THE FREEDOM WALL The Freedom Wall will be an impressive display of historic document replicas serving to remind all of us of the blood, sweat, and tears that have been invested over the years to ensure our freedom as Americans. The Freedom Wall originated with the Freedom Train which toured the

nation in 1947 carrying an exhibit of historic documents. Principal Price has a designated wall in the NBHS library where the wall will be placed. ooks like Spring is officially here. Earth Day is celebrated on the 21st, and all Leland residents can come to Town Hall and take home a plant. April also kicks off music in the park with Trey Calloway on April 26th. Saturday, April 21, 2018 - 10:00am We’re celebrating Earth Day with a plant giveaway! To enhance the beauty of the Town, free plants will be given to Leland Residents with a valid I.D. to take home and plant in their yard. Leland Town Hall. A

recent encounter at a dinner party inspired to me write thisarticle. While helping the host prepare a cheese platter, I was given a bag of fresh flowers…. needless to say I was a little confused. The bag had a variety of colorful petals, flowers and buds. These were not only for decoration, but for eating! They were so beautiful and actually looked delicious, I couldn’t wait to try them. Before you go pull off your pansy petals for a dinner party – please note that ONLY organic and pesticide-free flowers should be eaten. If you grow them in your own garden from seeds, they should be ok. But you may even want to check if your neighbors are using pesticide spray, or weed killer, because it can run in the soil and effect your garden without you knowing.

Eckhart Tolle described flowers as a source to enlightenment in his book “A New Earth”. According to Tolle, “ Flowers Have an awakening power… those delicate and fragrant beings we call flowers would come to play an essential part in the evolution of consciousness of humans. Humans would increasingly be drawn to and fascinated by flowers. As the consciousness of human beings developed, flowers were most likely the first thing they came to value which had no utilitarian purpose for them, that is to say, was not linked in some way to survival. They provided inspiration to countless artists, poets, and mystics.” There are only a few places to purchase edible flowers, organic and safe to eat. Shelton Farms in Leland is one of those places. The owner, Margaret Shelton, said that the edible flowers they carry include

Their staff are very knowledgeable and welcoming, especially Margaret Shelton.” Tania tells more about her fun dinner parties – accompanied by edible flowers. “My neighbors and I have started a monthly dinner party and January was our month to host. Winters on the Southern coast can be a bit gloomy and so my husband Gordon and I wanted to provide a warm and

nurturing environment. After we decided on this theme we knew immediately to start at Shelton Herb Farm. We’ve been going there for years and with each trip we are charmed anew. We purchased edible flowers and an assortment of fresh culinary herbs. Among the many edible flowers represented in our basket were pansies, which are symbolic of loving thoughts. The colors are brilliant and we used them in our salad along with fragrant herbs. We also used the flowers as garnish for other dishes. Shelton Herb Farm provides such generous quantities of their fresh products that we had enough flowers and herbs to share with our guests at the end of the evening.” I had the pleasure to be included in this dinner party, and it has inspired me now to enjoy edible flowers in my own home made recipes. They are not only more beautiful but offer some unique fragrances and sweet unexpected flavors. I hope you too will step outside your comfort zone and try some yummy edible flowers. Now for something completely different, Beer - like it or not? STORY BY JEFF STITES

F

or April we’re going a little off-the- wall. I was inspired by April Fool’s Day to find some brews that might make one wonder what kind of fool would mix this stuff up together. Are these beers crazy good, or just plain crazy. Let’s find out. Elysian Split Shot Expresso Milk Stout 5.6 ABV 28 IBU The Label Says: Split Shot combines the local talents of Elysian Brewing and Stumptown Coffee in a deliciously smooth, very Northwest beer. My Take: I can’t say how “Northwest” it tastes, but it really is a “deliciously smooth” beer. Milk stouts are a mild version of stout invented in the late 1800s to satify a demand for more easy-drinking, less robust beers. They are made with lactose added to the usually stout recipe, and were originally marketed as having all the nutritional value of milk, but in a beer! Brilliant, right? Except it’s completely no true. Lactose imparts flavor and a bit of creamy mouth feel to beer, but nothing else. In England, it’s illegal to call a beer a “milk stout” for reasons of truth in advertising. The Northwest apparently has no such qualms. The coffee addition in this brew is very nice. It gives the beer an interesting flavor and a bit of bitterness different from that imparted by lots of hops, but it is in no way over-powering. This is a beer with mild coffee notes rather than a coffee-flavored beer. Bell’s Kalamazoo Stout, Stout Brewed with Brewers’ Licorice 6% ABV The Label Says: Named after the city where it all began, Bell’s Kalamazoo Stout is one of our most classic recipes. This smooth, full-bodied stout offers a blend of dark chocolate and freshly roasted coffee, balanced with a significant hop presence. My Take: This one isn’t bad at all, if you like big, bold stouts. This is the beer that inspired the creation of milk stout for those who weren’t as interested in this kind of complete and total beeriness. Is beeriness a word? It should be. Anyhow, if you like your beer beer-flavored, but not hopped into oblivion, you’ll love this stout. Sadly, I don’t think there’s any licorice in this.

At least I couldn’t find any. I was hoping to use this as an excuse to wax eloquent about the joys of black jellybeans, but alas, it was not to be. Innis & Gunn Rum Aged, Beer Aged With Rum Oak Chips 6.8% ABV The Label Says: This ruby-red beer has been aged with rum oak chips, resulting in a beer with a delicious warming character that is bursting with fruit and warming spiciness. These vibrant flavours perfectly balance the beer’s toffee-malt backbone which have led it to win numerous awards around the world. My Take: I love Scottish ales and I love rum. This beer truly tastes like a well-balanced combination of the two, like a rumflavored ale. You’d think that would be right up my alley, but it isn’t. I can appreciate the two flavor profiles. I can see that this beer accomplishes exactly what it intended to accomplish and did it well. The Scottish ale portion is flavorful and holds it own against a fairly strong rum presence. It’s not a bad beer and it might even be an excellent beer for a person who appreciates these flavors combined together. I’m just not that person, but I kind of wish I were.

New Holland Brewing Dragon’s Milk Bourbon Barrel Aged Stout 11% ABV 31 IBU, The Label Says: Rich, roasty and creamy with heavy notes of vanilla and just enough familiar warmth from oak barrels. Reminds us that all of life’s events- big or small- are worth celebrating. My Take: I’ve had this one before and didn’t like it one bit. I figured to give it another go for this article and I’m glad I did. It’s growing on me. Now, this is a thick one. They call it “creamy,” but I’m going with simply thick. I’m tasting more vanilla than I remember, which I like as it kind of moderates the bourbon. Maybe the last one I had had been on the shelf too long. I love bourbon and this stout has a definite bourbon flavor. It blends with the stout better than the rum did with the Scottish ale, I think. It’s a sipper to be sure, at 11% ABV, but one that I think is worth the time to sit down and enjoy.

Founders Breakfast Stout, Double Chocolate Coffee Oatmeal Stout 8.3% ABV 60 IBU The Label Says: The coffee lover’s consummate beer. Brewed with an abundance of flaked oats, bitter and imported chocolates, and two types of coffee, this stout has an intense, fresh-roasted java nose topped with a frothy, cinnamon-colored head that goes forever. My Take: I’m almost out of breath from copying that description down, but I have to admit it does do justice to a beer with a whole lot going on. Let’s take it apart, shall we? First off, it’s an oatmeal stout. That means the barley is supplemented with oats as a base for the beer malt. Oats are a common grain in Scotland and England and were probably included in most early beers in the region before barley became the go-to grain for brewers. Oats give a stout a warmth and a, well, a stoutness, that serves the style well. Then we have chocolate; two kinds, apparently. And it’s imported at that. Founders isn’t messing around with any of those domestically-grown cocoa beans! Beer descriptions are a very pretentious, which is a large part of the reason I include them. They are a prime target for poking fun. But in all seriousness, chocolate is a great addition to stouts and porters, and this beer uses it well. Lastly we have coffee. I mean, why not? If you are having oatmeal, why not coffee? Breakfast Stout indeed. With chocolate, of course. I can joke about trying too hard to cram in too much all day, but it would be a lie. This beer is delicious. Every one of its many parts works smoothly with the others to blend into a truly satisfying, if a little complex, beer. And if 8.3% ABV doesn’t start your day off right, I got nothing else for ya.

savor Blossoms - Not Just a Golfer’s Favorite Magnolia Greens restaurant provides delicious cuisine, seven days a week. STORY BY KASS FINCHER

W

hat’s better than enjoying a round of golf on beautiful Magnolia Greens Golf Course in Leland? Maybe enjoying a meal at Blossoms, watching the golfers play through as you gaze at the lake and sip on a glass of wine.

The popular restaurant is owned by Brunswick Food and Beverage, also the owners of Latitudes Restaurant and the pool bar at Compass Pointe. They all opened in June 2016 and have enjoyed great support from the area. Many don’t realize that the golf course and the restaurant are open to the general public, so anyone can take advantage of the beautiful setting and great food. Before it opened, the restaurant at Magnolia Greens was called Magnolia Grill. A significant renovation and expansion in April 2016 led the owners to look for a new name to create new buzz and excitement about the changes. Patrons and community residents voted, and the name “Blossoms” won out – appropriate for a Magnolia Greens setting. Manager Aimee Best has been with the restaurant since 2016. A native of Wilmington, Aimee has an interesting work background leading up to her current role. After graduating from UNCW in 2010, Best worked for many years at Disneyworld; her last job was leading the team that created the apps for Disneyworld and Disneyland. She recalls the challenges of that work. “When I took the app job they took us to a trailer in the middle of nowhere; the windows were blacked out, and they shut the door and said, allright, in four months we’re going to launch an app for Disneyworld. We had a team of eight on the east coast and four on the west coast. We were tasked with finding out every single thing you could find out about Disneyworld and creating an avenue for guests to see, read and learn. My psychology degree helped me figure out how to engage people.” When she wanted to move back closer to family here, her background in the burgeoning app industry led to a job here

running social media and marketing for Brunswick Food and Beverage. Again, Best’s hands-on approach and dedication led to more responsibility. “We had a third restaurant – Charlie Macgrooder’s – that’s closed now. I spent a lot of time in that restaurant and the others to understand how to market them. I got so involved in restaurant operations that they asked me to manage this one. Now I’m GM here and also responsible for social media and marketing for both restaurants.” Blossoms is open seven days a week, serving breakfast, lunch and dinner. Breakfast is the most popular; lunch and dinner patronage correlates closely to golfing conditions and turnout. Dinner is offered Tuesday – Saturday, with a simple entree menu that changes often. This spring they are offering a more permanent dinner menu that might change seasonally. The lack of many breakfast spots in the area creates a real advantage. “We sit on a golf course,” says Best. “Fortunately for now we are the only place in Leland be-

sides Waffle House that serves breakfast, so that is big for us. That may change, but we embrace it while we can. Breakfast is one meal I don’t have to worry about; we’re going to have guests for sure. Lunch depends on golf business too, so if its a pretty day and the golfers are here, we do fine.” Favorite breakfast items include the Big Blossoms and the special omelets of the day, from seafood to simple meat and spinach. And the popular french toast has corn flakes added to the crust! Manchego My Eggo – a bowl with chicken, hash browns and eggs – is also a favorite. Breakfast is served 7:30 – 11 every morning and until noon on Sunday. Lunch is what Best calls a typical golf course menu, with the always-fresh burgers being the most popular item. “Reubens are also very popular with golfers especially,” she says. “The prime rib BLT is a favorite among the ladies. Pretzels are always a hit, and the Blossoms salad is probably the most signature item.” Blossoms offers a banquet room that patrons use for parties and events. It seats up to 110 people. The gazebo beside the lake is available for wedding ceremonies on weekends. Best enjoys being involved with the banquet room parties. “We do a lot of catering and events with the banquet room next door and I love being hands on with that – from the planning to the party, it’s just a lot of fun,” she says. She and her staff also plan many regular and seasonal events to attract patrons. Regular evening events include trivia on Wednesdays, karaoke every other Thurs-

day, and live music on Fridays. The large patio overlooking the lake adds 30 seats to the 150-seat restaurant; it’s a perfect venue for live music in nice weather. And holidays bring more celebrations. The upcoming Master’s Golf Tournament will be the backdrop for a big event that weekend. After that, Blossoms will offer a special Easter brunch or extended breakfast and, later, a Mothers Day celebration. Crediting Chef Vernon Grobes, Best conveys the appeal of her restaurant. “Our chef is very creative; he’s made the dinner menu focus on what the community might want. We plan events with the community in mind, always looking for what they want to celebrate. We pride ourselves on the breakfast – Sunday breakfast is insane here. I’m looking forward to getting more people in – its the events, its the music, it’s the fun food and drink specials.”

pring has arrived which for many of you not-so-hard-core golfers means a return to the links after a mini break during the colder months. Your heart and your mind are ready to get back out there, but is your body?

Unfortunately it is not enough to simply know how you should swing. The real road block is whether or not your body can move and stabilize through all the necessary components of a mechanically sound golf swing. And does your body have the muscular stamina to maintain that stabilization through all the swings of a full round of golf. For some of us, that will mean a lot more swings than for others. When you think about it, the golf swing is really a dynamic symphony of movement consisting of 5 interconnected phases (set-

up, backswing, transition, downswing to impact, follow through). A breakdown in mechanics anywhere in these phases will negatively affect the swing, since all the phases are so dependent on each other. It is this breakdown in the swing that contributes to ingrained faulty movement patterns and compensations, which will ultimately lead to pain, injury, inconsistent play, and poor performance. Although golf is considered a leisure paced sport, injuries are common. Studies show that the areas of injury are typically in the low back, elbow, wrist/hand, shoulder, and knee. It seems no joint is safe from this “leisure” sport. Statistics actually suggest that half of all golfers will experience a low back injury at some point in their playing career. That is a scary statistic. No one wants a back injury. When you look at these statistics of looming injury, it almost seems unfair to be living here in the middle of 3 beautiful golf courses that seem to be ready to break us…if they haven’t already got to you. Fear not though, there is hope. The main contributing factors to golf injury (overuse and poor mechanics, paired with existing musculoskeletal dysfunction) can be minimized, if they are identified and corrected. Studies have shown that an integrated training program that addresses the demands specific to the sport of golf can have a profound affect on numerous levels; including minimizing risk of injury and improving overall skill and performance. A well developed golf fitness program takes an integrated approach to incorporate flexibility training for improved range of motion, core and balance training for improved stabilization and force generation, and strength training for improved coordination and stamina. The hips, spine, and shoulders, must all have good dynamic range of motion to achieve proper takeaway and downswing. While good segmental stabilization is required at transition and downswing to

generate the required concentric forces from the ground up. The extreme dynamic movement of the golf swing requires a high level of neuromuscular efficiency (nervous system and muscle communication), also known as coordination. Improving this neuromuscular efficiency creates a more effective and repeatable swing, which leads to an increase in driving distance and a more consistent swing. So how do you determine where to begin with your own training to improve your game and decrease your risk of injury? There are assessments and tests that will help identify your specific areas of tightness, weakness, and imbalance. Based on the results of these assessments a series of exercises and stretches designed for your specific needs can be put into a succinct routine to follow. With consistency and practice your body should respond rather quickly with noticeable results on and off the course.

In fact, recent studies have shown that you can see results in as little as 8 weeks with a properly developed integrated training program. These results include significantly improved swing mechanics and golf performance by improving club head speed, decreasing trajectory errors, and reducing total golf scores. And a better swing also means a decrease in pain and injury. If you ask me, lower scores and less pain sounds like a win all around. Of course, if you don’t know how to swing it is best to get a lesson or two from a pro. Just about every decent golf course will have one. However, as I said in the beginning…knowing how to swing properly and having a functional body that will allow you to swing properly, are two different things. Getting your body capable to repeatedly and consistently perform a golf swing requires some element of strengthening, stability, and range of motion training. These elements are found in the fitness world. To have the ultimate success on the course, you need to marry the two worlds of golf and fitness. This will you give many years of pain free and enjoyable golf. We are very lucky to live amongst these amazing golf courses and have the beautiful weather of our area to go along with them, so let’s get out there and enjoy them. Don’t forget to warm-up before your round and stretch after your round. And remember…if it goes right, it’s a slice; if it goes left, it’s a hook; if it goes straight, it’s a miracle…or was it your excellent golf fitness training program you have been following?

eland’s Lively Art Scene Just Got Livelier with a New Art League. Artists and art enthusiasts have one more reason to enjoy visiting the Leland Cultural Arts Center. The new Art League of Leland will offer ongoing educational growth opportunities at its monthly meetings through guest speakers, demonstrations and group discussions.

“Resting Model” Painting by Dan Beck The first meeting of the Art League of Leland (ALL) will be Thursday, April 12, 2018, from 4 PM to 6 PM at the Leland Cultural Arts Center (LCAC) at 1212 Magnolia Village Way in Leland, North Carolina. Nationally-renowned painter Dan Beck will be the featured speaker at the first meeting. Beck’s presentation will include a painting demonstration of his award-winning, contemporary-impressionist style with a live model. Beck is the recipient of the 2017 Gold Medal in the Oil Painters of America Eastern Regional Exhibition and numerous national and regional honors. “We are excited to welcome this enthusiastic group of artists and art advocates to our space,” said Julianne Scott, Cultural Arts Manager for the Town of Leland. “Since the inception of the LCAC, the Town’s goal has been to provide a vibrant hub for the arts in Brunswick County and surrounding areas. Everyone is welcome here at the LCAC, and we encourage anyone interested to become part of the newly-formed Art League of Leland.” The mission of the non-profit Art League of Leland is to encourage, guide, support, inform and provide learning opportunities for area artists and advocates of the arts. Members will have the chance to share ideas, learn from one another and encour-

age one another. The group will meet on the second Thursday of each month from 4 PM to 6 PM except during the months of July, August and December. just for fun! April Fools Delites A chocolate chip cookie recipe that is mashed full of laughter STORY BY ALYSSA CROUSON

A

re you ready to get back at your loved ones for last year’s prank? On April Fools everyone is determined to have the best scheme to prank their families, friends, and co-workers. This year why not do something fun and EDIBLE!

The best way to do this is through food and this mashed potato cookie recipe will truly be something they were not expecting. Using mashed potatoes allows the cookie to have a brownish color when baked, similar to a chocolate chip cookie.

Mash Potato Cookies

INGREDIENTS: 2 pounds of peeled and quartered potatoes 2 tablespoons of butter 1 cup of milk 1 cup of dried beans INSTRUCTIONS: Heat the oven to 350 degrees.To create this hilarious ruse all you need is 35 minutes, an oven, black beans and all of the average mashed potato ingredients. Bring a pot of water to boil the potatoes, drain them, then blend the butter and milk in slowly. You may use any seasoning you would like but avoid any colored spices like pepper to avoid the cookies looking different than normal. After the potatoes are fully blended you may stir in one cup of dried black beans to represent the chocolate chips.Then place spoonfuls of the batter on a cookie sheet, 1 inch apart and bake at 350 degrees for 20 minutes until golden brown. Serve warm to your April Fools guests to give them a real surprise.The best part is that after the prank is over you can eat the mashed potato cookies as an appetizer for your fun dinner party. Spread butter on both sides of each pound cake slice.

This next idea is quick and simple from allrecipes.com. It’s perfect for tricking your family, friends or co-workers. How about a little little sweet pound cake that looks like a grilled cheese sandwich!

Fake Grilled Cheese

INGREDIENTS: 1 pound cake, cut into 1/2-inch slices 6 tablespoons butter, softened 1 cup white frosting 1/2 teaspoon yellow food coloring, or as needed 1/8 teaspoon red food coloring, or as needed

INSTRUCTIONS: Heat a griddle over medium heat. Cook cakes slices on hot griddle, turning once, until golden brown on each side, 3 to 5 minutes. Transfer cake slices to a wire rack to cool completely. Stir frosting, yellow food coloring, and red food coloring together in a bowl until frosting is the color of American cheese. Spread frosting on 1 side of half of the pound cake slices and top with another slice of pound cake.
