ot too many people read Ernest Hemingway anymore. Oh maybe there’s some English teacher out there who still assigns “Old Man and The Sea.� But that’s about it. Hemingway’s obsession with personal courage seems quaintly out of date. He is often portrayed as a braggart who drank too much and who adored the killing of wild animals, and a bit of a Tom Cardella sexist as well. I recently returned to reading Hemingway, almost a bit reluctantly. I always had an interest in the Spanish Civil War in which Franco came to power. Many believe the loss of Spain to fascism served as a preview of World War II. his year marks the 47th anniversary of the breakup of The Beatles, arguably the most revered and beloved band ever. Their absence has certainly made fonder the hearts of those fortunate to have heard material upon its release and has enabled millions more to appreciate the Liverpool lads’ genius as new followers. Mike Oxman adores the group’s catalogue, tabbing it “so much fun� and “such great music,� and encourages similarly rabid support as the bassist for The Newspaper Taxis, a tribute quartertet set to play sets of their heroes’ tunes tomorrow and Saturday. “There are definitely diverse tastes out there, and I respect that, but I’d say that everyone can find ample songs that will resonate as true examples of brilliance,� Oxman, 33, said of his affinity for the legends, with his fandom having intensified when he attended Temple University. “You can hear the dedication to craft throughout, and there’s just such energy and verve behind their output.� The Lower Moyamensing resident and his peers will perform at A Taste of Key West in Morton and Pogues in Prospect Park, the latter during the location’s 4 p.m. Beatles Happy Hour. The appearances reflect the outfit’s heavy presence in Delaware County, but no matter the destination, Oxman finds himself thrilled to channel his inner Paul McCartney and to promote the innovative identity inherent within the compositions. “You really can’t go wrong when thinking of what to listen to or play,� Oxman, whose group also performed in November through the East Passyunk Community Recreation Center’s Beatles Night celebration, said. “They were such a testament to the greatness that can come from wanting to better your chosen art form and society at large.� The admirer, whose band’s name comes from a lyric in the lauded foursome’s 1967 gem “Lucy in the Sky with Diamonds,� particularly esteems McCartney’s knack for structuring songs and “the beauty of John’s brain,� an homage to founder John Lennon’s creativity in tracks such as “Happiness Is A Warm Gun� and “Good Morning, Good Morning.� Through hisPhoto three-and-a-half-year by Maria Young presence in The Newspaper Taxis, Oxman has come to master more

This is a problem that has become more pervasive into our daily lives, and it’s about time that those willing to speak up about it, do so. I am speaking of the disguising double standard that the term ‘freedom of speech’ has taken on recently; an issue that you may soon find yourself a victim of.

The most recent, and perhaps one of the most stark examples of this that I can give is the recent Drexel University scandal, where professor of politics and global studies George Ciccariello-Maher tweeted over the holiday “All I want for Christmas is white genocide.� Drexel’s response, you may ask? To defend, unabashedly ‘academic freedom’ in stating that “the wide range of reactions to his tweets suggests that his intentions were not adequately conveyed.� This came af-

ter a petition was created in support of Ciccariello-Maher to “Let Drexel know - in the midst of the deafening, organized troll-storm - that racist trolls deserve no platform in dictating academic discourse, let alone the off-duty tweets of academics.� The petition ironically referred not to the professor himself, but to those rightly concerned citizens and individuals who took issue with the professor’s tweet. This letter may have led some to believe that I take issue with freedom of speech as a whole. This could not be further from the truth. However, I find it utterly reprehensible that individuals such as this professor would be lauded for his strength, courage and opinion by liberal outlets, while equally outspoken individuals on the other side (Milo Yiannopoulos, Carl Paladino, Jordan B. Peterson and our President-Elect to name a few) are met with nothing but claims of racism, homophobia and misogyny. Arko is the owner and operator of Keep it Clean with Raylene, a residential and commercial cleaning service. The business is located on Richmond Street in Port Richmond, where Raylene lived and grew up. When she started the business in 1994, she served a handful of homes, Now, Arko and her business go to more than 150 homes throughout the city. It’s more than just a cleaning service, it’s a business that cares. Arko and the cleaners at Keep it Clean tend to the houses of women suffering from cancer. This is done through an organization called Cleaning for a Reason. The nonprofit pairs maid service companies with those who are in need of their services. It’s based in Texas, but with more than 1,200 maid services participating and 23,000 women served, Cleaning for a Reason makes an impact on many women’s lives nationwide. Arko has been participating in the program since its creation in 2006. The services offered by Arko through the Cleaning for a Reason are completely free of charge. Arko receives no compensation from the patients nor the organization, but does pay her workers for their time and efforts. Over the past 10 years, the employees at Keep it Clean have helped women throughout the city offering the complimentary cleanings. “We wanted a way to give back,� Arko said, “and we thought this would be the best way.� Helping women with basic cleaning services, something that they may not have the time nor strength for, is a struggle familiar to Arko. Her mother was diagnosed with breast cancer. She won the battle against it and has been a survivor for the past 11 years. This is one of the driving factor that makes Arko want to help.

ing that war in Spain. Subsequently I came upon an excellent account of the war in a book called “Spain in Our Hearts,” which includes an account of Hemingway’s role as a spokesperson for the American volunteers who fought bravely, but ultimately failed to win the war. So it seemed to me the time was right to go back and read Hemingway’s “For Whom the Bell Tolls,” which also dealt with the valiant effort to save Spain from fascism, a fight that President Franklin Delano Roosevelt turned his back on and later regretted. All of this is to make you, dear reader, understand why this column came about. I found that Hemingway’s focus on personal bravery struck a chord in me. I found a truth I think is buried in all men, one that bewilders most women. Buried deep in our male psyches is the need to exhibit personal courage. It begins early in our lives when maybe we do handstands to impress some young female. Most of us, are like myself, untested. And if we were candid we would admit that it bothers us deeply. The question of whether we are brave comes to us when we see a film or read a book or hear of a circumstance where someone else has acted with courage. Would we be able to do the same? Would we be able to storm the beaches of Normandy, knowing that the chances were good that we would not survive? Would we act bravely to protect our loved ones when to do so would risk our own lives? Would we be the ones to hide Anne Frank or give her up to the Nazis? These are questions that can haunt those of us who never had to answer that challenge. For some of us, the question involves our relationship with our fathers. The relationship between father and son, is at best, complicated. For those of us who had a father who had the courage to act bravely, that relationship is even more complex. Could we ever be the man that our father was? I have written frequently in this column about my father. As a cop on the beat, and then as a narcotics detective, he often faced situations where his courage was called to

account. He was awarded 35 commendations for bravery. For me, that became 35 questions as to whether I would have been brave enough to do as he did. Courage can be multi-sided. As brave as my father was, he was afraid to visit a dentist or a doctor. It was a fear that ultimately killed him. His cancer was detected too late. My father was also afraid of death, which seems paradoxical in a courageous man. After all, what did he do in earning those 35 commendations but risk death and win? Yet he feared going into a funeral parlor. When he was forced to attend a viewing of a family or friend that he couldn’t avoid, he would leave as quickly as possible and wait outside for my mother. He even feared sleeping in a certain position and being covered with a sheet because he associated it with death. Because of this, I admit I have a problem understanding the many different shades of courage because I am always brought back to my father. I understand that not all courage is physical. Yet there is something in me, and I think every male, that feels that the lack of physical courage somehow disqualifies us for fitting the definition of what a man should be. It is not as if being a trophy hunter of wild animals is something to which I would aspire. I believe Hemingway’s interest in hunting was more a manifestation of the need to face the wild animal bravely. I do not believe he would have respected some of the rich guys who pay to hunt defenseless animals like they were on a golf outing. I remember interviewing a former member of the Philadelphia Eagles who made money collecting wild animals so he could rent the killing rights to the affluent on some weekend lark. I detested that guy and was glad when he was cut. Hemingway was criticized for his love of the bullfights, but there, too, he believed that the bull became as glorified as the bullfighter by the ritual. He was not indifferent to the bull. I can’t pretend to understand a ritual tht ends with an animal’s death. Perhaps in the ultimate irony, Hemingway committed suicide, as did his father. An act of bravery or cowardice? A>@

his year marks the 47th anniversary of the breakup of The Beatles, arguably the most revered and beloved band ever. Their absence has certainly made fonder the hearts of those fortunate to have heard material upon its release and has enabled millions more to appreciate the Liverpool lads’ genius as new followers. Mike Oxman adores the group’s catalogue, tabbing it “so much fun� and “such great music,� and encourages similarly rabid support as the bassist for The Newspaper Taxis, a tribute quartertet set to play sets of their heroes’ tunes tomorrow and Saturday. “There are definitely diverse tastes out there, and I respect that, but I’d say that everyone can find ample songs that will resonate as true examples of brilliance,� Oxman, 33, said of his affinity for the legends, with his fandom having intensified when he attended Temple University. “You can hear the dedication to craft throughout, and there’s just such energy and verve behind their output.� The Lower Moyamensing resident and his peers will perform at A Taste of Key West in Morton and Pogues in Prospect Park, the latter during the location’s 4 p.m. Beatles Happy Hour. His time at Temple provided the foundation to comprehend a global phenomenon, namely, appreciation for The Beatles. “I hadn’t given them much attention before college, I must admit,� Oxman, whose day job calls on him to serve as an assistant store manager, said, noting that Metallica was his “musical baby bottle.� “However, when I latched on to them, I absolutely started to love everything they aspired to be and the lessons about the human condition that they offered in a non-preachy, let’shave-fun way.� The British superstars’ “Rubber Soul,� “Sgt. Having decided on becoming a bassist after hearing he would never want for work, he discovered such beautiful reflections of his instrument’s possibilities. “Their evolution as students of music and their concern for making artistic statements, no matter what they were going through as a unit or as individuals, really impress me,� Oxman said, divulging that The Beatles’ later work is where his heart is. “It makes you wonder how many groups even consider doing that today, and even if most of them do, you still can’t put anybody above The Beatles when you ponder who has truly been a pioneer.� He has harmoniously fraternized with bandmates Donovan Rice, Bob Tomarelli and Billy Rose at numerous venues, including World Cafe Live, where they performed last September. Having wanted to play with

them since he first saw them, with renditions of “I’m Only Sleeping� and “Eleanor Rigby� off “Revolver� being especially dynamic, he loves joining the two in donning the suit-and-tie look of the British Invasion era and performing, unlike other fellow admirers, minus wigs, costume changes, and backing tracks. In so doing and in strengthening a flame that figures to outlast us all, Oxman et al have generated praise from established backers of The Beatles and have helped younger attendees to engender comparable joy. “There’s definitely more to learn with regards to going through their catalogue,� he said. “What’s pretty set, though, is that their influence is not going anywhere. But in this case, a new year means a clean palate and a great opportunity to have a few new brewhouses showcase why they should be your next savory pour. 0OdO`WO Q][Sa b] >VWZZg Imported German beer is often a dicey proposition because so many of the nation’s traditional styles—especially pils and Helles lager—are quick to deteriorate before they hit American shelves. However, Liquid Projects, a new Brooklynbased company, is giving it a try—and to be honest, the first batch it brought to Philly is mighty impressive. The company has put together a collection of styles from five separate German breweries under one brand name, Reinheits Boten, which translates roughly as “purity delivery.� The samples I tried last week at Brauhaus Schmitz, the excellent German bar on South Street, were all quite fresh and included some unusual styles. Among them: H]ZZS` 6]T HeWQYSZ, an unfiltered lager whose smooth body and malty sweetness make it the perfect complement to those big Bavarian soft pretzels on the Schmitz menu. 4`WSRS\TSZaS` H]WUZPWS`, an old and rarely seen type of unfiltered lager whose roasted malt gives the beer an amber color. I’m pretty sure this is the first time I’ve tasted zoigl, which takes its name from the German word for the sign of a star (one which had a very similar look to the Star of David, actually) that medieval farmers and brewers would hang on doors when they had beer for sale. @WSRS\Pc`US` =`UO\WQ 3[[S` 0SS`, made with a type of spelt that historians and archeologists believe is the first grain cultivated for beer and bread. It has a nutty, rustic character that is unique among German beer. I recommend all of these beers, especially for those who are looking for something other than hopped-out IPAs. These styles emphasize malt, whose character is particularly overlooked in American craft beer circles. But I wonder how long they’ll survive. As I mentioned previously, artisan German beers—especially unpasteurized varieties like these— don’t always travel well. Liquid Projects owner Lars Dahlhaus told

De h[i[hlWj_edi h[gk_h[Z me the beers are transported across the Atlantic in temperature-controlled containers, and that they’re pre-sold, which in theory means they move through distribution channels faster. The larger challenge, he said, was bringing competing breweries under the single Reinheits Boten brand together. If his business plan works, look for other new collaborations throughout the year. <Se RSabW\ObW]\a A couple months ago, I mentioned more than a dozen new breweries were headed to the city. Unsurprisingly, the opening of many of them has been delayed for the usual issues: licensing, inspections, balky equipment, etc. But several are now open, including: 0`SeS`g /@A, 1927 W. Passyunk Ave, South Philly. It opened the week before Christmas with limited hours, so check out Brewery ARS’ Facebook page or website before heading down Broad Street. It’s pouring two saisons and a porter (bring your growlers) and serves up some pretty good BBQ. EWaaOVWQY]\ 0`SeS`g, 3705 W. Schoolhouse Lane, East Falls. It held a couple holiday open houses and doesn’t yet have regular hours, so consult its Facebook page for details. This is a production brewery; don’t expect typical brewpub ambiance (or food), just yet. 4ZgW\U 4WaV 1`OTbV]caS, 1363 N. 31st St., Brewerytown. This spot opened with little fanfare just before the holidays. Located nearby the old Red Bell plant (nee F.A. Poth Brewery), it’s not actually a brewery. Instead, all of its beers are made over in Jersey by Garden State craft brewery. Among ales made exclusively for the taphouse: LoveFish, an abbey dubbel infused with cherries; and Duffified Ale, an English-style amber ale named after Brian Duffy of the cable TV show “Bar Rescue,� who also runs the kitchen. <Se PSS`a It’s impossible to keep up with the hundreds of new beers hit the shelves every week. But here’s three that recently caught my attention: 1]\aV]V]QYS\ 0`SeW\U 5V]ab 0SO`. Say it quickly: Ghost Bear...GhostBear... Gostisbehere. This new golden ale, smartly packaged in a black-and-orange can, has had Flyers fans lining up for cases since its debut in December. Oh, and no, it has not been endorsed by the Flyers’ young defenseman sensation, Shayne Gostisbehere. AV[OZbh >Oab`O[W >WZa. Yes, a pastrami-flavored pilsner. It’s a collaboration with Barcade, the fun Fishtown beer-andarcade bar, available on draft only. A>@

hanks to his Greek bloodline and pleasant personality, Kostantin Dalamagas has never doubted food’s role in helping one to curtail cares. Holding that eating should be about “Enjoying the moment, laughing, living, and having fun,� he has begun to link locals with his affinity for securing satiety through ownership duties at Village Taverna. “I absolutely love this community,� he said of his presence in Queen Village. “It’s a very homey area, so I believe we’re in a perfect position to offer residents food that’s simple, healthy, and authentic.� The Society Hill resident has maternal grandmother Theadora Kakarides to thank, as her recipes guide the operations at the 54-seat location. As an homage to heavenly homemade meals, Village Taverna finds him stressing the importance of dining with loved ones and considering dishes as durable diversions given the complexity of contemporary life. “Everything should be about relaxation in the grand scheme,� he said. “Sure, there will be the occasional bit of unrest, but the table should be a sacred location.� The businessman has enjoyed considerable success in his career yet has never lost sight of his obsession with seeing that fortune as a product of truly connecting with patrons. For those who have come to admire the item’s taste or those who might have experiencing dietary diversity as a 2017 resolution, he decided to share the recipe for his establishment’s pastichio. “It will definitely fill you up,� Dalamagas said of his lasagna creation. “You could feed a whole family with it, and it’s something that nobody ever forgets�

DIRECTIONS: Preheat the oven to 350 degrees. Layer half of the boiled pasta in a baking pan. Saute the beef seasoned with the clove and cinnamon. Add the tomatoes, garlic, sauteed onions, tomato paste, sugar, wine, olive oil, and bay leaf to the beef mixture. Simmer for an hour over medium-low heat, remove the leaf and the clove, and layer the sauce over the pasta in the pan. Add the remaining pasta on top of that. For the bechamel sauce, place the butter and flour in a saucepan. Add the milk while whisking to prevent clumping. Add the nutmeg. Take off the burner after the sauce has thickened, let cool, and add the yolks, salt, pepper, and cheese. Pour the sauce over the pasta layer. Bake until golden brown, and top with grated cheese.
