Waterford Wins
Waterford is recognized by the Community Associations Institute STORY BY KASS FINCHER
F
or the second time, Waterford is recognized by the Community Associations Institute, winning The Community of Excellence Award for 2019. One of only five North Carolina communities receiving the award, Waterford was recognized for the association’s volunteers and management leaders whose contributions exemplified excellence in self-government, leadership and stewardship.
More specifically, Waterford’s association stood out for their stellar response to two significant natural disasters last year, involving multiple volunteer committees whose efforts were coordinated by leadership facing exceptional and urgent challenges. This recognition from CAI demonstrates Waterford Master Residential Association’s continued community
association excellence. Congratulations to Waterford’s residents and leadership! The buzz around Waterford...The residents are thrilled and delighted! This award confirms what most already know, that Waterford is a wonderful place to call home, offers a fabulous community atmosphere and is well managed by a dedicated group of volunteers.

BRUNSWICK RIVERWALK AT BELVILLE
The Town of Belville has embarked on a multi-phase project to create one of the largest Environmentally friendly, Historical, Recreational and Teaching facilities on the entire Eastern Seaboard. The Riverwalk Park is located opposite the Western banks of Eagles Island on the Brunswick River off SR133 in Belville NC. Upon completion the envisioned facili-
ty will consist of more than four miles of water frontage and encompass more than 150 acres. Phase three will connect the Battleship North Carolina and the Brunswick Riverwalk at Belville via a bicycle and pedestrian boardwalk constructed across Eagles Island. The Town plans to conserve this portion of Eagles Island as “an educational and environmental preserve in perpetuity”. Eagles Islands history as a major naval stores producer; as home to numerous rice plantations; its history as a shipbuilding facility during WW2; its housing over 460 ships as part of the Ready Reserve Fleet during the 50’s-70’s; its current rejuvenation as home to the Battleship North Carolina and the rich heritage of its marshlands as a critical component of the ecological engine supporting flora, fauna and avian wildlife, will all be stressed. The Town of Belville believes this commitment will not only serve as an economic engine for the entire Cape Fear Region, but will enhance the quality of life for both mankind and natures benefit for generations yet to come.

In addition to preserving the legacy of the Unites States Armed Forces, Veterans’ Memorials serve to promote healing. All who have served and sacrificed in our nations’ Armed Forces should be properly honored and receive the recognition they justly deserve. Funds for this worthy cause will be generated from the sales of donors’ personally engraved bricks that will be installed at the site. Sponsorship packages will be available also. Take the time to contribute to this effort to support our veterans. Jim Bucher, Director of Parks & Rec at Belville, will be announcing the details of the memorial and will kick off the fundraising for the project on May 4th.

BIZ Q&A Hallmark in Leland Waterford Village welcomes boutique STORY BY KASS FINCHER
W
hen Rajul Moose’s parents opened their first Hallmark store in 1985 on College Road in Wilmington, they never envisioned the growth their business would take over the next 34 years. Today, Moose and her father Kirit Khajanchi have ten locations, with the Leland store – Kendall’s Hallmark and Alayna’s Boutique – opening in 2013 at the Waterford Village Shopping Center.
Named for her two daughters – Kendall and Alayna – Moose is proud of how the business has grown. “I never imagined it would grow as much as it has, and I would love it as much as I do,” she says. “We started with Hallmark and then about eight years ago, we added Alayna’s Boutique. When we saw what Vera Bradley was doing, we thought that would help us bring in a younger shopper, a non-Hallmark shopper, and help us expand our business.”
“We’re based in Wilmington,” Moose further explains. “We have stores two and a half hours north to Roanoke Rapids and two hours south to Myrtle Beach. That’s a manageable spread for us. We have two stores in Wilmington, three in Myrtle Beach and a store in Jacksonville, Washington and Rocky Mount as well.” With over 400 employees, Moose describes their successful approach. “We’re fortunate to have great vendors and great employees,” she says. “Hallmark is our

biggest vendor; other strong partners are our ladies’ accessory lines like Vera Bradley, Pandora, Brighton, Nora Fleming and Simply Southern. We strive to keep items fresh and changing constantly; we work with over 300 vendors to choose our products.” Starting out years ago as a greeting card store, the business has expanded to include many more gift items like books, women’s clothing and accessories, handbags, home décor and personal care items. “We go to four or five gift shows each year to find the newest trends,” Moose relates. “Our goal is to be ever-changing, upbeat, energetic, offering the latest gifts and accessories, something for everyone, unique hard-to-find items.” Like many other industries, the Internet has had an impact on the greeting card business. E-cards and the birthday wishes you can send your friends on Facebook are often taking the place of going to a store, selecting a card and mailing it. As a result, many chain and grocery stores have downsized their card selections. But Moose has strategically stayed committed to long card footage in her stores, offering a big selection and the specialized cards for occasions you can’t find anymore at the chains, such as 50th anniversary, Just Because and others. “Hallmark is still a huge part of our business, notably Hallmark ornaments around the holidays, but we are seeing much growth in ladies accessories, clothing and handbag lines,” Moose explains. “These are things that people want to come in, touch and try out.” The business also offers special gifts for niche markets like nurses, teachers and bereavement. The stores’ business is very seasonal,
with Christmas being the strongest holiday, followed by Valentine’s and Mother’s Day. Mother’s Day this month will offer free gift wrapping and lots of variety to choose from for “that special mom in your life,” according to Moose. To stay on top of the latest trends in gifts, Moose says the business takes a lot of effort, changing items constantly, always looking for new things. She credits this approach, along with strong vendor partnerships and fantastic employees, for their success. The store in Leland has been very strong. Moose says in 2013 Hallmark initially was a little wary of opening a store in the area, but not anymore. “The demographics and the growth in this area have been key,” she says. “We are so fortunate to be a part of this community; our staff there is awesome and our customers support us wonderfully.” Stop in and check out the store. Mother’s Day is here; mom deserves something special!

pringtime is finally upon us! Man, that was one long winter, wasn’t it? Not that I don’t appreciate ever day, but the warm, sunny days are a bit easier to appreciate if you ask me. I’m ready for Spring, and for Spring cocktails!
While Spring is warmer, it’s not hot like summer, so we don’t want to go jumping into summertime cocktails like Pina coladas, daiquiris or various tiki and boat drinks. I love those, don’t get me wrong, but everything in its time. Spring is an in-between time, so we need an in-between cocktail, not warming and savory like a winter drink, but not fruity and sweet like a summer drink. What we want is the mint julep. The mint julep is the perfect Spring cocktail. It’s a bit sweet and a bit savory, easing us from the cold to the hot. It’s bourbon-based, which is always a beautiful thing. It’s an all-American recipe, coming to us from Kentucky, a state that is neither frozen North nor sweltering South. It is amazingly easy to make, using only ingredients you can, and should, always have right at hand as soon as the weather turns warmer—bourbon, sugar, water and mint. Let’s begin with the ingredients. First of all is bourbon. Any old bourbon will do, but why not try a few and find one you really like? This cocktail doesn’t do a lot to hide the liquor base, so use something good. I chose to use up the last of a bottle of Elijah Craig Small Batch I received as a Christmas gift — all the better to send winter away in style, right? Next you’ll need water in two forms, liquid and ice. Crushed ice is preferred, but if you don’t have an ice maker that does that for you and you don’t fancy attacking a freezer bag full of cubes with a rolling pin, using regular ice cubes won’t be held against you. You’ll also need a bit of sugar - granular, powdered, heck even brown, no worries. Lastly, and what makes this cocktail special, is the mint. This is key, because it is when the mint in the the pot on your porch comes back into full, deep green gloriousness that you’ll know mint julep time is upon us. If you don’t have a pot of mint on your porch you really should deeply examine your life choices. Mint is easy to
grow, requiring only moderate care (mostly watering during the very hottest parts of summer). It grows, as they say, like a weed, which is why it’s a good idea to keep it in a pot if you don’t want it taking over your yard. I’m not sure a mint-lawn is a bad idea though. Hmmmmmmmm. Anyhow, you need some mint leaves to put in your drink and a nice, pretty sprig for garnish. Mind you, the garnish is NOT optional. I may be getting ahead of myself here, but the finished mint julep, with fresh mint springing forth from the icy cup, is the reason the straw was invented. No joke. The fancy ladies and gentlemen watching the Kentucky Derby, where mint juleps made their debut and are still consumed in mass quantities, needed a way to sip their beverage without disturbing the mint sprig garnish or looking undignified. Hence, the straw was born. And now you know. But how do we get to the point that we need that straw, you ask? It’s very simple really. First you make some simple syrup, aptly named as it’s just a matter of dissolving sugar into equal parts water. This works best if you heat up the water and stir. Because you have to use the stovetop, that is the hardest part of this recipe. Once the simple syrup is cool, pour a shot (about an ounce) of it over about 5 or so leaves of mint in the bottom of your sterling silver, monogrammed julep cup. Don’t have one? Must not be from Kentucky. That’s fine, a rocks glass will do. Now you “muddle” the leaves and syrup. This means you is a wooden blunt instrument, like the reverse end of a wooden spoon, to gently press the leaves and syrup together. Don’t get too vigorous or you’ll bruise the mint leaves and make things a bit bitter. After you’re nicely muddled, add two shots (plus a bit more for luck) to the mix, fill the glass with crushed ice, and gently stir to mix everything up. Stick the pretty sprig of mint in, add a straw, and serve. That’s all there is to it.
While enjoying your mint julep you can reflect upon the fact that this drink was made specifically to spur the sales of bourbon after the horrors of Prohibition. It was born in Kentucky at the famous Kentucky Derby and remains an integral part of the
Hey Music Lovers!
event to this day. I’m told a true Kentuckian only drinks mint juleps on Derby Day and Oaks Day (another race at Churchill Downs), but they don’t frown the rest of us enjoying them any old time.

SAVOR San Felipe Sizzles
Celebrating Authentic Mexican Food STORY BY KASS FINCHER
W
ith two locations in Southport and others in Leland, Shallotte and Wilmington, San Felipe’s Restaurant is a local favorite for fast and fresh Mexican food. Opening their first restaurant in 1995, this family-owned business now has ten locations across piedmont and coastal North Carolina. Traditional dishes are made from their own custom recipes, with seasonal changes to the menu from time to time. Appetizers include jalapeno poppers, ceviche and chicken wings. A favorite is Mexican street corn – corn on the cob grilled and jazzed up with spices, mayonesa and cheese. Nachos are offered with your choice of chicken, steak, shrimp or a mixture, grilled
with red peppers, onion and homemade queso, and served up with guacamole, pico de gallo and sour cream. Homemade dips include the “San Felipe Dip,” made with seasoned ground beef, enchilada sauce and melted cheese. When you live at the coast like we all do, you like the option of seafood prepared Mexican-style. The “Menu del Mar” offers

several interesting dishes composed of grilled shrimp, tilapia, mahi-mahi or scallops over rice. If you want to try the “San Felipe Favorites,” there are several yummy options. The “Alambre Monterrey Style” offers juicy strips of chicken or steak cooked with bacon, peppers and onions and topped with melted Oaxaca cheese. The “Cazuelon” adds Mexican sausage – chorizo – to the grilled chicken and steak served with rice and beans. The popular ”San Felipe Special” is a chicken burrito and chicken enchilada served along with a melted cheese quesadilla. Many creative variations are available for the traditional tacos, burritos, enchiladas, chimichangas and quesadillas. And the always-favorite fajitas come sizzling with your choice of chicken, steak, shrimp or pork. For the vegetarian, there’s a fajita made with grilled mushrooms, red and green bell peppers, onions, squash and spinach. If you can’t decide from the huge variety of dishes on the menu, you can make your
own combo of one, two or three items of chalupa, chile relleno, tamale, burrito, taco, enchilada, quesadilla or tostaguac, served with beans and rice. The menu also includes a large selection of beers, wines, mixed drinks and, of course, margaritas. Every day of the week offers a unique drink special. And party planners, have no fear! San Felipe will cater your party of ten or more people with burrito, taco, enchilada or fajita trays, complete with sides of rice and beans, for $6 - $11 per person. No need to wait for Cinco de Mayo to plan your gathering and order up your food. San Felipe is known for their authentic, fresh Mexican food and friendly customer service. Stop in and treat yourself and your family!

FITNESS Move More, Burn More 7 Scientifically Proven Ways to Burn More Calories Each Day STORY BY BRIAN TULLY, MS, EP-C
L
osing weight and staying healthy comes down to a simple formula, which spelled out in it’s most basic format equals using more fuel than you consume. This means you will either need to eat fewer calories, burn more calories, or a combination of the two each day. Even if you don’t need to lose weight, getting more movement each day has numerous health benefits, so everyone should be able to utilize these simple tips to incorporate more movement and burn more calories.
1. FOR EVERY 30 GET 3 This refers to aiming to get 3 minutes of activity for every 30-minutes you’re awake. It is important to break up prolonged periods of sitting. Following this method of 3 minutes of activity for every 30 minutes has been scientifically proven to lower blood glucose, blood insulin, and insulin resistance. So if you have been sitting for 30 minutes take a 3 minute movement break! 2. WALK BRISKLY REGULARLY Taking regular walks at a moderately brisk pace has been shown to burn 300% more calories than sitting. The moderately brisk pace referenced was only 3 MPH. 3. TRY INTERVAL WALKING A form of walking that burns even more calories than the steady 3 MPH pace referenced above. So how does it work? Try this…walk at a comfortable but challenging pace for 30 seconds followed by 60 seconds of mild recovery pace. Continue to repeat this pairing during your entire walk. That’s it…major calorie burn bump up!
4. MOVE WITH THAT HABIT Sometimes the best way to add a new habit and get it to stick is to connect to an existing habit or element of your daily routine. Think of things that you may do daily; things like brushing your teeth, making coffee, going to
the store, refilling your water bottle (or glass). There are so many things like this that you do everyday. Now simply connect them. For example, when you are waiting for the coffee to brew…do some squats at the counter; when you need to refill your water bottle take a few laps around the house first; when you go to the store park in the farthest parking space instead of the closest. Get creative, but be sure to anchor your new movement habit with existing habits if you want it to stick.
5. COUNT YOUR STEPS Using an activity tracker or pedometer to track your steps is a great way to get you paying attention. You can set a daily goal, try to beat a previous day’s count, challenge a friend, or simply just have a reminder that you haven’t moved much on a certain day. Whatever way you use it doesn’t really matter. The simple act of owning one and using it has produced an increase in user activity by 26.9% in recent studies. It really works! 6. TALK AND WALK Meeting up with a friend to catch up? Why not catch up during a neighborhood walk or a long walk down at the beach. Calling a friend or family member to touch base? Make the call on your cell phone and chat as you walk. Keep your relationships and your heart strong, while you burn up some extra calories!
7. MIX IT UP When you go the traditional route of working out to burn your extra calories, keep in mind that mixing up your mode of exercise as well as intensity will provide more bang for the buck. This means that instead of doing a 30 minute walk on the treadmill, you would be better off doing 10 minutes on the treadmill plus 10 minutes on a bike, plus 10 minutes on the elliptical. This also means that you should vary the intensity as well by changing the level of resistance and speed throughout each of those 10 minutes. This applies to any workout you do…mix it up for a greater caloric demand both during and after the workout. Remember, at the most basic level, if you don’t change your eating at all from what you do now…but you burn an extra 500 calories per day than you do now…in just 1 week you will create a 3500 calorie deficit! And that is the exact amount of calories it takes to lose 1 lb of fat. Now take that formula and consistently follow it week over week for 6 months. That equates to 26 lbs of weight loss. Not bad for a bit of movement each and every day! As always, if you have additional questions regarding this month’s article or have a topic you would like to
see covered in future articles; please don’t hesitate to reach out to me via email. BrianTully@BetterTogetherFitness.com

Q: What Financial Reports are most important for my business?
A: After setting financial goals and a budget for your small business, it’s crucial to monitor how well your company is performing. One way to accomplish that is to become familiar with and regularly review the following reports.
• Profit and Loss Statement (P&L) – (also called an “Income Statement”) indicates if your business is profitable and how profitable it is during a given period of time. It is made up of —Mark W. from Boiling the following main sections: total income; total expenses; Springs and net income (your total income minus total expenses). • Balance Sheet – provides a snapshot of your company’s finances. It summarizes what your business owns and what it owes. Most often it shows company assets on the left and liabilities plus equity on the right to represent the following accounting equation: Assets = Liabilities + Owners’ Equity • Cash Flow Statement - lists your incoming and outgoing transactions, showing how your business has earned and spent money over a period of time. The Cash Flow Statement sheds light on when cash is flowing into your company; from where cash is flowing into your company; when cash is flowing out of your company; and from where cash is flowing out of your company.
