for everyone. “Some of our property owners are grandparents and they have weekend get-togethers that are clearly family reunion gatherings,” said Carton. “The color run will allow grandma and grandpa to traverse the course with their kids and grandkids and their visiting friends. It is all inclusive.” As younger families buy into Apple Canyon Lake the community is trying to reach that wider demographic and provide entertaining activities for the newcomers as well as

The Color Run concept was founded to promote healthiness, happiness and community togetherness, and in that spirit, Apple Canyon Lake is hosting its first annual Trail Trekker 5K Color Run/Walk Saturday, July 30. The event is a fun run, not timed, and participants can register on the day of the trekker from 7:30 to 8:20 a.m. The starter’s horn blasts at 8:30 a.m. and with nearly 200 pre-registered trekkers ready to go, you will want to join in the fun. “We are inviting the public to Apple Canyon Lake which is a private lake community, so typically you would have to have an amenity tag to enter these areas, but we want to show off some of our finest amenities and one of those gems is our 14-mile trail system,” said Apple Canyon Lake Communications and Recreation Director Cindy DonthCarton. “The trekker will be staged across one of our most scenic areas. It winds along the Marina Bay to the Harold Batham Nature Trail and runs along the Hells Branch Creek, which is a very scenic segment of the Batham trail, before retuning along the same path.” The participants will be running or walking on sealcoat surfaces, gravel, dirt, grassy areas and even a wooden walking bridge. “This is not your average color run,” said Carton. “These are nature trails with hills and dales, pastures and prairies, hiking paths and roadways, some uneven surfaces that will offer a mild challenge to even our most experienced contestants.” The track is a loop with a total distance of 3.1 miles or 5 kilometers and there will be trail volunteers in ATVs or golf carts along the route, so if a participant feels they cannot continue there will be accommodations to take them to the finish line. The Marina Trail provides an unusually panoramic view of Apple Canyon Lake with views of Marina Bay, Nixon Beach, and The Cove Restaurant, which features the only public lakeside dining area in Jo Daviess County, and the trekker is designed to bring the Hells Branch
for its current membership. “There will be four color stations along the 5K loop,” she said. “There will be volunteers with applicators containing colorized cornstarch and as the participants move through those stations they will be colorized.” Folks not wanting color can either signal the volunteers or navigate around the color stations. The registration fees are $25 for ages 13 and over and $15 for ages 12 and under. Each participant will receive a 2016 Color Run T-shirt, a Trail Trekker 5K swag bag containing a celebratory color pak and coupons from the event’s sponsors along with a pair of Apple Canyon Lake sunglasses. Each registrant will be entered in prize drawings. Registration is open until 10 minutes
before the starting gun. Event sponsors include Apple River State Bank/First Community Bank of Galena, The Cove Bar and Grill, Tri-State Port-a-Potty, Illinois Bank and Trust, Jo Carroll Energy, The Galena-Jo Daviess County Convention and Visitors Bureau, Citizens State Bank, FS Propane, Road ID, Strictly Shingles LLC and Apple Canyon Lake POA. There will be emcees at the start and finish lines with music, and extra color paks available for spectators wishing to leave their mark on a favorite trekker. There will also be commemorative T’s on sale the day of the trek. “Our Marina Manager Terri Stiefel and her staff will be slaving over a hot grill at the marina serving up those special Pecatonica Bratwursts
with choice of chips on the side,” Carton said. “There will be a tasting of Pecatonica Beers with local cheeses and other beverages available as well.” She said volunteers are the lifeblood of any big community project and the Apple Canyon Lake Trail Trekker Color Run/Walk is no exception. “We could not do this without our volunteers,” said Carton. “Our volunteers range in age from 12 to 75 for this event and while most of them are property owners, we do have some visitors and some folks from Stockton coming out to help as well. This is looking to be a fun event and our volunteers will be working to make it even more so.” After the Trail Trekker, The Cove and Apple Canyon Lake will co-host their free Sizzling Summer Concert featuring Lost Karma, a blues and rock band out of Winnebago, IL at the old firehouse on Canyon Club Drive from 5:30 to 9:30 p.m. Bring your own lawn chairs for the show. The Cove will be offering sandwiches, cheese curds, beer, wine and water. There are a number of properties for sale at Apple Canyon Lake,” said Carton. “We do want to show that Apple Canyon Lake is a really nice community to consider if you live locally or even if you are within a few hours. We have the lake, a marina, the beach, a beautiful swimming pool, a golf course, great fishing, a restaurant, walking and ATV/ UTV trails, tennis courts and one of the most beautiful waterfalls in Illinois. Ms. Koester plans to become a high school ag teacher and FFA Advisor once she completes her degree. She chose the University because “I love being in my home state. There is also the family tradition as multiple aunts and uncles have graduated from the U of I.” Ms. Koester is the daughter of Mrs. Karen Koester and the late Mr. Dan Koester, Elizabeth.

Lena Lions Club announces 66th Annual Fall Festival With autumn just around the corner, the Lena Lions 66th Annual Fall Festival, known as “The Cadillac of Small Town Festivals”, will be held in downtown Lena on Sept. 9 and 10. Free entertainment on Friday – 7 p.m. – Mississippi Man - Larry Michael, along with Debra Kay, will be singing their hearts out at the Lena Fall Festival. Larry has brought his special form of entertainment to millions of folks here in the Midwest via River Boats, Casinos, and local venues playing banjo, fiddle and guitar, not to mention helping thousands of people celebrate their own special events. Larry Michael has also had the fortune of having his music air on country radio stations worldwide, and has two songs doing very well in the country music charts in Europe. Debra Kay started entertaining with Larry about ten years ago. Since then, she has won the hearts of countless people. She has been
working as a lead singer and back up harmony singer with Larry. The two of them will bring a mixture of music to you with a kick. University of Illinois Extension and Stephenson County 4-H are proud to announce the start of the Air Rifle Shooting Sports program. The Stephenson County 4-H Shooting Sports Club is an active participation program designed to introduce young people to the sport of air rifle shooting. Club Leader, Sargent Michael Dechy (FHS NJROTC instructor), has many years of experience in this field and has several teams and individuals who have competed in and won state and national titles. Youth will be taught the principles of shooting; safe and responsible use of firearms; and marksmanship while learning positive youth development and leadership skills. This program will help youth develop into individuals who are responsible, productive citizens. A new law signed during the week will help the families of crime victims by extending the statute of limitations on violent crimes and strengthening Illinois’ Freedom of Information Act laws. Also signed into law by Gov. Bruce Rauner was a bill I cosponsored to expand insurance coverage in Illinois to include cutting-edge breast cancer screenings, and other measures targeting the retail sales of synthetic drugs and reinforcing the state’s commitment to early childhood education. Governor signs Molly’s Law The legislative package known as Molly’s Law will strengthen the state’s Freedom of Information Act (FOIA) and extend the period of time in which a victim’s family can file a wrongful death lawsuit when the act is intentional and violent in nature. House Bill 6083 allows a lawsuit in a wrongful death case to be brought within five years after the date of a death, or within one year after the criminal case against the perpetrator concludes. Additionally, House Bill 4715 provides for fines—up to $1,000 per day—in cases where a public body fails to comply with a court order resulting from a FOIA action. It also incentivizes public bodies to act in a timely manner in response to binding opinions from the Attorney General in FOIA cases. The new laws were sought by the family of Molly Young, a 21-year-old victim of a gunshot wound who died under questionable circumstances in
2012. The Young family faced an uphill battle in the pursuit of justice for Molly, hindered by the state’s statute of limitations for wrongful death cases and burdensome FOIA compliance issues. As a result, in May 2015 a judge dismissed a wrongful death lawsuit filed by Larry Young, ruling Young failed to file the lawsuit within two years of Molly’s death. House Bill 6083 and House Bill 4715 will go into effect on Jan. 1, 2017. Illinois continues to lead in early childhood education A new law signed July 21 reinforces Illinois’ leading role in early childhood education. As the first state in the country to make sure an allocation of early childhood education funding was directed to programs for infants and toddlers up to age three, Senate Bill 238 clarifies the original intent of the law to ensure that 25 percent of the early childhood block grant will be spent on programs that focus on children younger than three. It has been demonstrated that

According to the Illinois Department of Public Health (IDPH), breast cancer is the most commonly diagnosed cancer among Illinois women, accounting for 29.7 percent of 796,602 invasive cancer diagnoses in women during 1986-2013. In 2013 alone, 9,859 women were diagnosed with, and 1,761 women died from, breast cancer. IDPH projects that 10,290 women will be diagnosed with breast cancer in 2016, and that the number will increase to 10,440 women in 2017. Senate Bill 466 took effect immediately. Banning sale of addictive bath salts Gov. Rauner also signed Senate Bill 210, giving law enforcement another tool to curb the growing number of retailers selling synthetic drugs popularly known as “bath salts.” The new law targets the sale of these synthetic drugs by prohibiting retailers from selling, or offering
for sale, any material that contains the “cathinone” chemical structure found in bath salts. Once the law takes effect on Jan. 1, 2017, it will be a Class 3 felony if the Act is violated, which could result in a potential fine up to $150,000. In addition, units of local government may revoke a violator’s license. Use of bath salts has been on the rise across the country for the last decade. It has been difficult for law enforcement to crack down on the bath salt epidemic, because in order to get around state and federal laws, manufacturers of synthetic drugs continue to modify their formulas. Bath salts are chemically similar to amphetamines, cocaine, and MDMA, and they produce effects such as paranoia, hallucinations, increased sociability, panic attacks and excited delirium. So named because these substances are often sold disguised as common bath salts, they are frequently available in convenience stores, smoke shops and adult stores. Bath salts are known to be extremely addictive, and even deadly.

Alcohol related problems tend to go up when alcohol is more readily
accessible to young adults. Allowing the sale of alcohol at sporting and public events at colleges could lead to an increase in underage drinking, alcohol abuse, and drinking and driving. The Board of Trustees at Illinois universities and community colleges will develop their alcohol policies within the next six months. AYDEN TIMOTHY DITTMAR Ayden Timothy Dittmar, at the age of 8 weeks and 3 days, passed away peacefully in the arms of his family on July 16, 2016 at American Family Children’s Hospital in Madison, WI. Ayden was born on May 25, 2016 with a rare genetic disorder that caused intractable seizures. He was the son of Jayson and Rachel (Lingbeck) Dittmar of Lena, IL. He touched the hearts and lives of many in the short time he was here. He is survived by his parents; two sisters, Evelyn & Jaylee; paternal grandparents, Tim Dittmar of Lena and Julie & Rich Davis of Warren, IL; maternal grandparents, Gary & Sue Lingbeck of Lena; great grandparents, June & the late Dalvin Dittmar of Lena, Orv & Dannis Gates of Lena, LaVerle & the late Joan Lingbeck of Freeport, and Lila & the late Edward Parks of Freeport. She later owned and operated Scooters in Preston for 16 years and retired in 2011. Dixie married Donald Watters in 1971, they later separated. On Sept. 29, 2001, Dixie married the love of her life Dave LaBarr at St. John’s Evangelical Lutheran Church in Preston. Dixie was a lifelong member of St. John’s Evangelical Lutheran Church. She enjoyed sewing, crossword puzzles, and taking her kids camping, fishing and on vacations. Most of all, Dixie treasured the time she spent cooking meals for her family, especially making her banana bread and pumpkin bars. Dixie will be dearly missed by her husband, Dave; three children, Robert “Bob” (Kelly McDermott) of Clinton, Bonnie (Stephen) Ugarph of Clinton, Bradley (Stacey) Watters of Clinton; three step-children, Lori Leary of Clinton, Julie Jurgess of Clinton, David (Genelle) LaBarr Jr. of Charlotte; six grandchildren, Keaton, Kierre, Tait, Maya, Samuel, Sophia, Laken; six step-grandchildren; two brothers, Richard (Elaine) Ringin of Ohio, Robert “Ringo” (Michelle) Ringin of Green Island; three sisters, Barb (Dave) Doland of Green Island, Michelle (Crystal) Randall of Comanche, Iowa, Isabelle (Ron) Johnson of Preston. Thomas passed away Sept. 29, 2009. Marlene and Tom were former owners of the Sears Catalog Store in Savanna. Marlene worked as a sales consultant at Carpetland USA in Clinton, Iowa. Master Gardeners present Therapeutic Horticulture Program The University of Illinois Extension Master Gardeners of Stephenson County have initiated a program entitled “Therapeutic Horticulture”. Therapeutic horticulture is a process that uses plants and plant-related activities through which participants strive to improve their well-being through active or passive involvement. Therapeutic horticulture is proven to have a positive impact on various populations such as the elderly and people with chronic health issues, including those with dementia.
Master Gardener volunteers fulfill a valuable role to facilitate and promote the restorative benefits of therapeutic horticulture in our communities. Each program consists of both an educational component and a topic related activity. Every effort is made to target one or more of the five human senses; sight, hearing, taste, smell or touch into the program. In addition to stimulating the senses, the sensory component adds interest and encourages participation.
Recently, the Master Gardeners presented a Therapeutic Horticulture program at Liberty Village of Freeport. The topic of the program was Perennial Gardens. Several residents of Manor Court at Liberty Village participated in the program. A brief overview of perennials was given. The Master Gardeners then passed around a variety of plant specimens for the participants to see, touch and smell. There was an array of beautiful flowers, various leaves and herbs. The residents enjoyed
reminiscing and sharing memories of their own gardens and favorite flowers, as well as learning about some new ones. The “My Dream Garden” activity followed the perennial presentation. Participants chose pictures of flowers and plants, cut and pasted them on cardboard sheets to create their very own “Dream Garden”. Many unique and beautiful gardens were created. The program was well received by the residents. All those in attendance were delighted to partici-
Pearl City author spends 70 years researching book Non-fiction author, Bob Kaminski will be holding a book signing at the Freeport Public Library on Saturday, July 30 from 3-5 p.m. He will be located in the Main Hall near the entrance. Kaminski’s newly-released book, Free the Captives has been a long time in the making. He spent seventy years seeking unbiased answers and truthful documentation pertaining to the life and teachings of the real Jeshua (Jesus). The last two
years were spent retrieving and sorting out evidence supplied by scholars of every discipline, and penning his original manuscript. Kaminski was born in Chicago during the great depression, where he feels exposure to ethnic cultures and religions was commonplace. Christened a Catholic, but confirmed a Lutheran, religion was instilled in him early on. Enrolled in catechism and Bible study at an early age, the priesthood seemed a

FROM LENA’S KITCHEN The not so skinny cook We have had our share of hot and humid weather; July is with us in full force. I feel bad about anyone who had to be out working in this weather. I am lucky enough to have air conditioning and when I work, I work in air also. I found out just how great it was on Thursday night when we had the storm that caused an electrical outage. My little brick house got plenty warm before the power came on. Some friends and I were at Timberlake Playhouse; the second act was about to begin, and we lost electricity. After waiting for a while, they helped us get out of the theater and to our vehicles. On the way home, we ran into horrible rain, limbs down, and fire trucks racing. My heart goes out to the congregation of Zion Church as they mourn the loss of their building. It is tough to lose a place that has so many memories for so many. This week’s recipes continue to use the fruits and vegetables of the season. The farmer’s market had great fruits and vegetables this week. One of this week’s recipes is for eggplant; Barb had beautiful egg plants. She also had black raspberries that can be used in the dessert recipe at the end of the column. Enjoy these summer vegetable and fruit eats as we battle the heat. It wouldn’t be summer if we didn’t continue with pickle recipes. This bread and butter recipe uses both white and brown sugar. There are still Vidalia onions around, so they would be great as the sweet onions. The red pepper flakes give it just a little kick. Enjoy these crunchy pickles as your favorite condiment. Bread and Butter Pickles 1 lb. cucumbers, thinly sliced 1 C. thinly sliced sweet onions 3 T. kosher salt ½ C. cider vinegar 1 C. white sugar ½ C. packed brown sugar 1 T. mustard seeds 1 t. celery seeds 1 t. red pepper flakes Combine the cucumbers, onions and salt in a bowl; cover with ice and let sit for one hour. Rinse and drain cucumbers and onions. Boil the vinegar, sugars (white and brown), mustard seeds, celery seeds, and pepper flakes in a pan over medium heat until the sugar dissolves. Pour the vinegar mixture over the cucumbers and onions in a large bowl or container, submerging them; chill for at least 4 hours. We are so lucky to have so many local sweet corn stands around. This recipe is an easy one because you
grill the peppers and the corn, and the Kraft dressing adds just the correct zip. Red Pepper and Corn Salsa 2 ears of corn 2 small red peppers 2 T. Kraft Zesty Lime Vinaigrette Dressing 1 T. chopped fresh cilantro Remove husks and silk from corn. Grill with red peppers about 7-8 minutes or until charred on all sides, turning occasionally. Place peppers in a bowl and cover with plastic wrap. Let stand 20 minutes. Remove and discard skins and seeds from the peppers. Finely chop the peppers and cut the corn from the cobs. Place in a medium bowl and add lime vinaigrette dressing. Add chopped cilantro and mix lightly. The baby spinach is really tender this time of year. This salad has the great taste of raspberry vinegar and the dried cranberries and almonds add just the right crunch. Spinach Salad 3 t. extra virgin olive oil 3 T. raspberry vinegar 1 T. minced green onions ¼ t. salt ¼ t. pepper 6 oz. fresh baby spinach ¼ C. dried cranberries ¼ C. crumbled feta or blue cheese 3 T. slivered almonds Whisk together the oil, vinegar, onions, salt and pepper. Toss spinach, cranberries, cheese and almonds with vinaigrette just before serving. Eggplant is one of those vegetables that takes on the flavor of whatever is in the dish. The panko bread crumbs make for a crunchy taste to the eggplant. The cream cheese and Parmesan cheese makes for a creamy sauce. Enjoy this unique way to use eggplant. Creamy Eggplant Parmesan Casserole ½ C. panko bread crumbs 1 C. shredded Parmesan cheese, divided 1 eggplant (about 1½ lb.) cut into ¼ inch thick slices 4 oz. cream cheese ¾ C. milk 3 cloves garlic, minced 6 T. chopped fresh basil, divided 16 Mozzarella Cheese slices 1 large tomato, thinly sliced Preheat the oven to 400. Cover 2 baking sheets with parchment paper. Combine the bread crumbs and ¼ cup of the Parmesan in a shallow dish. Reserve 2 tablespoons of the crumb mixture for later use. Spray both sides of 1 eggplant slice with cooking spray; dip in remaining bread crumb mixture, turning to evenly coat both sides of the eggplant slice. Place on the prepared baking sheet. Repeat with remaining eggplant slices. Bake 20 minutes or until eggplant is tender and golden brown, turning after 15 minutes. In a microwave safe bowl, microwave the cream cheese on High for 40 seconds. Gradually whisk in milk until blended. Stir in garlic and ¼ cup of

Top with layers of 1/3 of the eggplant, 4 cheese slices, and ¼ cup of the remaining Parmesan; repeat the layers twice. Top with tomatoes, remaining cheese and reserved panko mixture. Bake for 25 minutes or until heated through. Sprinkle with remaining basil. This berry shortcake uses the great taste of raspberries, blackberries and blueberries. The shortcake is moist because of the buttermilk. Enjoy this great dessert with the season’s berry fruits. Buttermilk Berry Shortcake 3 C. raspberries 2 C. blackberries 3 C. blueberries ¼ C. plus 1/3 C. white sugar 1 T. lemon juice 3 C. flour 4 t. baking powder 1 t. baking soda 1½ t. salt 1½ sticks chilled unsalted butter, cut into small pieces 1 C. buttermilk 2 T. whipping cream ¼ C. light brown sugar ¾ C. whipped cream Toss together the berries, ¼ cup white sugar, and lemon juice in a bowl. Let stand until mixture is juicy, about 30 minutes Preheat the oven to 425. Line a baking sheet with parchment paper. ‘Whisk together flour, baking powder, baking soda, salt, and remaining 1/3 cup of white sugar in a large bowl. Cut in butter with a knife or pastry blender until mixture resembles coarse crumbs. Stir in buttermilk just until flour mixture is moistened. Drop 1/3 cup scoops of dough about 2 inches apart onto the baking sheet. Brush biscuits with cream and sprinkle with sugar. Bake until golden brown, 15-20 minutes. For each serving, spoon ¾ cup berries with juice over a biscuit. Top with whipped cream I finally have my home improvements finished. I had a great carpenter, masonry man, and bricklayer as well as a carpet layer. The two projects took three months, but it is great now. If you need any of the above craftsmen, contact me because I will give them great recommendations. It wasn’t anyone’s fault that it took so long only a series of unfortunate events. Now all I have to do is clean up the garage. I have to make a salsa dip for tomorrow, and that is the only cooking besides making fresh vegetables

Join University of Illinois Extension Local Foods and Small Farms Educator, Grant McCarty, at area field days this summer. Our Late Summer Field Days will offer growers, whether new or experienced, as well as the general public, the opportunity to visit farms, learn about new techniques, and find out more about niche crops and how to grow them. Additionally, these farms will give participants a greater understanding of the diversity of operations within the local food system of Jo Daviess, Stephenson, and Winnebago counties, and also the challenges and opportunities that all three counties are facing. The field days are open to the public and there is no cost to attend. The first Late Summer Field Day will be at Freeport High School Student Vegetable Farm on Tuesday, August 16 from 4:30 to 6 p.m. The Freeport High School Vegetable Farm is located south east of the Freeport Middle School building just off of Locust Avenue and is run by Monica Pierce, the Freeport High School Ag teacher. “Last summer, Monica and her students hosted us to show how they operate their CSA and what they grow. This summer, we are pleased to join them again with a special focus on harvest. Many times homeowners are unsure when to pick certain crops and this field day will be spent focusing on when to pick, how to pick, and how to store your summer harvest,” states Grant McCarty. Students will also give a tour of their operation and share what they’ve been doing this summer on the farm. These young ladies rode in Saturday’s Elizabeth Community Fair parade representing The Three Elizabeth’s Guest House. Spoiler Alert: none of them are named Elizabeth.
Residents of the Elizabeth Nursing Home joined with their family members and nursing home staff in the glass-walled showroom of Graves Garage to watch Saturday’s parade, have a picnic lunch and celebrate family farming.
